MOVING FORWARDLast month, I strolled into a mixer

hosted by the Greater Fort Lauderdale Alliance. It was one of the Alliance’s “Connect” events, held on the beautiful patio at Gallery One, the all-suite Doubletree hotel along the Intracoastal.

The event focused on artwork, with artists actually painting while Broward business’s elite mingled and chatted about business, family and the Miami Heat. And while I met executives ranging from manufacturing to home entertainment systems, I noticed something fascinating…

The conversation usually turned to the law at some point.

Certainly there were different aspects of law. One person was chatting with me about an employee who left to work for his competitor. While his employee had signed a non-compete agreement for two years, he struggled with whether or not he should take her to court. Another person was explaining to me how he shared a new internet concept with a friend – and then the friend beat him to market.

The law has always fascinated me. During my days as Publisher of the South Florida Business Journal, I heard the most fantastic stories from my friends who were lawyers. The average U.S. household discards around 700 pieces of clothing and textiles annually, so there’s now a nationwide clothing movement called PEEL IT OFF TO GIVE BACK, which collects “gently worn” clothing for those in need.

The program made a stop at Las Olas Fine Arts on March 29, and more than 100 people packed the gallery for a “Sip & Swap” clothing donation event – which are also happening in Dallas and Chicago.

Attendees donated their gently worn clothing and swapped it for something “new to you,” all while enjoying wines from event co-sponsor The Naked Grape, a winery offering eight varietals. All the remaining clothes were donated to Clothes4Souls, a global anti-poverty nonprofi t organization. For details, visit clothes4souls.org.

phenoms – they’ve been beat

out by a Broward brewery.

On most mornings, Matt Cox is alone at the Big Bear Brewing Company in Coral Springs, cleaning his brew kettle. He actually crawls inside the 10-foot vessel and hand-scrubs the surfaces.

“Everything in good brewing practices starts with clean equipment,” says Cox, brewmaster of the 15-year-old microbrewery on a stretch of University Drive between a SunTrust bank and a Japanese restaurant. “Bacterial contamination is our biggest enemy in brewing. When a beer goes into any vessel or container, it needs to be clean and sanitized – from the biggest tank, to the smallest bottle.”

Cox’s cleanliness obsession has its rewards. Last September, Big Bear’s Polar Light took a gold medal at the United States Open Beer Championship in Atlanta, a national contest featuring more than 1,650 American brews in 65 categories. And Big Bear’s Paw Print IPA was declared Grand Champion IPA at the United States Beer Tasting Championship in Manchester, New Hampshire, just last September.

The price of successIf you’ve ever bought a craft beer, you know it’s pricier than your average

Budweiser. Here’s why: it’s hard work.Unlike other state-of-the-art modern breweries, Big Bear has no computer

touch screens to regulate the water temperature or mix the malt. “All the labor during the brewing process is done by hand,” Cox says. “There

are no motors to mix the mash, for instance. The dry weight of the mash can be up to 1,000 pounds, which I then combine with water and mix with a hand paddle. The mixture becomes much heavier as it blends. All the malt has to then be removed manually when the process is fi nished.”

One small mistake in the milling process, water purifi cation, or in the accuracy of time and temperature could ruin a whole batch – equal to 20 kegs of beer.

Cox has to run the different varieties of malt through a mill to gently crush it. The malt is then measured to the thousandth of an inch to create the desired fl avor and body of the brew. The water Cox uses to mix with the malt goes through a water-purifi cation process that strips contaminants out of the Broward tap water. He then rebuilds the water using calcium and magnesium – each brew has its own specifi c type of water.

After 20 hours of labor, Cox has his 20 kegs’ worth of beer – but he doesn’t keep them in kegs. Instead, he stores the liquid in a half-dozen 8-foot-tall “serving vessels.”

And directly from there is where customers at the Big Bear Brewery taste their purchases. Even the tubes the beer travels through are handpicked by Cox. They measure a quarter-inch in diameter compared to the normal half- to three-eighths inches, which leaves less beer sitting in the tubes when they are not in use – because beer sitting in the lines usually becomes stale. The tubes are also made of a nonporous material so they won’t collect dirt or bacteria, which could alter the taste of the beer. Cost: 45 cents a foot compared to 20 cents a foot.

“Our process makes a difference when you compare taste and quality to the supermarket-type beers that people buy or drink at bars,” Cox says. “We keep the beer in a natural and pure state. We don’t pasteurize, use any chemical shelf-life extenders or fl avor enhancers. Some beers we lightly fi lter, some are left completely unfi ltered.”

If this intrigues your taste buds, there’s only one problem: you can’t buy Big Bear beer anywhere but in Coral Springs.

“Our beers are only sold on premise, so we can ensure they are always kept at optimal temperatures,” Cox says. “They also sell very fast, so we don’t have to worry about them getting old or losing fl avor. That separates us and some other local brew pubs from all other beer products.”

Funky Buddha Lounge and Brewery

A hip hangout for students from nearby FAU and Lynn University, featuring live music, the aroma of shisha (fl avored tobacco), and a tapas-like menu. Brewmaster Kevin Abbott usually offers fi ve main ales, with prices in the $6 range. They include:

Maple Bacon Coffee Porter – Just like the name says, it’s brewed with maple syrup, smoked malt (to suggest bacon), and coffee. Brown to black in color and medium bodied.

Hop Gun IPA – In a sea of overly bitter IPAs, Abbott went for balance. Amber colored and medium bodied, Hop Gun has a strong malt fl avor with hints of caramel and honey.

The Mack House Holy Mackerel Nano Brewery

A laid-back establishment run by brewmaster Bobby G, who loves to add unconventional ingredients like chili peppers, pecans, and coffee. The results are rich and explosive but still well-balanced. Brews, also in the $6 range, include:

Panic Attack – Canadian malt adds richness and sweetness, while spices such as fennel seed and ginger layer on the fl avor. A strong ale – hence the name.

Mack in Black – Belgian yeast and the addition of pomegranate juice in the fermentation makes this concoction a bit lighter than Panic Attack and gives it a thinner body. It has notes of chocolate and coffee.

Special Golden Ale – Belgian-style brew, unfi ltered with a hint of ginger, fennel, and slight honey sweetness. Dry and refreshing with fruity aromas.

Good Clean (Or Dirty) Summer Fun For Kids

The Museum of Art | Fort Lauderdale’s AutoNation Academy of Art + Design is gaining recognition as a local cultural treasure. The Academy offers courses year round for all ages and levels of experience, and infuses a philosophy of individual development in every class.

This summer, the Academy is again offering a Creative Summer Art Academy as five two-week sessions for children in grades 1 – 12. Session one begins on June 10, and Session five ends August 16. Each day runs from 9:00 a.m. to 4:00 p.m., and students in grades 5-12 can enroll in disciplines such as drawing, painting, ceramics, digital arts, printmaking, and character design. The third session, which runs from July 8 – July 19, offers a special course in musical theatre and set design, for grades 5-12.

“We are committed to meeting the needs of each creative spirit,” said AutoNation Academy of Art + Design Director Anthony Lauro. “This guiding principle extends to our Creative Summer Art Academy, where we will ensure that each young person is able to fully develop his or her skills.”

Lauro continued: “The mission of the AutoNation Academy of Art + Design is to offer courses year round for all ages and all levels of expertise, from children grades 1-12 to adults, enthusiastic amateurs, emerging professionals, college students and seniors. The animal hospital Stephanie Correa opened in 2003 is one of only four or fi ve like it in the country.

It’s called Animal Cancer Care Clinic, and the oncologist has treated more than 20,000 pets with cancer. Her clinic specializes in something called “one medicine” — an idea that humans and animals can benefi t from the same research and discoveries.

As Correa explains it, “What we’re coming to fi nd with this concept of one medicine is that we’re actually more similar to other species – dogs and cats – than different.”

She points out that both women and female dogs and cats get breast cancer, and that the research on dog and cat cancer comes back much quicker – sometimes a year for dogs as opposed to 12 years for humans – because dog years are so much shorter.

After getting her undergraduate degree at the University of Virginia, Correa studied at the University of Florida’s College of Veterinary Medicine. Then came an internship with the Animal Medical Center in New York. It was there Correa became interested in the study of cancer, after her father-in-law died from the disease.

She spends her days now surrounded by animals, but if you ask what her home life is like, Correa will laugh.

Every Tuesday for the last three and a half years, Mindy Rapkin has shown up at the Broward Humane Society holding empty shoeboxes.

She collects them every week from different shoe chains and brings them for the cats in the Humane Society.

“The shoe box makes them more comfortable,” Rapkin says. “They’re pretty traumatized once they get in there.”

But that’s not all she does.“She socializes with them, feeds

them, gives them toys, treats, cleans the dishes – she’s a really, really good volunteer as far as dedication, and she loves cats,” says Colette Saucier, the director of volunteer services at the Broward Humane Society. “We’re really lucky to have Mindy with us.”

When she’s not busy as one of the 475 volunteers at the Humane Society, Rapkin tends to her three cats and one dog at her home in Hollywood Oaks.

She has a 9-year-old black greyhound named Kabar, who’s a retired racer. There’s also a cat named Tony who “turned out to be a Persian, but was a fl ea-infested mess when I got him.” Rapkin also has a black-and-white cat named Spike and a gray cat named Mya, who’s missing her front right leg.

Rapkin, who used to work for Comcast before retiring, plans on spending Mother’s Day with her husband of 16 years, Eric, and her two daughters, Sheena, 14, and Deliah, 12, who both attend University School, a part of Nova Southeastern University.

The mission of The Leukemia & Lymphoma Society (LLS) is to cure leukemia, lymphoma, Hodgkin’s disease, and myeloma, and improve the quality of life of patients and their families.

That’s probably one of the reasons that the annual Man and Woman of the Year event is so enthusiastically supported by everyone that volunteers to help in a variety of ways.

A case in point are the two co-chairs, Ana Vento, president of events of Vento Designs, and Matthew F. Sacco, vice president, Communications & Public Affairs, Sunrise Sports & Entertainment and the Florida Panthers Hockey Club.

Committed to philanthropy, Ana believes that when you give, you will always receive. She was the 2011 Woman of the Year. Matthew, named the 2012 Man of the Year, has been involved with LLS for the past three years, originally as part of Panthers record-breaking 2010 and 2011 Light the Night Campaigns.

The only people that work harder, perhaps, are those who are selected to campaign for ten weeks for the Man and Woman of the Year. Candidates run in honor of the Boy and Girl of the Year, who are local blood cancer patient survivors and sources of inspiration to others. They are judged solely on the money they raise – every dollar raised counts as one vote!

The 17 candidates agree to utilize their leadership abilities and resources to conduct their own fundraising campaigns.

The 2013 Fort Lauderdale Boy of the Year is leukemia survivor Nour. Remaining strong and vibrant throughout his treatment, he is now 10 and is in remission.

The 2013 Fort Lauderdale Girl of the Year is lymphoma survivor Amanda. After two years of aggressive treatment, Amanda is six years cancer free.

dCultivating Cash for Causes

David Blyer’s job is to make it easier for you to lose money.

The 53-year-old Plantation resident has an MBA from Nova Southeastern University. His fi rst job out of college was at NCR, a company that makes ATMs, checkout computer software, and self-service kiosks.

“That gave me a foundation in how to sell software to businesses – manufacturers, wholesalers, government, and industrial companies,” Blyer recalls.

Within five years, Blyer was successful enough to be recruited by Tandem Computers (now owned by Hewlett-Packard), where he took the Caribbean territory and built up $100 million in revenue from scratch.

Then he co-founded a company in 1994 out of the side of his friend’s house. It was called Vento Software, “a vertical business application for the banking, telco, and healthcare industries” – and he sold it within a year to one of the biggest software companies in the world, Oracle. The company made him a division president, and he quickly took it from $80 million in revenue to $220 million.

“After about two and a half years, I retired,” Blyer says. “I invested in a manufacturing facility and sold that to a private equity fi rm,

and now I sit on the Young Entrepreneur’s Council at Nova Southeastern University, and the board of directors for DryClean USA.”

Retirement, if you can call it that, didn’t last long.“I was sitting around with executives and they said, ‘You

know tech, let us tell you about the challenges we’re facing. Nobody has built a platform that is helping nonprofi ts create awareness and cultivate donors,’” Blyer says.

Blyer brought back his old team and has spent the past few years building DonorCommunity – an online platform that helps nonprofi ts raise money, network, and track all the messy stuff that keeps a charity running. The company launched in 2009 and has 32 employees. Its clients include the Dan Marino Foundation, ChildNet, Boys & Girls Club of America, Kids in Distress, and Place of Hope, among others around the country.

A one-time setup fee is $2,000, and an annual subscription is $7,200. For that, a nonprofi t gets donor tracking, with details including their histories and preferences. They also get web hosting, an online auction system, event management, marketing tools, social networking integration, mobile notifi cation of donations, and reports and analytics for all of it.

As Blyer describes it, it’s like giving a nonprofi t its own website, Facebook, Constant Contact, Salesforce, and eBay all in one. It can replace several third-party services and beats any of them because it’s all integrated. The platform teaches you how to use everything, and there’s always free tech support if you run aground.

DonorCommunity can even get other people to help nonprofi ts do the fundraising by generating custom pages for donors’ friends. Say you want people to donate to a cause instead of giving you a birthday gift – donors can specify such a request through the nonprofi t’s site, give their friends’ email addresses, and generate an invitation to the party.

They also launched a new crowdfunding service this past December called MicroGiving, and as of March, they have 300 active fundraisers nationally.

“Small or medium nonprofi ts have the same needs as a large one, but they don’t have the same resources,” Blyer says. “I’m thrilled about selling software, but I’m more thrilled when they use it and it helps.”

Bringing in the bucksWhile David Blyer has never run a nonprofi t, he’s learned a lot in the past few years about what they need and how they can grow. Here’s his advice...

Bring it all together. “The future is consolidation. Imagine if the executive director gets a business card and has to put it in the donor system, and then in the email marketing system, and then maybe Outlook, and the person replies to one of those and says ‘Don’t send me an email’ and not all the databases get updated – you want integration, to create effi ciencies.”

Keep it personal. “Even in online donations it often takes you out of the site [to a third party’s], and more so than not, people don’t get notifi ed about an event or don’t get a thank you call. You end up always looking for new donors because you’re not cultivating existing donors.”

Mitch Amsterdam and Mike Linder, pioneeers of the private jet catering industry, began their round-the-clock business in 2001 with Silver Lining InFlight Catering. “It’s 24 hours a day, we’ve never closed in 12 years,” Linder says. The two lifelong friends have set the standard for aviation concierge services, providing a fi rst class experience for worldwide jet travel out of South Florida (servicing all private airports from Orlando to Miami).

Five years ago, the duo was looking for a new venture and opened one of South Florida’s most unique restaurant venues, Jet Runway Café (see box), located on the tarmac at FXE Airport in Fort Lauderdale. The café has earned rave reviews as the lines out the door can attest. Now they’ve moved on to their most ambitious challenge yet – becoming South Florida’s most exquisite catering and special events company.

This means creating uniquely designed events ranging from intimate weddings (see box) to lavish galas. “There’s really nothing out of the ordinary that’s thrown us off in 12 years,” Linder says proudly. The reason might be Silver Lining’s size: 150 team members and two 20,000 square foot kitchens located in Pompano Beach and Palm Beach and a venue that can hold a jetliner – because it’s indeed an airplane hangar.

That may be why Silver Lining has hosted Fortune 500 CEOs, Saudi royalty, celebrities, and musicians. But Catering and Events Director John “Hollywood” Abresch has another explanation. “The fact that we service the private jet industry makes us able to handle anything. The industry is so specifi c to demanding needs that if you can handle the clientele, you can handle anything and everything.”

Weddings: plane, not plain

When Mike Kontos got married in February, the easiest decision for him and his bride was “Who’s the caterer?”

Silver Lining was Kontos’s only choice for the wedding. A pilot for a private jet company, Kontos has been eating Silver Lining InFlight Catering for years. It services the company he fl ies for, just as it has for pretty much every private fl ight departing from South Florida.

Co-owner Mike Linder and Catering and Events Director John Abresh took the basic idea that Kontos had – to get married under the nose of a plane and hold the wedding reception in a hangar. They took it to epic proportions…

The ceremony was held under the nose of a DC-3, the cocktail party was on the tarmac and the reception moved inside the airplane hangar.

A four-course meal was served family style on a long table running down the center of the hangar. Kontos says, “I would defi nitely recommend them to anybody down here. Everything we wanted, they made happen.” It was the wedding he and his wife always dreamed of.

Everything under one roof

Jet Runway Cafe: really taking off

The words “airport food” don’t often cause mouths to water. And who goes to an airport to eat when they don’t have somewhere to fl y?

But Jet Runway Café is a destination unto itself. The breakfast and lunch restaurant at the Fort Lauderdale Executive Airport has been called “one of the best lunch spots” in Fort Lauderdale by the Sun Sentinel and a “hidden gem” by New Times. Jet Runway Café has earned stellar reviews from sites like Yelp and Urban Spoon.

“It’s one of those few South Florida restaurants where it’s hip to be seen,” co-owner Mitch Amsterdam says. “It’s right on the tarmac, the only one that’s directly on the runway. Private jets and helicopters pull right up, where both passengers and pilots come in to eat.”

And some of those meals are as unique as the location, such as the turkey pretzel roll and the picnic basket sandwich consisting of BBQ pulled pork, pepper jack cheese, mac-n-cheese, and crispy onion strings on country white bread.

While the restaurant isn’t open for dinner, it is available for private functions, much like its next door airplane hangar.

“When I sit down and talk to someone about what we do, they think we do the catering from Jet Runway Café,”Amsterdam says. “They don’t understand we have a completely separate catering company that provides food, lighting, décor, fl oral, and entertainment.”

Another unique aspect of Silver Lining Catering is their venues, including Jet Runway Café, the tarmac on the runway, and the airplane hangar, which serves as a blank canvas for even the most creative of minds. They can handle events for hundreds of people and even thousands. For example, a recent MS Gala seated 1,200 and featured a runway fashion show, luncheon, and silent auction, all produced in house by the Silver Lining Team. Karen Dresbach, President of the MS Society of South Florida adds, “Mitch, John, and the entire team at Silver Lining went above and beyond with every detail to insure the event was a huge success. We could not have been more pleased.”

“We are very into helping out the community,”

Linder says. And the community has responded. The American Heart Association, Cameras for Kids Foundation, MS, Charity Guild, Deliver the Dream, and the Danielle Demarzo Foundation have all partnered with Silver Lining Catering over the past year to create some of the most illustrious and memorable galas and fundraisers.

“The events are defi nitely fi rst class and the attention to detail is like nothing we have ever seen before,” remarks

Maria Hunt, The American Heart Assocation’s senior development director. “The AHA has used Silver Lining for several events, ranging from a young professionals event called Pulse to a Moulin Rouge party. Both had the wow factor.”

Betsey Chesler, founder of the Cameras for Kids Foundation, has also relied on Silver Lining for several events. “You expect things to go wrong at a big event,” Chesler says. “But with Silver Lining, it’s just the opposite. I realized I could let them handle everything. They never cease to amaze.”

Dr. Kenneth Woliner likes to solve problems. As a matter of fact, it is his life mission. “I hate to say to a patient, ‘I still don’t know.’ So, if I don’t already know the answer to my patients’

questions, you can be sure I’m going to do more research on their medical conditions so I can make them feel better.”

Apparently this board-certifi ed physician has been doing just that. “I might not have been sick, but I defi nitely wasn’t feeling right,” said Carlos Gutierrez, a luxury real estate broker in Miami Beach. “With all the exercise I do, I shouldn’t have this extra belly fat. Dr. Woliner looked beyond the numbers and found ways to optimize my nutrition, getting that weight off. Now I’m back playing rugby with my old college classmates.”

Carlos is just one of the many satisfi ed patients that frequent Dr. Woliner’s holistic medical practice located in Boca Raton. Five years ago, demand for his services grew so much that he needed to more than triple his space and move to a beautiful 3,500 square feet new offi ce on Glades Road.

It is the individualized attention that Dr. Woliner gives to each patient that has made his practice so successful. “I spend 80 minutes with each new patient,” explains Dr. Woliner, “and take the time to listen to them. It is more important to know which patient has a disease than to know which disease has the patient.”

Dr. Woliner also sees a lot of patients that have weight issues. With a bachelor’s degree in Nutrition from Cornell, he is well able to teach about diet and exercise, but realizes that a slow metabolism is often the culprit when a patient has trouble reducing. Dr. Woliner uses an indirect calorimetry machine to measure his patients’ metabolism more precisely, proving that a starvation diet isn’t necessary (or even appropriate) to help a patient reach their goal weight. “In addition to hypothyroidism, a slow metabolism could be caused by insulin resistance, food allergies or adrenal fatigue.”

There is one other thing that sets Dr. Woliner apart from his peers. Even though he has incorporated a functional medicine approach of diet, exercise, vitamins, and natural hormones, he still is very much grounded in evidence-based mainstream medicine, admitting patients and serving as vice-chair of the Continuing Medical Education committee at West Boca Medical Center. Dr. Woliner also is on the board of directors of the Palm Beach County Medical Society and a Volunteer Assistant Professor with the University of Miami Miller School of Medicine, showing a commitment not just to his patients, but to the community as a whole.

And the best part is that Dr. Woliner genuinely wants his patients to get well. “When my patients get better they don’t need to come back and see me, but I know I’ll treat their friends and relatives.” And isn’t that what family medicine is all about.

A fungus infection of the toenail, also known as onychomycosis, is one of the most common dermatologic disorders affecting the foot. “I HAVE TRIED EVERY DIET KNOWN TO MAN (OR MOMS) THESE LAST FEW YEARS – TO NO AVAIL.”

Alyson continued to tell me her story. “For example, this past summer, my best friend fl ew me to their home in Sonoma for an entire month. We ate nothing but organic everything, lean protein, I drank 150 ounce-plus of water a day and did a high intensity workout every morning mixing up interval training with boot camp at her gym. In exactly 30 days – I lost a grand total of THREE pounds. I didn’t even lose the initial ‘water weight’ everyone else loses.”

I empathized, “It’s hard to stay motivated with minimal results.”

“I’m willing to starve myself, if that would work. I even did two rounds of hCG. My wallet’s lighter, but that’s about it.”

“The FDA recently published a website, www.fda.gov/hcgdiet, detailing how hCG diet products are illegal, and how restrictive diets such as that one can cause electrolyte disturbances, an irregular heartbeat and are potentially fatal.” I continued, “But looking at your diet history, I don’t think the problem is one of eating too much.”

“Dr. Woliner, what else could it be? I have a friend that blew up taking Abilify for her depression, and another while on Actos for diabetes, but I’m not on any medications.”

“It’s true that many drugs have

weight gain as a common side effect [1]. But there are other causes of weight gain. With your other symptoms of cold intolerance, fatigue, and constipation, I’m thinking that you have an untreated thyroid condition [2].”

“I begged my other doctors to treat me for that, but they all said no.”

“Some doctors focus too much on lab tests without considering the patient’s history and physical exam fi ndings [3].

Thyroid hormone resistance is more common than people realize.”

Alyson sat with a puzzled look on her face. “So, even if these doctors said my tests were normal, I might still have a thyroid problem? [4]”

“The word ‘normal’ has many meanings. There is a difference between ‘common’ and ‘optimal’ [5]. Rather than using a range that includes people who are overweight and being treated for high cholesterol and other conditions, perhaps it would be better to use narrower ranges of persons who feel ‘dandy’ [6].”

“Does anyone even use that word anymore?”

“My practice is built on patient-to-patient referrals. Just liking my bedside manner is not enough to convince your friends to see me. You have to glow. So yes, I do plan on making you feel dandy.”

After fi nishing Alyson’s physical exam, my staff used our Korr indirect calorimetry machine to measure her metabolic rate [7].

“You’re at ‘minus 20%’. That’s one of slowest metabolism’s I’ve ever seen!”

“How do we fi x that?”“I use a holistic approach that

combines behavior changes, diet, exercise, supplements, and of course medications [8,9]. I prefer to use T3 based drugs as they have been shown to cause signifi cantly more weight loss than T4 drugs such as Synthroid alone [10].”

As I ramped up Alyson’s dose of thyroid medication, her fatigue and other symptoms began to resolve. To be on the safe side, I periodically rechecked her EKG and bone density, which remained normal [11].

THE NO CARDIO ZONE

Cardio is important only if you eat wrong and work out wrong. Walking for 30 minutes burns 150 calories. As soon as you stop walking, the calorie burning stops. Working out with weights for 30 minutes burns a 1,000 calories and calories continue to burn many hours afterwards, if your concentrate. Concentration is the secret to burning calories and building muscles.

If your health is important to you there are 3 things to remember.

The most important thing is mental attitude, then nutrition and fi nally, functioning. Functioning is performing daily tasks.

If how you look is important to you, then you do cosmetic body building. This is looking into the mirror, seeing what you don’t like and targeting the areas you want to improve. If you are pear shaped and you do cardio and lose weight, you are just a smaller pear. If you do cosmetic body building you concentrate on changing the shape of your body, you lose weight and you tailor the pear.

Only weight can tone a muscle. Cardio cannot tone a muscle. In order to tone a muscle and sculpt a body the blood has to stay in the area you want to focus on until the job is done. If you jump around, do circuit training and exhaust yourself, nothing is accomplished. You may lose weight, but you never tone.

When people come to my gym I ask them “do you want to look like a sprinter or do you want to look like a long distance runner?” No one

has ever said they want to look like a long distance runner. It’s more work to run a 5K than to run 100 yards. But, the sprinter does more work per second than the long distance runner. This is the reason their bodies look dramatically different.

Power = Weight divided by Time is proven success if you want to change the way you look.

Headmaster Dr. Jerome S. Chermak

Educational Visionary Takes School Into Future

Jerome S. Chermak, Ed.D., is an education leader for the 21st century. As the headmaster of University School of Nova Southeastern University (NSU), Chermak’s philosophy is very much in line with the private, pre-k through 12 college preparatory school’s founding principles created 42 years ago, yet his is a vision for today.

“University School is an environment where students receive the knowledge, skills, and habits that are required for them to be successful, but it is also a place where we are developing global leaders who have a sense of responsibility. We want our students to be well-prepared academically, but we also want our students to be of good character,” said Chermak.

Having the University School located on the main campus of Nova Southeastern University also allows students unprecedented access to a university environment, which Chermak believes gives students a leg up as they prepare for post-secondary school life.

As the school’s headmaster since 1999, the educator also brings a deeper understanding to the inner workings of University School on many levels. “When I arrived in Florida 31 years ago, I had two goals: to fi nd a position in education and to also fi nd schooling for my children. I looked at University School for my two children and I didn’t have to search any further.”

Chermak said that because he and his wife, Sheila, were University School parents for 18 years, he brings a perspective which allows him to look at issues and concerns from many different sides. As an educator, too, he has held various positions at the school as social studies chairman, as teacher in the middle and upper schools, as well as the director of the lower and middle schools. Before his appointment as headmaster, he was the associate headmaster for 10 years.

The school’s athletic program has grown under Chermak’s leadership as well, including the addition of football, lacrosse and rowing teams. The Suns Varsity Football Team won its division to become the 2012 State of Florida 3A Champions.

University School’s speech and debate team won its third consecutive state title in 2013, while four of the school’s visual artists were recognized nationally in the Scholastic Art and Writing Awards.

choose between appetizers. They’re all enticing. The fresh chilled Maine Lobster Summer Roll with citrus and sweet chili ponzu is light and delicious. The Slice of Caviar Pie is served with egg, onion, layers of sour cream, and topped with tobiko caviar. It’s wonderful. But there are two must-haves appetizers you won’t want to miss. The Tuna Sashimi Pizza is unique. Served on a fried wonton, this crispy pizza with wasabi cream cheese, ginger, and caviar is outrageous.

“Almost every table orders the pizza,” Justin smiles, and now I know why. The most tempting is the Sautéed Hudson Valley Duck Foie Gras. Served with key lime curd, wilted spinach, and orange-pomegranate sauce, this is beyond words. The curd almost resembles a bread pudding. Unbelievably delectable!

There are many options when ordering at Café Maxx. Soups, salads, pastas, lighter fare (reduced calories, lower carbohydrates and smaller portions), along with other selections that will tempt you. There is something for every palate.

When the entrees are served, every plate is a piece of art.

The Dark Cherry and Raspberry

Glazed Duck Breasts rest on a double potato and mascarpone au gratin with beans and carrots. The sauce is a mixture between a touch of sweet with the right amount of spice to sneak up on you. The Three Peppercorn Filet Mignon is tender and extraordinary. The steak is prepared spot on and is delicately placed next to the three cheese au gratin potatoes, shallot-thyme compound butter, and natural jus. This is one menu item that is always offered and ordered. A fi sh dish not to miss is the Lemon Herb Salmon. Perfectly seasoned, fl aky and delicious, the salmon is placed on top of ruby and gold beets, sweet potatoes, spinach, and just the right amount of citrus butter.

By this time, you are satiated but you cannot miss dessert. Room must be made for pastry chef Bernie Delacruz’s specials and house favorites. I believe in eating desserts always. Life is short and sweets are worth indulging. I also believe that Café Maxx’s Butterscotch Bread Pudding may be one of the best I have ever had in the world. Served with pretzel crumble, caramel drizzle, and vanilla ice cream, you will not be disappointed. The Warm Apple Tart with apple jack caramel, almond frangipane, and cinnamon-scented ice cream also rivals the pudding. Also worth mentioning is the Vanilla Bean Crème Brulee. You will love the almond lace cup with pineapple rum caramel sauce and cookies decorating the plate.
