Method: Place a scoop of pumpkin ice cream in a wine goblet. Add 1 Tablespoon of Cinnamon Pear Balsamic to each goblet. Add 1 Tablespoon of Grand marnier to each goblet. Top with whipped cream and Enjoy!
Step 1: Stuffed Crepes12 crepes (pre-made)¼ pound portobello mushrooms chopped2 shallots3 cloves garlic¼ cup Chipotle Olive Oil1 cup soft goat cheese1 cup pumpkin puree½ Tablespoon fresh rosemary1 teaspoon cinnamon1½ cups fresh lump crab meat (reserve
liquid)
Method: Heat olive oil in pan and saute shallots and garlic for 1-2 minutes. Then add pumpkin, mushrooms cook 8-10 minutes. Set aside to cool. When mixture is cool, add cinnamon and rosemary, and gently fold in goat cheese and crab meat. Place mixture in crepes and place seam side down in large casserole dish. Bake at 350 degrees for 10 minutes.
Step 2: brandied garlic Cream Sauce
12 oz evaporated skim milk3 Tablespoons corn starchup to ¾ cup reserved seafood liquid
1 teaspoon garlic powder2 Tablespoons Brandy
Method: Dissolve cornstarch in 1/3 cup evap. Skim milk and pour in sauce pan. Add remaining milk, and remaining ingredients. Bring to boil. Reduce heat and simmer until thick, stirring constantly (approx. 3 minutes)
Step 3: Cinnamon-Raspberry Sauce
½ cup Cinnamon Pear Balsamic Vinegar½ cup White Wine½ cup fresh lemon juice¼ cup Raspberry Jalapeno Jam
Method: Place first 3 ingredients in sauce pan and reduce by half on medium heat. (approx. 20 minutes) Add jam and minced jalapeno to thicken at the end.
To Serve:Place 2 stuffed crepes on each
plate. Drizzle cream sauce over crepes, next drizzle Cinnamon-Raspberry sauce over crepes. Enjoy!
