BASEWIDE EVENTS
MCAS Iwakuni was lucky to see some familiar faces pass through to show support for our
community. The Sons of Anarchy cast visited for a meet and greet session courtesy of the
USO. Armed Forces Entertainment brought mixed martial arts fighters for a demonstration
and clinic. AFE also brought dancers from Hawaii to perform at the Luau, and brought Lit for a
free performance at Club Iwakuni. San Diego native Johnny Vernazza and his band headlined
this year’s Summer Music Festival followed by a 30 minute fireworks display.
Dylan and Cole Sprouse stopped by to promote cultural awareness amongst the youth and
our friends from the USO and Sesame Street introduced us to Katie, a military child who
understands the ups and downs of the military lifestyle. .
FOOD & HOSPITALITY
There was no chance of going hungry with the
all-you-can-eat buffets this year: Mother’s
Day, Father’s Day, Soul Food, Crab & Seafood
and South of the Border. In addition, the Wine
Festival in March and the Fall Harvest in
October allowed participants to sample food
and drinks from around the world.
RETAIL & SERVICES
ITT took patrons to many exciting places this
year, one highlight was the Pitbull concert
on September 8. The Four Seasons Gift Shop
specializing in Japanese crafts opened on
April 22 in the MCX. Patrons were able shop
at vendors from across Asia during the Spring
and Fall Bazaars. With 2013 coming to an end,
it is estimated that MCX patrons will save a
total of $46,000 when they redeem their
Santa Bucks.
SEMPER FIT
Semper Fit helped us stay on track with our
new year’s resolutions. An introduction to all
that Semper Fit offers was presented at the
Health & Fitness Expo in March. Throughout
the year they offered events like the Japanese
& American Goodwill Modified Triathlon,
Zen for Men and the Dance Fusion Friendship
Fitness Festival. Sailing was back into the
event line up this year as Outdoor Recreation
provided lessons!
This spring and fall kids ran Iwakuni as a
part of the Kids Run the Nation Program. For
10 weeks, children received individualized
instruction for running to keep in shape and
have fun.
MARINE & FAMILY PROGRAMS
The youth aboard the station were very busy
this year. In April we celebrated MCAS youth
with bounce houses, games and giveaways at
the Month of the Military Child Celebration.
The staff from Camp Adventure taught fun
activities throughout the summer and the
Boys & Girls Clubs Day for Kids rounded out
the Kids Staying Busy activities. The library’s
Summer Reading Program took them on fun
adventures through the theme “Have Book
Will Travel”. The children also had their own
3rd Annual Mini Marine Corps Ball for a night
of dress up and fun.
To help our Marines, Sailors, spouses
and civilians prepare for the ball season;
the MCX and Marine Corps Family Team
Building hosted Semper Style, a red carpet
affair packed with prizes and a fashion
show. Marine Corps Family Team Building
introduced a new series called Taking Care
of You. Information, Referral and Relocation
brought the base entities together for an
Information Fair to promote on and off base
activities. During the holiday season, MCAS
Iwakuni remembered our troops deployed
overseas by collecting care packages full
of treats for Operation Comfort & Care.

ORGANIZATIONS RECOGNIZE THE VALUE OF THE MILITARY COMMUNITYby Sean McHenry, Marketing Director, Editor-in-Chief
Organizations recognize the value of associating their brand with the military community and they reach out through the MCCS Commercial Sponsorship program. You might wonder about the logos that appear on posters and wonder how and why prizes like iPads are given at events like the Marine Corps Ball. It is because an outside organization has chosen to support an event through sponsorship. This year over $150,000 in cash and prizes were added to events to give them that little something extra, making your experience even more memorable. A visit to the local grocery store's sauce aisle may have you hyperventilating from all the choices. The sauce aisle in a Japanese store
is akin to the cereal aisle in American supermarkets: Plenty of options, but if you don't know where to start, it can be overwhelming.

The most important sauce in any Japanese
home is soy sauce, or shoyu as we call it.
My mother has always cooked with shoyu.
When I was little there was just a small
selection at the store and the most popular
brand (and quite possibly the only brand
carried at most major grocery stores) was
Kikkoman. Fast forward a few years, and
it's amazing how many different types of
shoyu line the shelves. Japanese grocery
stores have anywhere from a third to a
half of an aisle dedicated to shoyu. There
are several types of shoyu. Regular shoyu,
usukuchi which has a light but slightly
saltier taste, sashimi shoyu which seems
a little thicker and smoother, karakuchi
shoyu which is darker in color and more
flavorful, and dashi shoyu which is soy sauce
mixed with basic fish stock.

Yakiniku means "cooked meat" or "grilled meat”. Many people are familiar with the yakiniku restaurants around Iwakuni where you can grill strips of meat at your table but did you know you can make yakiniku at home? There are so many different types and brands of yakiniku sauce that I can't tell you which one is the best. However, I can honestly say that I have never had a bad yakiniku sauce.
The sauces are available in different spice levels. There are three main types: Amakuchi which is not spicy and means "sweet taste”, chukara which is "medium spicy", and karakuchi which is "spicy taste". Keep in mind that "spicy" doesn't necessarily mean hot spicy. It could mean salty or full of spices spicy. I prefer to mix the amakuchi with the chukara because I don't like my sauce too sweet or too spicy. Mixing the two usually balances it out for me.
There are different ways to cook with yakiniku sauce. You can marinate thin slices of meat in it and then grill, grill the meat and then just dip it in the sauce, or pour the sauce over the cooked meat. I have also taken thinly sliced beef (thickness is really up to you, but I like mine to be sliced pretty thin), sliced onions, and sliced green bell peppers, and stir fried in a little bit of oil. Right before you take the pan off of the stove, pour some yakiniku sauce on it. Stir well and remove from heat. Serve with rice. Make sure you don't put the sauce in too soon because it can burn.
One of my favorite dishes is shoga yaki. Shoga is ginger and yaki is cooked. In this case, it is typically pork and cabbage that is sauteed with the shoga yaki sauce. Some restaurants serve Shoga Yaki and a lot of times it is just thin strips of pork sauteed and covered in this sauce with some shredded cabbage on the side. I am a huge fan of pork and cabbage together so I usually take thin slices of pork and some cabbage, saute them together, and when it's almost done put some of this sauce on it. Remove from heat right away so the sauce doesn't burn. Personally, I don't think this is super heavy on the ginger flavor so even if you aren't a big fan of ginger you should give this a try.
SHOGA YAKI SAUCE
Yakitori is pieces of chicken on a stick. You all know what yaki means now. Tori means bird, or in this case, chicken. Yakitori is typically found at izakayas (Japanese restaurants that serve various dishes and drinks) and at festivals throughout Japan. However, you can also make yakitori at home using this sauce, chicken, and wooden skewers. If you plan to grill, I highly recommend soaking the sticks in water beforehand to keep them from burning. Cut chicken into chunks big enough to put on the stick so not too big or small. Place 4 pieces of chicken on each stick, season very lightly with salt, and throw on a hot, medium-heat grill. They cook quickly so stay nearby. When they are almost done, dip them in some sauce and throw them back on the grill for approximately one minute on each side. Many Japanese sauces are shoyu-based so they are not very forgiving of high heat and will burn pretty quickly. Burnt sauce does not taste very good, so it’s very important to remember to pour in the sauce during the last minute of cooking or wait until it’s cooked through to add the sauce. Don't own a grill? No problem! Chop up a chicken breast or thigh and leeks into chunks. Saute the chicken and leeks in a pan and right before it is done, cover everything with some yakitori sauce. Cook for an additional minute and serve over rice.
Now that you have some information about the sauces available at Japanese grocery stores and cooking suggestions, I hope you’ll give them a try. Before heading out to the Japanese grocery stores, remember that they do not provide plastic bags for free. There is a fee for them so take your own shopping bag, or ask for a fukuro (bag) when checking out. I also recommend that you carry cash with you. While most grocery stores do take credit cards now, smaller stores do not. I have heard of people having issues with their cards in the Japanese stores so it’s always a good idea to have some yen on hand in case your card doesn’t work.

Our well-maintained rental fleet consists of small pickup trucks, passenger vans and cars. Make reservations in advance. We also offer BBQ grills and propane tanks for rent.
EARLY DROP OFF PLAN Customers using the Early Drop Off Plan may return rental cars at any time prior to the date and time the vehicle is due back. Additional fees will be applied to vehicles without a full tank of gas. There is no early drop-off for vehicles involved in accidents.

This beloved comfort food can take more than an hour to bake in the oven, but the microwave does the job in just 15 minutes.
Living in the barracks isn’t exactly ideal for the chef connoisseur, but you’d be surprised what things you can bring to the holiday table while stationed here in Iwakuni. We found some tasty recipes that would fool some of the savviest of cooks - all with limited supplies, appliances and, best of all, budget.
Grab your apron and fake-bake your way to showing that Mom isn’t the only one who can offer homemade holiday chow.
PREPARATION: With wet hands, gently mix 1 pound of lean ground beef, 1/2 cup bread crumbs, 1 egg, 1/4 cup milk, and 2 tablespoons each of onion soup mix, ketchup and soy
sauce in a bowl. Transfer to a microwave-safe bowl and pat into a round loaf. Brush with a bit more ketchup and cover with waxed paper; then cook for 15
minutes, turning halfway through. Test with a meat thermometer; it should register 160°. Let stand 10 minutes before serving. You can tweak this recipe
to incorporate whatever seasonings you'd like, such as Worcestershire sauce, minced onion and/or garlic, dried mustard, dried thyme or paprika.

INGREDIENTS: 1 box frozen spinach, thawed and
thoroughly drained
1 cup sour cream
½ cup mayonnaise
1 packet onion soup mix (Knorr
vegetable soup mix is awesome!)

INGREDIENTS: 4 quarts popped popcorn1 cup brown sugar½ cup butter ¼ cup light corn syrup½ teaspoon salt1 teaspoon vanilla extract½ teaspoon baking soda
INGREDIENTS: 1 cup white sugar½ cup light corn syrup1 cup salted peanuts1 teaspoon butter1 teaspoon vanilla extract1 teaspoon baking soda
INGREDIENTS: 1 tablespoon vegetable oil1 large potato, sliced paper thin (peel optional)Salt to taste
PREPARATION: Pour vegetable oil into a plastic bag (tip: reuse the produce bag from buying your potato). Add the paper thin potato slices and shake to coat. Coat a large plate lightly with oil and arrange the potato slices in a single layer. Cook in the microwave 3-5 minutes, or until lightly browned (must be brown, or they will not be crispy). Toss chips with salt or whichever seasonings you prefer. Repeat!
PREPARATION: Mix together all ingredients thoroughly. Be sure to chill for at least an hour before serving to allow flavors to blend. Serve with tortilla chips, fresh veggies or…
PREPARATION: Place the popped popcorn into a large brown paper bag and set aside. In a 2 quart casserole dish, or other heat-proof glass dish, combine the brown sugar, butter, corn syrup, salt and vanilla. Heat in microwave for 3 minutes, then take out and stir until well blended. Return dish to microwave for 1 ½ minutes. Remove, and stir in baking soda. Pour syrup over the popcorn in the brown bag and shake to coat the popcorn. Place the bag in the microwave and cook for one minute ten seconds. Remove, shake, flip the bag over and then cook for another 1 minute 10 seconds. Dump onto waxed paper, and let cool until the coating is set. Store in an airtight container and share with your friends!
PREPARATION: Combine sugar and corn syrup in a 2 quart glass bowl and microwave on high 4 minutes. Stir in peanuts and microwave on high 3 ½ minutes more. Stir in butter and vanilla and microwave for 1 ½ minutes. Mix in baking soda until light and foamy. Pour onto buttered cookie sheet and spread thin. Cool and break into pieces to share with friends.

As the air gets cooler and we begin to see snow flurries it is
time to adjust our mentality to winter sports. We start to
bundle up with hats, gloves, boots and jackets rather than
wearing our ball caps, bathing suits and sunscreen. We drink
hot cocoa and apple cider and look forward to those cold
winter nights next to the fire. Everyone can get discouraged
with the cold weather but it is important to remember that
there is a lot to do outside. Everyone can have a great time
while creating lasting memories of Japan and the outdoor
experiences it has to offer.

As the two most popular and daring activities
to participate in through the winter, skiing and
snowboarding fill the weekends of many snow
enthusiasts. While we live a bit far from Hokkaido
or “the Alps of Japan” in Nagano, we are still able
to access some great resorts nearby. Many
resorts nearby like Mizuho, Geihoku and Saioto
are great places to learn how to ski or snowboard
and they also provide some challenge for the more
experienced fanatics.
Once at the resort the lift tickets can range in price
(depending on your schedule for the day) from
¥1,500 to ¥4,000. Mizuho and Saioto have a trick
park for the more advanced skiers and boarders.
Gear Issue can provide most of the equipment
you need in order to test your skills on the slopes.
Skis, snowboards, pant/jacket sets and boots are
available to check out for free. Trips with Outdoor
Recreation also provide instruction for either
skiing or snowboarding.

SnowshoeingSnowshoeingIf snowshoeing is of interest to you, it is easy to go almost anywhere with snowshoes
and explore the outdoors. Snowshoes are great way to trek across the snow without
sinking in. Mominoki Park with nearby onsens is a great area for snowshoeing. Take
snowshoes on hiking trails like Three Peaks or Seven Falls (any trail with road access
in the winter) and experience a true adventure. Snowshoes can also be checked out at
Gear Issue and can be used with any type of snow boot.
Sledding is one easy way to get out with the family and have a great time in the snow. Anyone can travel
nearby and create their own sledding hill, most resorts have little sledding hills and Mominoki can offer
a large sledding hill for all ages. Mominoki is more sledding oriented and it is offered free-of-charge.

One of my favorite past times as a kid was ice
skating on our local pond. While there aren’t
many frozen ponds nearby there are a few
locations for indoor ice skating. Both Hiroshima
and Kudamatsu have ice skating rinks with rental
skates that everyone can enjoy. Hiroshima’s rink
is transformed from an Olympic size swimming
pool to two ice rinks for the winter. Check open
skate times before traveling up there. Kudamatsu
skating rink is also a part of a larger recreation
facility that offers, among other sports activities,
an onsen to relax in after a day on the rink.
Cross-country is a great way to explore the
outdoors and get a good workout. The best
comparison would be running through snow.
Cross-country skiing can be done anywhere
providing a scenic landscape through the woods.
Gear Issue is unable to provide the gear needed
but for a small fee Mominoki has all the gear you
need in order to try this activity.

EFMP is a mandatory enrollment program for military sponsors who have dependent family members with special medical or educational needs, including a spouse, child or a dependent adult. EFMP works with families that have a family member with special needs to address their unique needs throughout the assignment process and after families have settled into their new installation. Services offered include information and referral, non-medical case management, training and other forms of support, such as providing opportunities for families to connect with each other around a common need or concern.

Pizza Hut established the BOOK IT! National Reading Incentive Program to
motivate children to read more and help them develop a lifelong love of reading. BOOK IT! is a six-month program for students in kindergarten through sixth grade. It is The longest-running corporate-supported reading incentive program in the country was originally launched by Pizza Hut in 1985. Today, the program reaches more than 680,000 classrooms and 14 million children annually. Teachers set monthly reading goals and present students with a reading award certificate when goals are met. Students take the certificates to a Pizza Hut restaurant, where they are congratulated by a team member and given a free, one-topping Personal Pan Pizza. No purchase is necessary and the pizza can be taken to go.
M.C. Perry Elementary is beginning its second year participating in the Pizza Hut Book It Program. The school is the first school in the Pacific to participate. Ms. Lisa Lemos, kindergarten teacher, is credited with initiating the program at the school. She had the immediate support of the MCCS Pizza Hut manager, Mr. David Buyes. The enthusiastic support given to the school by Pizza Hut has been tremendous. Many of the employees congratulate the students and ask them questions about books they have read. Perry Elementary students have teachers and parents engaged in their learning and progress, but it is an added bonus when a person not involved in their daily educational needs gets excited about their success.

BOOK IT! READING FOR MEANING WITH YOUR CHILD
Reading for Meaning with Your ChildReading with comprehension means understanding what’s been read. It takes practice, time and patience to develop reading comprehension skills. Families can play an important role in helping a child learn to read for understanding.
First, make sure your child is reading books appropriate for their reading level. If a book is too hard, all your child’s energy will be put into decoding and reading word for word, with less energy available to figure out what the book means. Books that your child can read with 98-100% accuracy are good choices for comprehension building.
Reading comprehension skills can be developed using a before-during-after approach. Below are a few suggestions that will help build comprehension skills.
BEFORE Your goal is to help your child build an understanding of and purpose for what they’re about to read. Look at the book’s cover. Ask, “What do you think this book might be about? Why? Can you make some predictions?” Guide your child through the pages, discuss the pictures, and brainstorm what might happen in the story. Talk about any personal experiences your child may have that relate to the story.
DURING Your goal is to help your child be an active reader. Read together and talk about what’s happening as they’re reading. Stop and discuss any interesting or tricky vocabulary words. Talk about any surprising or sad passages and help them visualize parts of the story. Ask your child, “Do you understand what’s happening here? What do you think will happen next?” If your child seems unsure, stop, go back and reread if necessary. Discuss any confusing parts.
AFTER Your goal is to help your child reflect on what they’ve read. Summarize and share your favorite part of the book. Have your child rate the book on a scale from 1 to 10 and say why. Have your child reread their favorite part or act it out.
Take the extra time before and during reading to read with your child this way. You’ll soon find yourself reading with a child who is motivated to comprehend and learn from everything they read.

CONGRESSIONAL AWARD The Congressional Award is the United States Congress’ award for young Americans. It is non-partisan, voluntary and non-competitive. The program is open to anyone ages 14 to 23. Earning the Award is a fun and interesting way to get more involved in something you already enjoy or something you would like to try for the first time. The CDC offers full day care for children six weeks to five years of age (not enrolled in kindergarten). The CDC complies with DoD standards and National Accreditation criteria for quality educational programs. A variety of planned group and individual activities tailored to children’s developmental needs are offered. Hourly care is offered on a space available basis.

SAC provides before and after school childcare for school age children. They also provide day camps during winter and spring breaks.
