CHATEAU DES KARANTESRED WINE, LA CLAPE, LANGUEDOC 2010
I always enjoy my yearly trip to Languedoc. I’m a big fan of the big wines from the region, and Chateau des Karantes is no exception. It’s a BIG wine (60% Syrah, 30% Mourvedre, 10% Grenache) that should be given a long decanting. It shows big berries, toasted oak, and a concentrated earthiness that I find remarkable. This wine is proof-positive of the steady increase in the quality of Languedoc wines. The La Clape area is quite dry and harsh, which makes the vines work very hard. The result? Superb wines. Enjoy!

When it comes to warm sunshine and the green grasses of late spring, there is not a better way to enjoy it then with a nice glass of white Bordeaux. The Chateau Beauregard Ducasse shows lots minerality in this classic Sauvignon Blanc, along with the soft floral and citrus tones, come together to create one of my favorite wines to enjoy while working in the garden or just relaxing on the patio.

COLIN’SBEER PICK
IPA noobz and fans alike can come together in adulation of Coop F5 IPA, one of the finest examples of the West Coast IPA not brewed in California. With a murky orange coloration and intense notes of bready malt, citrus, and pine, F5 is surprisingly crisp, zesty, and easy to drink despite its impressive 100 plus ibu count. Savor in the warm sunshine.

CHATEAU SENAILHACBORDEAUXSUPERIEUR 2006
In honor of the huge wine exposition this month in Bordeaux, VINEXPO, I’ve chosen this classic. Tremendous bargains can be found in Petite Chateau like Ch. Senailhac. This classic Bordeaux blend of Cab Franc, Cab Sauvignon, Merlot and Petite Verdot has an opaque black color with perfumed aromas of ripe blackcurrant and dark chocolates. A spicy background and notes of cedar cigar box round outthis lovely wine from the heart of Bordeaux.

SOUTHERN STARPINE BELT ALE6-PACK CANS
Pine Belt pale ale from the Southern Star Brewing Company is a top notch for hop and malt lovers alike. The piney and aromatic hops profile shows up nicely, but it’s the malt build that stands out to me. Flavors of caramel and toast add depth to the crisp citrus notes while a subtle bitterness finishes everything up.

THE KENTUCKY COLONELJESSE KING, LIQUOR MANAGERAT THE TASTING BAR ON MAY 21
There are many cocktails whose names include “Derby,” but there’s only one DERBY. It’s a favorite for
being super easy to make and it incorporates the oft-overlooked Benedictine. Mixologists have been
combining bourbon and Benedictine for a hundred years to make DERBY. This is my own take on the
simple, delicious cocktail. I call it, THE KENTUCKY COLONEL!
DIRECTIONS:
Pour ingredients into a cocktail shaker with ice. Shake well and strain into cocktail glass. Garnish with a twist of lemon and enjoy life!

DOUBLE CROSS TRUFFLE OLIVE MARTINIAT THE TASTING BAR ON MAY 14
TOASTED HEADCABERNET SAUVIGNONStarts with aromas of dark cherry fruit, currant, toasty oak, and vanilla, followed by flavors of dark cherry, blackberry, cassis, smoky clove and sweet vanilla.
CHARDONNAYThis wine delivers white peach and Asian pear aromas and is rich, yet crisp on the palate with great acidity. We prefer to just think of it as a solid American Chardonnay with some oaky heft behind it.
MERLOTAromas of cinnamon, vanilla, and chocolate-dipped cherries give way to flavors of Bing cherries, sweet anise, vanilla, and roasted coffee. The color is bright-to-dark ruby red.
UNTAMED REDScents of dark red cherry, toasty oak, vanilla, cocoa powder and caramelized brown sugar are followed by flavors of brambly dark berry fruits and chocolate raspberry torte.

RED ROCKPINOT NOIRIt is layered with soft red fruit flavors of strawberry, dark red cherry, raspberry jam, and plums. These characteristics are balanced with subtle hints of oak and caramel notes that make our Pinot Noir smooth and balanced.
