Slow Cooker Fish Tacos
·∙ 6-‐8 fillets (family size package) of frozen flakey fish like cod ·∙ 2 small cans of diced tomatoes with green chilies ·∙ ~1-‐3 tsp. Minced garlic (more or less depending on how much you like garlic) ·∙ ¼ Cup fresh chopped cilantro (or 1 ½ Tbsp. of dried cilantro) ·∙ 2 Tbsp. lime juice ·∙ Fixings
o Whole wheat or reduced carbohydrate soft taco shells o Diced red onion o Salsa o Avocado o Plain Greek yogurt or reduced fat sour cream o Extra cilantro
1. Simply assemble the ingredients into your slow cooker (other than the fixings) 2. Set on low for roughly 4-‐6 hours. 3. Once cooked, drain excess moisture if there is some, and then flake the fish and
mix the ingredients 4. Assemble your taco and enjoy!
