A life in the kitchen was never Rachel’s plan but her parents’ suggestion that she leave Dublin and begin a 12-week course at

Darina Allen’s Ballymaloe Cookery School in 1990 set the course for her future. She had her sights set on travelling and fi nding her way to train in shoe or fashion design but the advice was that she should learn to cook fi rst, to support herself on her travels. She enrolled at Ballymaloe and never left. The experience opened her eyes to a whole kind of life she had never imagined, a city girl who never imagined living in the country.

Darina’s son who was also a chef in training; Rachel found a passion for teaching and for inspiring others to cook. This has become her life’s work – be it through TV, writing or teaching. It was a case of history repeating itself, too, as Darina had inherited the cookery school in 1983 from her mother-in-law, Myrtle Allen.

Rachel’s teaching is still her passion and what she considers to be her main occupation. Her latest book, Rachel’s Everyday Kitchen, complements the course she is currently teaching at Ballymoe. What defi nes this and sets it apart from the in-vogue swell of cookery books offering simple solutions for quick, frugal cooking at home? Rachel is fi rst and foremost a

cookery teacher, not a chef. For more than 20 years she has been hearing, fi rst-hand, the questions that people have, she knows what needs explaining properly and when writing, she is very clever about giving instructions. The book is about weekly planning, wasting less, freezing more and preparing ahead – whether it’s meals for two, the family or a dinner party.

Rachel’s other books include Bake, Rachel’s Favourite Food at Home, Easy Meals, Cake and Rachel’s Food for Living, and in September Sweet Treats will be released. In all of her books, Rachel’s focus is on nutritious family cooking, and recipes that are tried and tested; her creativity often begins at the beautiful table

Steak FajitasThis is one of my family’s favourite feasts.

MAKES 8 FAJITAS

1-2 fl ank or skirt steaks (about 400g/I4oz in total) 1-2 tbsp olive oil8 x 20cm (8in) diameter wheat-fl our tortillas

FOR THE MARINADE

Juice of 1 lime 2 tbsp olive oil2 cloves of garlic, peeled and crushed or fi nely grated

1 tsp freshly-ground cumin1 tsp freshly-ground coriander 1 fresh green chilli pepper, deseeded (optional)and fi nely choppedHandful of fresh coriander (leaves and small stems), chopped

FOR THE REFRIED BLACK BEANS

50g (2oz) butter1 large red onion, peeled and fi nely chopped 2-4 cloves of garlic, peeled and very fi nely chopped1 fresh red chilli pepper, deseeded and fi nely chopped

1 tsp freshly-ground cumin 1x 400g tin of black or pinto beans, drained and rinsed,

or 125g (4½oz) dried beans, soaked and cooked75ml (3fl oz) vegetable or chicken stock or waterSalt and freshly-ground black pepper

TO SERVE

1 quantity of tomato salsa 1 quantity of guacamole 250g (9oz) sour cream or crème frâiche 175g (6oz) Cheddar cheese, gratedLime wedges (optional)

Mix all the ingredients for the marinade in a shallow

bowl, add the steak and coat in the mixture. Cover and

place in the fridge for at least an hour, or up to 3 hours.

Shortly before the steak has fi nished marinating,

prepare the refried black beans. Melt the butter in a

wide saucepan or frying pan on a medium heat, then

add the onion, garlic, chilli and cumin. Gently fry for 6-8

mins or until soft and slightly golden around the edges.

Tip the cooked beans into the pan and continue to cook

the mixture, uncovered, for 3 mins or until hot through.

Using a potato masher or fork, mash the bean

mixture, keeping it chunky and not too smooth. Pour in

the stock, then bring to a simmer and cook for 4-5 mins,

uncovered, until the mixture is quite thick. Season to

taste with salt and pepper and keep in the pan until

you’re ready to serve.

When the steak has fi nished marinating, place a

griddle pan or a frying pan on a high heat for about 5

minutes to heat up. Add the olive oil, then add the steak

with any marinade coating it. Season with salt and

pepper and cook for a few minutes on each side.

Remove from heat and allow to rest for 5 mins before

cutting into slices, and dividing the steak slices between

the tortillas, adding a spoonful of refried black beans,

tomato salsa and guacamole, along with a dollop of

sour cream and grated cheese. Fold the tortilla in, then

place two fajitas on each plate!

her husband designed, the centrepiece of their family kitchen in County Cork. The family lives in the grounds of the school’s farm and so fresh ingredients are always on hand and wellies are as much part of Rachel’s life as an apron. Always at the ready to collect eggs, pick fruit and tend to vegetables with their three children, Josh, Lukka and Scarlett, it’s all about making the most of what she has and fi nding true satisfaction and enjoyment in cooking.

Has simplicity always been your preferred approach? Is it the Irish approach?When I fi rst started cooking I went through a brief phase of exploring what had been called “nouvelle cuisine.” I was interested in it but I wasn’t sure if that was the path I wanted to follow. Over time, I realised that simple, ingredients-led food was the approach I wanted to take. It’s certainly something we teach here in Ireland at the Ballymaloe Cookery School.

What would feature on your most loved, purely-Irish three-course menu?Hot smoked salmon from the Burren Smokehouse with baby beetroot, Ardsallagh goat’s cheese and a drizzle of our local honey. Then roast pork belly from our pigs at the cookery school with local black pudding, apple sauce from the apples in my garden and some freshly-dug potatoes. Dessert would be a fl uffy meringue with softly-whipped cream and my home-grown raspberries.

Nurturing the experience of cooking and eating seems to be a common theme in your books – do you cook for your wellbeing above and beyond your career?Cooking for my wellbeing and for that of my family is to me much more important than my career.

What style of cooking, or course brings out your creativity the most?I like the restraint needed with starters and carefully creating just a taste. I do adore desserts as well, though, and will happily spend hours making them.

Where do you see your next challenges – are there skills or techniques you still want to learn or perfect?I’m becoming more and more interested in the gardening side of food. I do grow a lot of my own vegetables but I’d really like to grow more and plant new and different crops. We offer a Garden Workshop at Ballymoe now, including compost making and soil management, designing a herb garden and seed saving.

You’re a fan of Nigel Slater but are there any less well-known chefs you follow with interest?

I follow a lot of different people with interest. There’s an inspiring landscape of cooks right now. I’m constantly inspired by other chefs including Dan Lepard, Paul Flynn and so many more.

For those watching cookery demonstrations, surely it’s never easy trying to recreate what you’ve seen a professional do.You might not be able to take in everything but you can usually take at least one thing from a demo, even if it’s just one small element of the dish or a few tips. That way it’s not a waste of time and is still worth your while.

The whole concept of network-connected ‘Smart’ devices sounds futuristic, but they are appearing all around us, from remote thermometers tracking cattle in New Zealand, to Google Glass in California, to fridges in Germany that order your shopping for you.

Beneath the radar, JT is an innovator in this fi eld and as such is playing a key role in some big changes taking place in the UK. The idea is simple: take a car and add GPS equipment for location, a SIM card to communicate to the cellular network, and accelerometers to measure speed, braking and cornering.
