With spring upon us, we at NCRLA look forward to the tremendous opportunities to advance the interests of North Carolina’s hospitality industry. This year, we are incredibly excited to have one of our own, Ken Conrad of Libby Hill Seafood, in the chairman’s seat of the National Restaurant Association. Ken has been a fully engaged member of both NCRLA and the NRA for many years, and he assumes the chairmanship at a time when our industry is under many reputational attacks. Ken’s success also helps confirm that the hospitality industry is one of endless opportunities for hard working people from across the state, and from all socio-economic and educational backgrounds. Like many in our industry, he rose through the ranks, beginning his career as a dishwasher in his parents’ restaurant. We look forward to his leadership in this pivotal year.

As you may know, Ken joins three others from North Carolina who have served as chair of the National Restaurant Association. They are the late Thad Eure Jr. of The Angus Barn, Jim Peterson of JP Steakhouse and Ted fowler of Golden Corral. NCRLA honored these leaders with a contribution to the N.C. Hospitality Education foundation during the recent Taste of North Carolina and Stars of the Industry Award Ceremony, which took place at the Sheraton Imperial Hotel & Convention Center on feb. 3. You can see photos from this special evening in this edition.

Students Stir Up excitement

On March 24, 18 student ProStart teams from 12 cities across North Carolina will meet at the durham Convention Center for the first annual N.C. ProStart Invitational. The invitational will include culinary and management competitions, and is designed to showcase the skills of the next generation of North Carolina hospitality professionals.

“We are very excited to host our first in-state ProStart competition in North Carolina,” said Alyssa Barkley, executive director of the N.C. Hospitality Education foundation and COO of NCRLA. NC HEf is the organizer and prime sponsor of the N.C. ProStart Invitational.

“In bringing the competition to our home state, we are building stronger industry support and bringing public awareness to this amazing workforce development program. This competition gives students the opportunity to bring to life the culinary and management skills they have gained through the ProStart program. The competing students have spent countless hours throughout the academic year preparing with the help of their educators and industry mentors, and we are eager for the competition day to arrive.”

Teams in the management event will demonstrate their knowledge of the industry by developing a restaurant proposal, delivering a verbal presentation and applying critical thinking skills to challenges managers face in day-to-day operations. Teams participating in the culinary competition demonstrate their creative abilities through the preparation of a three-course meal in 60 minutes using only two butane burners in addition to exhibiting knife skills and poultry fabrication. The performance of teams in both the management and culinary events is observed and rated by 30 judges from leading colleges and universities and industry professionals.

The winning team from each competition will be sent to Minneapolis, Minn., from May 3-5 to compete against 43 other teams across the country at the 13th annual National ProStart Invitational, hosted by the National Restaurant Association Educational foundation. Winning teams at the N.C. ProStart Invitational will also earn scholarships to post-secondary colleges and universities.

The N.C. ProStart Invitational needs your help to be a success. The invitational is free, and the public is invited to come cheer on the teams. If you

When North Carolina adopted the 2009 version of the fdA food code, along came some completely new regulations to our state. One of these requirements, the Employee Health Policy requirement, found in Section 2-2 of the code, (http://ow.lytS9L7 ), brings both benefits and challenges to a foodservice operation. The requirement allows foodservice operators to take an active approach to protecting workers, businesses and the public. Unfortunately, when an employee is ill and must be excluded from work, re-staffing a shift or several shifts can be a challenge. Operators may also find themselves making tough calls enforcing the policy with employees who feel that they cannot miss a shift because they need to work.

foodservice operators need to adequately communicate to their employees the dangers of working while sick, the expectations of the policy, and the consequences of violating the policy. The complete overview of this regulation can be found at the link reference above, but here are the reporting highlights:

u The following symptoms are required to be reported to you by your workers:

l Vomiting, diarrhea, jaundice, sore throat with fever, a lesion containing puss or a boil (on hands, wrists, arms and any part of the body – especially if not appropriately bandaged or covered)

u The following illnesses diagnosed by a health practitioner are required to be reported to you by your workers:

l Norovirus, Hepatitis A Virus, Shigella, Enterohemorrhagic or Shiga-Toxin producing E-coli, Salmonella Typhi

There are other reportable requirements in the code regarding this policy, such as creating plans to reassign the infected worker to non-food-handling duties or complete exclusion until illness passes.

Also, as part of this requirement, foodservice operators must institute an Employee Health Policy Agreement. This document should outline all the symptoms, illnesses and plan for duty reassignment or exclusion from work. You can download the fdA version of the agreement that is the standard accepted by health inspectors by visiting this page on NCRLA’s website: http://www.ncrla.org/displaycommon.cfm?an=1&subarticlenbr=240. Review this document with each worker and have them sign and date it when they are hired. Keep a folder containing all employee forms. This allows you to quickly and easily provide the all employee forms to health inspectors as needed. The template NCRLA is providing also breaks down the illnesses that need to be reported and the problems they can cause your operation, other staff and customers.

CONRAd BECOMES NRA CHAIRKen Conrad of Libby Hill Seafood assumed the chairmanship of the National Restaurant Association during the NRA’s Annual Meeting in January in Charleston, S.C.

Libby Hill Seafood Restaurants is a nine-location company based in Greensboro. Conrad’s parents began the company in 1953 with a single restaurant.

Conrad began his long restaurant-industry career as a cook in one of his parents’ restaurants and later took over operations of that location. He became company president in 1983.

A former chairman of the North Carolina Restaurant and Lodging Association, Conrad served on its board for more than 20 years. He was named Restaurateur of the Year in 2007 and received the Griff and June Glover award for outstanding service to the industry. He has been a member of the National Restaurant Association Board of directors since 2004. z

Renee Ellmers, ImmigrationWorks USA President Tamar Jacoby and various North Carolina employers and faith leaders. Representatives from the American Hotel & Lodging Association were also on-hand.

during the forum, business leaders from a variety of sectors, including hospitality, agriculture and technology, answered questions from the audience and shared stories about how their businesses suffer when they’re unable to easily hire legal workers. Several members of the group stressed that they are not taking away jobs from American workers by hiring immigrants because they can’t find Americans who are either qualified or willing to take the jobs. Ellmers promised more forums on the subject.

Everyone present received a copy of NCRLA’s 2013 Annual Report, which can be downloaded here. The group also heard about workforce and labor issues from the NRA’s Labor & Workforce Policy Manager, Ryan Kearney.

Hospitality leaders from across North Carolina networked, dined and honored colleagues during the 2014 Taste of North Carolina gala and Stars of the Industry award ceremony, feb. 3 at the Sheraton Imperial Hotel & Convention Center in durham. The night began with remarks by 2014 National Restaurant Association Chair Ken Conrad of Libby Hill Seafood, who discussed how he rose from being a dishwasher in his parents’ restaurant to leading the company. He also talked about his vision for his year as NRA chair and encouraged members to guard against reputational attacks on the industry by those who dismiss its economic impact. following Conrad’s remarks, NCRLA honored Conrad along with North Carolina’s three other former NRA heads: Thad Eure Jr. of The Angus Barn (1978), represented by daughter Van Eure; Ted fowler of Golden Corral (2001), represented by James Maynard; and Jim Peterson of JP Steakhouse (1988).
