Nikki is involved in the organisation of major industry events including the National Fish & Chip Awards, the UK and Scottish Seafood Summits, the Seafish Ambassadors Programme, UK Young Seafood Chef of the Year , training and educational projects, seafood festivals and events UK wide. Nikki has just celebrated 17 years with Sea Fish Industry Authority (Seafish). She is a member of the Craft Guild of Chefs, and also a Justice of the Peace for England and Wales.

In 2005 Sarah gave up her job as managing director of a wine bar company and quit the London rat-race to pursue her dream of opening her own business. Taking up residency in rural Scotland, Sarah opened The Real Food Café transforming a derelict Little Chef into an award-winning roadside diner, famous for its fish and chips.
In this session, Sarah reveals how she has gone from being almost bankrupt to being joint-owner of a business with a turnover in excess of £1.5 million.
