Recuerdo todas las navidades como mo-mentos entrañables con mi familia. Cuan-do era pequeña, viajábamos a Francia, para encontrarnos con nuestros abuel@s, ti@s y prim@s, y celebrábamos las navidades por todo lo grande, no eran ostentosas, eran familiares, y nos unían las mesas y los can-ticos, los abrazos y los puros sentimientos. Dicen que la familia no la eliges, te toca, pues bien, si pudiésemos elegir, yo elegiría la que me ha tocado. Y es que, la Navidad, aunque a muchos/as no les trae buenos recuerdos a otros/as sí. Afortunadamente, aumenta la solidaridad en estas fechas, y permitidme que os diga que hay mucha gente solidaria. A mí misma, hace poco, un ángel solidario me saco de un apuro, hiendo a buscar gasolina con su moto, gracias Alberto Méndez por tu gesto.Ahora voy a hablaros de GuiaT-magazine 3, ¡¡Wuaw!!, en serio, me siento afortunada de trabajar con un equipo excepcional. Gracias a ese esfuerzo hemos conseguido que los/as lectores nos feliciten y nos califiquen de re-vista diferente, actual, enfocada a todos los públicos y con contenidos muy interesan-tes...Todo esto no sería posible sin la ayuda de los/as colaboradores: en la redacción, Rosa Díaz, Laura Ortiz, Esperanza Sanchez, Al-fred López, Beatriz Lores, en la puesta de escena para una portada, gracias Cristina por ocuparte de preparar un decorado en tu tienda Hogar, gracias a las familias que se presentaron a la sesión de fotos, a los anun-ciantes y en especial a Enrique Julia y Javier del Castillo por sus maravillosas exposició-nes del maridaje, en fin mil gracias a tod@s.Pero también tengo que pedir disculpas, todo no salió perfecto en la pasada edición y tuvimos algunos fallos en la redacción. I remember all my Christmas as some inti-mate moments with my family. When i was small we traveled to France to visit our uncles and cousins and we all together celebrated Christmas. They were not grandiose, more family, the tables, the singing, all the hugs and sentimental moments got us together this night. La Navidad es una fiesta religiosa obligada, ante todo relata un evento bíblico. Navidad viene del latín “Natalis” su significado hace referen-cia al nacimiento y su trazo en la historia data del 1112. De allí que la Navidad es la celebración del nacimiento de Jesús en Belén. Pero si nos preguntásemos porque el día 25 de diciembre y no otro, La respuesta sería: pese a no tener datos concretos del nacimiento de Jesús, había que fijar una fecha. Fue entonces cuando en el concilio de Nicea año 325, unos cuantos obispos decidieron que el 25 de diciem-bre fuese el día oficial para rendir homenaje litúrgico al nacimiento de Jesús de Nazaret.Hasta bien entrado el siglo IV el día del nacimiento del Mesías se ce-lebraba el 6 de enero, junto a la epifanía de los Reyes Magos y el bau-tismo de Jesús (también por el desconocimiento de cuál era la fecha exacta). Se les atribuye al emperador Constantino el Grande y al papa Julio I el hecho de querer cristianizar la fiesta pagana más popular que existía en Roma: ‘Las Saturnales’ (que llevaban más de seis siglos celebrándose coincidiendo con el solsticio de invierno) y se decidió que la celebración de la Navidad debía coincidir con la fecha en la que se homenajeaba al ‘Sol Invictus’*, una fiesta que se realizaba el 25 de diciembre para celebrar la llegada de más horas de luz tras la entrada del invierno.Alfred López. En los días de celebraciones navideñas, nos pasamos la mayor parte del tiempo alrede-dor de la mesa, compartiendo con la fami-lia y las amistades, la comida y la bebida. Al final depende de muchos factores, tex-turas, grasas, acidez, dulzor, temperatura del guiso. A un guiso graso con verduras, le ven-dría bien un rioja crianza por ejemplo, un buen lechazo o cochinillo ( aunque parezca un tópico ) le encajaría un ribera del Due-ro, un rabo de toro o unas carrilleras, lo veo con un vino alicantino con base de monas-trell, algo de carne blanca (pollo o conejo) con un cosechero o un roble. A un chuletón con cualquier crianza o reserva de calidad le puede venir fantástico. A la caza vinos de la Mancha, Madrid, Manchuela, vinos expresi-vos y con carácter

¿Cuál es tu preferencia por las variedades del vino?Depende de muchos factores en tintas y por la zona que representa una de las que más me enamoran es la monastrell, es dura, ex-presiva, te dice todo lo que puede dar el te-rruar, si la tratas con mimo te puede dar una gran calidad, el problema es que no es de larga crianza, en cambio si nos vamos a una merlot de burdeos también es muy expresi-va, pero no tiene tanta fruta como la monas-trell, pero si mas vida tiene una acidez más elevada que al fin y al cabo es lo que la hace estar viva. Nos podríamos ir hay una Syrah australiana o una Malbec argentina, o una Cabernet Sauvignon californiana, en cada sitio si la viña encaja bien, se mantiene y se experimenta para al final tratar de sacar lo mejor de sí misma

¿En qué consiste exactamente el trabajo de un sumiller? El mundo del sumiller no es solamente el vino, es una parte importante pero no es la única, tenemos por medio, destilados, in-fusiones, aguas, cervezas, chacineria, y un largo etc., es el conocimiento de la alimenta-ción y de la bebida, la gestión y organización así como las compras del restaurante, para que este en perfecta organización. La gestión de la bodega para tener nuestras bebidas bien organizadas y en óptimas condiciones de venta, estar en constante conocimien-to de los productos para su actualización y c o m - pra, y generar

El jamón es un producto apreciado por la mayoría de las personas, edades y naciona-lidades. Se consume en casi todo el planeta. Y los españoles podemos estar bien orgu-llosos, pues estamos considerados como los mejores del mundo. Si has decidido comprar una pata de jamón para estas navidades, tie-nes que saber las opciones que te ofrece el mercado.Hay tres aspectos clave que determinan la calidad del jamón y también su precio final: la genética del animal, el tiempo de curación del producto y la alimentación que recibe el animal durante los últimos 60 días de vida. La publicación del Real Decreto 1469/2007, por el que se aprueba la norma de calidad para la carne, el jamón, la paleta y la caña de lomo ibéricos dice que en el matadero los jamones y paletas de cada lote de pro-ductos obtenidos de animales sacrificados a partir de la entrada en vigor del presente Real decreto, se identificarán, con un pre-cinto inviolable que será de distinto color para cada denominación de venta

Existen tres tipos diferentes de jamón, dos de jamón ibérico, llamados de cebo y de be-llota, y el jamón serrano. No todas las formas son correctas, pues de-pendiendo de la forma que elijamos, el pro-ducto puede perder gran parte de sus pro-piedades nutricionales, y su sabor.

Dos formas habituales y poco recomenda-bles son: en el microondas y dejar el alimen-to congelado fuera del frigorífico a tempera-tura ambiente.

¡La mejor forma para descongelar un pro-ducto, es colocándolo en el frigorífico el tiempo necesario para que se vaya descon-gelando lentamente hasta que lo tengamos que consumir. El producto congelado lo sa-caremos del congelador, y lo pondremos en el espacio de la nevera donde habitualmen-te dejamos el resto de alimentos, sobre una bandeja provista de una rejilla, para recoger el agua que pueda soltar.

Colocándolos en el refrigerador, consegui-remos una descongelación prolongada, don-de los cambios de temperatura son lentos y por tanto, las propiedades del producto se mantienen casi inalteradas.

Los alimentos que vamos a descongelar se pondrán en un recipiente adecuado que permita escurrir los líquidos sin que estén en contacto con el alimento, para no crear cultivo de bacterias.

Como descongelar el mariscoLos crustáceos como gambas, cigalas etc de-ben descongelarse sumergidos en agua de mar. Para lograr que el agua corriente tenga la misma proporción de sal que el agua de mar pondremos un huevo crudo en el agua e iremos añadiendo sal hasta que el huevo flote, entonces ya podremos colocar en ella las gambas u otros crustáceos congelados y meter el recipiente en el frigorífico para que se vayan descongelando.

¿Y las verduras?No es necesario descongelar las hortalizas. Podemos introducirlas congeladas en el agua hirviendo para cocerlas, o en el acei-

Las mujeres solteras de Gran Bretaña e Italia, la noche de San Valentín se le-vantan impacientes antes del amanecer y se paran frente a la ventana esperando a que un hombre pase. El Karting es un deporte automovilístico que se practica con karts en circuitos ho-mologados y en el que el esfuerzo es con-tinuo si deseas alcanzar un puesto en las competiciones.Entrevistamos a James Drury, un piloto de Karting que empezó en el año 2012, con 9 años, en la categoría de Alevín (niños de 7-10 años), no tenía nada de experiencia pero se hizo un hueco en la Winter Cup Levante de Murcia, corriendo en circuitos como La manga, Villena, Jumilla, Albaida, etc. tras entrenamientos duros de 3-4 veces a la semana, llegó a ser subcampeón de este campeonato. Al año siguiente en el 2013, paso a la ca-tegoría de Cadete ( niños de 10-13 años), participando en la Copa Valles Mediterrá-neo, en el Campeonato Murciano....donde hubo muchas victorias y podios. En el año 2014, se estrenó a nivel Nacional en el campeonato Rotax de España, con todos los mejores pilotos a nivel español, para ser exactos 34 pilotos en pista!!! Éste año le sirvió mucho para su aprendizaje, con muy buenos resultados y llegando a la 10ª posición. Recorrió circuitos por toda

España Motorland y Alcañiz en Aragón, Recas en Toledo, Zuera en Zaragoza, Ches-te y Chiva en Valencia, Castellón, Murcia y en Alicante. Motorland es uno de sus cir-cuitos favoritos.Ya en el año 2015 James pegó un estirón y con 13 años volvió a cambiar de categoría, ésta vez Junior (niños de 13-16 años) parti-cipando en el campeonato de la Comunitat Valenciana, luchando siempre delante con los mejores pilotos...siempre 3º hasta que un accidente antes de la última prueba, le costó el tercer puesto, quedando cuarto.Para 2016, tiene previsto hacer el Campeo-nato de España, para ello esperan ayuda de patrocinadores, ya que en éste deporte nada es barato!!!El karting suele ser un trampolín para lle-gar a una carrera deportiva del motor. Mi-chael Schumacher, Mika Häkkinen, Kimi Räikkönen, Fernando Alonso y otros mu-chos de los actuales pilotos de fórmula1 se iniciaron en los karts. James ¿Sueñas con ser un piloto de fórmula 1 cuando tengas la edad? Si, de mayor me encantaría ser pilo-to de Rally, GranTurismo...o por supuesto Formula 1, aunque “Este mundillo es muy

complicado”¿Es obligatorio tener una licencia para competir? Para correr es necesaria una Li-cencia de Karting, a través de la Real Fe-deración Española de Automovilismo, que dura 1 año, y luego se renueva.¿Es muy caro este deporte? Barato no es, para el equipamiento te hace falta casco, sotocasco, protector de cuello o collarín, mono, chaleco protector de costillas, guan-tes y botas de caña alta, y a parte hay que tener en cuenta lo más importante, el Kart, motores, neumáticos, muchos recambios... viajes y por supuesto si llega un buen equi-po de Karting claro, que también asciende desde 500€ hasta 1.500€ por fin de semana.Y ¿Qué me cuentas de la preparación físi-ca? Que hay que estar muy en forma, el Karting requiere también mucha concen-tración ya que los entrenamientos y ca-rreras a nivel nacional suelen durar entre 3-4 días, yo entreno con mi bicicleta, hago abdominales y levanto pesos muy ligeros. James presiento que vas a tener un gran fu-turo en tu carrera automovilística y desde luego te deseamos que se cumplan todos tus sueños.

Karting is a motor sport that is practiced in approved kart circuit and in which the effort is continuous if you want to reach a place in the competition.We interviewed James Drury, a Karting pilot who began in 2012, with 9 years in the juvenile category (ages 7-10), he had no experience but earned a spot in the Winter Cup Levante Murcia, running on tracks such as La Manga, Villena, Jumilla, Albaida, etc. after hard workouts 3-4 times a week, he became the championship run-ner-up.The next year, in 2013, he steped up to Ca-det category (children 10-13 years), parti-cipating in the Valles Mediterranean Cup ,Championship in Murcia .... where there were many victories and podiums.In 2014, he opens nationwide in the Rotax championship of Spain, with all the best drivers of the Spanish level, to be exact 34 riders on the road!!! some people imagine. We recommend it after the age of 30. It is administered in the spe-cified zone and the effect becomes apparent after 5 days lasting for some 6 months. Two treatments are recommended per year.

Does it have secondary effects?It depends on the patient. Some people expe-rience bruising and headache. If it is not ad-ministered correctly it can produce a collapse of the eyelids.

The other is PRP enriched plasma or Dra-cula treatment. This regenerates skin cells and has an anti-ageing effect. Blood id taken from the patient and processed centrifuga-lly separating plasma and platelets from red cells. This treatment requires three sessions and one every 6 months.

Sin embargo, no todos los usos que se le pue-den dar a un Dron tienen que ver con opera-ciones peligrosas o industriales, ya que desde hace unos años, existen en el mercado una in-finidad de modelos de distintas formas, tama-ños y características diseñados de cara al uso recreativo como la fotografía, vídeo y juegos de realidad aumentada y lo más importante, diseñados para todos los bolsillos. La mayo-ría de Drones tienen motores eléctricos ali-mentados por una batería recargable y llevan incorporada una cámara de alta definición e iluminación LED. Además, son muy fáciles de utilizar porque son muy estables y pueden despegar y aterrizar verticalmente.
