After a long hot morning of chasing bumble bees butterflies and waiting for that perfect seagull photo I was bushwacked Defeated and sweaty I headed home from Totuskey Creek with my tail between my legs

I decided to see if I could find something to photograph at my neighborrsquos Randy and Cindy Packett Well hello there sat this old red barn that I have seen for years but never really noticed it until I had my camera Funny how that works isnt it

Randy has made his land and the creatures that inhabit it very available to me for my photography

I took several photos of that barn on that hot August morning but this is the one that I am most proud of I love old barns they have so much character and what stories they could tell if they couldPaularsquos passion is horses and readers will find an article or two in every issue of Chesapeake Style including many of her stunning photos

In a recent conversation with my cousin Peggy in Williamsburg she told me she was waiting for her son to come and bring her old ice cream freezer down from her attic She asked if I knew any good recipes Shersquod been looking online too

That brought back memories When we lived in Illinois we had a boat on the Illinois River her name was Happy R and she was a 1933 custom built Chesapeake Bay Deadrise 34 feet outboard rudder Gray Marine 109 engine hull cypress log brightwork Honduras mahogany We were her second owners She had been born and raised on the Chesapeake Bay and had been custom built for my fatherrsquos cousin Irsquod spent time on her as a child Her original owner was William B Russell aka Happy Russell from Parkesburg Pa When he died the family put her up for sale and I convinced my husband to buy her So we had her trucked to the Illinois River

Her refrigeration was the original ice box Every weekend all summer long wersquod go to the boat sometimes on Friday night other times Saturday mornings On our way through Ottawa on Saturdays wersquod make several stops en route one of which included picking up a 50 pound block of ice for our ice box (On Sunday night wersquod put the block in the cooler haul it home freeze it and return the next weekmdashuntil it was time to replace it)

The Dr Pepper bottling plant was our source of icemdashand Dr Peppermdashand once or twice they gave us the syrup so we could make Dr Pepper ice cream My sonrsquos favorite ice cream was French Vanilla I read the recipe at home The directions said to prepare the mix on the stove add ingredientswell none of that for me I added the ingredients including the eggs to our weekly cooler haul and off we went

My modus operandi was to place the ice cream freezer on the pier plug it into the power fill the container with the ingredients add ice and let the paddle mix the ingredients It worked well most of the time Then wersquod eat what we could and share ice cream with our boat neighbors Many of them had real refrigerators and they might save and eat their ice cream the next day This particular weekend I added the ingredients to the container cracked the eggs adding them confidently figuring the paddle would break them up and wersquod have French Vanilla ice cream We all enjoyed our ice cream on the dock and shared part of it with our neighbors

The next day one of our neighbors commented about the perfectly frozen egg yolks she found in her ice cream Oops The paddle hadnrsquot broken up the eggs before they froze

After I told Peggy my story and we had a good laugh she said shersquod find her own recipes

As humans we often try to identify the good and the bad in nature It is said that there is a place

and reason for everything in the natural world However if you have had an encounter with poison ivy or if you had an allergic reaction to rag weed you remember the pain and discomfort you felt and wonder what is the purpose for this plant

Both plants and insects can make our experiences outside

uncomfortable whether we work or play Nature is not always kind to

us It seems like those pesky plants and insects are out there waiting for us and we canrsquot identify the good from the bad Education is key to knowing how to handle problem plants and insects The Internet is a good place to do research In future articles I will write more about how to handle poison ivy and what insects may be a problem

Letrsquos look at a few plants People often say ldquoLeaves of three let them berdquo They are referring to poison ivy with three smooth pointed leaves

on one stem Becoming familiar with poison ivy or poison oak can help you avoid a lot of misery These vine type plants creep along the ground and climb trees You may remember the song Poison Ivy by the Coasters

Did you know that an immature Virginia creeper vine will also have three leaves However it is harmless Blackberry raspberry and strawberry plants have three leaves Some of these berries can

have thorns but they produce juicy yummy berries that are enjoyed by many people In mentioning thorns learn to recognize the green briar vine which has sharp thorns that can tear skin and material It is a tough vine that chokes other plants and is difficult to remove It spreads underground with roots that spread for yards from a central tuber

Ragweed is a green plant with flowers that are green In the fall its fine pollen floats through the air causing sneezing coughing and swollen mucus membranes Golden rod has glowing bright yellow flower covered spires that are seen in fields

Gardening in Style ~ Good PlantBad Plant

It may resemble its more familiar cousin the killdeer but you wonrsquot find this plover in pastures on construction sites or in

gravel parking lots The Wilsonrsquos plover is a bird of the quiet sandy

shell beaches sand spits or mud flats exposed at low tides usually near the oceanfront and adjacent to coastal marshlands

It is similarly colored as the killdeer with ashy-gray or brownish-gray upper parts white under parts with a single black breast band and a black patch in front of the crown The forehead a line over the eyes and the chin and a line to the back giving a semblance of a ring are white Measuring 7-12 to 8 inches the head is large in comparison to the body and the black bill is fairly long and large Some of its other names are thick-billed plover ring neck and stuttering plover Its common name comes from Alexander Wilson often regarded as the father of American ornithology

The Wilsonrsquos plover breeds in southern North America from Texas east along the Gulf Coast to Florida and up the South Atlantic Coast to southeastern Virginia occasionally as far north as New Jersey It arrives in Virginia fairly early in spring Its nest is a shallow cavity on sand amid a scattering of pebbles shells driftwood and other beach debris and patches of beach grasses Often it is in loose colonies with some of their own as well as little terns and oystercatchers About three pale olive or greenish gray eggs marked with dark brown are laid

Hatching takes place in about two weeks and the young are able to run about and feed almost immediately Their colors match their surroundings

and they can find cover and become motionless to escape detection The female will fake injury in an attempt to lead intruders away a common trait of many sandpipers and plovers

The calls of these plovers can be described as flute-like whistles with notes sounding like ldquowheetrdquo or ldquowhiprdquo ldquoqueet-queet-quit-quit-itrdquo Wilsonrsquos plovers will feed night or day on small marine insects tiny shellfish sandworms small crabs shrimps and mollusks and flies Wilsonrsquos plovers begin gathering in loose flocks at the end of July when all the young are fledged and begin movements south to the Gulf Coast and as far as GuatemalaOriginal art by Spike Knuth

ldquoHope is the thing with feathersrdquo Emily Dickinson wrote but just outside Callao on Route 202 Hope is the

woman with feathers beads and a wonderful array of craft items

Hope Jackson proprietor of Espe Drsquos Crafts and Supplies in Hyacinth has been a crafter for years Two years ago she decided to make it easier for other crafters to find basic supplies close to home

ldquoI love craftsrdquo Hope explained

ldquoand living in Kinsale running out of something meant having to travel I figured that if other crafters are in my shoes opening a shop will save them that trip to Richmond or Fredricksburg And if I donrsquot carry something I can always order it for themrdquo

She describes her inventory as ldquoa little bit of a lot of crafty necessitiesrdquo Among those necessities are materials for beading and jewelry making knitting scrapbooking kidsrsquo crafts soap-making stenciling macrameacute and cross stitch She carries Old Dominion soaps costume jewelry sewing notions and even a stack of fat quarters and a selection of quilting needles

Espe Drsquos is pronounced ldquoEss-pee Deersquosrdquo and the name has an

interesting origin Hopersquos niece Dana who loves Spain and everything Spanish reminded Hope that Esperanza or ldquoEsperdquo for short is Spanish for Hope The two of them often crafted cards together and thus developed the name

Espe Drsquos Crafts is a fairly new business Hope just celebrated her second anniversary Having originally located in Warsaw she moved the business to the Callao area about a year ago

Hope has had a range of

occupations from flight attendant to working for a large pharmaceutical company and for IBM to being a collections paralegal and then working with Virginiarsquos student loan agency But throughout all these jobs she has always been a crafter ldquoI like craftingrdquo Hope said ldquoand itrsquos so difficult to settle on just one But that means Irsquom never boredrdquo

With a mother and grandmother who were crafters Hope fell naturally into creativity of all sorts And shersquos always had friends who crafted She even had the good fortune to find a neighborhood craft circle when she lived in Richmond ldquoEveryone is always happy to share their crafts and Irsquove been happy to learnrdquo she said

Hope makes soaps and cards She crochets and cross stitches makes beaded jewelry sews embroiders plays with polymer clays She felts and needle punches does macrameacute has started to quilt and loves quilling ldquoIrsquom constantly learning and practicing new crafts I can do a little bit of everything actuallyrdquo

Each of these crafts is represented by materials available in the store And for those who would like to

learn how to use the materials or improve their skills Espe Drsquos offers classes every month Hope lists upcoming classes on the storersquos Facebook page Recent classes have included wreath-

making cross-stitch and knitting with specialty yarns Look for classes on meditation as well as on quillingmdasha craft that involves rolling shaping and gluing together strips of paper to make intricate designs Folks looking for instruction in a particular skill are welcome to speak to Hope about forming a class

As a resident of the Bay region Hope wants to celebrate the talents of local artisans Shersquos started a Designersrsquo Section to feature their work At the moment shersquos featuring four locals and she plans to extend that section of Espe Drsquos

Chris Butlerrsquos work is ldquoGone Knotsrdquo featuring her elegant macrameacute pieces Chris also teaches macrameacute classes at the shop

Cindy Headley makes mermaid dolls which she calls ldquoInspirational Art Galsrdquo Each one comes with a tag bearing words of wisdom

Jamie Springerrsquos handmade wood chests can go from toy box to hope chest to blanket box while growing rich with the patinas of much handling

And Pam Howard offers ldquoBead Stampederdquo a collection of beaded jewelry

What do you think of when you hear the word angel A winged heavenly being or

perhaps your kids grandkids spouse close friend or neighbor Websterrsquos Dictionary defines angels as spiritual beings or an attendant spirit or guardian When I think of angels I think of a very special group of people who have an attentive spirit and lots of compassion for their fellow man

This group of people works with the Hospice Support Services of the Northern Neck (HSSNN) These volunteers take time out of their days to drive all over the Northern Neck to offer medical supplies compassionate support companionship and encouragement

to hospice patients and their families Most of all these people do this because they want to The compassion they show can be compared to no other

In the middle of these volunteers are three very special ladies ldquoMy Angelsrdquo These three angels Judy Vogel Anne Cook and Sharon Timms have helped me for the last two years to distribute flowers to hospice patients Anytime I have flowers for patients these ladies are at my beck and call

Some days that I call them they have already made their supply run for the week but that doesnrsquot stop

them They always show up with a smile on their faces and a big hug for me They enthusiastically deliver the flowers to patients

When I started doing hospice flowers two years ago I decided to tag them ldquoAngel Flowersrdquo I thought the idea of angels was very comforting and some flowers

would brighten anyonersquos dayI never thought when I started the

Angel Flowers that I would be blessed with three angels to deliver them No Judy Anne and Sharon may not have wings but their compassion radiance and concern for the people they help and come in contact with makes them

Belfield Physical Therapy is the growing face of Warsawrsquos Physical Therapy

For Brian Belfield providing physical therapy isnrsquot just his job itrsquos something that allows him to change a personrsquos life Due to his personal triumph with physical therapy his eyes were opened to the world of preventative and after care Currently he has his own practice which he co-owns with his wife and business partner Gina With a recent movemdashtheyrsquove been in the current location for almost a yearmdashthe business has been able to grow and expand in ways that have allowed them to reach more people

Brian originally attended Hampden-Sydney College for baseball but had to have surgery on his elbow during the summer after his freshman year His doctor sent him to physical therapy for rehabilitation of his arm and the experience led him to pursue a career in physical therapy

He and his wife Gina started Belfield Physical Therapy (BPT) as a part-time job in 2003 and opened it up full time in 2005 In September of 2011 they moved to the current location with more space and an entirely different layout This enabled them to add several things they hadnrsquot had room for in the old location They completely renovated the building adding walls rooms with a new look for both the inside and outside of the building

Choosing to set up shop in Warsaw was an easy decision for Brian who grew up in the area and attended Rappahannock High School When he made the decision to pursue physical therapy as a career he made it a goal to return to Warsaw Brian explains the thought process behind the decision saying ldquoI wanted to provide the best all inclusive physical therapy service for the community who gave me so much as a young person student and athleterdquo He and his wife made Warsaw their home in 1999 In his free time Brian enjoys serving as an elder and teaching Sunday school at his church Rappahannock

Church of Christ As someone who has enjoyed sports since he was young Brian is still an avid triathlete and Ironman finisher Regarding his

free time Brian has said ldquoI have four children so their hobbies are minerdquo

Gina Belfield is also co-owner of Belfield Physical Therapy Handling more of the business side of BPT Gina does most of the administrative contracting and billing work Brian handles patient care and the supervision of the eleven members of their staff His average day consists of taking care of the patients who come in as well as any administrative duties require his attention While he greatly enjoys spending time with his patients owning his own business comes with its own challenges and for Brian the greatest of these is dealing with the constant changes from insurance companies

Belfield Physical Therapy provides service to people in a wide range of ages and for a variety of diagnoses Due to this they offer many varied services They offer therapy for

neurological and orthopedic diagnosismdashusing a number of treatments including therapeutic exercise manual therapy cardio rehabilitation modalities gait training and balance training

With their move to the new building last year they have added a swim exercise pool for aquatic therapy Additionally they now offer access to a Wellness Center for a monthly membership fee Their most popular service is for their outpatient orthopedic physical therapymdashboth their land and

their aquatic options are equally popular with their patients

When walking into BPT for the first time the atmosphere of caring reaches out to make you feel welcome Itrsquos a place not just for those who need physical therapy but for the whole town to enjoy Those who come into Belfield Physical Therapy are usually looking for a reduction in pain symptoms and the return of their previous level of function Through a large array of options available finding a way through the pain locally has never been quite as easy

In 2011 at Colonial Downs Racetrack I had the pleasure of meeting Standardbred owner and trainer Amanda Jackson

After taking a photograph of one of her Standardbreds Tidewater Pretty Boy in 2010 Amanda asked me to photograph some of her other horses That is when I first met her filly then a two year old Hillbilly Desire

Amanda is a hard working lady She is a Registered Nurse at St Francis Medical Center and when she is not at the hospital she is a daughter wife mother and caretaker to her Standardbred Racehorses

Amanda and her family are some of the nicest people you could ever meet Her father Tim whom everybody calls lsquorsquoHillbillyrsquorsquo is a hardworking horseman Sharon Amandarsquos mother does the book work for the farm and helps out with

the horses Adam Amandarsquos young son is a big help with the horses He is a very well mannered and polite young man Amandarsquos husband Randy when not working for the railroad company helps train jog and does whatever else needs to be done around the racehorse barn Racing and caring for Standardbredrsquos is truly a family affair for them

Amanda told me that if she could make a living racing horses she would do it full time Her nursing career

helps to support her racing career She plans her racing around her work schedule at the hospital

When asked what her best moment in her racing career has been she didnrsquot skip a beat when she told me that the horse she once owned Tidewater Prettyboy could not seem to qualify due to constantly breaking stride Amanda decided to take over the driving duties on him and qualified him when nobody else could

On July 14th of this year The Meadowlands Racetrack in Rutherford New Jersey featured the $600000 Meadowlands Pace Amanda and her family went and saw horses like Sweet Lou ($1096864) Meadowlands Pace winner A Rocknroll Dance ($1514750) Bolt The Duer ($649901) and the horse that Amanda and I had chosen to win Thinking Out Loud ($891138) who

won The $15 million Pepsi North American Cup in June of this year at Mowhawk Racetrack in Canada She also met Meadowlands Racetrack

Chairman Jeff Gural who is trying hard to better Harness Racing and bring more people to the sport Amanda was standing in line to get her hotdog turned around and there he was She was so excited she kinda squealed with delight and carried on a conversation with the famed horseman letting him know that she and many others support him in his endeavours I had asked her if she had time could she pick me up a

racing program and a Meadowlands t-shirt and I would pay her Amanda got both for me and refused to let me pay anything and since she lives three hours from me she mailed them to me That girl is awesome

Early this year the dinner time conversation of a few Mathews residents turned to a familiar topic

drainage problems caused by Virginia Department of Transportation neglect of roadside ditches Everyone at the table had a story of when the ditches were clean and storm water flowed to adjacent waterways The group decided it was time to band together and start a project to get the ditches working again Keith Ellenberger quipped the project name should be The Ditches of Mathews County His comment produced chuckles around the table but the name clicked and the idea sparked a grass roots movement that is beginning to make a difference

Roadside ditches are found in most rural areas but Mathews County has a special relationship with its

ditches The county is located entirely within the meteor impact crater that created the Chesapeake Bay and the terrain is relatively low and flat Even the slight elevation of a road acts like a dam in many areas and the roadside ditches exist to carry rainwater away from the road and adjacent properties to protect both from water damage While the Mathews Courthouse area has storm drains to Put-In Creek the rest of the county relies on its ditches for storm water management The smaller roadside channels drain through larger ditches called outfalls which go directly to creeks rivers bays or marshes

Ditches rely on gravity to move rainwater and if something changes the level at the bottom of a ditch or if a drainpipe is blocked the water doesnt move and can cause flooding Creating mosquito nurseries is another problem of blocked ditches along with the critical concern of impacting septic fields It is VDOTs responsibility to maintain ditches and the outfalls necessary to move storm water to natural waterways VDOT employees who understood ditch maintenance from years back when they were well maintained have retired or moved on to other jobs Many newer employees or those

coming from urban areas dont seem to be familiar with ditch practices or policies As a result some outfalls havent received routine maintenance in 20 to 30 years and are so overgrown it takes an old map to locate them Others still show enough water at the roadside

connection to be easily recognized The Ditches of Mathews County is

identifying the location of problem ditches from citizen reports and personal observations and offering to help VDOT work out solutions

Each time I look into those beautiful amber eyes I am reminded dogs grieve too

When Crackerjack was a tiny guy I met him at the annual Dog Gone Dog Show sponsored by the Animal Welfare League He was three months old and available for adoption I called a good friend Rita who had recently lost her husband Jack and told her

about the little guy his foster Mom had named Crackerjack She was elated and asked to adopt him

I will never forget that Sunday afternoon when my husband and I

delivered Crackerjack to Rita It was love at first sight for both of them We thought that was a happy new beginning for Crackerjack For the next three years we stayed in touch and followed the bond that grew between this human and her dog

But things changed My friend became ill and as she lay dying in a hospital bed she asked us to bring Crackerjack home So we did We brought him to our home to join our pet family During Ritarsquos illness Crackerjack had spent most of his days and nights crated entertained by the abundance of doggie biscuits visitors threw into his crate He now looked like a sausage supported by four tooth picks We had a young dog at the time Augie and he was happy to have Crackerjack join our family Isadora my Maltese was happy too She had liked Crackerjack from the moment he first came into her life

Our friend Nancy from Alexandria visited us and brought ldquoTagrdquo her

big black Lab Tag to our surprise decided Crackerjack should go home with him While we were at dinner Tag took down Crackerjackrsquos crate When we returned home we were greeted by three big dogs and Isadora Nancy asked if she could adopt Crackerjack Tag had chosen him to be his friend We were hesitant to say ldquoyesrdquo because of our promise to Crackerjackrsquos previous owner

Finally we agreed that Crackerjack would go home to be Tagrsquos companion but only if he got into the car without force and never looked back Well thatrsquos exactly what happened For the next five years Crackerjack and Tag visited our home on week-ends and stayed with us when our friend went on travel For us these two dogs became part of our family

In May 2012 Tag suffered medical problems and his life ended Crackerjack was devastated after Tagrsquos death He had joined a family but now he only had a human Tag was his buddy his leader and now all of that was lost Both Nancy and Crackerjack continue to grieve the loss of Tag

The new challenge became ldquoHow to help a dog overcome griefrdquo Nancy realized that because she had not raised Crackerjack and he had been so attached to Tag she really didnrsquot know who this dog was She signed up for training At the training school they told her she was the person who needed training not Crackerjack

Then she enrolled him into doggie day care Immediately he was suspended because he refused to take a nap The day care facility had a policy that all dogs must take a one hour nap each afternoon Crackerjack had been disruptive because he cried during the quiet time They suggested he grieve at home for two weeks then come back Yes this is true and dog owners actually pay to take their dog to places like this So my friend went back to school with Crackerjack and stopped working late hours

Itrsquos been four months now since Tag died Crackerjack is adjusting but he still misses his buddy When he visits us he immediately goes out to the grave and then runs down to the dock where Tag spent a lot of time swimming

I watch Crackerjack stare into the distance Sometimes he turns his head as if he hears Tag running onto the dock to join him or he sees Tagrsquos body plowing through the water Crackerjack waits in silence and then returns back to the house a little sad but still hopeful If I could read a dogrsquos mind I am sure Crackerjack would say ldquoTag will be here tomorrowrdquo

While the good memories help lessen the grief this canine and human team continue to slowly move forward Who knows Maybe one day another special canine will enter their hearts and join their familyGwen Keane photo

The Shirley Perkins Memorial Fund (SPMF )for animals has an interesting and unique origin

Joyce Page of Northern Neck Animal Welfare League had a

close friend and neighbor Shirley Perkins who was also an avid animal lover When she passed away she left Joyce $1000 to be used any way that could help animals

Joyce set up the fund in October of 1999 and in April of 2004 the fund was recognized by the IRS under a 501 C (3) Animal Charity therefore all donations are tax deductible

Judy Harvell Joyces sister helped add to the fund They held annual yard sales The first one was in 2000 During the three day sale approximately $3000 was raised

Over the years with yard sales and specific donations to the SPMF many animals have been helped Other animal charities and the Animal Welfare League (AWL) fund have restrictions The SPMF does not have restrictions for use of money for all animals or the territory for the donations Some of the examples would be medications for pets which a family could

not afford such as vaccinations and heart worm treatments The SPMF has helped with boarding fees and foster care expenses

Spaying and neutering expenses which were not covered by the AWL funds have been paid or partially reimbursed Boarding fees have been paid under some circumstances When animals need medical treatments after being rescued by the Lancaster Animal Control officers the SPMF may be used Families may even get help to pay for local animal licenses

The officers of the Shirley Perkins Memorial Fund are Joyce Page President and Secretary and Judith Harvell as Vice President and Treasurer The Animal Welfare League of the Northern Neck is so fortunate to have Joyce Page as the Adoption Officer and Vice President and Judith Harvell as the President That is one major reason the SPMF works so well with the AWL

Recently our family enjoyed a great fishing surprise Travis had been catching lots of small puppy drum

this season all of which were sub legal and had to be released That has always been one of my favorite fish to catch I have always wanted to catch one of the adult Red Drum but never had the opportunity

During a week in which Travis had enjoyed lots of catch and release Puppy Drum action with his sister Brittany a surprise fishing adventure would culminate the end of the week

One morning our family set out for a family fishing trip and decided to troll for Spanish mackerel It was a beautiful morning We

were marking fish on the depth finder but they didnrsquot look like mackerel

As we slowed our trolling speed to trip the planers and pull the lines in one of the rods bent over and the clicker drag began sounding like a big springtime post spawn striper event Steve was right next to the rod and picked it up saying ldquohope itrsquos not a skaterdquo

The fish began sounding and swimming fast under and around the boat Steve caught a glimpse as it came near the surface and said it was a Red Drum After more than 15 minutes fighting the fish with a sturdy trolling rod and reel

Steve was able to get the fish close enough to where we all could see it I grabbed the net Brittany picked up one camera and Travis grabbed the other When we got a good look at it it was obvious the huge fish would have to go as the size limit is 18-26 inches This red drum was huge and heavy We knew that we would have to carefully unhook this fish

As I tried to net the fish it was so big and heavy that the net began to tear and the handle was bending even while keeping the fish and net just below the surface of the water Steve carefully unhooked the fish and it quickly pushed through the net leaving a big hole and swam off Wow What a perfect family day We all took part in this wonderful experience of catching and releasing such a beautiful strong fish which will be there for others to catch another time

One of the family events that we look forward to every year is the three day Virginia Outdoor Sportsman Show and the Virginia Deer Classic This year we attended on August 11 and in our opinion this event just gets better and better every year There are almost 300 vendors with outdoor gear trips food and of course the Virginia Deer Classic

The Virginia Deer Hunters Association (VDHA) sponsors this show along with other events to promote safe and ethical deer hunting The programs they promote or get involved in support

hunter ethics good landowner relationships hunter safety and a better understanding of quality deer management They work closely with state legislators and Virginiarsquos Department of Game and Inland Fisheries

One of my favorite programs which VDHA advocates and supports is the Hunterrsquos for the Hungry With this program hunters give something back as more than 390000 pounds of venison are donated annually to the needy throughout Virginia These noble efforts have had a major role in the Quality Deer Management Plan which was created due to the exploding Whitetail Deer population

Another effort which the VDHA is committed to is Annual Disabled Veteran Hunts Through this program approximately 75 VDHA volunteers and Virginia Game Department personnel work as instructors guides drivers and camp cooks to make a safe and enjoyable event for those who gave so much for our country

The VDHA sponsors youth hunts hunter education and wildlife education Other programs include scholarship funds geared toward white tail deer research studies

I met Hillbilly Desire ($11289) who was previously named Tidewater TNT in 2011 at Colonial Downs Racetrack in New

Kent Va It was love at first sight for me She is strikingly beautiful and she is a big strong filly Desire is also a love me all over kind of horse She has no problem being loved on and she really enjoys it She frequently rests her head on her ownerrsquos shoulder

Desire is owned by Amanda Jackson of Burkeville Va Amandarsquos father Tim once told me that he was teasing Amanda and her mother Sharon that if they keep rubbing this horse they will rub off all of her hair

Hillbilly Desire was a private purchase She was also extremely difficult to break so much so that Amanda almost gave up Desire did

damage to the breaking cart several times They stuck with her though and she has turned out to be quite a racehorse

Desire was sixth in her first qualifier on September 16 2011 with Amanda driving but won her first pari-mutuel start at Colonial on September the 29 2011 and the win came effortlessly Her driver Jason Mac Dougall never popped the ear plugs on Desire nor did he even show her the whipmdashshe is just that good She continued to win her next two starts but on her fourth start the $47200Virginia Bred Final Two -Year- Old Filly Pace she finished third

Desire has had four starts this year with two being qualifiers at the newly re-opened Rosecroft Raceway in Maryland The two pari-mutuel starts were at Harrahrsquos Chester in Philadelphia Pa Unfortunately that is a long trip from Burkeville and Desire has been found to not travel well She did not fare so well racing there and the decision was made to only race her close to home Hillbilly Desire is out of a Dragon Again ($2343428) mare named Miss Tootsie Roll ($19947) formally named Keystone Monroe I got to meet and rub Dragon Again who is also enrolled in the Full Circle program at Hanover Shoe Farms this year Desire is sired by World

Champion Real Desire ($3159814) Desire loves to be turned out

in her paddock and when there is a change in her routine she can be a Nervous Nellie

Even with the highs and lows Amanda still loves to race her horses One of the lows being that she lost two beautiful foals twins as a matter of fact They were black with white socks and they both had a star Twins rarely survive

Desire has two half brothers out of Miss Tootsie Roll Tidewater

Teddy ($204339) and Tidewater Tomcat ($87838) I believe Desire will be as successful as her two brothers have been

When Pat Gingell opened her first restaurant in Warsaw some 19 years

ago her goal was to provide unique confectionery delights for any occasion She made all sorts of candies and baked goods to commemorate any eventhellipgreen goodies for St Patrickrsquos Day pink and red for Valentinersquos Day as well as custom orders for birthdays secretaryrsquos day and so on The establishment was appropriately named For the Occasion to highlight the diversity of her sweet offerings

She also served sandwiches for those wanting something more substantial to eat Over time and on the suggestions of her customer For the Occasions grew into a full service restaurant Eventually she phased out the confectionery aspect primarily because cakes and candies donrsquot hold up too well in the heat of Virginia

summers She has recently decided however to offer the homemade sweets once again but will limit the availability to the winter months when the candies wonrsquot melt

In 2003 Pat and her partner Burnell Fallin opened the second restaurant in Callao and incorporated the business Burnell became a co-owner For the next two years he ran the Callao operation while she ran the Warsaw restaurant Eventually however they found maintaining two locations overwhelming and they elected to close the Warsaw operation

Because she was always busy in Warsaw Pat did not know any of the staff in Callao and they did not know her She knew them by name of course because she wrote their paychecks but she did not know them personally or even what they looked like

As the restaurant in Warsaw was winding down Pat occasionally had some free time on her hands so she often went over to the Callao facility just to eat and have someplace to go She was the original Undercover Boss without deliberately being undercover But when she realized no one there knew her she took advantage of the opportunity to see the operation incognito and from a customerrsquos point of view She was very pleased

with the entire staff the quality of the food and the compliments she overheard from other customers Eventually she revealed her identity but not for the first few visits

These days Pat and Burnell share

the business and divide the duties He is usually managing the restaurant in person while she works behind the scenes doing book work ordering supplies and comparison shopping

Pat recalled an early experience with gender stereotyping back when she owned the first restaurant and Burnell worked for her To her dismay one of her distributors always asked ldquoWherersquos the boss-manrdquo when he came to deliver supplies Each time she would slough it off offering one excuse or another One ill-fated day the vendor made the mistake of asking yet again for the ldquoboss-manrdquo With a terse tone Pat replied ldquoI am the boss man Burnell works for me

not the other way aroundrdquo Burnell nodded his head in agreement noting he had no idea how difficult it was for female business owners ldquoThey (the women) have to work much harder to gain the respect readily afforded

to male business ownersrdquo he noted Now as a co-owner he deals with the vendors

The restaurant business has changed considerably over the last 19 years The prices of food goods have gone up considerably yet they manage to keep their meals affordable For the Occasions is the typical Mom and Pop operation Patrsquos daughter Christine Uphold works in the dining room and her son

Christopher Uphold is one of the chefs They also have several other employees working for them It is a team effort no one really has a titlehellipthey all just pitch in to get it done

Recently Pat and Burnell have been working on renovations at the restaurant They laid a new carpet painted the walls placed tile in the entrance way and built a small bar near the front door ldquoWe are not going into a ldquobar-type businessrdquo she noted ldquobut we want people to have a place to sit if they only want a quick sandwich or they are waiting for a carry-out orderrdquo The place has a whole new look but the excellent food and reasonable pricing will always remain the same Pat and Burnell are proud of their reputation for serving great food at great prices Consistency in quality and quantity is their goal and they trust the customers will let them know if they fail at that endeavorPat and Burnell Elizabeth D Huegel photo and Marie Stone photo

A dear friend said this to me not too long ago She was lamenting on the difficulty she was having in making

ends meet Every year she was saying everything goes up The cable bill the phone bill the water bill the tax bill the food bill the insurance bill therersquos no end to it Then in a low soft voice she said except my income

Approaching her 80rsquos she had been saving money so she thought all the wrong ways In the retail world of 50 off buy-one-get-one no interest for 90 days limited time offer and on and on and on Letrsquos not forget the TV shopping networks too Who canrsquot pass up four flex-pays for only $3995 Well she didnrsquot pass them up She joins the ranks of more than half of Americans that havenrsquot saved enough money to retire comfortably Suzie Orman calls them the ldquobaby bummersrdquo

Suzie also said ldquoowning a home is a keystone of wealthhellipboth financial affluence and emotional securityrdquo

When she first stumbled upon It Works Elizabeth Huegel who goes by Liz was

accompanying a friend to a network gathering of Christian business women The woman who hosted the event demonstrated the Ultimate Body Applicator from It Works and lost about an inch around her waist in 45 minutes Liz was amazed and

Old Time Revival in Guinea and Baptizing in the York RiverThis is a continuation of a series of articles about the childhood of Pauline Allen Alexander Elizabeth Stokesrsquo motherBy Elizabeth Allen Stokes

In black Guinea beginning with the fourth of July and extending through the entire month of August of every year during my Mamas day

was a time of great anticipation for all families The community spruced up its houses whitewashed the houses and barns and schoolhouse cemetery fences and gravesites weeding the flower beds cleaned and mucked out

the stables homes were cleaned out rugs air dried on lines windows washed horses curried the best of the linen silverware and dishes pulled out of the linen closets and cupboards and the precious

spare room in the house sported the comfiest of feather pillows and quilts made by the women of the family Children who had gone away to find more lucrative work in hospitals the garment industries the Philly Navy Yards the building of the Harlem Tunnel and the docksmdashothers became ministers doctors lawyers nurses government workers educators tailors seamstresses small business owners and even journalistsmdashcame back home for that weekmdashas well as other relatives from as far as Boston New Jersey New York Washington DC and Baltimore as far south as Atlanta and Memphis

and from Detroit and Chicago where the steel industries and factories had beckoned them All of this hard work culminated in Revival Week for First Baptist Church at Ordinary on Route 17mdashthe Greate Roadmdashand Morningstar Baptist Church in Bena Their revivalsmdashservices and prayers sermons and singing with guest preachersmdashwere held at different dates during the week but always

in August and ending the following Sunday with the baptizing always on the waterfront propertymdashYork Rivermdashof neighbor Floyd Stokes in an area called ldquoup on the hillrdquo Families were dressed in their best all week long and even the horsesrsquo coats shone with care their blinders decorated prettily as well as the buggies brass parts and leather parts oiled to perfection All week long neighbors and visiting relatives would visit each and eat and take foodstuffs home and drink and reminisce

The candidates for baptizingmdashmostly childrenmdashalong with their sponsors were dressed in long white

dressesmdashgirls and womenmdashwith white towels wrapped around their heads or long-sleeved white shirts and pantsmdashboys and men After being shielded and dressed in the nearby thicket of woods they were led down to the York River by the minister and into the water where prayers were said and the old spiritual sung Wade in the Water Families clasped hands cried and sang as their spirits and hearts soared with pride to see their loved ones given over to God

Every year since slavery this tradition has continued in the black communities all over the south as a reminder of their ancestors who could not always worship in the white churches and finally united to find places of united prayer for themselves and to baptize their own in the same local waters where they harvested their bounties The inlets and coves the marshes streams of the great Chesapeake Bay and the Potomac and York Rivers as well as the Rappahannock and the Piankitank and in the lower peninsula the Hampton and Poquoson Rivers just to mention the major ones After the services tables were set up with enormous platters of food of all description because the gardens had been harvested and ldquoDinner on the groundsrdquo was remembered and spoken yet againRecent Modern Day Baptizing Taylorrsquos Beach Reedville Shiloh Baptist Church Photos by Elizabeth Stokes

sponsored an Art Show with the members displaying their talents with twenty plus contributors with a large number of items

The first annual Art Show was a success The variety of types and amazing creations of arts crafts photography was a welcome sight to visitors There were many visitors

Entires ranged from designer clothing quilts statuary stained glass paintings items from the Blacksmith Shop handmade clocks greeting cards hand crafts computer generated art jewelry wood furniture bowls boxes spinning and weaving

creators nearby to share informationPerhaps using the old standby

by ldquoa picture is worth a thousand wordsrdquo is the best way to describe the event Envision items that you can see and touch along with the paintings and photos

The Show was organized by Beverly Sabelhouse and Bud Disney with many of the Tavern Members

participating and assisting the arrangement of course the ldquosetup and the take downldquo of the show

If you are an English teacher and see the word ldquotardigraderdquo you might think therersquos a space missing in the middle or

that the person who wrote it was late in assigning marks on a report cardmdashhopefully As and Bs But if yoursquore into microorganisms and the space program you would smile and pause for a moment of respectful even awesome silence You would know that tardigrades also called waterbears or moss piglets are tiny

Rambo survival creatures worthy of their own reality TV show

These little guys have an impressive resume To begin with theyrsquove got lifersquos ups and downs figured out Too hot Too cold Too much radiation Not enough air or water No problem When the going gets tough tardigrades get tougher They just check out temporarily and wait for things to improve They have learned how to survive boiling heat freezing cold massive doses of radiation and even the vacuum of outer space

In scientific circles they are

generally considered to be the worldrsquos toughest animal Part of their success strategy is simply to lose weight They know how to go into a hibernation-like state that scientists call ldquocryptobiosisrdquo This is basically a deathlike condition But they donrsquot die Their metabolism lowers to the point of being undetectable and the water inside their body decreases to less than 1 We donrsquot know exactly how they do this And we donrsquot know how they feel about doing itmdashprobably less than happy about itmdashbut itrsquos one reason there is so much interest in them

Another is that they are comparatively easy to study because tardigrades are not too fussy about where they live Any place seems to be okay Theyrsquove been found on top of the Himalayas at the bottom of the sea under layers of solid ice in polar regions and throughout tropical forests around the equator Millions of them no doubt the smarter ones prefer lakes and ponds or dunes and beaches Thousands like to swim in a cup of marine or freshwater sediment

If you have a microscope you can see them by soaking a piece of moss in water Donrsquot worry about disturbing them These guys are flexible and as far as we know they

have no objection to being observed Because of their remarkable

durability and their lumbering microscopically ldquocuterdquo appearancemdashshort plump bodies and little legsmdashtardigrades have developed a somewhat unique fan club among the scientists who study them Often a degree of playfulnessmdashmissing in other studiesmdashcreeps into tardigrade literature things like ldquoCreature Survives Naked in Spacerdquo ldquoExtremophilerdquo or ldquoIndestructiblerdquo

No doubt this notoriety was prompted by a group of tardigrade super stars who took the top spot in Wired Sciencersquos Top 10 Things Launched into Space in 2008 when they participated in the TARDIS (Tardigrades in Space) program Part of their job as tardinauts or pioneer space travelers was simply to survive the experience Happily many of them did thus becoming the first animals to return alive after exposure to both space vacuum and solar radiation

In the Northern Neck is a place where ldquonobody wants to go home theyrsquore having too much funrdquomdash and itrsquos called Leadbellyrsquos

Leadbellyrsquos Restaurant that is at Fairport Marina Tammy LaFollette who runs it says employees even come in on days off just to hang out

Tammy grew up visiting the Neck with her family which eventually moved here She left after high school but has returned several times most recently when her mother became ill in 2011 She resurrected the Marinarsquos

restaurant when she opened Leadbellyrsquos in August of that year

A commercial artist Tammy has done interior design and artwork created logos and advertising images and even taught gourd sculpture to kids with disabilities in Washington DC

Now once again shersquos cooking ldquoCooking is a form of creativityrdquo Tammy explained ldquoAnd coming up with creative names for new dishes is a challenge toordquo

The Fairport Marina is familiar territory to Tammy She not only cooked in the restaurant in the late 1990rsquos she also decorated it even painting murals on the bar as well as using driftwood and found objects and painting nautical images on them That was the period when Coastal Living Magazine named the Marinarsquos restaurant one of the top five ldquoSeafood Divesrdquo on the East Coast

ldquoMy goal is to earn that sort of recognition againrdquo Tammy said

The first hint of the fun at Leadbellyrsquos is the giant frog in sunglasses flashing V for Victory on the side of the building as you drive into the parking lot Enter the restaurant and yoursquoll see frogs everywhere painted frogs stuffed frogs sculptured

frogs frogs made of gourds ldquoFrogs are my religionrdquo Tammy

said smiling ldquoYou know Forever Relying on Godmdashwe need all the help we can get Thatrsquos why there are frogs everywhererdquo

And on the menu is a specialty of the house frog legs Folks keep coming back to Leadbellyrsquos for the frog legs The restaurant sells more than 30 pounds a week ldquoFolks say theyrsquore the best theyrsquove ever hadrdquo said Tammy

ldquoThey donrsquot really taste like chicken no matter what anybody saysrdquo Brooke Carrillo the bartender said ldquoThey taste more like sugar toads but with the texture of chickenrdquo

Some of the best fried green tomatoes to be found along the Chesapeake are also on the menu available as an appetizer and on sandwiches as well ldquoWe change our oil every dayrdquo Tammy said ldquoThatrsquos why theyrsquore always lusciousrdquo

There are different lunch and dinner specials daily ldquoWe always have both meat and fish specials for dinnersrdquo she said Another regular dish people return for is ldquoMy Maryrsquos Oystersrdquo cooked according to Leadbellyrsquos own recipe All the produce and seafood come from local purveyors helping maintain the

fresh taste of all Leadbellyrsquos dishes Along with sharing chefrsquos duties

Tammy also is redecorating the spaces in the restaurant ldquoAnd we always decorate for each holidaymdashwersquore very festive around hererdquo she said

Leadbellyrsquos also hosts private parties Theyrsquove served wedding rehearsal dinners and host a regular group each month that comes with its own disk jockey for a dance party

Every other Saturday Leadbellyrsquos offers live music The house band is called Throwinrsquo Wake

Tammy and her employees love the bright casual atmosphere of Leadbellyrsquos ldquoWersquore kind of like a hidden little secret where folks know they can leave all their troubles at the doorrdquo Tammy said Brooke added ldquoAll Tammyrsquos employees are happy and that makes everyone who comes in happyrdquo And Tammy finished off ldquoI tell my employees if you arenrsquot having fun working here you donrsquot need to be working hererdquo

Leadbellyrsquos has many regular customers ldquoWe see the same people week after week We appreciate our local customer base year round though we certainly enjoy our summer visitors who are vacationers and Marina customersrdquo Tammy said

One regular customer enjoying his soft crab sandwich summed up Leadbellyrsquos appeal ldquoI come in here almost every day because I enjoy the food and I enjoy the companyrdquo

Wersquore not the first to experience stressful times and confusion in a changing

world In 1939 a 45-year-old retired Lieutenant Commander of the US Navy concerned about being recalled for duty at the dawning of WWII asked Edgar Cayce what could be done to facilitate peace His counsel was to ldquohelliplive as you prayrdquo In other words to live each moment as peaceful as humanly possible When we pray for peace but our actions are anything but peaceful we create heartache war and destruction

This timeless answer remains good advice today It is okay to feel discouraged or overwhelmed by what we see in current events How can we take our power back and make a difference What can we do to change things and improve our world

A good friend of mine no longer watches the news on TV or reads anything about war and fighting overseas She chooses instead to visualize the people in these areas of conflict as whole healthy happy and prosperous She is adding her positive energy to others of like mind thus multiplying the good vibrations Another friend always watches the news so she knows where to send her prayers and healing light The more we add our thoughts and actions to the possibility of peace the larger the consciousness of peace becomes We can all do this type of internal work as Mr Cayce counseled

The effects of our individual thoughts and actions often may not be apparent until generations later Henry D Thoreau was a quiet man who lived simply in Concord Mass Spending much of his time in deep thought he wrote books about civil disobedience peaceful protests and the beauty of nature His writings greatly influenced M Gandhi and ML King and contributed to their

world-changing actions Similarly we may never know the far-reaching long-lasting effects of our own thoughts words and gestures

You donrsquot have to be a Thoreau to inspire greatness The first step is to clean up your thoughts You may not be able to control all the thoughts that pop into your head but you donrsquot have to sit down to dinner with them The unpleasant situations we currently face didnrsquot start yesterdaymdasha long chain of angry fearful thoughts created them Instead of choosing a negative response that condemns the people and events that bring great suffering make a choice for the positive Irsquom not suggesting that we deny that bad things happen or avoid addressing issues that need attention Simply keep a positive and hopeful attitude looking for good things in your experience It doesnrsquot take a big sweeping time-consuming expensive change Each small action that we take during the course of a day helps to create our Eden Here are some suggestions to inspire more peaceful moments

Preventative Maintenance My personal motto Keeping yourself in a state of equilibrium ensures that your mindbodyspirit are strong enough to withstand the stresses of modern living Tools for healthy balance include restful sleep scheduled downtime proper nutrition lots of clean water and exercise that is fun

Soul Nourishment As important as feeding the body feed your soul daily with uplifting reading music or anything of your choosing as long as it is helpful and hopeful

Take control Protect your mind and emotions by consciously choosing what you read view listen to and the conversations you have Let go of toxic peopleideas

Legacy Decide on what kind of world you want to leave behind Take your legacy and work with itmdasha kind world a peaceful world Keeping that ideal in mind choose

your reactions based on that ideal when faced with a decision This takes work and attention but is easier with practice and life changing Deep peace pure green of the grass to you

to fill the time available to do it But there is another law operating along these same linesmdashthe more room you have the more stuff you accumulate To check this out we asked ldquoWith the exception of clothes if we looked in your closet what would we findrdquo

Dawn Sanders-Ball who lives in Weems is a nurse in an acute rehab center in Yorktown She admits to being ldquoa document freakrdquo Therefore itrsquos no

surprise that her closet also houses file cabinets and boxes of papers

ldquoSchool records transcripts even PowerPoint presentationsrdquo says Dawn perhaps remembering her college days in northern Virginia Dawnrsquos nine year-old niece Dayla Reed who attends Lancaster Middle School and ldquolikes history the bestrdquo isnrsquot following in her auntrsquos filing

footsteps yet Dayla has a toy box where shersquos normally ldquopretty goodrdquo at keeping things picked

up but says that her things can be ldquoa little bit everywhere toordquo

Kilmarnock resident Ellen Strangeway used to ldquodo hair at Head Huntersrdquo but is now responsible for keeping her husband Jamesrsquos

books for Central Equipment Co If we looked in Ellenrsquos closet ldquoit would depend on the time of dayrdquo as to what we would find ldquoHot outside wersquod see Pettierdquo she says Pettie is her Jack Russell terrier ldquoHersquos not the one afraid of thunderstorms but he likes the cool ceramic tile on the floorrdquo says Ellen Pettiersquos sister Souch is the one who is afraid of thunder and lightning Wersquore not sure if Souch inherited this fear from her misnamed mother Inky (entirely white with a couple of small tan spots) or her haughty grandmother Lady Ellie who may have descended from royalty Ellen also has four horses but as far as we know theyrsquove never set foot inside her closet

If you like good barbecue Captain Ron Campbell in Topping is your man Hersquos been cooking ever since he can remember and probably even before then Although Ron has over 500 cookbooks he does everything by taste ldquoI use the books mostly for ideasrdquo he laughs He doesnrsquot keep them in his closet however ldquoReally therersquos nothing

but clothes in there with the exception of some guns I inheritedrdquo says Ron ldquoButrdquo he adds ldquoMy wife is another story She probably has 500 pairs of shoes in thererdquo We couldnrsquot check this out for accuracy so wersquoll take Ronrsquos word for it

While taking advantage of the many area activities the Rosebud B amp B located on Kings Highway in Montross offers comfortable and welcoming accommodations for visitors to the Northern Neck Rosebud BampB is family owned and operated and recently celebrated its one year anniversary Opened in August 2011 by Peggy Evans Garland and her husband the Rosebud B amp B has welcomed a host of visitors in its inaugural year

Peggy opened Rosebud B amp B for several reasons She knew that the area needed more accommodations for people wanting to explore the Northern Neck and she wanted to provide a place for those visitors to stay She felt that she had the perfect scenario to open a B amp B On the front portion of her property stood an old house that she and her family were not using She felt that turning this cozy old house into a bed and breakfast would be a great use for the old house and serve the community

After making the decision to create

the bed and breakfast Peggy began a renovation project transforming the old house into a lovely B amp B The renovation included hardwood flooring a new kitchen central air conditioning new windows fresh paint and much more Peggy enjoyed the renovation project and is proud of the beautiful end result

At the completion of the renovation the old house had turned into a beautiful and welcoming bed and breakfast The Rosebud Bed and Breakfast offers two guest rooms a common room a dining room and a kitchen The first of the guest rooms is the spacious Rose Room with a double bed The second guest room the Bud Room is a little smaller and has a queen size bed Both rooms offer ample closet and drawer space

In the common room guests find an inviting place to relax and watch TV The kitchen is equipped with a refrigerator and microwave for visitors to use as needed Guests are encouraged to linger over breakfast in the dining room where homemade muffins breads and breakfast casseroles are served In addition fresh fruit is offered along with juice coffee and tea Wifi can be used throughout the B amp B and the Rosebud welcomes pets

An additional benefit of staying there is the hostess Peggy Not only does she create a welcoming and comfortable place to stay but she also possesses a wealth of information about the region She has lived in Montross for 30 years and her husband is a native to the area

Peggyrsquos love for the Northern Neck and her desire to share its rich and unique history with others was another factor that motivated her to open Rosebud B amp B ldquoI wanted to meet different people interested in the Northern Neck and share information with themrdquo she says She remarks ldquoMany come to the Northern Neck to attend an event or see the historic sites Others use it as a central

meeting place while some have stayed at the B amp B as they bicycled from Chesapeake to Fredericksburgrdquo

Some of the local attractions that Peggy helps guide her guests to enjoy include any of the 12 wineries located along the nearby wine trail The area is home to the birthplace of two of our nationrsquos presidents George Washington and James Monroe Stratford Hall Plantation birthplace of civil war general Robert E Lee is located nearby and offers tours of the house and gardens

Country Cottage is known as The Sweetest Secret in the Northern Neck As many of

her customers have remarked itrsquos a surprise to step inside Country Cottage for the first time Itrsquos almost overwhelming to be faced with the number of options available at the store When Tim and Pam Sawyer first opened their shop in 1998 as a garden center they had no idea that their garden shop would grow into such beloved stop for locals and travelers alike

The yellow building is one of the first that yoursquoll encounter after crossing the bridge when entering the Main Street area of White Stone The color of the house which was originally white was inspired by a pretty yellow daffodil that Pam had been working on

Country Cottage started out as

a garden center and gift shop and has slowly grown through the years into what it is today In 2006 Pam acquired a local flower shop and had it moved into Country Cottage adding to the already large variety of items available When she made the decision to add fudge into her lineup in 2007 she had no idea that it would become such an enjoyed item

Her next addition actually came as a suggestion from her customers They commented that it would be nice to sit in the garden area and eat ice cream Pam listened adding Hersheyrsquos ice cream in 2008 Finally in 2010 Pam took a class about how to make chocolate and added a line of homemade and pre-made chocolates to the Country Cottage

Pam was born and raised in Newport News but has been living in Mathews for 21 years She met her husband Tim in high school and theyrsquove been together since they were 16 With 30 years of marriage under their belts Tim and Pam are a story of high school sweethearts gone right It was Tim who originally pointed out the store when Pam had to stop working due to health concerns and they worked together to make Country Cottage a reality

Their move to Mathews came when Pam gave in to Timrsquos desire

to live in the country coupled with a desire to move somewhere safer and quieter than Newport News for the sake of their children They have two sons who have helped over the years until they started their own careers one of whom is a CPA the other is a salesman Tim still stops by once a week to help Pam out with the store With her free time Pam enjoys spending time with her family and her

three grandchildren who live locallyPam loves what she does and

she is involved in every aspect of her business She makes 80 of the chocolates in her store and has special molds for each filling so it doesnrsquot matter which type of chocolate is on the outside you can tell which filling it contains just by looking at the shape Country Cottage offers 20 flavors of fudge including seasonal flavors and there is a running offer to buy a pound of fudge for $1299 and get half a pound free

Pam learned floral arrangement from her mother who made corsages

and bouquets for weddings and other events and she makes the flower arrangements herself Country Cottage is a ldquofull service florist whatever they need we dordquo Pam loves interacting with her customers and greets each one cheerfully when they come in the door She recounted a story about how one little girl remembered her store despite only seeing it once a year and said ldquoItrsquos

neat to be a part of someonersquos memoryrdquo

At Country Cottage they try to be as allergy friendly as possible and they thoroughly clean everything between servings They offer many sugar free items and several gluten free selections

When Pam recently discovered that she was unable to consume gluten it opened her eyes to how many products contain gluten One of her goals is to expand her line of gluten free products While she may not have the time now Pam has plans in store including an expanded gourmet line and more chocolates This is a local favorite and is sure to remain that way with Pamrsquos additions

The Women of the Moose (WOTM) is a unit of Moose International which is located at Mooseheart

Illinois It brings together wives mothers sisters daughters et al to assist in charitable activities of the Moose fraternity Special support is given to Mooseheartmdashfor childrenmdashand Moosehavenmdashfor seniors WOTM members are called co-workers and they give freely of their time and donations to do fund raisers in order to support Mooseheart Moosehaven and many other charities

The WOTM award two scholarships each year to high school students and we support various school projects during the year We bought school supplies for the School Bus project which provides necessary items for needy

school children in Essex CountyWe proudly present checks to

ldquoSmell thisrdquo Chris Denton urges opening a jug of ldquocompost teardquo the secret to Organic Green Lawn Carersquos ability to keep

lawns looking lush and green Chris who has a degree in turf

management and landscaping from Virginia Tech is a passionate advocate of using totally organic fertilizers His company uses no synthetic fertilizer products and was the very first lawn care company in the Middle Peninsula and Northern Neck to use only organic-based fertilizer The business opened in 2001

ldquoWe help property owners get and keep a healthy lawn and make fescue grass survive better through drought and high temperaturesrdquo Chris said ldquoWe do this through

the type of products we use organic based ones Organic fertilizers seem to help lawns be more resistant to summer stress periods They promote uniform and constant growth not spurtsrdquo

A visiting customer said ldquoMy grass looked absolutely gorgeous for the wedding Organic Green Lawn Care took a wild lawn and turned it into something wonderful They killed all the weeds and grew my grassrdquo Chris shared pictures of healthy lawns like this customerrsquos all taken this July

Chris explained the advantage of compost tea is that it creates a dense turf ground cover which resists weeds cools the earth and contributes to a healthy environment No pollutants run off into the watershed In fact you could drink this ldquoteardquomdashit is so safe that it requires no EPA labeling Actually it smells rather like a vinegary barbeque sauce Unlike synthetic fertilizers made from petroleum products and synthetic nitrogen organic products are natural use bio-stimulants and leach less nitrogen into the watershed

ldquoEach year wersquove been in business wersquove used more natural products We use absolutely zero percent phosphorus to maintain lawns Irsquom really proud of our environmental preservation record as well as our green lawnsrdquo he said

ldquoIf you treat turf rightrdquo Chris said ldquoyou develop a healthy lawn that needs no irrigation to survive stress periods and remain alive Lawn renovation is not a one-shot deal itrsquos a process from seed to weed to beautyrdquo He points out that a healthy lawn will come back from summer heat with a little rain and cooler weather ldquoWe rely a lot on Mother Naturerdquo he added

Since there is as yet no organic weed control product available that works Organic Green Lawn Care uses chemical weed control sparingly on new lawns to get the weeds out while the dense turf develops ldquoDense turf keeps most weeds out naturally long-termrdquo he explained ldquowithout needing to use weed-killer productsrdquo

Organic Green Lawn Care was one of the first companies in the United States to commit to using micro-coated seeds These seeds have spores of beneficial natural soil fungi not present in newly seeded fresh-soil lawns ldquoinoculatedrdquo in them This grass grows a denser root

system much more quickly and in the long run requires less water less fertilizer and very little weed control

Chris has an interesting exhibit in the office In March 2012 he removed a patch of dense turf grown from seeds planted in late fall 2011 It had grown over an access cover He tossed the divot into a box by his office window In mid-July that same patch was still alive still showing green leavesmdashwithout soil and without having been watered The root system is so intricate that Chris stretched out these roots at least six inches

Fall is the best time to rejuvenate stressed fescue lawns and it is also the best time to start a new fescue lawn ldquoFescue lawns do not do well when planted in the springrdquo Chris said ldquoSummerrdquo lawns are Bermuda or zoysia grass but traditional lawns are fescue

Chris is part of the Virginia Turf Council which is under the jurisdiction of the Department of Conservation Research He never stops searching for more and better ways to keep lawns healthy organically

Did you know that those sometimes pesky little stickers on fruits and vegetables at the

grocery mean more than just a way for the cashier to ring you up quickly

They are called PLU Codesmdashprice look-up The Produce Marketing Association maintains standardized listings of thousands of codes denoting each different variety andor size of fruits and vegetables Most PLU Codes are four digits beginning with the number ldquo3rdquo or ldquo4rdquo This indicates that it is probably ldquoconventionallyrdquo grown (See the August issue of Chesapeake Style) For instance a small lemon will be labeled ldquo4033rdquo

It is an Urban Legend that you can use the PLU codes to identify Genetically Modified food containing genes from other organismsmdashmore on GM food in an upcoming column

The forward thinking Produce Marketing Association reserved five digit codes beginning with an ldquo8rdquo in case retailers might want to distinguish between a GMO and a non-GMO for price or inventory purposes That hasnrsquot really caught on

since the farmers have successfully lobbied the USDA not to make GMO labeling mandatory Why Because surveys have shown that up to 70 of US consumers would avoid GMO food if it were easily identifiable

Guess what It is easy Since I prefer to buy organic I always check the code before putting an item in my basket Produce that is Organically grown will be labeled with a five digit code that starts with the number 9 If you remember that fact it will be easy to spot organic produce next time you go shopping An organically grown lemon will be labeled ldquo94033 rdquo

Is it really back to school time already I feel like summer just started and now we are looking at school again School starting it means changes around our home No more sleeping later in the morning or staying up later at night We have to keep a stricter time schedule This is when I pull my crock pot out to make life easier This recipe has become a family favorite and the

most viewed recipe on my blog One bite and you will understand why Crock Pot Chicken and Noodles2-4 chicken breasts1 Large can of cream of chicken soupSalt amp Pepper or seasoning you prefer1 teaspoon of celery seed1 cup of chicken brothEgg noodles (cooked added at the end)Place chicken in the crock pot Pour chicken broth over chicken pour cream of chicken soup over and add seasonings Cook on low for 6-8 hours or 4 hours on high Add egg noodles to boiling water and cook until done Shred cooked chicken while in the crock pot I usually do with two forks Add noodles and stir

What kid doesnrsquot like corn dogs Mine love them and I like that I control what goes in theseCorn Dogs 1 cup buttermilk2 eggs14 cup oil2 tablespoons sugar1 teaspoon salt2 teaspoons baking powder

1 13 cups corn meal23 cup flour1 to 1-12 pounds hot dogs 12 cup flour for dustingOilPopsicle sticksIn a large bowl combine the buttermilk eggs oil sugar and salt Mix it very well Sprinkle in the baking powder corn meal and flour Stir it all up to make a slightly thick batter Take your hot dogs and dry them off on paper towels Dust the hot dogs with flour coating them completely The cornmeal batter wonrsquot stick to the hot dogs unless they are coated in flour Stick the Popsicle sticks into the hot dogs Set the hot dogs aside Heat the oil to 375deg Scoop some of your corn meal batter into a narrow jar or cup which is as tall as your hot dogs are long Fill the jar or cup about 34 of the way full Dip the hot dog into the batter and swirl to coat evenly Let excess batter drip off and then quickly place in hot oil Donrsquot crowd the fryer Turn to make sure all sides are cooked Drain on paper towels

Seafood Bisque Topped with Crispy OnionsLower your triglycerides and reduce inflammation with Omega-3 rich fish1 tablespoon of unsalted butter3 oz raw shrimp peeled deveined and chopped1 can (3-4 oz) salmonOne-half medium onion chopped

2 cloves garlic minced2 cups of lowfat milk1 cup lowfat yogurtGarnish4-6 tablespoons of onion chopped4-6 whole shrimp peeled and deveined2 teaspoons of pure olive oilPreheat oven to 450 degrees In a medium saucepan heat the butter on medium heat and sautersquo the onion and garlic for 3-4 minutes Add the shrimp and saute for 3-4 minutes more Add the salmon and milk and bring to a simmer Cook for 12-15 minutes Toss the onions in 1 teaspoon of olive oil and spread them

in a single layer on a large baking sheet Bake for 12-15 minutes or until dark and crispy Transfer the soup to a blender and mix until smooth Strain through a fine sieve and pour back into the pan Stir in the yogurt and reheat Toss the shrimp with the other teaspoon of olive oil and bake for 4-5 minutes or until cooked through

Serve the soup with the crispy onions and whole shrimp on top Serves 4-6Peanut Butter Blossoms(Quick and easy but so-o-o- delicious)Buy a package of Betty Crockerrsquos Peanut Butter Cookie Mix Follow directions on the back You will need1 tablespoon of water3 tablespoons of vegetable oil1 eggMix well drop on a baking sheet and bake at 375 degrees When cookies are done place one Hershey kiss on each cookie Now comes the hard part donrsquot eat them allKitchen tested and photographed by Diana Wise

After a long hot morning of chasing bumble bees butterflies and waiting for that perfect seagull photo I was bushwacked Defeated and sweaty I headed home from Totuskey Creek with my tail between my legs

I decided to see if I could find something to photograph at my neighborrsquos Randy and Cindy Packett Well hello there sat this old red barn that I have seen for years but never really noticed it until I had my camera Funny how that works isnt it

Randy has made his land and the creatures that inhabit it very available to me for my photography

I took several photos of that barn on that hot August morning but this is the one that I am most proud of I love old barns they have so much character and what stories they could tell if they couldPaularsquos passion is horses and readers will find an article or two in every issue of Chesapeake Style including many of her stunning photos


In a recent conversation with my cousin Peggy in Williamsburg she told me she was waiting for her son to come and bring her old ice cream freezer down from her attic She asked if I knew any good recipes Shersquod been looking online too

That brought back memories When we lived in Illinois we had a boat on the Illinois River her name was Happy R and she was a 1933 custom built Chesapeake Bay Deadrise 34 feet outboard rudder Gray Marine 109 engine hull cypress log brightwork Honduras mahogany We were her second owners She had been born and raised on the Chesapeake Bay and had been custom built for my fatherrsquos cousin Irsquod spent time on her as a child Her original owner was William B Russell aka Happy Russell from Parkesburg Pa When he died the family put her up for sale and I convinced my husband to buy her So we had her trucked to the Illinois River

Her refrigeration was the original ice box Every weekend all summer long wersquod go to the boat sometimes on Friday night other times Saturday mornings On our way through Ottawa on Saturdays wersquod make several stops en route one of which included picking up a 50 pound block of ice for our ice box (On Sunday night wersquod put the block in the cooler haul it home freeze it and return the next weekmdashuntil it was time to replace it)

The Dr Pepper bottling plant was our source of icemdashand Dr Peppermdashand once or twice they gave us the syrup so we could make Dr Pepper ice cream My sonrsquos favorite ice cream was French Vanilla I read the recipe at home The directions said to prepare the mix on the stove add ingredientswell none of that for me I added the ingredients including the eggs to our weekly cooler haul and off we went

My modus operandi was to place the ice cream freezer on the pier plug it into the power fill the container with the ingredients add ice and let the paddle mix the ingredients It worked well most of the time Then wersquod eat what we could and share ice cream with our boat neighbors Many of them had real refrigerators and they might save and eat their ice cream the next day This particular weekend I added the ingredients to the container cracked the eggs adding them confidently figuring the paddle would break them up and wersquod have French Vanilla ice cream We all enjoyed our ice cream on the dock and shared part of it with our neighbors

The next day one of our neighbors commented about the perfectly frozen egg yolks she found in her ice cream Oops The paddle hadnrsquot broken up the eggs before they froze

After I told Peggy my story and we had a good laugh she said shersquod find her own recipes
