Cashewnuts fried -100gPotatoes- 500gSalt to tasteRed chilli powder- 1 tspCrushed black peppercorns -to tasteGinger-garlic paste- 1 TbsOil - to deep fryCornflour-1 tablespoonRefined flour-1 tablespoonOnion-100gCapsicum-2 nosTomatoes 2 mediumGinger chopped- 1 tspGreen chillies- 2noGarlic chopped -1tspSpring onion -50gTomato sauce-50 mlSoy sauce -1tspVinegar -1tsp

1. Peel and diced potatoes and put into a bowl. Add salt, ½ teaspoon chilli powder, crushed peppercorns

and ginger-garlic paste and mix well. Set aside to marinate for 30 minutes.

2. Heat sufficient oil in a pan. Add cornstarch and refined flour and some stock to the potatoes and mix well.

3. Deep-fry potatoes in hot oil till golden and crisp. Drain on absorbent paper.

4. Cut bell peppers into triangles. Deseed and cut tomatoes into triangles.

5. To prepare sauce, heat 1 tablespoon oil in a non-stick pan. Add ginger and sauté for 30 seconds.

Add green chillies, mix and sauté for 10-15 seconds. Add garlic, mix and sauté till golden.

6. Add spring onion bulbs, toss and sauté till golden. Add tomato and bell pepper triangles and toss.

7. Add remaining chilli powder, crushed peppercorns and cashewnut and toss.

For undrallu

· 1 cup Rice flour

· 2 cups Water

· a pinch of Salt

· 1 cup thinly sliced fresh Coconut

· 25 gms Cashew nuts

· 25 gms Kismis

· 1 1/2 cup Milk

· 1/2 cup Water

· 1 1/4 cup grated Jaggery or

Sugar (Any one)

· 1/4 tsp Cardamom powder

Making of tiny rice flour dumplings :1. In a vessel, add water, salt and let it come to a boil.2. After it boils, reduce the heat and rice flour. At this point don't touch the rice flour, leave it as it is for exactly 15 mins over medium heat.3. Switch off the flame and using a rolling pin mix it well then knead into a smooth dough.4. Take an empty vessel and apply oil on its base and edges.5. Take some dough in your hand, and using your fingers make small balls or elongated structure.

Making the Payasam6. Boil Milk and sugar or jiggery and add the dumplings to cook7. Add fried coconut slices, cashew and kismis8. Add little rice flour to thicken the liquid and crushed cardamom9. Serve hot
