MethodUse a spiral mixer for 2 minutes slow and 6-8 minutes fast.

For a BDM – Round up the dough into desired weight heads, cover and rest for 5 minutes then mould up through BDM.

For a roll plant process through the plant at recommended weight of 50-60g.

Place on greased doughnut wires and put in the prover.

Allow doughnuts to skin over for 10 minutes before frying.

Prove at 30-34°C (83-93°F) at approximately 80% humidity, for 45-60 minutes.

Frying temperature: 190°C

When cooled inject Belcrem Subito into the middleof your doughnut.

Ideal for jam balls, finger, cake ring doughnuts and yum yums!

Spray with doughnut oil after baking. When cool dip in warmed Puratos White fudge icing, colouredwith red food colouring (500g white icing to 1 – 3g food colouring).
