What’s the story behind Fierce Beer then? All started back then as a homebrew hobby. Both of us are oil and gas veterans and after falling out of love with the corporate world, we’ve first met during Brewing Technology training in Sunderland and decided to follow the dream – to open a microbrewery and make great beer! It was a bit weird; both of us from oil & gas, both called Dave, both fed up with the world we were working for. So, why on earth not. We’ve moved into the actual brewery premises on 1st April 2016. The inaugural brew took place on 3rd May 2016. There is a lot of beer being brewed around the UK at the moment, what’s different about Fierce? We try not to stick to too much of a core range. Everyone needs a go-to beer, but we get bored of the usual suspects (lager, pale, IPA, brown, dull). We like to push the boundaries with what we produce, and our customers expect that. We look at seasonality, trends and also what local produce we can use in our beers. Most of all, we want people to be able to know what they are drinking. So expect a shedload of Raspberries in Cranachan, be able to notice a spicy kick in Dirty Sanchez, and with Peanut Riot….well – you know the scoop. As a new Brewery what’s the biggest challenges you are facing? Managing growth and keeping to our plans. Demand has been crazy so we are growing fourfold already. We have pulls to sell beer all over the world, so looking at long term strategy as well as short term survival is critical. Can you tell us a bit about what beers you will be serving at Edinburgh Craft Beer Festival? We are looking to take a good range of different beers with us, and will have 4 taps. We are looking at: 1.Tropical Tart. A 4.5% Passion Fruit kettle sour. Mouth puckering and fruity 2.Cranachan Killer. At 5.5% this beer uses 10% by volume fresh raspberries from a local farm. It is a great balance of fruitiness, but neither sweet or sour. 3.Moose Moose. A 4.5% chocolate stout, made with Madagascan cacao sourced from Cocoa Ooze in Aberdeen. Surprisingly rich and velvety for only 4.5% 4.Night Shift. A black IPA at 6.5%. rammed with 18g/l of dry hopped Cascade and Simcoe. A lovely balance of roasty malts and citrus and pine from the hops. You have just been named Ratebeer “Best new brewery in Scotland” What’s next? Best Scottish Brewery of course, then UK, then….. OK seriously, we feel flattered to have such an accolade. We do not set out to win awards, we just want to make the best beer we can without compromise on quality and provenance. If people like it, we are happy with that alone. Awards are cool, but watching someone’s face light up after tasting one of our beers – now that is awesome! Other than Fierce, are there any other breweries out there at the moment that are particularly impressing you? Of course, there are loads. In Scotland alone we are so lucky in having Fallen, Pilot, 6 Degrees North, Cromarty, Tempest, and of course Brewdog. I think us Scots have a great opportunity to be seen as cutting edge quality beer providers. And finally. Because Simply Hops are sponsoring this it would be rude not to ask… What’s your favourite hop variety and why? I do flit between a few, and we use a lot of Simcoe and Mosaic amongst others. Silver award goes to Galaxy, but my favourite remains Nelson Sauvin. I used to make a single hop Nelson Saison with Brett 3 and 20% white wine thrown in for measure. This was for home use only of course, but was really great. One day I am sure it will become more readily available….
