MEMBERS NEEDED…
If you have yet to join the PFA, now is the time! The membership fee is $20 and includes the ever-so-handy Roy Gomm directory. The directory is a great resource
when planning birthday parties, play dates, or getting in-formation about homework and assignments. If you
choose not to join the PFA, a directory can purchased in the office for $10. To join the PFA and/or to be included
in the directory, you must fill out a Membership/Directory form attached here. Additionally, a copy of
this form will be coming home in your child’s backpack this week. October 31st is the last day forms will be ac-
cepted for directory entries. Thanks!
Three Great Reasons to join the PFA...
• GET CONNECTED. Know what’s going on at your child’s school! The PFA addresses issues that are im-
portant to parents and public school administrators. We fight for full funding, quality teachers, and capac-
ity for our school to thrive.
• MAKE A DIFFERENCE. Involved parents understand the challenges schools face and become part of
the solution.
• LEAD BY EXAMPLE. The children love your involvement in their school and education.
Homemade Chicken Noodle Soup Recipe by Marilyn Knuth, MS, RD
This recipe serves a crowd, but if you are only cooking for one or two, it is great for leftovers and freezes well!
• 2 tablespoons extra virgin olive oil
• 3-4 large carrots, peeled and chopped
• 3-4 stalks of celery, peeled and chopped
• 1 large red onion, diced
• 1-2 large turnips, peeled and chopped
• 8 cups of low-sodium chicken or vegetable broth
• 1 tsp poultry seasoning
• 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
• 1 bunch kale, stems removed, thinly sliced
• 1 package Grandma’s frozen egg noodles, thawed (locally I can find them at Raley’s)
• 1-2 cups frozen green peas
• Salt and pepper to taste Heat the oil over medium to medium-high heat in a large soup pot or Dutch oven. Add the carrots, celery, onion and turnip, and saute until tender (about 5-7 minutes) stirring frequently. Add the chicken broth and poultry seasoning and bring to a boil. Add the chicken to the boiling broth; reduce heat to medium, cover and cook for 10 minutes. Remove the lid and add the sliced kale. When the kale is wilted (about 1-2 minutes), add the noo-dles (make sure the broth is still at a rolling boil and that the noodles are separated from one another). After the noodles are cooked (approximately 10-15 minutes), add the frozen peas and cook for another 2-3 minutes. Sea-son with salt and pepper to taste. Enjoy!
