Spread walnuts in single layer on cookie sheet. Toast in oven for about 8-9 minutes. Let cool, and then coarsely chop. Set aside.

Leave oven at 350 degrees. Line cookie sheets with parchment paper. In a large bowl, whisk (or use hand mixer at low speed) the powdered sugar, cocoa powder and salt. Add the walnuts. While whisking (or change mixer speed to medium) add egg whites one at a time. Add vanilla. The dough will be stiff, so do not over mix. The dough should be shiny and not dry looking. If it looks too dry, add a small amount of a 4th egg white. Do not add too much as the dough should not be runny. It needs to be incorporated, but thick.

Use 2 teaspoons to make balls of dough to place on parchment. Bake about 9-10 minutes. Cookies will have a slightly cracked ap-pearance on top. Slide parchment onto cooling racks to let cool completely. Makes 4-5 dozen.

Peel and cut potato into 2” pieces. Place in pot with 2 c. of water, 1 tsp. salt and boil for 18 minutes. Place 1/2 c. warm water with 1 package yeast and 1/4 c. of sugar and let set for 10 minutes. When potatoes are cooked, drain but set aside 1/2 c. of the liquid. Mash potatoes with 1/4 c. butter then whisk in 2 eggs and 1 c. flour and the reserved liquid.

With mixer on medium, beat together yeast mixture with potato mixture and 1 c. flour for 2 minutes. Add 1 to 1 1/2 c. flour and knead for 10 minutes adding more flour to keep dough from sticking. Place dough in greased bowl and cover with plastic wrap and a towel and let rise for 1 hour.

Prepare filling: Blend 1 c. packed brown sugar, 2 T cinnamon, 1/4 c. of butter and 2 T of flour with pastry blender. Roll dough to rectangle, sprinkle liberal amount of filling, roll up and slice with floss or knife, place in greased pan.

Cover with plastic wrap and towel and let raise 1 hour.

Bake at 375 for 20 minutes.

Add Glazing: Blend with whisk: 2 c. powdered sugar, 1/4 c. of melted butter, 2 T milk (or more to reach desired con-sistency), 1 tsp. vanilla and a dash of salt. Drizzle on barely warm rolls.

Variations:Stuffed Mushrooms: Clean and remove mushroom stems. Make dip as above and stuff dip in mushrooms. Bake as above.

Cheesy Onion Chicken: Place boneless, skinless chicken breasts in baking dish. Make dip as above; cover chicken with dip. Bake as above. Serve topped with sautéed mushrooms.

InGREDIEnTS:4 - 6 boneless, skinless chicken breasts2 large eggs1/4 c. coconut milk (or any milk)1/2 c. flour

1 c. Panko bread crumbs1 c. shredded sweetened coconut1/2 tsp. salt1/2 c. vegetable oilSweet chili sauce for dipping

DIRECTIOnS:Cut chicken into strips, cutting diagonally so the ends are not too small. Pre-pare three separate bowls for breading your chicken. In one bowl combine flour and salt; in another whisk eggs and milk together; in the last stir Panko bread crumbs and coconut together.Heat 1/2 c. of vegetable oil in large skillet over medium high heat. The oil is hot when the flour sizzles and bubbles as it comes into contact with the oil. Coat chicken strips in the three bowls. Start with the flour combination, proceed to the egg and milk, and end with the bread crumbs and coconut. Place chicken strips in the hot oil with about an inch in between each strip (this helps prevent the oil from cooling down). Sauté the strips until they are golden brown and place them on a paper towel to drain. Once all are drained, bake them for 10 minutes at 350 degrees. Cooking time will vary depending on thickness of chicken strips. Serve with chili sauce.

Preheat oven to 350°. Spray a loaf pan with non-stick spray, or coat with a small amount of oil. Place the ground turkey in a large mixing bowl and add all the spices, diced onion, diced jalapeno, quinoa (or bread), and gorgonzola.

In a small bowl, crack the egg and whisk together with the Worces-tershire and hot sauce(s).

Add the egg/sauce mixture to the turkey and slowly incorporate all ingredients. Try not to over mix, as the meatloaf will get more dense. Once all the ingredients are well-mixed, place the meatloaf into your prepared loaf pan. Place into preheated oven and bake for an hour.

You will likely have leftover quinoa. Use it to make a tasty side dish. Use 1 c. quinoa and add 2 c. water along with gorgonzola, jalapeno, and a can of black beans. Heat over stovetop to your desired tem-perature.
