Here’s a delicious twist on an old favorite: creamy, cheesy, scal-loped sweet potatoes, an easy-to-make casserole that will wow everyone at the table. High in fiber and loaded with vitamins and minerals, California sweet potatoes add just a hint of sweetness to this rich and savory dish. Serve it next to your Easter ham, your Thanksgiving turkey or with a store-bought roasted chicken on a regular old Wednesday night. Deliciously indulgent, it’ll be your new favorite side dish.
Creamy, Cheesy, Scalloped Sweet Potatoes
Serves 8 to 10 1½ pounds each orange-fleshed and yellow/white-fleshed sweet potatoes, peeled and cut into ¼-inch-thick slices, di-vided 2 cups shredded Gruyère cheese, divided 2½ cups heavy cream 2 tablespoons chopped fresh thyme 1 ½ teaspoons each salt and pepper 1 teaspoon dry mustard ½ teaspoon ground nutmeg
¼ teaspoon each garlic and onion powder Preheat oven to 400° F. Oil 9-by-13-inch baking pan or 2½- to 3-quart casserole dish. Layer half of sweet potatoes in dish, mixing colors. Sprinkle with half of cheese. Add remain-ing sweet potatoes and set aside. In small saucepan over medium-high heat, combine cream with herbs and spices. Cook until bubbles appear at edges of saucepan. Pour cream mixture over sweet potatoes. Sprinkle with remaining cheese, cover loosely and bake until almost tender, about 45 minutes. Spring Lawn Equipment: Keep Safety in Mind with These 8 Tips
Spring is on its way and homeowners are eager to get outside and spruce up their yards. The Outdoor Power Equipment Institute (OPEI), an international trade association representing outdoor power equipment, small engine, utility vehicle, golf car and per-sonal transport vehicle manufacturers and suppliers, reminds homeowners to keep safety in mind when working in their outdoor living spaces.
“Before you use a mower, trimmer, blower, power washer, chainsaw, pruner, portable generator or other piece of outdoor power equipment this season, it’s important to refresh yourself on handling and safety procedures,” says Kris Kiser, President and CEO of OPEI. “We’re all eager to get outside and enjoy the living landscape after a long winter, but you should take the time to do basic maintenance to ensure your equipment operates safely for the season and is ready to get the job done.”
Here are tips to help: 1. Read your owner’s manual. Follow all guidelines for your
outdoor power equipment and familiarize yourself with the con-trols. If you have lost your manual, look it up online (and save a copy on your computer for easy reference in the future).
2. Inspect equipment. Check the air filter, oil level and the gasoline tank. Also check loose belts and missing or damaged parts. Replace any parts needed or take your equipment to a quali-fied service representative for servicing.
3. If you have gasoline-powered equipment and didn’t empty the tank before winter storage, drain the fuel now. You should never leave fuel sitting in the gas tank of your equipment for more than 30 days. Untreated gasoline (without a fuel stabilizer) left in the system will deteriorate, which may cause starting or running problems or damage the fuel system.
4. Protect your power by only using E10 or less fuel in gaso-line-powered out door power equipment. With today’s higher etha-nol content fuels, most manufacturers are recommending a fuel stabilizer be used, especially if you don’t use up all the gas pur-chased right away. Some gas stations may offer 15 percent ethanol (E15) gas or higher ethanol fuel blends, but any fuel containing more than 10 percent ethanol can damage--and is illegal to use in-- small engine equipment not designed for it.
5. Store fuel safely. Label your fuel can with the date of pur-chase and ethanol content of the fuel. Never put “old” gas in your outdoor power equipment. If you don’t know the date of purchase, safely dispose of the fuel in the can and buy fresh fuel. Always store fuel out of the reach of children or pets and in approved con-tainers.
6. For battery-powered equipment, recharge only with the charger specified by the manufacturer. A charger that is suitable for one type of battery pack may create a risk of fire when used with another battery pack. Follow all charging instructions and do not charge the battery pack or tool outside the temperature range specified in the instructions.
7. Store batteries safely. When the battery pack is not in use, keep it away from other metal objects, like paper clips, coins, keys, nails, screws or other small metal objects, that can make a connection from one terminal to another. Shorting the battery ter-minals together may cause burns or a fire.
8. Clean your equipment and store it in a dry place. Remove any dirt, oil or grass. Clean equipment will run more efficiently and last longer. Never store your equipment in a place that is damp or wet.

Year Of Plant Health Can you imagine a world without fruit or flowers? Without farms
or forests? It sounds extreme, but it could happen. Plants are under attack and the culprit is invasive pests. Some are so small, you can’t see them with your eyes. But they are there, and it’s time that everyone takes notice. That’s why the United Nations (U.N.) has declared 2020 as the International Year of Plant Health. It’s calling on individuals, organ izations, industries, scientists and govern-ments at all levels to work together to protect plants against the introduction and spread of invasive pests.
Healthy Plants = Human Survival Plants are the foundation of all life on Earth. They make the
oxygen we breathe and give us 80 percent of the food we eat. They sustain our livestock, provide habitat for wildlife and help our world to thrive. And plants add beauty and joy to people’s lives.
According to the U.N., invasive pests destroy up to 40 percent of food crops globally and cause $220 billion in trade losses each year. This trade, worth nearly $1.7 trillion annually, has become crucial for human survival and economic growth in rural areas.
To feed the world’s growing population, the U.N. estimates that agricultural production must increase by about 60 percent by 2050. That means we must do everything we can now to protect plant health from destructive invasive pests.
What You Can Do The good news is that there are simple steps anyone can take to
protect plants. It just takes one person to make a difference. For example, a hospital groundskeeper in Boston was the first to notice a strange-looking, dime-sized hole in a tree. Her call provided an early warning and jump-started the U.S. Department of Agricul-ture’s (USDA) control effort, which quickly eliminated the de-structive Asian longhorned beetle from that city.
Here are ways you can help: • Look for and report unusual signs of pests or diseases in trees
and plants. • Don’t move untreated firewood. Instead, buy heat-treated
firewood or responsibly gather wood where you will burn it to en-sure tree-killing beetles hiding inside can’t spread to new areas.
• When returning from international travel, always declare any food, plants or other agricultural items to U.S. Customs and Border Protection, so its experts can ensure they are pest-free.
• Before buying seeds or plants online from other countries, contact USDA to find out if the items need to be inspected and certified as pest-free or meet other conditions before you can legally bring them into this country. “Co-op City was on New York City’s blueprints before the firstshovel of dirt was turned to build the park,” explained Virgintino.“Freedomland U.S.A. was doomed to fail before the first guest enteredthe park.” The book puts to rest the urban legend that the demise ofFreedomland U.S.A. was caused by the New York World’s Fair.

When Moving With Pets If you’re a pet parent, you’re far from alone. According to the
American Veterinary Medical Association, nearly six in 10 Ameri-can households have at least one pet.
When the time comes to move that household, however, there are a few things you should consider to keep your four-legged family members happy and healthy.
Moving with Pets 1. Before you pick up the rental moving truck: • Check with your pet’s veterinarian to see if a mild sedative is
recommended for the move. • If your animal will be traveling in a crate, consider preparing
him ahead of time by leaving the crate out and open for your pet to go in and out of freely.
• Consider taking small trips in your car with your pets in a crate or carrier to help get them more acclimated before your big move.
• Put your pet on a leash or in a kennel or cage when outside the moving truck.
• Be sure to have an appropriate ID tag attached to your pet’s col-lar with a current phone number. You might also consider micro-chip technology that has the full information about your pet placed on a chip under his skin.
2. During your move: • Try to keep your pets away from the action. • Animals should travel only in the cabin of the Penske rental
truck, where the driver can control the temperature and keep an eye on the animal. Use a dog harness or crate your pet properly for the trip. Never place pets in the back of a moving truck, as the tem-
perature can become dangerously high and create an unsafe en-vironment for animals.
• While on the road, make sure to take your pet’s favorite blan-kets, toys and high-value treats to make the ride as comfortable and enjoyable as possible.
• Bring enough water and food for the journey, as well as any medications they may need.
• If you are moving with small pets, such as guinea pigs, birds or fish, keep them contained at all times.
• Never leave your pet in the truck. • If your pet becomes overheated while traveling, take her to an
air-conditioned area and place her in a shallow tub of cool water or rub her down with cool, wet towels. • If you have to travel a long distance to your new home and have to stay somewhere overnight, look for a pet-friendly establishment. 3. When you arrive: • Make sure to unpack your pet’s belongings—bedding, food and water bowls, toys—as soon as you get there. Having familiar items around will help your pet adjust as quickly as possible to his new surroundings. • Remember, pets may take a little while to get used to a new place with new smells and sounds. Be patient and understanding of any bathroom accidents or unusual hiding as they establish themselves into a new environment and learn that the new home is a safe place.
