Serves 12

Ingredients

1 package (6 oz.) lime flavored gelatin 2 cups boiling water 1 1/3 cups cold water 1 jar (16 oz.) applesauce 1 large red apple, diced very small 1/2 cup chopped pecans Whipped topping

Directions

In a large bowl, pour the boiling water over the gelatin, and stir until completely dissolved. Add the cold water. Place in the refrigerator to chill until very thick but not fully set.

Whip with a hand mixer until fluffy. Fold in the applesauce, apple, and pecans.

Spoon into a large (9-cup) mold, bundt pan, or serving dish. Return to the refrigerator to chill until firm. Garnish with whipped topping, and serve while cold and frosty.

Hook four pairs of exact look-a-likes

Cross off all the fish that are one space beneath a crab, one space to the right of a starfish, or immediately between two sand dollars (horizontally or vertically).

Watson Lake and the Granite Dells

Makes 2 ServingsCappuccino Smoothies

Directions:

In a blender, combine the cappuccino or yogurt, milk, powdered sugar, and chocolate syrup. Add the ice cubes and marshmallows; cover and process until blended.

Pour into chilled glasses, top with whipped cream or additional mini marshmallows. Serve immediately.

This frosty beverage makes a great summer cooler!

Ingredients:

1 cup (8 oz.) cappuccino or coffee yogurt

1/3 cup milk

3 tablespoons powdered sugar

1 tablespoon chocolate syrup

1 1/2 cups ice cubes

What better way to ease into summer than a quick jaunt to Prescott, Arizona, for a day’s walk around Watson

Lake and the magnificent Granite Dells. It’s all just a few miles northwest of the city’s historic downtown area, along Arizona State Route 89.

While there are a lot of cool reservoirs tucked into the hills of central Arizona, Watson Lake is uniquely photogenic with its sky-blue, tranquil waters contrasted against huge, rounded, sun-bleached granite boulders that surround the shoreline and form semi-submerged islands and peninsulas dotting the lake. The aspens scattered among the rock formations bring a vibrant shot of emerald green to this stunning landscape. Watson Lake is one of two reservoirs at the Granite Dells formed when the Chino Valley Irrigation District built a dam on Granite Creek in the early 1900s. The

City of Prescott bought the reservoir in 1997 for use as a recreational area.

Although swimming is prohibited, visitors can fish, boat, hike, rock climb, and camp here. Gas and electric powered boats are allowed and can be launched from two ramps, but a 5 mph, no wake speed limit applies. Canoes and kayaks are available for rent. Park hours are from 6 a.m. to 10 p.m. If you love fishing, then bring a pole and fishing license to reel in some rainbow trout, largemouth bass, crappie, catfish, bluegill, and sunfish from shore or boat. Stretch your legs and engage your cardiovascular system on the Watson Lake Loop Trails that circle the 400 surface acres of water. Hikers can deploy from a number of trailheads throughout the park. The Peavine trail runs along the southeast side of the lake into the dells. It’s nice and level and perfect for hiking, biking (rentals available), and horseback riding. The 140-acre Watson Woods Riparian Preserve is located near the trail. The North Shore trail leads to the Watson Lake dam while the Lakeshore trail sweeps by some breathtaking views of the lake and dells.

The dells’ granite cliffs provide both experienced and inexperienced rock climbers an opportunity to challenge their top rope climbing and bouldering skills. Bring your own equipment or sign up with a professional guide outfit. Watson Lake is Audubon endorsed so bird watchers will spot hundreds of species including pelicans and eagles. Overnight campsites are available during summer with restrooms, showers, grills, picnic tables, and ramadas. For the kids, there’s a good-sized playground area at the park entrance.

One misconception about Arizona is that, because it has a piece of all four North American deserts

within its borders, it’s just a big expanse of desert real estate. Actually, 33% of our state consists of forested mountains and 25% features grassy plateaus. Likewise, Arizona’s wildlife consists of a lot more than rattlesnakes and coyotes. Beavers actually find our woodland streams, rivers, and shallow lakes to be a great habitat.

These furry, water resistant, aquatic rodents typically weigh 60 pounds and average over two feet in length. Their transparent eyelids work as goggles as they navigate through their underwater backyard, and their flattened, ten-inch tail and webbed hind feet provide plenty of propulsion. They can stay submerged for up to 15 minutes. Beavers are equipped with powerful jaws and strong teeth that never stop growing. Like a lumberjack’s chainsaw, they use them to gnaw down trees for the lodges (dome-like homes) and dams they build. You may not spot them, but you can’t miss their architectural handywork.

Arizona beavers commonly dig their grass-lined dens above the water line in the bank. The dens have a nursery area for the two to four “kits” born in the spring. Beavers are most active at night and dine almost exclusively on plant material and tree bark. They are truly nature’s aquatic architects.

As springtime fades into the Arizona sunset this month, Catalina State Park’s “Music in the Mountains” concert series follows suit with its final live performance of the season on Saturday, June 2, at 6:30 p.m. Pack a blanket and chairs and a picnic basket full of your favorite snacks and drinks, then head on over to the park’s new Bobcat Amphitheater for a delightful evening listening to your favorite ‘60s and ‘70s jukebox hits. Standard park admission covers the one-and-a-half-hour concerts and the free popcorn, but check weather conditions before you go. In addition to their concert series, Catalina State Park

ways to use water wisely: • take shorter showers, or turn off the water while soaping up • when shaving, brushing your teeth, or washing dishes by hand, turn off the water until rinsing • promptly report leaking faucets or running toilets to the office.

Apple Lime Snow

Serves 12

Ingredients

1 package (6 oz.) lime flavored gelatin 2 cups boiling water 1 1/3 cups cold water 1 jar (16 oz.) applesauce 1 large red apple, diced very small 1/2 cup chopped pecans Whipped topping

Directions

In a large bowl, pour the boiling water over the gelatin, and stir until completely dissolved. Add the cold water. Place in the refrigerator to chill until very thick but not fully set.

Whip with a hand mixer until fluffy. Fold in the applesauce, apple, and pecans.

Spoon into a large (9-cup) mold, bundt pan, or serving dish. Return to the refrigerator to chill until firm. Garnish with whipped topping, and serve while cold and frosty.

Cross off all the fish that are one space beneath a crab, one space to the right of a starfish, or immediately between two sand dollars (horizontally or vertically).
