The Pilu at Freshwater wine list has been conceived to take you on a Sardinian gourmet tour and is designed to complement our chef/owner Giovanni Pilu’s Sardinian cuisine. More than ever and in this time of historic travelling restrictions, the concept is being emphasized. Our offering of succulent, traditional Sardinian dishes presented by our head-chef Federico and complemented by carefully selected Sardinian and Italian wines is our way to bring Sardinia to your table: please ask for our seasonal degustation menu for the full experience. We have a diverse range of local wine too, largely from our own state of New South Wales, as we love to showcase local produce. For a quicker selection, you can turn to the Sardinian wine section, complete with maps and information on the history and varietals. In the main list, Italian and Australian wines are listed together, by varietal, to assist in navigating through the list more easily. We have a large range of wine by the glass including a premium selection, as well as small and large bottles. If you require guidance, a member of our wine team will be happy to assist.

Organic, Biodynamic, Natural and Orange Wines

As increasingly popular as they are controversial, organic, biodynamic and natural wines are now an important part of our wine culture - here we offer a little information for those who may be curious about, or new to them. Although it may all seem a little newage to some, it is worth noting that many of the best wines in the world from some of the most prestigious estates are made using these methods. Organic wines are produced from grapes grown without the use of chemical fertilizers, pesticides, fungicides and herbicides. Biodynamic agriculture is based on respect for the natural course of nature - in particular the phases of the moon - and its resources, as well as on the use of biodynamic preparations (natural compost) in certain phases of the year. The result will be naturally healthy plants, of high quality and able to defend themselves against parasites. Like organic wine, biodynamic wine also does not eliminate sulphites but limits them further. Natural wines are more difficult to define, as there is no governing body set up to control production methods, resulting in various interpretations. They are generally made with ‘minimal intervention’, using natural yeasts, and minimal or no sulphur is added. Wine is often left on skins (both white and red) and there is no filtration, fining or adjusting. Natural wines look and taste a little different to ‘conventional’ wines, they will be darker in colour and cloudy, and will evolve dramatically in your glass. They are food friendly, vibrant and interesting though, so whilst not for everyone, they are most certainly worth trying. Orange wines are created when white wine grapes are treated like red and left in contact with the juice. The longer the skins are left, the deeper the colour of the wine. Acqua e bibite Acqua

Franciacorta

The Franciacorta D.O.C.G. region that is home to Bellavista, is an area located in the hills of Lake Iseo in the province of Brescia in the eastern part of Italy’s Lombardy region – a very restricted area of 2,800 hectares that produces some of Europe’s best sparkling wines made in the same way as the great wines of Champagne in France where the second fermentation takes place in the bottle.

Sardinia is the second largest island in the Mediterranean and is 200 kilometres off Italy’s west coast. It is a unique region that has spent much of its history under Spanish rule - the Spanish influence remains in Sardinia’s food, culture and wine. The Phoenicians were Sardinia’s first foreign invaders and introduced winemaking to the island, but it was the Spanish, controlling the island from the 14th to 18th centuries, who contributed the most to Sardinia’s wine production. The climate is Mediterranean, with short, mild, wet winters and long, hot, dry summers. With rugged mountains and dry plains, soil types vary from sandy clays in the south, the granite of Gallura in the north, to alluvial, gravelly soils around Oristano in the west. Today Sardinia is home to a unique range of grape varieties, predominantly of Spanish origin. Previously known for producing bulk, fortified and ‘Meditazione’ wines (including the famous Vernaccia di Oristano from the west coast), Sardinia is now known for its highquality table wine from Vermentino, Cannonau and Carignano. Beyond these, lay an exciting range of lesserknown varieties such as Nuragus, Torbato, Monica and Bovale, adding diversity and interest to the Sardinian range.

Spumanti Sardi In Sardinia sparkling wines are produced from a variety of local and international grapes (if only in fairly small quantities) and can be dry or sweet. Tenute Olbios and Quartomoro make a sparkling wine in the ‘Metodo Classico’ (Champagne method) with Sella e Mosca and Su Entu using the Charmat (Tank) method.

Bianchi Sardi Vermentino

Some believe that it originated in the Iberian Peninsula, others in the lands of Luni, between Liguria and Tuscany; it would then spread to France and subsequently to Corsica; from here, in the eighteenth century he would have arrived in Gallura, finding his chosen land. Vermentino is grown throughout the Sardinian territory producing wines that are characterized by strong and unique personalities, expression of the different production areas. The plant is vigorous, suitable for various breeding systems, ensures a constant and generous production, expressing the essence of the Mediterranean. Vermentino is used for the production of Vermentino di Gallura DOCG being the only wine from the island to be awarded the highest Italian classification: Denominazione di Origine Controllata e Garantita (DOCG).

Torbato

Of undoubtedly Spanish origin, it is in Sardinia that Torbato was able to reveal its full potential, specifically in the Alghero region characterized by a warm and dry climate and by calcareous-clayey soils, rich in sand and iron, which give the wines strength and minerality. Torbato is generally vinified in purity and as a base for a sparkling wines (made in Charmat Method), both comprised in the DOC Alghero. Consume with bottarga, sea urchin, seafood and spicy dishes.

Arvesiniadu

Arvesiniadu is grown almost exclusively in Goceano, region located in northwest of Nuoro and has been classified as a "Unicum", a term used to define those vines for which no genetic correspondence has been found. It pairs very well with cured meats being also a good accompaniment to fish soups and medium aged cheeses.

Vernaccia di Oristano-Granazza

The name Vernaccia is derived from the Latin ‘Vernaculus’, which defines all that comes from a given place. Vernaccia di Oristano is unique to Sardinia and unrelated to Italy’s other Vernaccia’s - it may be indigenous, or was introduced by the Phoenecians. Vernaccia di Oristano is a historical wine, usually dry, made from over-ripe grapes in a similar style to Spanish Sherry. Wines are aged in a system similar to Sherry’s ‘solera’ where the wines will develop ‘flor’, but Vernaccia di Oristano is rarely fortified. These are complex wines, with deep colour and flavours of orange rind, dried apricot, roast hazelnut, tobacco, tea and winter honey. Granazza is the local name for the same grape around the area of Nuoro in the centre of the island.

Very unique grape most likely introduced to Sardinia by Phoenicians or the Romans, Semidano has survived almost exclusively in the Oristano province (sub-area of Mogoro), a territory of hills of calcareous origin mixed with sands, which enjoy the benefits of the Mediterranean climate and the mistral. In 1995 the DOC Sardegna Semidano was established, including sparkling, superior and passito version. Semidano is a vine with a rather scarce and inconsistent production, being able to produce wines of excellent quality. It goes well with shellfish, lobster, and more generally with all seafood cuisine.

Nuragus still is the most widely grown variety in Sardinia although mainly present in the provinces of Cagliari and Oristano. Grape of ancient origin (possibly Phoenician) Nuragus has been favored by the extreme ease of cultivation and adaptability to any type of soil. Since 1975 the vine has its own denomination, the Nuragus di Cagliari DOC, also in the sparkling and sweet versions. Dry or sweet, it can be paired with fried fish, crustaceans or molluscs, but also with tasty soups, always based on fish.

Grape of ancient origin whose name derives from the Latin ‘muscus’, to describe the characteristic musky aroma of the refined wines, Nasco was on the brink of extinction and saved by a group of zealous growers from the province of Cagliari which in time also managed to obtain the DOC - Nasco di Cagliari. There are no reports of Nasco vines outside of Sardinia, making this variety exclusive to the Mediterranean Islands where grows almost solely on the calcareous soil of Campidano di Cagliari. Its grapes can be used to produce wines in dry(secco), sweet(dolce), fortified(liquoroso) styles with musky tropical flavours. Dry versions can be consumed with rich fish and white meat dishes while sweet one are a real treat with local sweet and cheeses.

Cannonau is the most widespread black grape variety in Sardinia and certainly the best known outside the island. It is grown throughout the region, although the greatest concentration is found in the central areas, in particular in the Nuorese and Ogliastra. The DOC was recognized in 1972. For a long time it was believed that Cannonau was originally from the Iberian Peninsula (Garnacha); however: some important archaeological finds have made it possible to confirme that nuraghic populations cultivated vines and produced wine from an ancestor grape of Cannonau. It is great with suckling pig and game dishes - styles range from medium-bodied and soft, to rich, supple and powerful.

Argiolas ‘Turriga’

Manufactured in the heart of Sardinia, from vineyards with extraordinary exposure, the Turriga is a wine able to surprise and to demonstrate the high quality year after year, confirming it as one of the greatest Italian red wines and, of course, a wine symbol of Sardinia. This wine is made exclusively from native grapes of Cannonau and Carignano. It isthe creation of Giacomo Tachis, one of the greatest Italian oenologist and the father of Sassicaia.

Monica is one of Sardinia’s oldest varietals and was possibly brought to the island by Spanish monks in the 11th century. Cagnulari or Cagliunari, is a red grape variety mainly grown in the north-western area of Sardinia. Recent studies have highlighted similarities with Graciano (Rioja-Spain) and Bovale Sardo, another native Sardinian variety; it would therefore be the fruit of a cross between these two varieties. Cultivated with excellent results by a handful of wineries, is a complicated variety which has found its ideal habitat in loose alluvial soils not far from the sea and whose sensitivity to various climatic factors requires careful and constant work in the vineyard as well as in the cellar. Bovale

Bovale (also known as Nieddera or Muristellu/Muristeddu) is related to the French Mourvedre and Spanish Monastrell. In Sardinia there are two distinct clones; Bovale Sardo (regarded as the superior clone), and Bovale Grande (or Nieddera), which is widely planted around Oristano. Wines produced are medium to full bodied and supple, with earth, spice, and dried herb flavours. Drink with lamb, goat and beef dishes.

Carignano

Carignano is mainly grown in the Sulcis area, in south-western Sardinia and certainly is one of the most interesting vines of Sardinian enology. It may have been introduced to the island by the Phoenicians but a second hypothesis links its introduction to the Aragonese period. In 1977 the DOC Carignano del Sulcis was recognized alongside with various IGTs. The vine has a strong resistance to sea winds, which allowed it to develop on the sandy and sunny soils of the Sulcis where it it is mostly grown on ungrafet roots. Drink with slow roasted lamb, goat and beef dishes.

Nebbiolo is indigenous to the Langhe area in Piedmont and gives birth to one of the greatest Italian red wines: BAROLO, the king of wine and the wine of kings which was one of the first three Italian wines to be awarded DOCG status when the classification was introduced in July 1980. The Barolo area is restricted to a handful of ‘communes’ which produce slightly different styles according to soils and mesoclimates. Wines from the villages of La Morra and Barolo are generally aromatic and fruity with La Morra producing the most perfumed and graceful wines, while the one from Barolo tend to be more complex and textural. Castiglione-Falleto, Serralunga d'Alba and Monforte produce more structured wines that require longer aging with Serralunga d’Alba barolos being the most tannic of the five.

Sangiovese + Blends

Sangiovese is the most cultivated red grape varietal of Italy. It seems that Sangiovese was already known to the Etruscans and that the name derives from Sanguis Jovis, Blood of Jupiter. It can produce wine with perfect balance, with very fine perfumes, floral, but fragile. Possibly the most popular and important wine derived from Sangiovese is Brunello di Montalcino.

Produced in the medieval village of Montalcino in the province of Siena, in 1980 Brunello di Montalcino was awarded the first Denominazione di Origine Controllata e Garantita (DOCG) designation and today is one of Italy's best-known and most revered wines. Vineyards in Montalcino are planted in varied soils, including limestone, clay, schist, volcanic soil and a crumbly marl known as ‘galestro’ at altitudes ranging from 149m to 500m. Brunello di Montalcino is made 100% from Sangiovese.

Antinori ‘Tignanello’

Produced by the Antinori family in the Chianti Classico zone and only made in the best vintages from the vineyard of the same name. Tignanello is the original ‘Super Tuscan’ wine, first produced in 1970 as a Chianti Classico Riserva (including white grapes and Canaiolo in the blend) and aged in French barrique. In 1971 it became a VDT when Cabernet was added and the white grapes were removed. Made from 85% Sangiovese, 10% Cabernet Sauvignon and 5% Cabernet Franc.

Grown and produced on the Antinori family’s Tignanello estate in the Chianti Classico zone, Solaia was first produced in 1978, and is only made in the best vintages. Originally made from Cabernet Sauvignon and Cabernet Franc with 20% Sangiovese added to the blend in 1980.

Tenuta dell’Ornellaia was founded in 1981, in the area of Bolgheri, along the coast of Tuscany. The first vintage of ‘Ornellaia’, the flagship wine, was produced in 1985, and is made from a blend of Bordeaux grapes including Cabernet Sauvignon, Merlot, Cabernet Franc and Petit Verdot.
