    Season's Eatings

    Here's how to give your guests something sweet to talk about during the Holidays!

    For Fall gatherings the dessert buffet should have shades of orange and fall colors. Order yourfavorite cakes and cookies in warm orange or peachy tones and place real maple leaves andgourds among earth tone platters. Art supply stores provide a nice se lection of decorative items.

    Hosting a party? Your dessert buffet should complement your party's theme. Use a table cloth,colored table, flowers, bows, and pearls to make the table even more attractive! If you have roomon your buffet table, add large photos or posters as back drops, and a punch bowl or fountain.Attractive candy jars complement any dessert buffet.

    Use elevation: People taste with their eyes first, so present your desserts in the best way possible.Use different heights of platters and stands, and a few hidden sets of heavy books under theloosely placed table cloth to create different levels. Dont forget to put your table out in the openso guests notice it quickly!

    Decide on the quantity: You dont want to overwhelm your guests with too many choices sowe typically offer 2-3 more options than the amount per guest. For example, if you allot 3 dessertsper person, offer 5-6 dessert options total.

    How to Create a Perfect Dessert Buffet

    Preheat oven to 375 F. Wash cauliflower. Break into flowerlets, then cut into small pieces.

    Place cut cauliflower into a steamer, cover and steam until tender, about 5-7 minutes.Invert cauliflower into a metal bowl and allow to cool.

    Mix salt and optional paprika into the cooled cauliflower along with the Gruyere and Parmesan,then place in a 8 baking dish.

    Drizzle the milk over the cauliflower; place foil or parchment paper over the baking dish, placein hot oven and bake for about 40 minutes.

    Serving suggestion: Cut the tomato into paper-thin slices using a serrated knife. Arrange thetomato slices on a plate in a circular pattern, then place cup of the hot Cauliflower Mac andCheese on top of the tomato slices.

    Serving size: 1/2 cup Servings: 5 Prep Time: 20 minutes Cook Time: 40 minutes

    Roast the chicken. Preheat the oven to 375 degrees F. Using a sharp knife or kitchen shears,cut along both sides of the backbone and discard it. Flatten the chicken and cut it in half throughthe breast so you have two halves-each with a leg and breast. Rub all over with some of thesmoked olive oil, ensuring it gets in all the crevices. Season all over with salt and pepper.

    Set the chicken in a large roasting pan over two burners and heat over medium-high heat.When the pan is hot, add the chicken halves skin-side down and sear for 4 to 5 minutes. Turnthe chicken over, add the potatoes to the pan, and drizzle with more smoked olive oil. Seasonwith salt and pepper. Roast in the oven for 45 minutes, or until an instant-read thermometerinserted in the joint between the thigh and drumstick reads 160 degrees to 165 degrees F. Thepotatoes should be golden on the outside and tender in the middle. Remove from the oven andallow the chicken to rest for 5 minutes.

    Make the citrus salsa. Use a sharp knife to cut away the rind and pith from each of the citrusfruits. Holding the fruit over a bowl, carefully cut between the membranes to free the segments. Let the juices and segmentsfall into the bowl. Add about cup extra-virgin olive oil to the bowl and season with salt and pepper. Cut the radishes into veryfine matchsticks on a mandoline or with a sharp knife. Fold them into the citrus salsa, and add the chives.

    Serve the roasted chicken with the potatoes and citrus salsa, and garnish with flowering cilantro. Season with fleur de sel.Reprinted from the book Tyler Florence Fresh by John Lee available at david M. brian at 110 Bon Air Center.

    BAs the new community of Greenbrae filled with familiesin the late 1940s, holiday traditions came with them.

    Easter, Fourth of July, Halloween and others were festivetimes made even more fun by the newness of the neigh-

    borhoods. The addition of Bon Air Center in 1952 enhancedthe community spirit, with its special holiday events and sales.The surrounding neighborhoods were transformed at Christ-mas time.

    With the first new homes in place in 1947, the GreenbraeCompany started an annual Christmas home decoration contest, judged by non-residents and offering a $50 first prize and manysecondary cash prizes and gifts. The Greenbrae PropertyOwners Association took over sponsorship of the holiday eventsin 1948 while the Greenbrae Co. continued to offer the prizes.

    Longtime resident Jeff Craemer remembered that peoplewould go all out to decorate their houses. Every Christmasseason his family drove all over Greenbrae to look, and therewould always be a feature in the Independent-Journal. Peoplecame from other towns to look, as well. The vast number ofsight-seers who have driven through the tract during the pastweek have been impressed by mechanical presentations,claimed the local newspaper in December 1947, including aSanta Claus who actually rides a reindeer in front of the J. M.Heath home at 41 Corte Morada, and the snow man who repeat-edly gets his hat knocked off by a snowball in the home of theRalph Brears on Bretano Way.

    My dad was always trying to win, he was quite mechani-cal and did a lot of stuff that was really fun, with moving things

    and all, recalled Butch Brear,but there was a guy that lived

    on Almenar who always beat my dad, hed have these motorizedthings. There was a lot of competition in those days. That guywas no doubt Frank Volta at 71 Almenar who, with his wife,won the 1952 countywide contest with their holiday-themedrailroad, as described in the local paper:

    The winning decoration is an animated train on which Mr.and Mrs. Volta worked two and a half months during eveningand weekends to complete. The train moves on a track layoutwith Santa waving from the cab of the locomotive. There arelights on the train, a dispatcher on the caboose, a man oilingthe wheels, and even a hobo riding the rods of one car.

    There were years worth of memorable decorations. Thewinner in 1956 was the Onorato family at 63 Almenar, with

    their unusual snow scene complete with and old fashionedsleigh full of presents in a setting reminiscent of Currier andIves. In 1958 Pietro Pinoni created Pietros Christmas Kitchento win the top prize. The decoration contest ended with theenergy shortage of the 1970s.

    Meanwhile at the shopping center, the tradition of aChristmas tree lot started with its first holiday season in 1952,sponsored by the local Boy Scout troop. That tradition contin-ues today with the longtime involvement of the Pronzini family,who have been selling trees at the Bon Air Center for 50 years.This is a modified excerpt from the upcoming book, In the Heart of Marin: The HistoryGreenbrae by Dewey Livingston, sponsored by the Kentfield-Greenbrae Historical SociMarch 2014.
