Welcome….

It’s my pleasure to invite you all for celebrating Diwali, the festival of lights and happiness. Tonight we

celebrate values we all cherish–the triumph of virtue over evil, light over darkness, good over bad. Tonight's

program will showcase the rich Indian culture and traditions. Warm Diwali wishes for every happiness. May

the warmth and splendor, that are a part of this auspicious occasion, fill your life with happiness and bright

cheer, and bring to you joy and prosperity, for the whole year.

I thank you all for joining the Indian community in Lincoln to share the happiness and celebrate “India Nite

2011”. I welcome you all on this auspicious occasion of Diwali Nite 2011.

It's my pleasure to welcome all of you to celebrate Diwali with us tonight. Diwali or Deepawali which means

"row of lights" is a popular festival celebrated for centuries. It is marked by four days of celebration with each

of the four days separated by a different tradition. It signifies the celebration of life, its enjoyment and

goodness. During Diwali, lights illuminate every street in India and the scent of the incense sticks mingled

with the aroma of the "Mithai" or sweets and the sounds of fire-crackers bring joy, togetherness and hope to

people. Over two million people of Indian origin celebrated Diwali in the U.S. Over 400 people have gathered

here tonight to celebrate on this auspicious occasion.

Tonight's program will showcase the rich Indian culture and traditions. I would like to express my sincere

appreciation to all volunteers, sponsor and the India Student Association who made this event possible.

Without their generous contributions and your support, India Nite would not have been a success.

On behalf of IANL, I wish all of you Happy Diwali and Best Wishes for a Prosperous New Year!

Let me take this opportunity to wish you a happy Diwali. May the festival of lights be the harbinger of joy and

usher you in a splendid mood, and the radiance of bright lights illuminate your happiness.

It is rejuvenating to personally associate with new generation and serve the India Students Association at the

University of Nebraska-Lincoln (UNL). Currently, we have 152 students from India studying at UNL. Of

those, 15 students are undergraduates and 137 are studying for M.S. and Ph.D. degrees. We must commend our

students who have high goals and the tenacity to accomplish them. They are our future scientists, leaders, and

business professionals. Joining the students, we have over 60 faculty and staff members with their roots to

India who are serving UNL in various capacities.

Let me not forget to appreciate our local community members. We have over 185 families with Indian ancestry

settled in Lincoln. Our community is growing and prospering.

Let me close by saying, I am humbled to be part of our student body and the community.

Chicken Tikka Masala Recipe

Marinade 1 1/2 lbs boneless chicken, cut in 1 inch cubes, One cup plain yogurt,2 tablespoons lemon juice,2 teaspoons ground cumin, 2 teaspoons ground red pepper, 2 teaspoons black pepper, 1 teaspoon cinnamon, 1 teaspoon salt, 1 piece minced ginger (1-inchinch" long), bamboo skewers (6-inchinch") Sauce tablespoon unsalted butter, 2 garlic cloves, minced,1 jalapeno, minced, 2 teaspoons ground coriander, 1 teaspoon ground cumin,1 teaspoon paprika, 1 teaspoon garam masala (buy in Indian market), 1/2 teaspoon salt, 1 (8 ounce) can tomato sauce,1 cup whipping cream, 1/4 cup chopped fresh cilantro Directions: Soak bamboo skewers in water. Thread chicken on skewers, and marinate (in the refrigerator) for an hour or so. Discard marinade. For sauce, melt butter on medium heat. Add garlic & jalapeno; cook 1 minute. Stir in coriander, cumin, paprika, garam masala & salt. Stir in tomato sauce. Simmer 15 minutes. Stir in cream; simmer to thicken- about 5 minutes. Grill or broil chicken, turning occasionally, to cook through- about 8 minutes. Remove chicken from skewers; add to sauce. Simmer 5 minutes. Garnish with cilantro Serve with basmati rice, naan or pita bread. [www.food.com]
