Directions:

1 . Preheat oven to 475 degrees . 2 . Place chicken on a sheet pan lined with a Silpat or foil . Drizzle with oil and season with salt and pepper; toss to thoroughly coat . Arrange in a single, even layer and roast 20-25 minutes, or until lightly browned and cooked through .3 . While the chicken roasts, make the sauce . Combine the soy, Worcestershire sauce and sambal oelek . When the chicken is fully cooked, transfer the wings to a large bowl . Add half the sauce and, using tongs, toss to thoroughly coat . Return the wings to the lined sheet pan and arrange in a single, even layer . Roast for an additional 10-15 minutes, or until browned . Remove from the oven . Top with the remaining sauce and sprinkle with chopped cilantro .

Pickle-Fried ChickenPrep time: 15 min • Cook time: 15 min

Ready In 3 hours, 30 min

Ingredients:• 4 chicken thighs • 2 cups dill pickle juice • vegetable oil for frying • 1 cup buttermilk • 1 cup all-purpose flour • 1 teaspoon salt • 3/4 teaspoon ground black pepper

Directions: Place chicken thighs in a resealable plastic bag; cover with pickle juice . Seal and refrigerate for 3 hours .

Drain pickle juice from thighs . Cover chicken; refrigerate until ready to fry .

Preheat oven to 350 degrees F (175 degrees C) .

Heat 2 inches oil in a Dutch oven over medium-high heat to 350 degrees F (175 degrees C) .

Pour buttermilk and flour into 2 separate bowls . Season flour with salt and pepper . Dredge chicken in buttermilk . Toss in flour . Return to buttermilk and toss in flour a second time . Place chicken on a rack set over a baking sheet .

Fill Dutch oven with as many thighs as possible without crowding . Cook at 350 degrees F (175 degrees C) until golden brown, 5 to 7 minutes per side . Place thighs on the baking sheet . Repeat until all pieces are fried . Transfer thighs to the oven .

Bake in the preheated oven until no longer pink in the center and the juices run clear, 5 to 8 minutes . An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C) . Season with a pinch of salt .

Frozen Blueberry Margaritas

Ingredients:Per margarita, multiply as necessary

• 2 ounces 100% agave silver/blanco tequila• 1 ½ ounces fresh orange juice• 1 ounce fresh lime juice• 1 teaspoon agave nectar or simple syrup, more to taste• ½ cup frozen or fresh blueberries• ½ cup ice cubes

Garnish• 2 teaspoons kosher salt• Optional: ½ teaspoon chili powder (for a little kick)• Small orange wedge

Directions: 1 . First, prepare your glasses: Pour the salt and optional chili powder onto a very small plate . Run a small wedge of orange around the upper outer rim of your glasses (I prefer to only salt half of the rim) .Roll the dampened rim into the salt mixture .2 . In a blender, combine the tequila, orange juice, lime juice, agave nectar or simple syrup, blueberries and ice cubes . Blend until smooth .3 . Taste and add more a bit more agave nectar if the mixture tastes harsh or just doesn’t quite sing, then blend again . Pour the mixture into your prepared glasses . Carefully drop one big ice cube or a few smaller ice cubes into the drinks to keep them cold . Serve immediately!

Amelia Earhart is an American aviation pioneer who was born on July 24, 1887 . Her first experience with an airplane was when she was ten and she was unimpressed, “It was a thing of rusty wire and wood and looked not at all interesting .” Ten years later, that opinion changed greatly when she and a friend had one fly by them, “I did not understand it at the time, but I believe that little red airplane said something to me as it swished by .” Her first flight in one changed the course of her life and steered her toward her place in history, “By the time I got two or three hundred feet off the ground, I knew I had to fly .” Her lifetime saw the women’s suffrage movement and the fight for equality, but her achievements would provide her a place in the history books as not just the, “first woman,” to accomplish things but the, “first person .” It was her attempt to be the first woman to fly around the world that would create one of history’s greatest mysteries . Amelia Earhart took off with navigator Fred Noonan on June 1st, 1937, not long after her 40th birthday . With 7,000 miles left to go about a month after she began the journey, her plane and all traces of it and its occupants disappeared . After the most costly and “extensive air and sea search in naval history,” the United States government called off the effort . To honor Amelia Earhart, her birthday, July 24th, is Amelia Earhart Day, there are many buildings and streets across the country named after her and a lighthouse was dedicated to her on Howland Island, the destination she and Noonan had intended to reach when they disappeared . To this day, there have been many attempts to find the wreckage of the plane and any traces of Amelia Earhart and Fred Noonan to answer the questions surrounding their fate . Theories have ranged from being lost at sea, to being eaten by cannibals, to being captured by the Japanese . Though the mystery surrounding the fate of Amelia Earhart and her navigator may never be solved, their place and especially her place, in history leave a lasting mark that can inspire women and men alike to achieve their dreams . In a letter she wrote to her husband to be given to him in the event something happened to her, she said, “Please know I am quite aware of the hazards . I want to do it because I want to do it . Women must try to do things as men have tried . When they fail, their failure must be but a challenge to others .”

Amelia Earhart’s Achievements include:• 01/03/1921 – began flying lessons

• 07/1921 – bought first plane

• 1928 – published “20 Hours 40 Minutes;” toured and lectured; became Cosmopolitan’s aviation editor

• 1930 – after helping organize the airline New York, Philadelphia and Washington airways, she became the Vice President of Public Relations

• 1932 – elected President of women’s aviation club, Ninety Nines, which she helped form
