Your Success is Our Success“I’m the first one in my family to go to college and I wanted to stay close to home,” says Phalacia. “When I visited the campus, I was impressed because I got to meet some of the chefs as soon as I walked in. And they didn’t pull any punches; they tell you everything straight up before you get here, so you know what you’re in for.”

Phalacia’s interest in culinary arts started at home, with her grandfather, who worked in a bakery. Every weekend, he and Phalacia baked cakes. “I remember thinking, ‘I want to do that for a living.’ Something in the batter, I guess!”

Several hours from home, Phalacia admits she was initially “kind of scared,” but “the Admissions Office talked me through a lot and said, ‘If you need anything . . .’ That’s why I came here. They still help me.”

Now, she shows her grandfather what she learns. “His cooking is really old-school, from scratch. He had never heard of parchment paper. Now, I’m teaching him how to make cheesecake.”

Make a Difference

North Miami’s Business Development Board asked JWU students to evaluate the city’s downtown corridor and recommend ways to help North Miami thrive as an arts district and destination for residents. “Our students looked at everything from the condition of the streets, the need for signage and residents’ perceptions of the city,” says JWU’s Richard Ederr, director of The Business Center. Many student ideas were adopted, one of which helped the North Miami Library prepare for its new building.

In 2009 marketing students Richard Cameron and Daniel MacKinnon won first place in the Marketing and Sales Representative Challenge at the Delta Epsilon Chi (DEX/DECA) International Career Development Conference in Anaheim.

Ad Team a National Success

After claiming a first place victory in this year’s regional competition of the American Advertising Federation (AAF) National Conference the ad team from JWU’s Providence Campus competed in the national finals in Washington, D.C. The JWU team faced off against some of the nation’s most prominent advertising programs, placing 13th out of 140 colleges and universities that took part in the overall competition.

Alumni Notes: Helping Kids Get Healthy

In 2008, JWU culinary students at the North Miami Campus worked with JWU alum and Food Network star Chef Tyler Florence ’94 as he developed and tested healthy recipes for middle school students in Broward County for an ABC-TV series starring Shaquille O’Neal.4

“I was on the Collegiate Ambassador Team in Charlotte,” says John. “So when I gave campus tours and answered visitors’ questions, I used my hospitality education to represent the university.”

An honors student, John worked with his peers to coordinate a presentation by former politician Charles Wilson, whose exploits were the subject of the recent film, Charlie Wilson’s War. “We did a conference call for the campus in our auditorium. Students e-mailed or called in questions, and Mr. Wilson answered them live.” John and his class then reported on the project in their own presentation to the campus community.

John attended the annual convention of the Society for Human Resource Management in Las Vegas and completed an externship at the Doubletree Hotel Charlotte–Gateway Village, as well as an internship at the Omni Hotels.

What Employers WantErica connected activities and experiences at JWU to her career plans. She was president of the Criminal Justice Association, and a member of the Criminal Justice Legal Advisory Board, Alpha Phi Sigma and Silver Key Honor Society. She also interned with the East Providence Police Department and attended the First Annual Rhode Island State Police Women’s Training Academy.

A big fan of Johnson & Wales’ upside-down curriculum, Erica says, “Getting immediate experience in your major is a huge reality check. In my first criminal justice class, everyone expected to work for the FBI or be a special agent CSI right away.” But Erica realized she needed to learn everything from the ground up.

So she worked on co-ops, took field trips and made connections. “My practicum with the East Providence Police Department brought everything I learned in class full circle. I saw how the whole criminal justice system worked. That kind of experience also helps you decide if it’s really the career for you and what else you might want to pursue in the future.”

Career-Minded. From Day One

Ryan already worked as the floor manager at a casino in New York when he realized he needed more. “I started at the casino as a cashier and worked my way up to a management level, but I wanted to become a director or general manager, maybe in Las Vegas, and I needed the education to do that,” says Ryan. “Johnson & Wales was a natural fit for me.”

Hands-on experience was a great part of Ryan’s education at JWU. “Projects are very in-depth. You do everything, start to finish.” For instance, in a sales and meeting management class,

he was assigned a company and a city — Home Depot in Hartford, Connecticut — and was required to plan a customer services/human resources seminar. Ryan was expected to conduct thorough research, choose the hotel, select the dining services and food, and identify and plan everything that would be required for the event. His 32-page report captured the process and the outcome.

World Citizen.A winner of a Ten Days at Johnson & Wales prize in his home country of Germany, Daniel was so driven by the experience that he found himself back on campus soon after ... for real. “A friend encouraged me to travel, to get the additional education,” says Daniel. “Especially since I would be using a second language and learning more about the accounting, financial and business aspects of food service.” Daniel also holds a German chef’s certificate, was named Best German Junior Chef, worked in the culinary field for five years, and has won 13 gold medals in culinary competitions.

Daniel successfully competed in the 2007 New York Food Show, which led to his selection for the 2008 JWU Culinary Olympics team. “I observed the 2004 Culinary Olympics in Germany and other competitions in Chicago and Singapore, so I have some experience, and, of course, I speak German and know the area around the competition site.”

Daniel considers passion and discipline the two key factors for success in the culinary field. “There are so many choices in this field — bread, spirits, accounting, baking, nutrition. You just have to go to work. All the people at JWU know other chefs in other restaurants, and they will all show you something new.”

Defining Moments

When Brandon Tosti, who teaches sports marketing and management at JWU, read an article in Sports Illustrated underscoring the poor state of New Orleans schools and youth athletic facilities years after hurricanes ravaged the area, he was moved to create the nonprofit organization, Sports for a Cause. Collecting donated sporting equipment, he supplied material to rebuild a playground at a New Orleans school. “There is still such a great need for rebuilding in New Orleans ... If something like this happened in Denver, I would hope other people and communities would extend their hand via their time, money or donation of goods,” Tosti says. “I’m just doing what I feel is right.”
