Domaine Comte Peraldi Domaine Comte Peraldi Rosé 2019 AOP Ajaccio VARIETIES Sciaccarello (60%) - Cinsault (30%) - Nielluccio (10%) Granitic hillsides. High acidity and low vigour soils. Skin maceration for the Sciacarello during 4-6 hours before saignée (bleeding). Cold settling (8°C) during 24-48 hours. Cinsault and Nebbiolo are pressed directly in a pneumatic press. Temperature-controlled fermentation at 16°C lasts between 3 weeks and a month. On the lees in stainless steel vats until the end of winter. Bright pale salmon colour with silvery hues. Intense bouquet of fresh red berries (strawberry, raspberry), citrus (pomelo) and spices, with a light salty note developing after aeration. The palate is tonic and vivid, with a round fleshy mouthfeel, a generous body and a persistent aromatic finish. Ideal serving temperature between 8°C and 10°C. Drink within 3 years.
