Introduction
AnumberofpeoplehaveaskedmetowriteasimplepaperconcerningwhyIapparentlylost30
poundsoffatwithouteffort.Thispaperistheresult.Itsnotfancy,writteninPoMoBabble,ora
registerthatfewacademicsorpriestsunderstand,butinasimple,straightforward,directway.
ThatdoesntmeanthattheresnotagooddealofresearchorunderstandinginwhatImabout
to say, its just that Ive noticed that people tend to use logic to justify their emotions. Ive
noticed this particularly in academia (18 years of tertiary education can do that to you). It
soundslikeanoxymoron,butsmartpeopleareprettystupid.Thewordstupiddoesntmean
unintelligent;itmeansunawareofyoursurroundings:inastupor.Wealldothistosomeextent.
We are comfortable with the things that surround us. We like them. Any change in our
environmentorthewaythatweorganizeourworldcausesusmilddistress.Yet,ourbehaviourdoes notmake any sense tosomeonewhohas amoredistant perspective. This,then, isthe
purposeofthislittlemanual:togiveaheadoutofthesand,largerperspectivetooureating
habitsinoursocietytoday.
Inessence,Ivefoundoutthatthemajorityofproblemsthatwearefacingwithregardtodiet
andhealthinourlivestodayisduetotheslowmovingchangeawayfromthedietthatwewere
designedtoeatbynatureandmovingtowardfoodthatisconvenienttostore.Wedeveloped
thesestoragetechniquesinNorthernEuropetogiveussomethingto eatduringthefamineof
winter. To do this,weve had to change the very nature of the food so that it wont decay.
Unfortunately,thistransmogrification(asCalvinandHobbeswouldsay)altersyourbodyafter
youingestit.Youarewhatyoueat.Moresimply,ifyoupreservecucumbersbyputtingtheminachemicalbathandtheneatthem,youpickleyourself.Theresultisfarfromhumorous.Incidence
ofcancer,CeliacDisease,IrritableBowelSyndrome,CrohnsDisease,AcidReflux,andespecially
obesityetc.areexplodingoutofcontrol,particularlywherepeopleeatfaminefood.Thegood
news is that the problem is clearly identifiable and easily eliminated. Really; its easy. The
problem is that youhave tochange the way that you thinkand eat in order to regain your
health.Youhavetoreorganizeyourheadandunderstandthattheveryfoodthatcomfortsyou
becauseitisfamiliarisunnaturalandshouldntbefamiliaratall.

Background
Therearemanyways tochange thewaythat you think.Manywould thinkthatschooling is
important. While thats true in many cases, its not true here. Tertiary education is not
concernedwithexploration,butbygivingstudentsthetoolstodotheirownsearchingintheir
fieldofstudywhenworking.Ivefoundthat,whiletryingtoimproveoneselfthroughformal
educationisimportant,thegreatestbenefitisactuallytravel.Whenyouliveinaforeignculture
forawhile,yourmindbecomesaccustomedtohowpeoplethinkinthatplace.Whenyoucome
home,peopleseemabitoff.Younoticethattheydooddthings.Forexample,crosswalklaws
inCanadakillaboutathousandpeopleayear.Therearesomanypeoplewhodieatcrosswalks
thattheaverageCanadianknowsthatchildrenandoldpeoplearemostlikelytobekilledthere.
TheaveragepersonintheUnitedStatesdoesnotknowthis.Theydontknowthisbecauseno
one dies at crosswalks or when crossing the road. Why is this? The answer is obvious.
Unfortunately, thesolutionwouldinfuriatea Canadian.Heresanotherexample: thousandsof
people die in the United States fromhandguns.Preventing this is simple.Unfortunately, the
solutionwouldinfuriateaU.S.citizen.Therearemany,manymoreexamples.Theproblemwith
allofthesolutionsisthattheproblemislinkedtodeepersocialissues.Ifyouchangeonething,
theresafloodofrepercussions.Theproblemsarealsotiedtohabitsthatarecomfortable.
Irememberreadingasentenceinanoldbookonce.Thatsunusual;younormallyjustgraspan
ideaandmoveonquickly.Heresthesentencewhosesourceisnowlosttomypast:Notonly
people,butotheranimalsarealsoaffectedbythiscondition.Thesentenceisabitodd.Itdidnt
read,Notonlypeople,butanimalsarealsoaffectedbythiscondition.Hmm.Oddthat.Sothere
arepeoplewhoareanimals,andotheranimals.Thatmeansthatwereanimals.Whatastriking
thought.Wearenttaughttothinkthisway.Sohowdoanimalslive?Howdotheyeat?Ifanimals
eataccordingtotheirnature,whatisournatureashumananimals?Howshouldweeat?Howdowebehaveasanimals?Dootheranimalshavehabits?Dowehavehabits?Aretheythesame?
Ifwestudyotheranimals,canwethenseeourownhabitsinthem,orcanwebecomeaware
thatwehavehabitsthathavebecomedestructivebecausetheyaredifferentthanotheranimals
habits?Howdo youbreak ananimal fromadestructive habit? Howcanwebreakourselves
fromabadhabit?Thefirststepincuringabadhabitisknowingthatthehabitisdestructivein
thefirstplace.Thenextstepistrainingtheanimaltochangeitshabits.Thesestepsaredifficult
tofollowifyou,yourself,aretheanimal.
Letme give you an example of why the first step of knowing that a habit is destructive is
difficulttobecomeknowntous.Imetagirlandtookheroutonadate.Itstartedoffwell,but
slowlybecameawkwardforsomeunknownreason.Itookherhome.Shementionedinthecar,You know, I really wish would wouldnt drink (alcohol). That was weird. I only had two
glassesofwine;mybloodalcohollimitwaswithinthelimitofthelaw.SoIwenttoseemyfriend
Markand askedhim ifmypersonalitychangedafterone drink.Hesaid, Yeah in that Duh,
obviouslytoneofvoice.Yousee,Iwasnotawareofmybodychanging.Therestaurantwasnt
changing; the walls stayed the same colour; the lightingwas the same. Iwas looking at the
world throughmyown eyes and theworldwasnt changing. Howwas I toknow orbecome
awarethatmybodywaschanging?Wearerarelyintellectuallyawareofourshiftingemotions.
HeresanotherexamplethathappensallthetimewhereIlive.Iwastalkingtoagirlwhosaid,
YouknowAndy,yourecriticalperson.Butletmesaythis...andsheproceededtocriticiseme
tonoend.Anothertime,Iwalkeduptoadrunkpersonwhosaid,Andy,youredrunk.Whydo

yougetdrunkallthetime?Ihadnthadadrop.Anothertime,Iwaswatchingapoolgame.A
womanwalkedup tomeandsaid, Youknow, Iwishyoudstopstaringatmeallthetime.I
didntnowthatsheexistedandcouldntcareless.Ineachofthesecases,theproblemwiththe
person came fromwithin that person.They had a reaction to theirenvironment and looked
outsideoftheirbodiestoseewhatwasgoingon.Thefirstpersonwantedtocriticiseme;the
second as drunk; the third had a sexual response to me. In each of these people, their
subconsciousbrainprocessedexternalstimuliandproducedanemotionalshiftinthemwithout
informing the intellectual, thinkingpart of their brainofwhatwas goingon. So they looked
outsidetheirbodiesforthecauseoftheemotioninsteadofrealizingthatitwasbeinggenerated
insidethemselveswithouttheirconsciousbrainbeingawareofit.Sothefirststepincuringa
badhabitisknowingthatthehabitisdestructiveinthefirstplace,whichisdifficultbecauseyou
arenotawareofyourownhabitsandhoworwhyyoubehavethewaythatyoudo;evenifyou
dobecomeawareofsuchhabits,howcanyouchangeahabit?
Letssaythateventuallyyoubecomeawareofthatyouhavedevelopedadestructivehabit.How
doyouchange?Ah,nowhereiswheretravellingtoforeigncultureschangedmyunderstandingandmakeswhatIhavetosaymoredifficultforyoutounderstand.Wereanimals;therefore,we
cantchange things throughdintofwill. That is, you cantputyourmind toit and decide to
changeahabit.Itdoesntwork.Willpowerisamyth.
Intellectvs.Conditioning:
Heresanexampleofhowourperceptionsandcultureconspiretolimitusfrommakingpositive
changesinourlives.WhenIwasyounger,Igotadegreeinphysicsandmath.Iwantedtoshow
peoplethatIwassmart,pleasemyparents,andgetahighpayingjob.InowrealizethatIwas
justterriblyfrightened.Ithenservedasanavalofficerforseven,hard,painful,lonelyyears.
Later,inmythirties,IwentandgotafullscholarshipandAssistantshiptogetaMastersdegree
inMusicwithaspecialty ofVocal PerformanceinOpera. Abitdifferent youmightsay from
physics.Ithenmadeabigmistake(ordidI?).IdecidedtobethebestoperasingerIcouldbe,so
Itrainedtobeagoodactor.IstudiedtheMeisnerTechniqueofStanislavskiacting.Method
actingisayoungerformofthistypeofactingthatmostpeoplehaveheardof.Iwasfortunateto
betaughtbyastudentofStellaAdler,thepersonwhobroughtStanislavskisideastoherfriend,
Stanford Meisner. I have to say; I now knowwhat apostolicmeans. When you work that
closelywithsomeonewhowassoclosetotheoriginofamovement,somethingrubsoffonyou.
Asmostpeopleknow,thestandardofactinginoperaisexceedinglylow.Youdthinkthatwhat
Idlearnedwouldhavehelpedmeintheoperaticworld.Itdidnt.Itmadethingsworse.Yousee,opera singers live in a culture, just as you live in yours. It is as unacceptable for me to

and how others perceive that. In the very end, British acting and singing is inferior to
StanislavskiactingandOldItalianschoolsinging.Theformerisintellectualbased;thelatteris
emotionalbased,oratleastwithanunderstandingofhowweareconditioned.
SowithPantomimeActing,youlearnyourwordswithaninflectionorattitudethatyouthinkis
correct,calledaLineReading(wherewegettheexpressionofgivingalinetosomeoneinabar).Thenthepitchandvolumethatyouvechosenbecomeonewiththewords.Itsthenahabit
andcannotbeeasilychanged.Then,whenyouspeakthewordswithyourpartneronstagefor
thefirsttime,thegiveandtakeofvolumeandinflectionbetweenthetwoofyoudontoccuras
wouldinarealisticconversation.Notonlythat,butoncethelinereadingislearned,itisalmost
impossible tochange.Itis nowa partofyou.So,ifyoulearned a lineasanangrystatement
whenyouwereathomeandthenfindoutthatitwasmeantasasarcasticcomment,youhavea
bigproblem.Yourspeechhasbecomeahabit,anditwillbealmostimpossibletochangeit.
Hereshowthisrelatestodiet:withtheMeisnerTechnique(Stanislavskiacting),youknowthat
linereadingconditioningresultsinbadacting.Soyoupreparememorizingyourwordswiththe
understandingthatyouareacreatureofhabit.Thesolutionisto learnthewordswithoutanyattitude,and,whatstrulystrangeforaPantomimeactor,withoutstagedirection.Yousimply
placeinyourheadanimaginarysetofcircumstances(givencircumstances)thatsurroundthe
character youre playing, and thenact (literally) accordingly, without any preconceptions of
whatyouwilldo.ThisisperhapswhyStanislavskiactingisonlypracticedmypeoplewhoare
onthefringeofsociety.Thestyleimpliesthattheonlydifferencebetweenanytwopeopleis
howtheyseethemselvesintheirworld.Environmentwinsovergenetics.Thereisnodifference
between awhore and your daughter, Jesusand JeffreyDahlmer,Mother Teressa and Hitler.
They are the same; they merely see themselves in their world differently. So beware. The
differencebetweenyouandsomeoneyoumayrevileismicroscopicallysmall.Thatisnothow
wearetrainedtothinkinourmaterialisticsocietytoday.Wetrytoseparateourselvesfromugly,uneducated,lowclasspeople.Whowantstoleadabeggarslife?Unfortunately,ifyoudont
understand and acknowledge your animal, habitual nature, youmay startto behave like the
verypeopleyourevile.Ifyoudontacknowledgeyourhabitualnature,youcanneverchange
yourcircumstancesandtherebyaffectpositivechangeinyourlife.
WhoWeAre(OurGivenCircumstances)
Weareanimals.Weeatfood;wepoop.Wesweat,throwup,arefrightened,love,hate,getangry,
andgethungry.Thedifferencebetweenhumanferalanimalsandcivilizedhumanbeingsishow
weareconditionedbyourparentsandsociety.Ourflesh,ourminds,ourinstincts,ourbrainsandemotionalreactionsarehardwiredintousandnotonlyarebeyondourabilitytochange,
but are part of what we admire in others. For example, when someone is valorous, loyal,
trustworthy,loving,protective,etc.,thoseareroot,animalemotions,not thatofsome learned
sophisticated,civilizedethos.Inshort,weneedtounderstandwhoweareandwhywedothe
thingsthatwedosothatwecanseehowourconditions(givencircumstances)havechanged,
particularlyinthelastfewhundredyears.Thischangehascausedmassiveandprofoundun
health in us as a species. Once we know what that root creature is, we can see how our
circumstances over the last few hundred years and changed, and then change them back to
produceapositiveresult.
Deconstructingwhowehavebecomebacktoouroriginsisdifficult.Weareslatheredinour
conditioning and dont pay attention to small, nagging truths. Theyre annoying. They dont

make sense. Theyre not important (we think). If you look at who you are and your own
personalgivencircumstances,smallpointsofanomaly(pointsofconflict)areeasilydismissed
or ignored.Heres anexample: wehave small canine teeth (fangs).OK; big deal.Whocares.
Whetheryouhavebigorsmallcaninesornoneatallmeannothinginoursocietytoday.Yet,
many yearsago, it was an issueof survival. You didnt eat what youcouldnteat. Our teeth
dictatedwhatwecouldeat.Insocietytoday,thefoodissoftandwehaveknifesandmachinesto
mechanicallybreakthingsdown.Sowenoweatthingsthatwecouldnteatathousandyears
ago.Yet, the humananimal has not changedmuch in the last nine thousandyears.Wehave
machinestodoworkforus,andwehaveaccumulatedmachines,oneontopoftheother,yetour
brainsandbodieshavenotchangedonebit.Wearegeneticallythesame.Ourfoodhaschanged,
andwehavebecomeunhealthy.
LetscontinuewiththecanineteethreferenceIjustmade.Wehavecanineteeth,buttheyare
not large.Omnivoresandcarnivores allhavethese teeth,but theyare longer forcarnivores.
Theyare designedto rip the fleshoffoflarge animals.That balltugginggamethatyourdog
playscanyouremember?Heputshisbumintheair,lowershisfrontlegsandbouncesupanddown,tuggingattheballinyourhand.Thatoriginatesfromwhenhewouldsinkhislongfangs
intothefleshofadeerorbison,orsomelargeanimalthatthepackbroughtdownandtugtorip
the fleshoffthebones.Wecant dothatour teetharetoo short. Ifwewerestarvingandwe
stumbleduponadeadcowlyingontheground,wedstillstarve.Wecouldntpullthefleshoffof
the animal. People might arguewith triumphant certitude that Ah ha! Thats why wehave
brainstomakeaknife!Thatsmuddledthinking.Wewerentbornwiththeknowledgetomake
knives;therefore,theconstructionofourbodiesisnotdeeplylinkedtomakingknivesandwhat
thatcanprovideforus.Feralhumansdontknowhowtomakeknives.
Speakingasascientist,onceoursocietyfoundtheknowledgetomakeknives,itaffectedour
geneticmakeup throughnatural selection:onlypeoplewhocould eat and digest the fleshoflargeanimalscouldsurviveifthatwastheonlyfoodavailable.Thathasbeguntochangeour
geneticmakeup,butonlyslightly.Ourcanineteetharestillshort.
Thisalsoworksinacontrarymanner.Youhavesmallcanineteeth.Youredesignedtoripthe
fleshoffofsmallanimalslikefowl,rodents,fish,etc.Avegetariandietisflawed.Withoutsome
protein, you will die. Vegetarians counter that there are some vegetables that are high in
protein.Unfortunately,thosevegetablesarenotavailableorgrowingthroughouttheyear.More
tothepoint,wehavecanineteeth.Ourbodiesaredesignedtoeatmeat.
Thismay seempetty.Why should anyone focussucha smallmeaningless point? But itsnot
meaningless.Noneofthepointsaremeaningless.Theyrethere,onepointafteranother.Whenyouaddthemup,theyallspellthesamestory.Werenoteatingthefoodthatweusedtoeat
thousands of years ago. In order to understand our dietary requirements, we have to
understandhowwehavemovedawayfromournaturaldiettoadietdesignedtoonlygetus
throughthefamineofwinter.Wenoweatthatfaminedietallthetime.
History
When Ive travelled toother countries,I immediatelynoticed the localdiet. One ofthemost
striking points to me was the nature of the food that was brought from Britain to
Commonwealthnations.Ialsonoticedthebrutallyoppressiveeffectithadonaboriginalpeople.For example, consider a British breakfast sausage. Im from North America, so breakfast

sausagestherearemadefrommeat,seasoning,casings(realorfauxanimalinstestine),andfat.
ThisisnotsoinCommonwealthnations.There,theyremadefromwhatappearstobebread
saturatedbyfatorbloodandputinacasing.Strange.Aflavouredbreadtube.Wheredidthis
comefrom?TheresaninterestinganswerthatIllgivelateron.
Onthe topicof strange,howaboutcheese.Why?Why dowe have cheese? ItslikewhattheFrenchsayabouttomatoketchup:why?Doyouknowhowcheeseismade?Bizarre.Tomake
cheese,youneedtoseparatemilkintocurds(solids)andwhey(liquid);rennetdoesthat.You
thentakethecurdsandprocessthatintocheese.So,thatsstrangeenoughdrinkingoreating
bovine (most often) milk product (Cheese Whiz: processed cheesefood spread). You are
weanedfromyourmotheratoneyearold,andnowitssomehownaturaltorunoutintoafield
andsuckontheudderofacowwhenyouretwenty.Strangethat.
Forcheese,youhavetoturnliquidmilkintoasolid.Alsostrange.Toreallyspinyourheadon
your shoulders, consider how rennet is made. Rennet is what you add to milk to get it to
separate into solids (curds) and liquid (whey). Rennet ismade from the stomachsof young
calves(notoldones;itsnota redundancylikebabypuppy).Right.Sotheresthisguysittingaroundwithnothingbettertodothansay,Hey,Iknowwhattodo!Illkillacalfafewdaysold,
extracttheinnermucosaofthefourthstomachchamberandaddittoitsmothersmilk.Sure.
Hey,thesolidsareseparating!MaybeifIsqueezetheexcesswaterout,thistime,something
mighthappentomakeitlastawhilewithoutspoiling.Toamodern,educatedperson,ourfood
seemstocomefromsomeoddplaces.Yet,theresareasonformakingcheeseandareasonfor
whyandhowitdeveloped;wevejustforgottenthosereasons.Weveforgottenalotaboutwhy
weeatthefoodsthatwedo.Soletstakealookatlifealongtimeagoand,likeanactor,createin
ourheadstheimaginarycircumstancesthatsurroundedpeoplewhocouldhaveintentionally
createdsomethingasweirdascheese.
Imagine the world as itwas nine thousand yearsago. Therehad been a slowmovementof
peoplefromtheAfricatotheMideasttoEuropeandthenNorthernEurope.Thelandbeganto
bedifferentfarthernorth.Itwascold.Nothinggrewinthewintertime.Thiswasntthecasein
SouthernEurope.WhenIwasinSicilyandItaly,theyhadtwotothreegrowingseasons.That
doesnt happen farthernorth. Inmostnorthernareas, thewinter andsnowaresynonymous
terms. Scholars talk about huntergatherers butmost people dontconsider that the act of
gathering changes as the seasons, particularly in the north (or south, if youre below the
southernequator),change.
Soimagineyourselfstandingoutsideyourshack,cave,orrudeblackhouse(stonehut)inthe
dead of winter. Youre hungry. What will you eat? Before winter, therewere green plants,runningbunnies,swimmingfish.Nowtheresnothingmoving.Everythingiswhiteorbrown.
Youcanthibernate,andyourenotasquirrelsoyouhaventstoredanynuts;orhaveyou?What
canyoudotostorefoodthatwilllastuntilthespringandsummer?Whatfooddoesntrot?Well,
Ijustmentionedsquirrels,soyouvegotnutsonyourmind.Thatworks.Whatelsedoesntrot?
Seeds;seedsdontrot.Unfortunately,theyremademostlyofstarch,soyoucantreallydigest
themandpullenergyfromthem.Butarentweclever?Ifyoutakegrassseedwhichyoucant
digest well, grind it, and add yeast (small bugs), they can change the starch to a type of
carbohydrate.ThebugsbelchoutCO2andpoopoutcarbohydrate.Breadisaprocessedfood.Its
heatedupbugshit.Rufflespotatochipsarelessprocessed.
OK,bugpoopisnotenoughtosustainyou;youneedsomeprotein.Youlookaround.Theres
twofeetofsnowontheground.Youneedsomemeat;whatareyougoingtoeat?Ifyoukillone

of your livestock, youd seriously eat (pun intended) into your wealth. A dead animal cant
produceoffspring.Notonlythat,butiftheweatherwarmsup,themeatwillspoil,anditwillgo
towaste.Youneedsomeproteinforthefamineofwinter.Sinceyoudontwanttoeatintoyour
principalinvestmentofyourlivestock,youcanliveofftheinterest.Youeitherbleedyouranimal
(addingittobreadandputtingitinacasingcalledblackpudding)ormilkit.Nowthepurpose
of having dairy products and livestock in general becomes clear. Its a gimmick to get you
throughwinter.Itsbadforyou,butitsenoughuntilspringcomes.Unfortunately,wereeating
anddrinkingthisfaminefoodproteinallthetimenow.
Ifyoustandbackandlookatit,winterfaminefoodisallverybadforyou.Youcanseethisby
thewayNorthernEuropeanfaminefoodadverselyaffectspeoplefromothergeographicalareas
of the world. Ive seen this up front and personal. If you understand natural selection, this
impactmakessense.
Evenifyoudontbelieveinevolution,youwouldhavetoadmitthattherearesmallethnictraits
associatedwithagroupofpeoplewholiveinacertainarea.Thosevariabilitiesseemfittedfor
theclimateandgeographytogivepeoplelivingthereanadvantage.Ifyoubelieveinnaturalselection, the explanation is simpler and clearer. But that requires that you understand the
processofnaturalselection,andthatunderstandingisdifficulttograspbecauseithastodo
withmathematicalprobabilityandanenormoussamplesize.
If you dont know the conceptorneeda refresher,here is, roughly,how natural selection is
supposedtowork.Letssaythatsomepeoplehavejustinventedawaytosurviveinthesnowy

whocaneatthisfoodwillsurviveandreproduce.Thosethatcanttoleratethenewfooddont

Whywouldyoudothat?Followingthiscycleofnormaleating,goingonadiet,andthengoing
backtonormaleatingmeansthatyourefat,youloseweight,andthenyougetfatagain.Why
notjusteatahealthydietandfirstlynotgetfat,andthenifyouhappentogetfat,realizethat
youredietiscausingyoutobefatandthenshiftyourdiettoahealthyonesothatyouwill

dietissaturatedwithfaminefood.Eatingwholewheatbreadinsteadofwhitebreadmadewith

Atkins
TheAtkinsdietisadangerousone.Sinceitsbasictenetisthatitisadiettoloseweight,itsafad
diet.Ifyouthinkthatitisadietforlife,youhavemadeaseriousmistakethatImentioned
above. The Atkins diet came about because someone noticed that some tribal people who
primarilyhuntforfoodwerenotfat.ThesehighproteindietsarefineforEskimosbecausetheir
ancestorsperishedwhocouldnteatsuchahighproteindiet.EatinganEskimodietisasbadfor
measanaboriginaleatingmyNorthernEuropeanfaminefooddiet.Furthermore,theAtkins
highproteindietplacesyourbodyinanactivestate.Itmakesyourcellreproduceatahigh
ratewhichpromotescancerandotherdangerousconditions.Youwantyourbodytobeinan
inactivestatesothattheenergythatcomesfromthefoodthatyouareconsumingistargetedatmaintainingandrepairingyourbodyinsteadof spendingenergyon reproducingcells.Idalso
like to point out that Eskimos are being pressured into eating a balanced diet (from the
mentalityofaEuropean)andarenowgettingfatandunhealthy.

The52dietisaresultoftheobservationthatfastingcausesyourbodytobeinapassivestate
whichhasmassivelypositiveconsequences.Thefirstislongevity.Peoplewhoroutinelyfastlive
longerthanpeoplewhodonot.Ifyoufast,yourbodythinksthatthereisntmuchfoodinthe
environment, so it switches from an active state where energy from food is directed fromreproducing cells into a passive one where it repairs itself. Bad cholesterol drops; good
cholesterolincreases.Insteadoffastingcontinuouslytoproducethisresult,itwasfoundthatif
youreduceyourcaloricintaketo600caloriesadayformen,500forwomen,twodaysaweek
(nonconsecutivedays),yourbodythinksthatitsfastingandgoesintoapassivestate.Thisdiet
isnotforathletesbutformoderatelyactivepeopleandcertainlyforsedentaryones(people
whohavedeskjobs).
AfterIstoppedeatingfaminefood,mybloodsugarlevelevenedout.Mostpeopleexperienceup
anddownswingswhentheyeatbreadandotherprocessedfood.SinceIstoppedeatingthose
foods,mybodyneverhad todump largeamountsofinsulinintomy blood tohandle excess
sugar.Therewasalwaysalittlesugarthere,soIfeltgood.SowhenIfastedabit,Ireallydidnt

coaster.StoppingthisterriblerideproducedanantidotetermedTheZoneDiet.
Zone
TheZonediet(sometimesreferredtoastheCaliforniadiet)isdesignednottoloseweight,but
tomakeyouhealthybykeepingyourbloodsugarlevelwithinazone.Thelowerlimitiswhere
thereistoolittlesugarinyoubloodwhichmakesyouweakandhungry.Theupperlimitisthe
pointwherethereistoomuchsugarinyourblood.Thislatterconditionisextremelydangerous.
Yourbodydoesnothaveamechanismtopreventtoomuchfoodfrombeingprocessedinyour
intestinesandturnedintosugar.Havingfoodquicklyconvertedintosugarisnotsomethingthat
is normal in the nonprocessed/nonfamine food world. Your body does not have a way of
meteringhow fastto processthefoodthatis inyour intestines.It justdigestsitatthesame
speeditalwaysdoes.Withfaminefoodssuchasbread,itisalreadysomewhatprocessedsothe
absorptionrateisveryhigh.Soifyoueatasliceofbread,yourbodyconvertsittosugarveryquickly,sendingitintoyourblood,andraisingyourbloodsugarabovethesafezone.Atthis
point,yourbodyseesthatthereistoomuchsugarinyourbloodandgoesintoanemergency
state,sendingagreatdealofinsulinintoyourblood.Thisimmediatelylowersyourbloodsugar
level.Italsoconvertsthesugarintofat.Thisishowyougetfat.Toomuchsugarinyourbloodat
anytimetriggersthecreationoffat.Eatingfatdoesnotmakeyoufat.
Inordertokeepthebloodsugarlevelwithinthiszone,ameasurementwascreatedtohelp
peoplemanagehowquicklysugargetsintotheirblood.TheGlycemicIndex(GI)isameasureof
this.Avaluebelow55isconsideredlow,between56and69 isconsideredmedium,andabove
70isconsideredhigh.AhighGImeansthatyourbodyrapidlyabsorbsthatfoodandconvertsit
intosugar;alowGImeansthatittakestimeandisthereforesafer.Althoughlessconvenient,the
Insulin Index (II) is a better measurement tool for a person trying to eat more healthily; it
measurestheinsulinresponsetovariousfoods.Unfortunately,IIvariessomewhatbyperson
andislessaccurate.ThesimplereasonpreferringtheIIovertheGIisthattheGIonlymeasures
foodswithcarbohydrate(therearenoGIvaluesformeat).Also,whiletheGIandIIarealmost
perfectlycorrelated,theyvarysharplywithregardtodairyandbakeryproductstheverythings
thatareimportant.Researchersfound,[P]roteinrichfoodsandbakeryproducts(richinfat
andrefinedcarbohydrate)elicitedinsulinresponsesthatweredisproportionatelyhigherthan
theirglycemicresponses. 1Anotherfound,Therearesomeinstances,however,wherea food
hasalowglycemicvaluebutahighinsulinindexvalue.Thisappliestodairyfoodsandtosome

The people whoadvocate the Zone diet also noticed that combinations of carbohydrate and

A recently published book has documented the problems with wheat. The author (William
Rodale Davis) clearly documents the ill effects of wheat on our bodies today. His point is
directedmostly at how the wheat plat has undergone severe genetic manipulation that has
causedthisproblem(inhisopinion).Hemaintainsthatbread,inanyform,nowcomesfroma
geneticbasethatiscorruptanduntestedforhumans.Soanywholewheat,pumpernickel,white,
multigrain,organic,etc.breadthatyoueatwillmakeyoufat.Generallyspeaking,hescorrect.I
stopped eating bread(anddairy) andwent from205lbs to175 in threemonths. Itis often
dangeroustolosesomuchweightsoquickly,butIfeltgreatandateasmuchasIwanted.Iwas
neverhungry.
Like the Zone Diet, Daviss antiwheat diet wasnt designed necessarily to have people lose
weight.Iwasdesignedtohelppeoplewiththeirhealthissues.HemadeacommentIfoundto
resonate with me, What convinced me further were the many instances in which people
removedwheat,thenpermittedthemselvesawheatindulgence:acoupleofpretzels,acanapatacocktailparty.Withinminutes,manywouldexperiencediarrhea,jointswellingandpain,or

veryclearandobviouschoicestomake.Itrytolimitthedamagethatmybodywillsuffer.Be

Alcohol/Liquids
Thefirstthingthatafaddiettellsyoutodoistodrinkalotofwater.Oftenourbodiesare
storing something thatmightbe in short supply in the environment. If youare dehydrated,
drinkingwaterwillmakeyoubodystoptryingtohordeitandyouwillloseweight.Sothefad
dietthatyoujuststartedseemstobeworkingbecauseyoustarteddrinkingwaterandlostfive
pounds.Thatsthefirstthing.
Thesecondpointisthis.Whatdootheranimalsdrink?Water.Theydrinkwater.Howbizarreis

tablebeforeleavingthatnight.Thenhemakessurethathedrinksthewaterbeforeheliesdown

WhenIsangoperafulltime,Iheardfromadoctorwhoadvisedsingersnottodrinkflavoured
waterbeforesinging.Hesaidthatyourbodyseestheflavouredwaterasfoodandthrowsacid
intoyourstomachtodigestthefood.Forasinger,thismeansthatacidisbubblingupontoyourvocalchordsforthenexttwohours.Soyoushouldntdrinkflavouredbeveragesforatleast
threehoursbeforeyouhavetosing.Mostpeopledontnoticethisproblembecausetheydont

beverages. I stopped drinking flavoured beverages (Iwas having a cup of decaffeinated tea

Your body treats food and water in very different ways. Confusing your body by giving it
flavouredwaterdoesnothing topromote good health.Atthe very least, youshould connect
drinking water with having a food snack. When you are thirsty because you are working
(physically stressfulwork), onlydrinkwater. Ifyoudrink flavouredwater, yourbody thinks
thatitsfood.Giveyourbodywhat it needswhenitneeds it.If youre thirsty,drinkwater.If
youre hungry, eat food (unprocessed food); if you are lazing around the house and want
somethinginyourmouthtosavour,butknowthatcoffeeandteadehydratesyou,drinkaglass
ofwaterandthenhavesometeaorcoffee.

As an aside, dehydration has been linked to cancer.Most people in the United States dont
realize how fortunate they are to have the number of drinking fountains per square foot
mandated in public buildings. That is not the case in Canada. It is also mandatory for gasstationstohavepublicwashroomsintheUnitedStates.InoticedthisinCanadabecauseIjust
couldnt findwater fountains anywhere. I was just in a public library that had no drinking
fountainandalsoinalargecollegehall;bothplaceshadnodrinkingfountains.Ivealsonoticed
thatthereisamisconceptionthatdrinkingfountainsmusthaveamechanicalcoolerattached.I
find this conditionrathershortsightedanddetrimental to goodhealth.Whenyoure thirsty,
youneedwater,notreallycoldwater.Ifthewaterisverycold,youcantdrinkenoughtoquench
yourthirst.Ithurtsandyoustop.Waterfountainsshouldbeeverywherebecausetheydont
needsomeelectricpowereddevicetofunction.Youjustneedavalve(andperhapsasink)anda
drain.Whyistheresomuchemphasisinonlyhavingcooledwaterfountainsthathavetheresult

eventuallytosweetpotatoes).Wehavewhitefishreadilyavailable,soweatethat,chicken,and
nobeef(shehasntbeenabletoeatbeefinyears).Shehadnobreadandnothingfromabottle,can,orbag.Sheslowlygotbetter.Iaddedbackinnonbleachedflourbymakingbreadmyself.
Afterawhile,Iknewthatthiswasnotreallyright,butIwantedtoseeifshecouldhandleit.She

protein:carbohydrate(ZoneDiet).Ialsotriedtofollowthe52dietwhenIthoughtofit.
Afterthreemonths,Ihadlost30pounds.
Ilevelledoutabitat175.Iknewthatafewhundredyearsago,Iwouldweighmaybe155atthe
mostandsorealizedthatIwaseatingordoingsomethingwrong.IrealizedthatitwasthatIhad
beeneatingfloursubstitutes.Yousee,mostpeopleavoidwheatbecauseofthegluten,andthere
has been a massive surge in producers switching to nongluten bread products; the

CitiesandtheIndustrialMentalitytheRealProblem
In the discipline ofphysics, one of the fundamental laws of nature is that energy isneither
creatednordestroyed,justmovedaround.Ifyouthinkthatyoucancreateit,yourboundaries
are not set properly. Ifyoureset them,you findthat the energy isnotcreated/diminished.
Withfoodandhowitisgrown,ourboundarieshavebecomeconfused.Ifyouhaveanacreof

Our boundaries are porous. Ingredients are being transferred from one system to another
withoutbeingreplenished.Soallofourarable(growable)landisbecomingseriouslydenuded
ofnutrients,loweringtheabilityofthelandtoproduce.Letmegivetwoexamplesofthis.For
the first one: where I grew up, there was a plain that came down to the lake outside of
Chittenango,NY,U.S.A.Thesoilwasblackitwassorich.Theygrewonionsonit.Thelandisnot
palegreyandthecropispoor.Thenutrientsinthesoilwereshippedoffthelandtocitieswhere
peoplelived.Inanotherexample,lawmakersinNewYork(mainlyfromNYCity)decidedthat
farmersinNewYorkshouldpayataxforspreadingmanureontheirlands.Afterall,theywere
improvingthelandandweremakingitmorevaluable.Therefore,theyshouldbetaxed.Itnever
occurredtothemthatthefarmersweretryingdesperatelytoreplacewhatwasbeingshipped
off.Soenergywasbeingpreservedinalargersense.If theboundariesarebroadenedenough,
theamountoforganicmatterisconserved.But,theproblemisthatthenutrientssenttoa city
arenotreturnedtothelandwhencethenutrients(food)havebeentaken.Soifyoudrawacircle
aroundthelandwherethefoodisgrown,whatleavesasfoodshouldcomebackasfertilizer.It
doesnt.Thelandsnutrientbaseisrapidlydeclining.
Manybelievethatifweputpetroleumbasedfertilizeronthelandwherethefoodisgrown,then
a balance is made. It doesnt work that way. Petroleumbased fertilizers lack much of the
nutrients that excrement (brokendown vegetation) provides. The scientific approach in
farmingdoesnotwork.Letmegiveaparallelsituationtomakemypoint.Classicalsingerssing
badly.Weallcantellthisbecausetheyjustdontsoundright.Ivebeentrainedtoknowwhy.
Classicalsingersaretaughttosingonpurevowels.Theydissectthesung(forme,spoken)

addon ingredients. Throwing this fertilizer on the soil and then another to get the soil to
functioninordertoreplenishwhatwastakenoffsimplydoesnotwork.Youmissthings.Nature
istoocomplexforustohaveasustainablegrowsystemthroughremovingmassivequantitiesof
ingredientsthatmakeupthevolumeofvegetablesorfleshbythrowingonpetroleumproducts,
antibiotics, calcium, potash, this or that. The interfaces between all of these things are notknownandcannotbesimplisticallygenerated.
Thesolutionistoreturnorganicmatterfororganicmatteracrosstheboundaryornotallow
organicmattertocrosstheboundary.Thatmeansthatyoushouldgrowyourownfoodasmuch
aspossible.

Motivation
AsImentionedabove,Ilackedmotivationandfounditinmywife.Ihadknownwhattodofor
themost part, I just didnt care. I had been conditioned by my environment and, sincemy
environmenthadntchanged,Icouldntchange.Idgorightbacktothesameoldbehaviourthat
wascreatedbymycircumstances.Willingyourselftodosomethingisfutile.Youhavetocreate
thecircumstancesaroundyousothatyouwouldnaturallymakeahealthydecisionwhenfaced
witha choice.Mostofourlives are spentwith thebackofourbrain choosingforus,notour
intellect.
IlearnedthiswhenIwastaughtItalianschoolsingingandStanislavskiacting.Youshouldnever
force yourself to do something through force of will; it doesnt work. You have to seduce
yourself.Admittedly,thissoundsweird.Letmeexplain.
Singing is structured speech. If you make a difference between speaking and singing (as
conservatory singers are trained to do), you soundodd; in effect, youre speaking a foreign
languagethatnooneunderstands.Theonlysignificantdifferenceisthatwhenyousing,yourespeakingbydeclamation,andfewpeopletodayknowhowtospeakloudlytoassembledpeople

upahillandwalkingupahillwithstepscarvedintoit.Soheresmypoint.Whenyouareliving

seriesofpitchesthatcouldbemappedonacomputerapplication.Theproblemisthatthemusic
thatyoumightbeaskedtosingrightnowhaspitches(normallyhighones)thatareoutsideof

bodiestomakethosemandatedpitchesbyalteringafewvariables(tongueplacement,airflow,
etc.).Unfortunately,yourbodyistoocomplex,therearemanyvariablesthattheconservatory
trained singer cant produce. They might try to manage three variables at once (this is
impossible;youcanonlytrytodoonethingatanyonetimethisishowyouaretrainedtokill
peopleincombat:youshootatthemfromtwopositionsandtheyresoconfusedtheycantfight
back). Unfortunately, there are ten to a hundred variables that combine tomake that pitch
occur. Conservatory trained singers alwaysmiss those fewnagging points and so constantly
misspronouncethesoundorsingthewrongpitch.Thesolutiontotheproblemistoimaging
when youwould naturally speak that musicallymandated pitch when you are comfortably
speaking.Soifyouchangeyourattitude,thepitcheasilypopsout.Really;itworks.Theproblem
is,ifyouuseforceonyourbodyasdirectedbyyourintellect,yourbodyreactsasthoughthereis
anoutsideforcepushingyourbodytodotheactthatyourintellectwants.Inotherwords,if
someonepointedagunatyourheadandtoldyoutodosomething,yourbodygoesthroughthe
sameunconsciousresponses(calledfightorflight)asifyouuseyourwillpower.Thesolution
is to deceive your body and seduce it by setting up the circumstances around it so that it
naturallydoeswhatyouwantwithoutforce.
Withfood,youhavetocontrolyourenvironment(whatyouhaveinthehouseandwhenyoutravel)andthenyouwilleatwhatyoushouldwithoutthought.Soyouneedtoremovebread

eatingwheatsubstitutesandalsorootvegetablesexceptforflavourfoodssuchasgarlic.Well
seewhathappens.
Ialsowonderaboutsoap.MyfacegetsabitnumbwhenIleavehomeinthemorningandI
wonderifsoapisthecause.Soapisoriginallymadebypouringwateroverashes.Youcollectthe
liquid(calledlye)andaddittosomethingthatthinsandholdsitabit(likepurifiedanimalfat).
Theproblemis,ashisacarcinogen.Iwonderofitseffectsonme.Ialsowonderaboutfluoride.
FluoridewasfoundtobethereasonwhyatribeofNativeAmericanshadlittletoothdecay.I
