    Easee Mac & CheeseINGREDIENTS:

    1 box (8 oz) Glutino Gluten-Free Macaroni Style

    4 tbsp butter

    2 eggs 6 oz evaporated milk

    1/2 tsp hot sauce

    1 tsp kosher salt

    Fresh black pepper

    3/4 tsp dry mustard

    10 oz sharp cheddar, shredded

    INSTRUCTIONS: In a large pot cook the pasta according to

    directions and drain.

    Return to the pot and add butter. Toss to coat.

    Whisk together the eggs, milk, hot sauce, salt, pepper, and

    mustard. Stir into the pasta and add

    the cheese. Over low heat continue to stir for 3 minutes or un

    til creamy.

    COOKING INSTRUCTIONS:

    1. Bring 5 quarts of water

    to a rolling boil. Add salt if

    desired.2. Add Glutino

    pasta to the

    boiling water, stirring

    occasionally.3. Cook about 710 minutes

    for

    al dente pasta.4. Drain and serve with your

    favorite Glutino recipe.

    What is celiac disease? Celiac disease is a digestive condition triggered by consumption of the protein gluten.     Learn which grains to avoid.

    These grains contain gluten and are not safe: wHEAt. This includes spelt, kamut, triticale, semolina (durum wheat), farina, einkorn, bulgur, couscous, graham, modified wheat starch, wheat starch, wheat germ, wheat bran, whole wheat, cracked wheat, cake flour, matzo flour and matzo meal. Breads, cakes, cereals, crackers, muffins, pastas, as well as breading mixes all typically contain wheat and should be avoided, unless specified gluten-free.

    ryE. This grain is mainly used in bread. Except for rye flavoring, there are few, if any, ingredients made from rye.

    BArLEy. In addition to the grain, barley is often used to make malt flavoring, which should be avoided. Note: Oats do not contain gluten, but are usually cross-contaminated with wheat. To be safe, only buy oats specifically labeled gluten-free.

    4Avoid seasonings, sauces and processed foods (unless specified gluten-free).

    Processed foods and sauces often contain additives associated with wheat, and are therefore not gluten-free. Soy sauces typically contain gluten, except those specified as gluten-free, such as San-J brand soy sauce, sold at Fairway. Marinades, salad dressings and condiments made with grain-distilled vinegar also typically contain gluten. Processed meats (such as lunch meat) and canned soups typically contain additives and preservatives associated with wheat, and are therefore not gluten-free.

    Avoid beer, ale and lager (unless specified gluten-free).

    Beers, ales and lagers are often made from wheat, rye and barleyall of which contain gluten. Fortunately, many brands now offer gluten-free beers. Wines, hard liquor and distilled beverages are gluten-free.

    g luten is a protein found in wheat. For most of us, gluten in our diet is not an issue. But for some, gluten can cause health problems, ranging from mild symptoms like fatigue, sinus congestion and headaches, to severe symptoms, such as throat swelling, skin rashes, anemia and intestinal issues. When gluten triggers an immune response, there can be damage to the small intestines. This gluten-

    sensitive enteropathy is a condition known as celiac disease. Celiac disease reportedly occurs in as many as 1 in 133 persons, according to the National Institutes of Health. So, it is surprisingly frequent and the gluten-free food movement has taken off. Interestingly, the gluten-free diet can offer benefits even for those not truly sensitive to gluten.

  • 1. FrESHEn your HEALtHGluten-free diets tend to be healthier simply because of an emphasis on fresh and natural foods. Meat, fish and poultry should be eaten fresh and without preservatives, as they can contain gluten from hydrolyzed vegetable protein (HVP) and hydrolyzed plant protein (HPP) added through processing. Fermented products are also out when eating gluten-free. In keeping with an emphasis on freshness is the avoidance of anything malted, such as beer, ale, lager, cereal, malted milk and malt vinegar. In this line-up, the elimination of beer alone can have a highly positive effect on health.

    2. BooSt your FiBErThe gluten-free approach tends to introduce more fiber to the diet than the average person might otherwise consume. For example, those that are gluten-free typically consume grains that do not have gluten in them, such as amaranth, buckwheat, corn, millet, quinoa and brown or wild rice. In addition, they tend to eat more leafy greens and other fibrous vegetables in order to take the place of wheat products. These choices are high in fiber. Higher fiber helps the body by reducing the risk for heart disease and cancer, while improving quality of life by promoting regular bowel movements.

    3. DroP A FEw PounDSA benefit to going gluten-free can be the reduction in the amount of total calories and carbohydrates consumed, which can result in a drop in body fat. Eating gluten-free tends to move you toward healthier food choices that are less calorically dense. Though carbohydrates are still permitted, such as non-wheat whole-grains as well as fresh fruits and vegetables, they tend to be more fiber-based sources that are less calorically dense. For example, consider the difference between grilled vegetables versus batter-fried vegetables. The benefit can be seen in the waistline as a reduction of inches.

    BoB moorE (Bm): There wasnt really a business plan. Two important things happened. First, my wife, Charlee, started reading health food books in the early 1960s and began feeding us all sorts of whole grains. Meanwhile, I discovered a great old book called John Goffes Mill about an archeologist who inherits an old water-powered stone mill in New Hampshire. He sets out to make it work and make it a businessand he does. He had no idea what he was

    doingand frankly, neither did I! I love a good challenge. Whats more, I have a certain affinity for mechanical things, especially antiques.

    Fm: Why do you think Bobs Red Mills products are the best?

    Bm: My products are the best because we take a great deal of care to find the very best

    ingredients from farms all overthe countryand in some cases, the world. Combine that with a very simple, old-fashioned process that leaves wonderful whole grain kernels as close to their original state as possible. Theyre delicious and as healthy as can be.

    Fm: What is the best feedback you hear about your products?

    Bm: My inbox is constantly flooded with accolades from our fans. Some love the flavor of my cereals, others love the nutritional benefits. I really love when one of our products redefines someones notions about a food. Often, customers write and tell me about how our Steel Cut Oats got them eating oats again, after thinking for years that oats had to be gooey and pasty. And theres nothing like hearing from someone that my flaxseed meal lowered their cholesterol to safe levels for the first time in years. I got into this

    to make people healthy, so when I hear that its working, I sleep really well at night.

    Fm: Why did you decide to share ownership of your company with your employees in 2010?

    Bm: They earned it. My employees are experts at what they do and they dedicate their lives to their work. They make this brand the unique and inspiring thing that it is, and I want that to continue long after Im gone. The best thing I could think of to preserve their home was to simply give it to them. So I started working on an Employee Stock Ownership Plan (ESOP) about 10 years ago and finally brought it about. Its a great feeling.

    Fm: What are you excited about thats happening next at Bobs Red Mill?

    Bm: We just introduced nine new Grains of Discovery with all-new packaging styles and a robust marketing plan. Most people think of wheat, rice, or corn when they think of whole grains, but there are so many other wonderful, living seeds of grain from around the world, I felt compelled to share them. From Amaranth and Chia from Latin America, to Sorghum and Millet from Asia, each grain has a unique flavor and place in ancient history. Civilizations were born and thrived on these grains, and modern people should thrive with them, too. In general, things are moving fast at Bobs Red Mill and our growth is phenomenal.     This tiny grain is actually a seed with a rich history dating back over 8,000 years, when the ancient Aztecs first cultivated it. Amaranth is protein-rich and an excellent source of lysine (an important amino acid lacking in most grains), magnesium, calcium, iron, and fiber. Amaranth has an earthy, nutty flavor and can be cooked and used in breads to provide a boost of nutrition and a crunchy texture. Try popped amaranth for a unique breakfast cereal. Amaranth can also be cooked as porridge, used to make polenta, or added to soups.

    toASt the pine nuts briefly in a dry skillet over medium heat. This will take about 5 minutes; stir constantly, as they will burn easily. Set aside to cool.

    ComBinE the quinoa, water and salt in a saucepan. Bring to a boil, then reduce heat to medium and cook until quinoa is tender and water has been

    8 ounces Bobs Red Mill amaranth Nonstick spray, as needed 6 tbsps Fairway honey 6 tbsps agave nectar 6 tbsps salted butter

    6 tbsps unsalted sunflower seeds 6 tbsps salted roasted pumpkin seeds 1/2 cup Fairway dried apricots, diced 1/4 cup dried Mission figs, diced

    DIRECTIONS

    PoP amaranth by placing in a very hot skillet 1 tablespoon at a time, stirring constantly for about 15-18 seconds until seeds pop (watch carefully, as they burn quickly when popping is finished). After they pop, transfer to a bowl and add the next tablespoon of amaranth to the pan. (You should have about 4 cups of popped grain when done).

    gEnErouSLy coat a half hotel pan with nonstick spray.

    ComBinE honey, nectar, and butter in a large saucepan or skillet. Cook over medium heat for 7 minutes, stirring constantly, until the syrup bubbles and starts to caramelize. When the mixture turns golden brown and becomes thick and sticky, add the popped amaranth, sunflower seeds, pumpkin seeds, apricots and mission figs; stir with a wooden spoon until all ingredients are coated with the syrup.

    trAnSFEr the mixture to the coated half hotel pan. Push the mixture into the corners of the pan by hand. Allow to cool and harden. Cut into 16 bars (approximately 2 by 3 squares). -

    DIRECTIONS

    For tHE CruSt:LinE a 9x13-inch rimmed baking sheet with parchment paper.

    ComBinE cornmeal and broth in a blender and process until fully combined. Pour onto a medium saucepan. Bring to a boil over high heat, then reduce heat to medium low. Cook for 5-10 minutes, stirring almost constantly, until mixture thickens and starts to pull away from the sides of the pan. Pour into the prepared baking sheet and scrape into an even layer with a rubber spatula.

    CooL for 20 minutes, then cover with plastic wrap, transfer to the refrigerator, and chill for at least 30 minutes. (Can be refrigerated overnight.)

    PrEHEAt oven to 375F. Remove crust from refrigerator and uncover. Bake for 45 minutes, or until firm.

    rEmovE the crust from the oven and add desired toppings. Scatter the sweet potatoes, kale, green chiles, black beans, and cheese evenly over the polenta pizza crust. Carefully crack the eggs on top.

    BAkE at 375F for about 15 minutes, until egg whites are set and yolks are still runny. Sprinkle with black pepper. Slice and serve hot.

    DIRECTIONS

    PrEHEAt oven to 375F. Lightly grease a 2-quart baking dish with cooking spray.

    3 cups water 1 1/2 cups Arrowhead Mills Green Lentils 1 tsp salt 1 pound Cremini Mushrooms 1 bunch Parsley 5-6 cloves garlic

    2 cups walnuts 1/4 cup Spectrum Safflower Oil Salt and pepper to taste 1/4 cup Spectrum Balsamic Vinegar 3 tbsps Arrowhead Mills Organic Flax Seed

    DIRECTIONS

    Stir water, lentils and salt in small saucepan. Cover and bring to a boil. Remove lid, drop heat to simmer and cook for 35-40 minutes, until water is absorbed and lentils are al dente. Remove from heat.

    HEAt oven to 400F. Crumble mushrooms into large roasting tray.

    rougHLy chop parsley, garlic and walnuts. Scatter over mushrooms.

    Pour oil over vegetables, add salt and pepper, and stir to combine.

    roASt vegetables for 15 minutes, until mushrooms are withered and walnuts are toasted.

    rEmovE vegetables from oven, stir into finished lentils. Add balsamic vinegar and flax seed.

    DIRECTIONS

    SLiCE apple and onion into thin slices. Heat oil in stockpot, add apple and onion and cook over medium heat for 7-10 minutes.

    Stir in lemon juice, cinnamon and salt.

    SLiCE collard leaves into ribbons, stir into pot.Cook collards for 10 minutes over medium heat, or until reduced by half.

    Pour in vegetable stock and water, turn heat to high, put lid on top and bring to a boil.When soup is boiling, drop heat to low, add buckwheat groats, simmer uncovered for 25-30 minutes, until groats are plump and tender.

    6 tbsps extra virgin olive oil 4 tbsps fresh squeezed lemon juice 1 clove minced garlic 8 ounces dry pasta 4 cups chopped kale

    1/2 cup grated Parmesan cheese 1/2 cup chopped pistachio nuts Salt, pepper, and crushed red pepper flakes to taste

    DIRECTIONS

    For tHE DrESSingComBinE olive oil, lemon juice, and minced garlic in a jar. Shake well to combine and set aside.

    For tHE PAStA SALAD:Cook the pasta according to directions, then drain. Pour the pasta into a large bowl, and add the chopped kale, Parmesan cheese, and pistachio nuts. Pour dressing on top and toss well.

    SEASon to taste with salt, pepper, and crushed red pepper flakes. You may serve the pasta salad right away, or let the dressing infuse the pasta and kale for 10 or more minutes. You may also keep it in the refrigerator and serve it cold the next day.

    DrAin and rinse the noodles and place in a large bowl. Add enough hot water to cover (hot water from the tap is fine, it doesnt need to be boiling) and set aside for 30 minutes.

    mEAnwHiLE, combine peanut butter, sesame oil, Ume Plum vinegar, honey and water in a small blender or food processor and blend until smooth. Add more water to thin out, if desired.

    PLACE a steamer basket over a pot of boiling water. Add vegetables, cover, and steam for 3-4 minutes, until crisp-tender. Transfer to a bowl.

    ADD shrimp, cover, and steam for 2 minutes. Remove from heat and transfer to the bowl with the vegetables.

    DrAin the kelp noodles and place in a clean, dry bowl. Pour the peanut butter sesame sauce over the noodles and toss to coat. Add the vegetables and steamed shrimp, and toss again. Serve immediately, or chill and enjoy later.

    DIRECTIONS

    CrEAm together the sugar and margarine until smooth. Add the milk and vanilla and blend.
