pan Roasted pork Rack, Apple cider pan Jus, Taties ‘n’ Nips RoestiBrooklyn Warehouse, Chef Graeme RuppelFor 4 people

1 rack of pork, bone on (4-5 ribs, depending on appetites)1 cup (250 ml) apple cider2 russet potatoes1 medium turnip2 heads of broccoli4 oz (125 g) butter

lightly score the fat of the pork rack in a diamond pattern. Season with salt and pepper. Sear the fat side in an oven-safe pan until well browned. turn over and transfer to a 350°F (180°C) oven. Cook until the roast registers 135°F (57°C) (medium) to 145°F (62°C) (medium well). remove and rest 20 minutes before carving.

taties ‘n’ nips Roesti Peel and grate together the potatoes and turnip. Heavily salt them and squeeze out as much water as you can. Melt 1 tbsp (15 ml) of butter in a 10" non-stick pan over medium heat and add grated mixture. using a spatula, press the potatoes into a large patty. When the roesti is browned on the first side, flip it out onto a plate. Melt 1 tbsp (15 ml) of

butter in the same pan. Slide the roesti back into the pan (uncooked side down), and cook until well browned. Cut roesti into wedges, and keep warm until ready to serve.

Roasted Broccolitrim the broccoli into florets by cutting down the stalk, and then pulling apart by hand. Melt 1 oz of butter (28 g) in an oven-safe pan over high heat. add the broccoli to the pan and toss to coat. Season with salt and pepper. Place the broccoli under a preheated broiler and allow it to cook until verging on burnt. the toasted broccoli adds a wonderful crunch to the dish.

apple Cider pan Jus Place the pan the pork was roasted in back on the stovetop, over high heat. add the apple cider. as the cider comes to a boil, scrape the bottom of the pan with a wooden spoon to release the fond. When the cider has reduced by half, remove from heat and whisk in 2 oz (57 g) of butter (it should be kept cold right up to this point).

Seared Digby Scallops and Bacon JamThe Old Fish Factory, Chef Shelley SteventonFor 4-6 people

seared scallops 2 tbsp (30 ml) olive oil 1 pound (500 g) digby scallops (20-30 size)

Place scallops on a paper towel to remove moisture – this will prevent the scallop from steaming in its own juice. For maximum tenderness, remove the bit on the side of the scallop. Sear scallops in a hot skillet with olive oil, depending on size, for about 2 minutes on each side until the scallop starts to brown and splits on the side. larger scallops may require more cooking time.

Bacon Jam 2 tbsp (30 ml) Chipotle tabasco Sauce1 lb (500g) bacon, cut into one-inch pieces4 cloves garlic, chopped1 onion, sliced3 tbsp (45 ml) brown sugar1 cup (250 ml) brewed coffee¼ cup (50 ml) cider vinegar¼ cup (50 ml) maple syrup

Fry the bacon until lightly browned and beginning to crisp. Sauté the onion and garlic in the rendered bacon fat without colouring. transfer the bacon, onion and garlic into a pot, and add the rest of the ingredients. Simmer for 1 hour, adding ¼ cup (50 ml) of water every 30 minutes, only if required. Place in a food processor. Pulse for 2-3 seconds so that you leave some texture to the jam.

Place each warm scallop on the plate. top with a pinch of bacon jam and serve.

*Please note: it is important that the bacon jam is warmed before serving.

Grasp the body and twist off the large front legs and claws. Separate the claw from the knuckle.

Break the hinged part off the claw and remove the meat with a fork or pick. Crack the claw with lobster crackers. Be careful to crack the shell only and not damage the meat inside. Knuckle meat can be removed with a lobster fork.

Twist the tail away from the body.

Cut the tail on both sides or grasp it tightly and squeeze until it cracks. Snap off the tail flippers.

Push out the meat in one piece. Peel back the flap on the upper side of the tail to expose the vein, remove and discard the vein.

Unhinge the back from the body and remove the green tomalley. Red roe of the female lobster is extremely tasty and considered a delicacy.

Open the main body section by cracking it apart. The meat in this section can be removed using a fork or pick. Discard the dark sac located between the eyes (since this is not edible). Twist the walking legs from the body. Clench between teeth and nibble meat from legs. The same method can be used to extract meat from the tail flippers.

cornect Family Farm

Hidden amongst the woodlands and blueberry fields of Denver, Guysborough county, cornect Family Farm proudly produces the finest artisan honey from wildflowers and blueberry blossoms of the surrounding areas. We initially began beekeeping 16 years ago in order to pollinate our own blueberry fields and we now have over 100 beehives. The first 30 pounds of honey we harvested set a pattern that continues to this day, as we continue to harvest our honey for use in the many value-added products we produce on the farm.

Our creamed honey is actually “raw” hand-selected honey allowed to crystallize as Mother Nature intended, pure and untouched. The same is true for our mild non-pasteurized liquid honey.
