Submitted by Jo Pietrzak 8 oz. butter 2/3 c. sugar 2t. real vanilla 2t. water 2 c. flour 1 c. chopped nuts (walnut, almond, pecan, or

macadamia) Powdered sugar to coatCream butter and sugar. Add vanilla and water. Mix. Add flour and nuts. Roll into two logs. Wrap in saran wrap. Chill for at least 2 hours.

Slice to desired thickness. Bake on greased pan, 325 degrees for 20 min. Cool thoroughly. Shake in powdered sugar.

Add sufficient flour to handle (3 cups). Press into Sandakkelse tins.* Bake at 350 degrees of 12-15 minutes. Makes about two dozencookies(*Sandbakkelse tins are usually handed down from one generation to another, but can usually be purchased on-line or any store that

specializes in Scandinavian food or merchandise.)

1 1/2 cups (3 sticks) unsalted butter, room temperature (can use 2 instead-if want to reduce fat/calories) 1

cup granulated sugar 2/3 cup packed light-brown sugar 2 large eggs 1 teaspoon vanilla extract 2 cups

all-purpose flour 2 cups cake flour (not self-rising) 2 teaspoons baking soda 1 teaspoon salt 3 cups

toffee chips (I only use 2 cups and I dont like chocolate toffee chips as well but use your own preference)

2 - 2 1/2 cups coarsely chopped macadamia nuts (11 ozs)Preheat the oven to 350 -- Line a baking sheet with parchment paper (I

dont do this and not sure if it makes a difference), and set aside. In the bowl of an electric mixer -- fit with the paddle attachment, (I justuse my regular mixer) -- combine butter and sugars. Beat on medium speed until light and fluffy, about 2 minutes. Scrape down sides ofthe bowl. Add eggs and vanilla extract, and beat to combine. In a medium bowl, wisk flours, baking soda and salt until combined. Mix intoffee chips and macadamia nuts. Blend well with wet ingredients. Scoop dough out onto prepared baking sheets using 1/2 ounce ice-

cream scoop, placing them about 2 inches apart. Flatten cookies slightly with the palm of your hand. Bake until golden and just set,rotating the sheets between the oven racks halfway through to ensure even browning, about 15 minutes. (I dont rotate sheets -- and

mine turn out just fine). Transfer the sheets to a wire rack to cool, about 5 minutes. Transfer cookies fromsheet to rack to cool completely. Store in an airtight container. Makes 3 dozen

Mix together the following: 1 small package of instant chocolate pudding 1/2 c.

peanut butter (chunky or creamy) 1/8 c. walnuts (if not using chunky peanut butter)

1 small can (6 oz) of evaporated milk

Form ingredients into small balls (size of walnut). Melt chocolate chips over a double boiler and dip ballsinto the melted chocolate long enough to coat them. Cool on wax paper. Serve cool.

Makes approximately 24 cookies.
