The domaine itself is located in Villelongue d’Aude and covers 80 sustainably-‐farmed hectares (200 acres). The Capedons were among the very first to produce a ‘Méthode Ancestrale’ which they called ‘Blanquette de Propriétaire’ since the 1640s before the official name ‘Méthode Ancestrale’ came about in 1938 when the official AOC was created.
AOC: Blanquette ‘Méthode Ancestrale’ Important Note: AOC area is same as Blanquette de Limoux AOC.
Terroir: South-‐facing hillsides dominated by poor clay and limestone soils the AOC is heavily influenced by both a Mediterranean AND a cooler Atlantic climate. Planting Density: 4000 vines/hectare. Altitude: 350 – 450 meters above sea level.
Cépage: 100% Mauzac (no blending permitted)
-‐Mauzac (aka ‘Blanquette’ for its skin color at harvest) in Méthode Ancestrale is traditionally known for the green apple and pear notes found on the nose and palate.
Vinification: Manual harvest of semi-‐overripe grapes that are entered into temp-‐controlled stainless steel tanks for a native yeast fermentation.
A ‘Pétillant Naturel’ the ‘Méthode Ancestrale’ undergoes a natural secondary fermentation in bottle. No additional yeasts, sugars or carbonation are added. Approx 95 grams of Residual Sugar/Liter remain in a finished lot of the wine. The ABV is 7% plus/minus 0.5%.
