como Comissrio de Bordo, que era um sonho desdejovem, ficar registada para o resto da minha vidacomo um momento de felicidade. E, a partir de agora,quando voar irei certamente ver com outros olhos otrabalho destes profissionais cuja preocupao fun-damental o bem-estar dos passageiros.Aceitei este desafio da SATA e da SIC sem hesitar,embora tenha ficado um pouco expectante e, at,apreensivo com a tarefa. A primeira preocupao nesta"aventura" era no atrapalhar o trabalho dos verdadei-ros profissionais e no deixar ficar mal-vista a equipa(tripulao) aos olhos dos passageiros. Afinal, no pas-sava de um recruta que poderia ser repreendido aqualquer momento. Mas, felizmente, tudo correu bem. O primeiro passo, a bem dizer, estava do meu lado:

Chiado um espao de gas-tronomia portuguesa conce-bido em 1991 para competircom o melhor da gastrono-mia local ao nvel da qualida-de. Foi a resposta de Albino

Silva (ver currculo, em caixa) ao desafio que um grupode colegas lhe lanou, ante o desconhecimento da gas-tronomia portuguesa na cidade canadiana onde viviam.Encontrado o espao, de cuja decorao ele prprio seencarregou, conciliando as ideias de simplicidade,elegncia e conforto, como pretendia, passou pes-quisa dos grandes pratos da cozinha tradicional e regio-nal portuguesa, analisou-os, retirou-lhes o que lhe pare-ceu a mais, como as gorduras saturadas, e deu-lhes umaapresentao diferente. Em suma: fez h 18 anos o queest a fazer-se agora nos restaurantes modernos emPortugal: uma cozinha baseada na tradio que preser-va os bons aromas e sabores, bem como uma certaligao campestre, ao memo tempo que d grandeateno ao valor nutricional dos alimentos e apresen-tao dos pratos. A criatividade do chefe, servida poruma tcnica culinria primorosa, valoriza os produtose a gastronomia portuguesa, renovando-a.

CHIADO At one of Torontos most famousand prestigious restaurants everything isPortuguese the owner and chef, the food, thewine, a large part of the produce except theclients, who are Canadians. The Chiado is aPortuguese gastronomy space conceived in 1991 to compe-te with the best of local gastronomy. It was Albino Silvasanswer to a challenge made by a group of colleagues whowanted to erode the lack of knowledge about Portuguese cui-sine in the city in which they lived. Having found the space, he took care of the decoration him-self, reconciling the ideas of simplicity, elegance, and com-fort, and then moved on to researching the great dishes intraditional and regional Portuguese cuisine, analysing them,removing what seemed excessive, such as saturated fats, andgave them a different presentation. In all, he did 18 years ago what is only now being donein modern restaurants in Portugal: a cuisine based ontradition which preserves the good aromas and fla-vours, while also giving great attention to the nutritio-nal value of the ingredients and the presentation of thedishes. The chefs creativity, served by an excellentculinary technique, valuing the produce and Portuguesegastronomy.

A aorda de tamboril, lagosta ecamaro; a cataplana de peixe com cherne, tamboril erodovalho, alm de camaro e lagosta; e o bacalhauassado no forno so algumas das iguarias mais aprecia-das, tal como, nas carnes, as costeletas de borrego mari-nadas em azeite do Douro, assadas no forno e finaliza-das com vinho tinto do Douro e rosmaninho, ou ocoelho recheado com alperces, ameixas secas e ma comreduo de vinho da Madeira. Fish dominates the menu of the Chiado, most of which comesdirectly from the Azores, chosen due to its good quality.The monkfish, lobster and prawn aorda (a type of traditio-nal pure), the sea bass, morkfish and brill cataplana (a typeof closed wok) with prawn and lobster, and the roast cod aresome of the most enjoyed dishes. In the old area there isalways another street, a spot or a person to dis-cover. The secret is to fine tune the senses andregister the best moments in your memory.
