    i.Proteolytic activity

    Activity carried out by proteolytic enzyme. Protease (peptidase; proteinase;

    proteolytic enzyme) is any enzyme that catalyses the hydrolysis of proteins into

    smaller peptide fractions and amino acids, a process known as proteolysis.

    Examples are pepsin and trypsin. Several proteases, acting sequentially, are

    normally required for the complete digestion of a protein to its constituent

    amino acids.

    Rhizome of Zingiber officinale; used as a flavouring; pungency due to non-

    volatile compounds, including gingerol, zingerol and shogool. Preserved ginger

    made from young fleshy rhizomes boiled with sugar and packed in syrup.

    A horizontal underground stem. It enables the plant to survive from one

    growing season to the next and in some species it also serves to propagate the

    plant vegetatively. It may be thin and wiry, as in couch grass, or fleshy and

    swollen, as in Iris. Compact upright underground stems, as in rhubarb,

    strawberry, and primrose, are often called rootstocks.

    v. Zingiber officinale Roscoe

    Zingiber officinale Roscoe (Ginger). E. India. Cultivated in Old and New World

    tropics. It has been used as a condiment in the Fat East since ancient times and

    was known as such to the Romans. Now most of the commercial ginger is

    grown in Jamaica. The rhizomes are prepared for market by peeling them,

    partly boiling them and then they are sun-dried before being sold in pieces or as

    a powder. Ginger is used as flavoring, in confectionery, cakes etc., in wines and

    to make a beer. It is used medicinally to relieve stomach upsets. Green ginger is

    produced mainly in China, where the rhizomes are prepared as above, but they

    boiled in sugar to preserve them. Ginger owes its particular flavor to the

    presence of zingiberine and gingerol.
