Sauce- - 10ml 10ml Soy sauce light (salt-reduced)- - - 1ml Sesame oil½ ½ 1 1 Clove of garlic, chopped or minced1ml 2ml 2.5ml 2.5ml Fresh ginger, chopped or mincedpinch pinch 1ml 1ml Chilli powder or ½ chilli, seeded and nely chopped5ml 5ml 10ml 10ml Lime juice, freshly squeezed Coriander leaves to garnish
Method
1. Add water, coriander sprigs, ginger, spring onions, thyme and salt in a large saucepan and bring to the boil over medium heat. 2. Add the sh to the liquid, ensuring that it is completely covered (if not, add a little boiling water) and return mixture to the boil. 3. Cover with a lid. 4. Turn off the heat and let the sh nish cooking in the residual heat of the liquid for 10 to 15 minutes, or until cooked through.5. Combine the soy sauce (where applicable), sesame oil (where applicable), ginger, garlic, chilli powder and lime juice and heat in the microwave or in a small sauce pan.6. Carefully transfer the sh to a platter. 7. Discard the cooking liquid. 8. Drizzle the lime mixture over the sh. 9. Scatter with the shredded onions and chilli.10. Garnish with the coriander sprigs and leaves.
During MN: heat olive oil in a small saucepan; add shredded ginger and fry until crisp; scatter over the sh.
For a main meal serve with “Delicious Coleslaw” or “Slender Wonder Steamed Veggies”.

Method
1. Blend raw oats and milk together and let it rest for 5 minutes.2. In a separate bowl, mix the our, oat bran, sugar or sugar substitute, baking powder, salt and cinnamon together.3. Add the vanilla, eggs and butter to the oats and milk mixture. Stir brie y.4. Add the dry ingredients to the milk mixture.5. Apply non-stick cooking spray to a non-stick frying pan.6. Heat to medium-high heat.7. Use approximately ¼ cup batter per pancake. 8. Cook on both sides until done.
Fresh berries break up easily, therefore frozen berries are recommended. If only fresh berries are available, heat the berries in a saucepan with sugar substitute and serve on top of pancakes. Keep to two pancakes at a time to maintain a healthy weight.
Why is there butter in a ‘healthy’ recipe? The role of fat in baking is to coat the our proteins, reducing the contact with the moisture in the recipe and shortening the length of the gluten strands when the our is mixed with that moisture. In traditional baking, where solid fats are creamed with sugar, tiny air cells are whipped into the batter, so the baked goods will have a ne, aerated texture. When a fat is removed or reduced, it increases the chances that the end product will lack avour and be tough and full of tunnels. Butter makes a very important avour contribution, whereas margarine does not have as ne a texture and taste. Vegetable oil is also not a good substitute. Reduced-fat and low-fat batters are more sensitive to overmixing, overbaking, ingredient substitutions, improper measuring, oven temperatures and choice of baking pans. In this pancake recipe, half of the butter can be substituted with unsweetened applesauce to reduce the fat content even further.
