On 12th of March 2018, we mark 50 years of independence of our Motherland from the day it was proclaimed a sovereign state in 1968. Prey to successive waves of colonisation, its history relates to those of the many people from around the world. From being an unknown dot on a worldmap to have become the most strategic asset of the Indian Ocean, Mauritius has stoked the flames of superpowers to cross oceans, undergone wars for acquisition and homed a melting pot of multi-cultural diversity. These are all represented in our ‘Stella Clavisque Maris Indici’ motto. (Star and key of the Indian Ocean)
Our small island has stood tall and firm against the winds of change. Let us recall the long march towards independence, the struggle of our ancestors to secure freedom and the hard work of all citizens. Let us pay tribute to the small nation, which has united over the years, regardless of skin colour, race, religious beliefs and ethnicity, to help build a new Mauritius. The island has proven its greatness, whilst integrating the individuality of each, whilst retaining its authenticity.

Ingredients 1/2 kg of salted fish I 2 spoons of oil I 3 finely chopped onions I 1 spoon of crushed garlic I 1 spoon of crushed ginger I 2 spoons of concentrated tomato paste I 450g of crushed tomato I 4 twigs of thyme I 1 handful of finely chopped coriander I Pepper
Preparation
Submerge the fish in hot water for about 10 minutes then dry.
Fry the fish over medium heat, strip into pieces.Meanwhile, heat the oil in a pan.
Sauté the onions, add garlic, ginger and leave to fry until they are golden in color.
Add the tomato paste, leave to brown, stirring contin-uously for 30 seconds. Add the chopped thyme, mix and continue cooking for 30 seconds over low heat.
Add the tomatoes add salted fish, stir 15seconds, cover and cook for 5 minutesat low heat.
Add a little hot water and choppedparsley, stir 20 seconds.
Serve with white rice.
