Manila’s exquisitely exciting love affair with culinary excellence began when Spiral first opened in 2006.
The metro’s distinct, undiscriminating palette has, since then, experienced a whirlwind of emotions when
it came to dining. We were witnesses when celebrations of life were being toasted in our dining tables ---
wedding receptions, debut parties, anniversary dinners. This is the same passion that we want to exhibit
as we continue on our dining journey together.

season, I would personally like to thank everyone for the patient but worthwhile wait. All the first-class
cuisines that you will have the pleasure to taste again have been prepared, evaluated and presented by
only the best. We all loved what Spiral had to offer then; today, we give you more reasons to come back
and celebrate with us now, more than ever, that Christmas is the perfect time to wine and dine, and be
merry for all the blessings 2012 has showered us.

THE NEW SPIRAL DEBUTS A USD 11 MILLION CULINARY MARVEL
After an extensive USD 11 million investment, Sofitel Philippine Plaza’s legendary flagship restaurant – Spiral – officially opened on 8
November 2012 and is set to earn a reputation as one of the most dynamic interactive dining destinations in Asia Pacific.
When it first opened in 2006, Spiral’s dining innovations were a first in Asia and it became one of Manila’s most loved restaurants.
But today, the new Spiral proves that even a trailblazer can top itself as the new Spiral is divided into 21 dining ateliers.
The range of cuisines is expansive and the attention and detail to each dish has the focus of an artisan.
Sofitel general manager Goran Aleks puts it best. “We are proud to announce the rebirth of Spiral which is set to revolutionize the art
of interactive dining. This has never been seen before in Asia-Pacific and it can be found right here in Manila,” he states.
“The 21 dining ateliers of the new Spiral reflect the best of the world’s cuisines in one magnificent destination. It is Sofitel’s vision
to showcase not only the best of French culinary heritage but also combine it with the best of Eastern, Western and Filipino cuisine,
produce and artistry.”
But of course, the French celebration is not complete without wine. Spiral’s world-class wine cellar reflects Sofitel’s Voyage du Vin
program, which features the finest wines handpicked from the best vineyards around the world.
BRINGING TOGETHERTHE WORLD’S BEST
Sofitel has appointed new executive chef Eric Costille
to spearhead the operations of Spiral. The award
winning chef, who also serves as Sofitel’s regional
executive chef, is a veteran of three-star Michelin
restaurants such as Georges Blanc in Lyon and Moulin
de Mougins in Cannes. He has also worked for Makati
Shangri-La, the Ritz Carlton Osaka, Jakarta and Seoul,
and the Raffles Hotel in Singapore, and recently
opened 12 restaurants at the Marina Bay Sands
in Singapore. “We are thrilled to have Chef Eric on
board to lead Spiral into a new era,” says Aleks.
“He is truly a master chef, and it is only fitting to
have someone of his caliber to drive such a unique
and special product as Spiral.”
In turn, Costille shares his enthusiasm in satisfying
Sofitel’s discerning clientele. “My team has chosen
only the best and freshest ingredients from suppliers
utilizing natural farming techniques as well as key
ingredients flown in from abroad. At the end of your
meal, it would be an achievement for my team when
you say you found your personal favorite corner
at Spiral.”
You can also enjoy the best of Sofitel’s gourmet
offerings whether at home or on the move with the
featured Spiral-to-go counter where you can have
your pick of Spiral’s exquisite homemade pralines
and fresh breads.
Dining in Spiral is an event that goes beyond
perfection, beyond passion, and straight as a
transcendental feast for all the senses. There has
always been a Spiral-shaped hole in Manila’s heart
that only the Sofitel can fill, and at last it again
beats true.
The new look and feel of Spiral springs from
the hearts and minds of the Sofitel Philippine
Plaza’s management team who travelled
around Asia and Europe in search of the best
dining concepts and came up with 21 different
dining ateliers.
The new design was conceived by Spin
Design Studio of Japan, with interior designer
Masakazu Koizumi defining the concept as
nature and modern industrial elements in
harmony, intertwined with the best of both
Filipino and French design.
The highlight of the new Spiral is La Veranda, an
indoor lounge that opens to an outdoor terrace
with four gazebos leading to the iconic lagoon-
shaped pool the hotel is famous for. The drama
continues as you descend the spiral staircase
with the iconic sculpture of Eduardo Castrillo
and the sound of the fountains welcoming you.
A FRESH SPIN BEHIND THE SCENES
Four giant capiz chandeliers now illuminate the
entire space harmonize with the capiz fixtures
in the Asian dining section, the lustrous white
marble, glowing glass counters, and frosted
glass doors.
The unifying concept is to have one big open
dining area where culinary and visual pleasures
mingle across the different ateliers. Spiral’s
French section shelter two rooms named
Hidden and Voyeur, both feature plush leather
sofas and large dining tables for a glamorously
cozy getaway. The Asian section ensconces
Indulgence, Decadence, and Epicure, with each
room seating 12 people but the three can
be combined to fit 36. For more casual and
intimate gatherings, there’s Tasting, a semi-
private dining room that can entertain groups
of up to 8 people.

Manila, November 13, 2012 – All roads led
to Sofitel Philippine Plaza with over 500
guests composed of the crème de la crème
of Manila’s glitterati dressed to the nines in
their black tie and gowns. Sofitel Philippine
Plaza General Manager, Goran Aleks, gave his
opening remarks concluding with more than
150 dancers flash mob just bursting out of the
audiences from different directions.
For a truly magnifique evening, international
jazz singing sensation, Kevin Lettau was flown
in especially for the Spiral opening. She
entertained the A-list crowd including Vice
President Jejomar Binay.
