1. Preheat oven to 375 degrees F. Spray12 cup muffin pan with nonstick cooking spray. Set aside. 2. In a large bowl, combine ham, sautéed vegetables and cheese. Divide the mixture evenly among muffin tins. 3. In a bowl, whisk together eggs, milk, salt and pepper. Pour egg mixture over the ham and vegetable mixture, filling each muffin tin to the top. 4. Bake for 25 to 30 minutes or until the tops are firm to the touch and an inserted toothpick comes out clean. Remove from the oven and set aside for 5 minutes before removing from pan. Serve warm.
5. Store leftover omelets in an airtight container in the refrigerator for up to 4 days. Reheat in a microwave oven for 20-40 seconds.

Note: Omelets can be served on a toasted English muffin, bagel or other bread for a breakfast sandwich. This is a great use for leftover ham.
• 1 cup diced ham • 2½ cups any chopped, sautéed fresh vegetables (such as: mushrooms, bell peppers, tomatoes, spinach) • 1 cup shredded low-fat cheddar cheese
• 9 large eggs • ¼ cup low-fat milk • ¼ teaspoon salt
• ¼ teaspoon black pepper

Individual Food items needed: Churches and individuals we are in need of indi-vidual food items (no cans have soup please) to put in our back packs that go home on the weekend for those receiving the backpacks. We have approximately six more weeks that we need food for. If you have food to donate drop them off at the Extension office any time Monday-Friday from 8:00 a.m.-4:30 p.m. We greatly appreciate all the food or money that has been donated since October... Feed the Children is sponsored by the Wolfe County Extension Service and Community Ed-ucator from the Wolfe County School System and local churches, homemakers and concerned individuals. Volunteers Needed
The Wolfe County Extension Service will be presenting a program called “Truth and Conse-quences: The Choice is Yours” for freshmen and seniors at Wolfe County High School on Thursday, April 14
th from 8:30 a.m.-12:00 noon. The program teaches youth about the dangers
of substance abuse and the consequences that comes with such choices and behaviors. We are in need of volunteers to help with various areas of this program. If interests in helping please contact Ann Hollon at 668-3712 or [email protected]. All those who volunteer to help will receive a nice lunch. Please let us know by Monday, April 4
th if you plan on volunteering .
