David Traille, a San Francisco Bay Area native, was introduced to the craft beer scene by his older brother. He began exploring the craft beer world by volunteering at the Great American Beer Festival (GABF) and picked up the hobby of home brewing while attending Northern Arizona University (NAU) and interned at Oak Creek Brewing Co. in Sedona, Arizona. After graduating in 2010, David was hired as a production and pub brewer, cellar-man and sales representative reaching the entire state of Arizona and turned his passion of brewing into a full time job. In 2012 David moved with his girlfriend, now wife, to Boise, ID and began brewing for Payette Brewing Co. After moving to the Central Coast in 2014, David was ecstatic to start working for Figueroa Mountain Brewing Co. in the Buellton production facility. As a production brewer, David jumped at the opportunity to help build the Arroyo Grande brew pub from the ground up and spend more time creating new recipes. When David realized Jim and Jamie shared the same passion for quality craft beer that he does, he knew the Fig Family

1 | MILLINGWe mill to crack the grain in half so that water can penetrate the endosperm.

6 | COOLINGThe settled wort is then cooled to fermentation temperature.

7 | FERMENTATIONYeast is added to the fermenter where it converts the malt sugars into alcohol and carbon dioxide.

8 | CONDITIONINGThe beer is aged or conditioned for a long period of time to smooth out the edges and develop its complexity.

9 | FILTRATIONSome of our brews are coarsely filtered to remove yeast from solution and produce a bright, brilliantly clear beer.

10 | CARBONATIONCarbon dioxide is gently bubbled through the bright beer and absorbed into solution, slowly carbonating the beer.

2 | MASHINGMilled grain is mixed with hot water at a specific temperature to form the “mash” and activates the malt’s natural enzymes that break starches down into smaller, digestible sugars.

3 | RECIRCULATIONAfter mashing, the “wort” is run out of the bottom of the mash through a screen and collected in an intermediate vessel called a “grant” and recirculated until it runs clear and glassy.

5 | BOILING &WHIRLPOOLING

The wort is brought to a boil and hops are added at varying times for bittering, flavor and aroma. The wort is pumped into a circle for clarity.

4 | LAUTERING & SPARGINGThe wort is strained out of the mash (”lautered”) into the kettle. A hot water spray (”sparge”) on the grain rinses out a maximum amount of extract.

Arroyo Grande has a 15-Barrel Brewhouse that allows us to produce approximately 1300 barrels of beer a year.

Beer comes directly to the taps from the tanks for super fresh craft beer.

Is all of the beer served here made here?

We produce both year-round and specialty beers here and the rest of our year-round beers come from our Buellton brewery.
