FOOD RULES

What do I do with the waste?

COMPOSTCompost can be rich in nutrients. It is used in gardens,

landscaping, horticulture and agriculture. The compost itself is beneficial for the land as a soil conditioner,

a fertilizer, a natural pesticide for soil.

EPA-Food garbage is 14.1% of U.S. waste

What did I do with my waste?

– Packaging– Recyclables– Food waste

benefits

• Instant gratification• Accessibility• What do you think?

Food Rules

Where do McDonalds products come from?

McDonalds Suppliers

• Gaviña Gourmet Coffee– LOCATION??????

• Keystone Foods– West Conshohocken, PA

• 100 Circle Farms– The potatoes for our World Famous Fries are grown

with efficiency, precision - and heart. • Lopez Foods– McDonald’s 100% pure beef patties are produced to

the highest quality standards. – Oklahoma City

Carbon Footprint:• Most produce in the US is picked 4 to 7 days before being placed on

supermarket shelves, and is shipped for an average of 1,500 miles before being sold.

• The total set of greenhouse gas (GHG) emissions caused by an organization, event, product or person.

• Transport• Land clearance• Production and consumption of food• Fuels• Manufactured goods• Materials• Roads,• Buildings• Services

The Food Chain Environmental Cost of Shipping Groceries Around the World

• “Unfortunately, we’ve educated our customers to expect cheap food, that they can go to the market to get whatever they want, whenever they want it. All year. 24/7.” – Mr. Moorehouse, British Food Consultant.

• Example: Britain– Imports 95% of its fruit and 50% of its vegetables

• Chicago 1944: Convention on International Civil Aviation– Fuel for international travel and transport of goods,

including food, is exempt from taxes, unlike trucks, cars and buses. (no tax on ocean freighters)

What are some of those

additives?

• Benzene – toxic and flammable liquid, causes cancer and other illnesses, linked to bone marrow failure, carcinogenic.

• Sodium benzonate- food preservative, contains benzene, carciongenic.

• Carcinogens – substance involved in causing cancer.

• Caramel color – food coloring, carcinogenic, often mixed with ammonia.

• Calcium disodium EDTA (Ethylenediaminetetraacetic acid) - used to keep ascorbic acid and sodium benzoate from forming a formation of benzene (a carcinogen).

Industrialization of Food

• Additives• Food dyes• Loss of nutrients• Effects on the environment • Packaging

Genetically Engineered

• Only in the last three or four years have herbicide- and insect-resistant soybeans and corn been planted on millions of U.S. acres and subsequently used in food processing.

• Potential problems that might arise as a result of engineering food crops, include:– Introduction of new toxins or allergens into

previously safe foods.– Increased toxins to dangerous levels in foods that

typically produce harmless amounts.– Diminishing a food's nutritional value.

What about the Farming?

Food Recalls

• Green 1 - recalled in 1965 – syntheticliver cancer

• Red 2 – artificial coloring – 1976 – possible carcinogen synthetic

• Violet 1 – artificial coloring – synthetic1973 – cancer

• Cobalt salts – stabilize beer foam –synthetic -1966- toxic effects on heart

• Coumarin – flavoring - tonka bean - 1970 - liver poison• Cyclamate – artificial sweetener - synthetic -1969 -

bladder cancer, damage to testes• Ethylene glycol - solvent – synthetic - 1996 –

kidney damage

E Coli Salmonella• Pathogenic E. coli is most

commonly found in cows, although chickens, deer, sheep, and pigs have also been known to carry it.

• Meat contaminated during slaughter, an infected animal intestines or feces comes in contact with the carcass.

-Salmonella outbreaks are commonly associated with eggs, meat and poultry, but these bacteria can also contaminate other foods such as fruits and vegetables.

Does Our Food System Work?

• “In the year 2000, the World Watch Institute reported that for the first time in human history there were just as many overfed people on the planet as underfed.”

• “As societies modernize and become wealthier, people become less physically active and actually need less food. Instead, people are eating more – and getting fat. “

Food Rules

Environmental Effects of Factory Farming

• The USDA reports that animals in the US meat industry produce 61 million tons of waste each year, which is 130 times the volume of human waste

• In the U.S., approximately 40% of all chemical fertilizers used eventually break down into ammonia and are released into the atmosphere.

Antibiotic Use-Fifty million pounds of antibiotics produced in the U.S. each year. -Twenty million pounds are given to animals. -80% (16 million pounds) is used on

livestock merely to promote more rapid growth.

-The remaining 20% is used to help control the multitude of diseases that occur under such tightly confined conditions, including anemia, influenza, intestinal diseases, mastitis, metritis, orthostasis, and pneumonia.

Food Rules

What is the message we are sending children?

“We believe it is okay and natural and healthy to trust our feeling, our intuition, our bodies, ourselves. In fact, re-learning to trust, with the effortlessness of the child we once were, is a doorway to finding fulfillment in so many areas of life.”

What Can We Do?

• Model• Make conscious decisions• Support local CSA• Eat seasonally• Compost• Pack environmentally friendly lunches• Lower meat consumption is an effective

environmental choice because of the land and water use and pollution of the meat industry.

What can kids do?

-Garden

-Trust themselves/mind /body

-Go to the farmers market

-Learn to cook

Cheap Food

“Cheap food – the apparent triumph of modern agribusiness—is an oxymoron, an illusion created by externalizing food’s true costs. Once you factor in all the fossil fuel consumption, rainforest destruction,

soil erosion, pollution, water depletion, carbon emissions, loss of biodiversity, rural depopulation,

animal suffering and obesity that result from cheap food, it doesn’t look quite so cheap.”

Michelle Obama’s Food Plate• “Those who think

they have no time for bodily exercise (or healthy eating) will sooner or later have to find the time for illness.”

-Edward Stanley (1826 – 1893)
