We have been anticipating our Moringa Basil Walnut Pesto for several months now! Basil has such an amazing fresh smell; I love how it seems to sing of summertime! While our garden’s basil has yet to reach its prime, we recently picked up a fresh basil plant at the store because here in Southern California, I had begun to observe our Moringa leaves lifting their fresh new faces to the summer sun; and I could not resist this recipe any longer.

As anticipated, our basil and Moringa leaves soon became fast friends. They blended well along with some other nourishing raw ingredients to formulate an intensely savory recipe that delights the taste and bolsters the body.

Pesto originated in Northern Italy and traditionally consisted of garlic, basil, pine nuts, parmesan cheese, and high quality olive oil. This classic recipe has since morphed into a variety of concoctions. Variations can include the greens, the nut of choice, and the hard cheese desired. I have even heard “tale” of substituting the amazing avocado for olive oil! I’m sure the die-hard pesto consumer may have a case to argue that many a recipe should not fall into the pesto category; but

regardless of how you refer to this recipe, all the ingredients listed are amazing God-designed nourishment to strengthen your body.

Moringa Basil Walnut Pesto

Servings Prep Time

3/4CUP 8MINUTES

Ingredients

2 cups fresh basil leaves gently packed divided 1/3 cup toasted walnuts 2/3 cup finely shaved parmesan 2 large cloves raw garlic ½ cup fresh Moringa leaves 4 Tbsp extra virgin olive oil (EVOO) adjust to desired texture or consistency ½ juice lime pink Himalayan salt to taste

Instructions

1. Place half the basil leaves along with the garlic cloves, cheese, and walnuts into a high speed blender (nut butter jar) or food processor. Blend continuously until finely chopped and evenly dispersed.

2. Add remaining basil leaves in addition to the fresh Moringa leaves. Blend, scraping down sides of the jar intermittently until adequately chopped and incorporated.

3. Drizzle in EVOO while blending. Adjust to desired consistency. (Note: More EVOO will produce a thinner pesto that works well for sauces. Less EVOO will produce pesto better equipped for spreading.)

4. Spritz in lime juice. Sprinkle in salt. Add/adjust ingredients (garlic, walnuts, cheese, lime, salt) to taste.

5. Enjoy in whatever way you prefer: crusty bread spread, salad dressings, pasta/pizza sauce….

Recipe Notes

Pesto is visually most vibrant immediately following preparation as it does darken with oxidation over time. When storing, cover with a bit of EVOO in a small airtight container in the refrigerator. Moringa Pesto also freezes well for up to 6 months.

May we introduce…..The Ultimate Moringa Smoothie Recipe! Prepare to be Amazed! As you likely know by now, we love Moringa! But let’s be honest, it’s the benefits of Moringa that we love, not the taste of the Moringa powder! In fact, many of our recipes are designed to mask the taste of Moringa. One of the most frequent questions we hear, is “How do we use Moringa Powder?”. To those already experimenting with incorporating Moringa into smoothies, you already know that even a 1 teaspoon of Moringa powder in your smoothie can be noticeable and not necessarily in a delicious tasting sort of way. This can make trying to consume 4 teaspoons (8 grams) of Moringa powder daily quite a chore. The reality is many people are content with daily intake of just 1 teaspoon because it’s unenjoyable to add more. While there are certainly benefits from the smaller serving size, studies show benefits of significantly reducing blood sugar and cholesterol likely require the higher daily intake. Easy, Affordable, Enjoyable

Recently, we set out to create a simple recipe to incorporate 8 grams of Moringa powder that was Easy, Affordable, and not only palatable but Enjoyable. For testing, we put it through the most rigorous test: our four girls: 6, 4 and 3 years old (We may have also spontaneously tested it out on our very interested 4 month old as well!) Success was indicated when all the girls unanimously gave it 2 thumbs up and then asked for more immediately and when they woke up the following morning.

1 banana frozen when skin is yellow flecked with brown 3.5 oz coconut milk 1/4 Can of Coconut Milk per serving .125 tsp ground cinnamon roughly 0.4 grams per serving .0625 tsp ginger roughly 0.2 grams per serving 2 tsp Moringa powder roughly 4 grams per serving!

Instructions

1. Add frozen banana to blender, pour coconut milk over banana and then add cinnamon, ginger, and Moringa powder.

Savory Moringa Meatballs

Savory Moringa Meatballs

This delicious baked meatball recipe is a regular on our meal plan, being a favorite among our family and guests. Though the ingredient list looks long, these Moringa meatballs come together fairly quickly and can be a fun group activity. Our toddler enjoys helping with the “kid-friendly” steps, and she loves eating the final product! The recipe is flexible enough to suit differing diets (some users have subbed nutritional yeast in place of cheese, for example), and easily incorporates Moringa powder without altering the savory flavor. We usually share the baking time with some veggies and/or sweet potatoes, and complement the meal with a salad or rice/quinoa. You could also try a few meatballs within a flatbread or tortilla, alongside fresh greens and your favorite dip or dressing, for a nutritious take-along lunch. The cooked meatballs also freeze well and can be reheated and enjoyed weeks later.

Savory Moringa Meatballs

Ingredients

4 eggs 1 cup milk of choice 1 cup grated cheese (such as cheddar or parmesan) 2 cups bread crumbs or 1.3 cup flour of choice (we use half nut & half garbanzo bean flour) 1 medium onion, minced 4 cloves garlic, minced or crushed 1 teaspoon dried oregano 2 teaspoons good-quality salt pepper to taste ½ cup minced fresh basil (or 2 tablespoons dried basil) 1 teaspoon turmeric powder (can adjust per your preference) 2 teaspoons Moringa powder (can adjust per your preference) 2 pounds ground meat of choice (we prefer beef) Instructions

1. Preheat oven to 350 degrees Fahrenheit. 2. Crack eggs into large bowl. 3. Add milk and whisk until well mixed. 4. Add all other ingredients except meat, then whisk until well mixed. 5. Add meat, then you may wish to remove jewelry from hands/wrists before the next step. 6. Use hands to thoroughly knead meat into mixture. 7. Form golf ball sized meatballs, and place onto baking tray lined with parchment paper.

Bake in preheated oven for 30 minutes, or until cooked through. 8. Enjoy!

Moringa Stuffed Mushrooms

Moringa Stuffed Mushrooms

Moringa stuffed mushrooms brag an intense blend of flavors in every bite. We used 3.5 ounces of fresh Moringa in our stuffed mushrooms, but we guarantee that the Moringa leaf powder will make a terrific substitute for the filling. We used a mouth-watering blend of sour cream, cream cheese, and mozzarella with artichoke and fresh Moringa leaves. After preparing the mushrooms, we roasted them briefly to dry them. The cheesy vegetable goodness was dolloped on top and then sprinkled with a combination of almond flour, cheese, and spices. The stuffed mushrooms were then warmed and crisped in the oven–pure delight for the taste buds! Everyone but the 3 year old was left asking for more! To us, this is a perfect blend of yumminess!

Be sure to fully remove the gills from the mushrooms in the preparation to enhance the crispness of your final product. We utilized a “4-year old” to remove the stems and a melon scoop to remove the gills. Since the mushrooms themselves

require the most time in preparation, you may also want to try a larger mushroom such as the shiitake.

These Moringa stuffed mushrooms can be assembled ahead of time and then cooked just prior to serving. They seem to disappear when they are warm and crisp right out of the oven!

The Moringa stuffing itself can also be served as a dip or spread for crusty breads, crackers, or even vegetables.

This recipe will work well with fresh or dried Moringa. Regardless of your choice, we promise that when the last one disappears, it will leave someone craving more.

Moringa Stuffed Mushrooms

50MINI STUFFED MUSHROOMS

Ingredients

50 baby bella mushrooms stemmed, gills removed with a melon scooper 1 Tbsp garlic finely minced; divided 2 Tbsp olive oil divided salt to taste black pepper to taste 3 ounces cream cheese softened 3 ounces sour cream possible substitute: greek yogurt or increase cream cheese 4 Tbsp mozzarella cheese shredded 1 tsp onion finely chopped 1.5 tsp fresh thyme divided 3.5 ounces fresh Moringa leaves chopped; substitute 3.5 Tbsp moringa powder 5 ounces artichoke hearts chopped; squeeze out excess liquid 4 Tbsp almond flour possible substitute panko 4 Tbsp Parmigiano-Reggiano freshly grated Instructions

1. Preheat oven to 450 F. 2. Combine 1 Tbsp olive oil and 2 tsp of minced garlic. (Save bowl and remaining garlic oil

for later.) 3. Brush inside cap of prepared mushrooms with garlic and olive oil combination. Sprinkle

to taste with salt and pepper. 4. Arrange mushrooms with oiled side up on a rimmed baking sheet. Bake about 6 minutes

or until tender. Drain mushrooms or pat with paper towel if notable about of water still being released. The released liquid should be reduced if gills are properly removed.

5. Mix softened cream cheese, sour cream, mozzarella cheese, 1/2 tsp thyme. Once combined well, stir in the chopped Moringa leaves, onions, and artichoke hearts. Salt and Pepper to taste. (If available, use immersion blender to improve mixing process.)

6. In small bowl (can use dish from step two), add in remaining garlic, final Tbsp of olive oil, remaining 1 tsp thyme, 4 Tbsp of almond flour/meal, and 4 Tbsp of Parmigiano-Reggiano.

7. Divide Moringa/artichoke mixture evenly among mushroom caps. Sprinkle with almond flour mixture. Press crumb mixture lightly into filling if necessary.

8. Bake in preheated oven until filling is hot and crumbs are golden-brown, about 6-8 minutes. Serve immediately.

This recipe for Moringa overnight oats is extremely forgiving and can be easily adjusted to suit your taste, diet, or pantry. Be encouraged to interchange or eliminate various flavors to make your own delectable dish. The Moringa overnight oats require almost no prep and minimal cleanup as it can be prepared in the serving dish. Because of its simplicity, my 4 and 5 year olds can almost prepare this completely independently. This particular combination of flavors transports me back to my my mother’s “No Bake Candy Cookies” from my childhood… minus the processed sugar. It provides a protein boost along with the extra nutrients from Moringa powder and Chia seeds. This can be served cold to maximize nutrients or warmed slightly for comfort on a cool morning.

1. Place measured ingredients into jar or dish of choice. 2. Mix carefully leaving swirls as desired. 3. Cover dish and place in refrigerator overnight or for several hours. 4. Serve cold or warm. 5. Optional: drizzle with extra milk or syrup and top with anything desirable. Enjoy!

Moringa Bread: Whole Grain Moringa Bread Recipe

Ingredients

4 cups spelt flour (500g) 1 cup mixed raw seeds (150g) sunflower, sesame, pumkin etc… 3 medium carrots finely shredded 2 cups warm water 1.5 tsp yeast 2 tsp salt 2 cups fresh Moringa leaves finely chopped or 2 Tbsp of Moringa powder Instructions

1. Soften yeast in warm water. 2. Add all ingredients into large mixing bowl. 3. Mix till moist dough forms or all ingredients are moistened. If available, use hand mixer

or stand mixer with dough hook. 4. Spread dough into prepared mini loaf pans. Sprinkle the dough with sesame seeds

(optional) . 5. Place two small loaf pans on middle rack of cold oven. Set oven temperature to 400 °F

(200 °C) Bake Moringa bread for 45-50 minutes or until you can insert and remove a toothpick without dough sticking to the toothpick. The crust of the loaves should be lightly browned.
