Serves: 4
Preparation: 15 minutes
(+ 5 minutes standing time)

2 tbs olive oil
1 brown onion, finely chopped
1 garlic clove, crushed
1⅓ cups arborio rice
125ml white wine
1L chicken stock, warmed
½ cup finely grated parmesan
4 Beef Always Tender 100 Day Grain
Fed Fillet Steaks
⅓ cup chopped fresh basil
small fresh basil leaves, to serve
baby rocket leaves, to serve
Roasted capsicum sauce
2 tsp olive oil
1 garlic clove, crushed
3 roasted red capsicums, pureed
125ml chicken stock
2 tsp balsamic vinegar
1To make the roasted capsicum sauce,
heat the oil in a small saucepan over low
heat. Add the garlic and cook, stirring, for
1 minute. Add the capsicum and stock and
cook, stirring occasionally, for 5 minutes or
until thickened. Stir in the vinegar. Season
with pepper.
2 Heat half the oil in a medium saucepan
over medium heat. Add the onion and
garlic and cook, stirring, for 2 minutes or
until soft. Add the rice and cook, stirring,
for 1 minute. Add the wine and stir until
absorbed. Add the stock. Bring to the
boil. Cover and reduce heat to low.
Cook for 20 minutes or until the rice
is tender and the liquid is absorbed.
Stir in the parmesan.
3 Heat a chargrill on high. Brush
the steaks with the remaining oil
and season with salt and pepper.
Cook for 4 minutes each side for
medium or until cooked to your liking.
Cover loosely with foil and set aside
for 3 minutes to rest.
4Reheat the capsicum sauce. Stir
the basil into the risotto. Taste and
season with salt and pepper. Divide
the risotto among serving plates. Top
with a steak and drizzle over the capsicum
sauce. Top with the basil leaves. Serve
with rocket.

⅓ cup olive oil
2 red onions, chopped
½ tsp dried thyme
1 large eggplant
2 zucchini
5 tomatoes
1 red capsicum
1 yellow capsicum
4 garlic cloves, chopped
1 cup chopped basil
½ cup chopped continental parsley
1Heat a quarter cup of the oil in a large
heavy based pan over medium heat.
Add onion and thyme and cook for 1 minute.
Reduce heat to low and cook for 10 minutes or
until onions are soft.
2Meanwhile, roughly cut eggplant, zucchini
and tomatoes into 2cm dice. Cut sides
from the capsicums, discard seeds and dice.
3Stir all the chopped vegetables and
garlic into pan, cover and cook over low
heat, stirring occasionally for 30 minutes until
vegetables are soft. Season with salt and
pepper, add herbs and remaining oil. Cook
for a further 5 minutes.

marinating Cooking: 2 hours Serves 4
1 tbs olive oil
2 cloves garlic, crushed
1 small onion, finely chopped
2 tbs Woolworths Select Spicy
Barbecue Seasoning
½ cup tomato sauce
1 tbs Worcestershire sauce
2 tbs vinegar
1 kg pork rashers
1Combine oil, garlic, onion and barbecue
seasoning in a bowl and stir until well
combined. Stir sauces and vinegar.
2Lay pork rashers in a shallow baking
dish and pour over marinade, turning the
rashers to coat. Cover and refrigerate for a
few hours or overnight if time permits.
3Preheat oven to 160°C. Place a rack
over a baking dish lined with foil or baking
paper. Remove rashers from marinade and
arrange on rack. Cover with foil and bake for
1 hour 30 minutes, turning every 30 minutes.
Remove foil and baste with marinade.
Increase oven temperature to 200°C and
bake for 20-30 minutes until crisp.
4Meanwhile, transfer marinade to a small
pan and bring to the boil. Reduce heat
and simmer for 10 minutes. Serve with
cooked pork rashers.

8 thin slices prosciutto
¼ cup purchased pesto
4 bocconcini, quartered
30g butter
1 cup risoni pasta
2 tbs olive oil, extra
2 garlic cloves, crushed
finely grated rind of 1 lemon and
2 tbs juice
2 tbs chopped continental parsley
steamed green beans, to serve

in colour and nice and plump. The fillet
should be appear lean with little fat visible.
Best in Chicken breast fillets are great
poached, baked, fried, barbequed or stir-
fried. Kids will love sliced cooked chicken
breasts served in wraps with shredded
lettuce, sweet chilli and grated carrot
and shredded cheese.
Storage Chicken breast fillets are best kept
in airtight container in the fridge.

1Trim tenderloin from chicken breast fillets
and reserve for another use. Lay fillet flat
on a chopping board and press down on top
with your hand. Using a large knife cut through
the middle of the breast to make 2 thin slices.
2Lay a slice of prosciutto on the chopping
board, top with a slice of chicken and
spread with 2 tsp of the pesto. Top with
2 pieces of the bocconcini and roll up to
enclose. Secure with a toothpick.
3Heat half the butter in a non-stick frying
pan over medium heat and when foaming,
add half of the chicken rolls and cook for
2 minutes, turning until golden brown on all
sides. Remove from pan and repeat with
remaining rolls. Return all rolls to pan, cover
and cook for 10 minutes until cooked through.
4Meanwhile, cook risoni in boiling salted
water for 8 or 10 minutes. Drain and
return to pan with oil, garlic, lemon juice and
rind and parsley. Toss to reheat and serve with
Involtini and beans.

Cooking: 30 minutes Serves 4
1 leek
4 salmon fillets
2 tbs butter
2 tbs olive oil
1 tbs chopped dill or tarragon
baby spinach leaves, to serve

1Preheat oven to 180°C. Using only the
white section of the leek, cut in half
lengthways and wash well under running
water. Dry with paper towel and finely slice.
Lay salmon fillets in a baking paper lined
ovenproof baking dish.
2Heat butter and oil in a non-stick frying
pan over medium-high heat. When butter
is foaming, add leeks and reduce heat to
medium. Cook, stirring often for 6 minutes
until leeks are very soft. Add herbs and
season with salt and pepper.
3Divide mixture between salmon, piling
on top of the fillets. Spoon over any
butter mixture from the pan. Cover dish with
foil, sealing well. Bake for 15 to 20 minutes,
depending on thickness of fillets. Transfer to
serving plates and serve with baby spinach
and cherry tomatoes.
FRESH TIP
Each salmon fillet can be individually wrapped
in a baking paper parcel. Simply place the
parcel onto the serving plate.

Storage Salmon will stay fresh for 2-3 days in the
fridge and will keep in the freezer for up to 6 months.
Fresh tip In general, fi sh will continue to cook after
being removed from the pan, so avoid overcooking
by removing from the pan and allowing the residual
heat to fi nish off the cooking.

Rockmelon & mint granitaPreparation: 15 minutes + 4 hours freezing
Serves 6
1 cup sugar
1 cup boiling water
2 peppermint tea bags
1 rockmelon
finely grated rind and juice of 1 lime
½ rockmelon, extra
1Place sugar into a large heatproof jug or
bowl. Pour over boiling water and stir to
dissolve sugar. Add tea bags and set aside for
5 minutes to infuse flavour.
2Meanwhile, cut rockmelon in half, scoop
out seeds and discard. Cut flesh into
cubes, discard skin and puree flesh with lime juice
(reserve rind for garnish) in a food processor until
smooth. Pour puree through a sieve and into the
sugar syrup. Stir well to combine.
3Pour mixture into a shallow tin and cover
with plastic wrap. Freeze for 2 hours. Remove
from freezer and scrape with a fork to break up icy
crystals. Refreeze for 1 hour then repeat. Repeat
once more. Keep frozen until ready to serve.
4To serve, scrape seeds from rockmelon and
peel. Cut flesh into small dice and arrange
in glasses. Top with granita and lime zest.

feels relatively heavy for its size.
Storage Store whole rockmelons at room
temperature for up to 1 week. Once cut,
wrap in plastic or place in an airtight
container and store in the fridge for

With Christmas around the corner, here’s how to cook the perfect turkey.

birds — all 60,000
of them.
Tony raises day-old turkey poults for
Inghams— all Nicholas whites, a breed
originally from the United States — until they
are between 70 to 120 days old. The mature
birds can weigh anything from a small 4.5kg
hen up to a giant 16kg ‘tom’ or male turkey.
Ingham’s is Australia’s largest turkey
supplier and while most of us may eat turkey
only at Christmas — we consume just 1
kilogram a year compared to 37kg of chicken
— this very lean meat is rapidly attracting
more and more fans. A contract grower with
Inghams for 12 years, Tony certainly knows
his birds and spends his days monitoring
the water and feed — a grain mix made at
an Ingham feed mill that contains no growth
promoters or antibiotics — for the large
flock in his care at his 18-hectare property at
Bargo on NSW’s South Coast. Things have
changed a lot since the 44-year-old helped
his dad. To even join Ingham’s select group of
22 growers in NSW and 7 in South Australia,
Tony needed to satisfy the company’s strict
guidelines to ensure the bird’s welfare and
build special sheds.
“We work closely with our growers to
make sure standards are met,” explains
Simon Crabb, Ingham’s general manager
operations for turkeys. “And many of them
have been with us for over 10 years and they
usually have a family history of poultry farming
— they really know the business.”
Woolworths works closely with Simon
and regularly visit farmers. “Shane Dinan,
Woolworths Business Manager for Poultry
is very involved in talking to our growers. He
won’t sit behind a desk, he actually gets out
into the field to do business,” says Simon.

HOW TO STUFF
Rinse turkey with cold water
and dry with paper towel.
Fill front cavity, shaping from
the outside. Secure neck skin
over opening with toothpicks.
Fill main cavity and tie legs
with string. Place in a roasting
pan and brush with butter.
This should be done just prior
to cooking.
Chop 200g rindless bacon, 2 onions and 2 stalks celery.
Fry over medium heat for 10 minutes until onion and celery
are very soft. Transfer to a bowl and add 2 green apples,
cored and chopped, 8 cups fresh breadcrumbs, ¼ cup
chopped herbs (we used sage, parsley and thyme) and
2 eggs, lightly whisked. Mix together well and season with
salt and pepper. Use to fill turkey cavity.
HOW TO BASTE
During cooking, baste every
30 minutes with melted butter
or pan juices. This will ensure
a rich colour and keep flesh
moist during the long cooking
time. Cover wings and ends
of drumsticks with foil to
prevent over cooking.
HOW TO CARVE
Starting from wing side of
breast, slice meat and stuffing,
working towards breastbone.
Remove legs by slicing
between leg and body.
Cut through joint, slice leg
and thigh meat and arrange
on platter.

You will need 12 pre-soaked bamboo
skewers.
1½ cups long grain rice
500g chicken breast strips
1 tbs peanut oil
1 eschallot, finely chopped
1 cup crunchy peanut butter
270ml can reduced-fat coconut milk
2 ¾ cups water
⅓ cup sweet chilli sauce
1 tbs fish sauce
1 tbs kecap manis
1 tbs lemon juice
1½ cups frozen Homebrand Frozen
Mixed Vegetables
1 tbs soy sauce
1Put rice into a saucepan and cover
with 2¼ cups of cold water. Bring
to the boil over high heat, cover, reduce
heat and simmer for 14 minutes. While
rice is cooking, thread chicken strips onto
prepared skewers. Remove rice from

Spread onto a tray lined with baking

2Heat half the oil in a saucepan over
medium heat. Add eschallot and cook
for 3 minutes or until soft. Add peanut
butter and slowly stir in coconut milk and
½ cup water until well combined. Bring to
the boil. Reduce heat and stir in chilli sauce,
fish sauce, kecap manis and lemon juice
until well combined.
3Heat both a chargrill and a wok over a
high heat. Cook skewers on chargrill for
3 minutes each side until cooked through.
Add remaining oil to wok and swirl to coat.
Add cooked rice and stir-fry for 2 minutes.
Add vegetables and soy sauce. Stir-fry for
2 minutes until heated through. Serve
skewers with rice and satay sauce.

1½ cups caster sugar
½ cup white wine vinegar
1 tbs fish sauce
200g thin dried rice noodles
3 green shallots, thinly sliced
1 Lebanese cucumber, halved lengthways,
deseeded and sliced
½ red capsicum, deseeded and
thinly sliced
1 cup coriander leaves
1kg frozen Woolworths Select
Crumbed Calamari
1Combine capsicum, onion, chilli, garlic,
sugar, vinegar and fish sauce in a large
microwave safe bowl. Microwave on high for
15-20 minutes, stirring every 5 minutes, until
thick, shiny and syrupy. Set aside to cool.
2Put noodles into a large bowl. Cover with
boiling water and stand for 10 minutes or
until soft. Drain. Add shallot, cucumber, extra
capsicum and coriander leaves. Toss until
well combined. Cook calamari as per packet
instructions. Spoon salad onto serving plates.
Top with calamari. Serve with chilli jam.

Heat 2 tbs olive oil in a large non-stick
frying pan over a medium heat. Add 1 red
onion, finely diced, and cook for 3 minutes
or until soft. Add 1 medium eggplant,
cut into 2cm cubes, and cook, stirring
occasionally, for 8 minutes or until golden.
Add 1 red capsicum and 1 green capsicum,
both deseeded and cut into 2cm pieces,
and a 400g can chickpeas, drained and
rinsed. Cook for 3-4 minutes or until soft.
Sprinkle both sides of 4 lamb leg steaks
with 2 tbs Moroccan seasoning. Heat
1 tbs olive oil in a non-stick frying pan over
a medium heat. Add steaks and cook for
3 minutes on each side for medium or until
cooked to your liking. Process 1 cup thick
Greek-style yoghurt, ¼ cup semi dried
tomato and ½ tsp smokey paprika in a food
processor until a thick sauce forms. Spoon
vegetables onto serving plates. Top with a
steak and serve with yoghurt sauce.

piece into 3 strips. Spread long edge of each
piece with 1 tsp mild mustard and top with
a little onion. Place a Woolworths Gourmet

Wrap pastry around sausage and place onto
prepared tray. Brush with a beaten egg. Bake
for 20-25 minutes or until golden and cooked
through. Serve with tomato sauce.

season with salt and pepper. Put both trays

2Meanwhile, cook risoni in a saucepan of
boiling water as per packet instructions
or until tender. Drain. Transfer to a large
bowl. Slice sausages and add to risoni with

well combined. Combine oil, vinegar, basil,
salt and pepper in a jug. Add dressing to
salad just before serving.

185g can tuna in oil, drained and flaked
1 cob of corn, kernels removed

baking tray and bake for 45 minutes or until

4 slices prosciutto
4 small bamboo skewers or toothpicks
2 bunches Dutch carrots, washed
and peeled
1 tbs butter
1 tsp paprika
800g potatoes
salt and pepper, to season
½ cup grated parmesan
1 tbs butter, melted
1 Wrap each mignon with a slice of
prosciutto and secure with a bamboo
skewer. Set aside. Place carrots in an
ovenproof dish. Combine butter and paprika
in a bowl. Pour over carrots. Toss to
combine. Bake for 30 minutes or until tender.
2Place potatoes in a saucepan of boiling
water. Cook for 8-10 minutes or until soft.
Place on a baking tray and press each potato
with a potato masher. Sprinkle with salt and
pepper and parmesan. Bake in a hot oven
for 10-15 minutes or until crispy.
4 Heat extra butter and oil in a frying pan
over medium heat. Cook pork for 4-6
minutes on each side. Serve with the

Ham, cheese & tomato scrollsPreparation: 15 minutes

1 cup Bega Cheese Shredded Tasty
½ cup chopped ham
½ cup semi dried tomatoes, chopped
2 cups self-raising flour
30g Western Star Butter, chopped
¼ cup chopped basil leaves
1 cup milk
1Preheat oven to very hot 220°C.
Line a baking tray with baking paper.
In a small bowl, combine cheese, ham
and tomatoes.
2Sift flour into a large bowl. Add butter
and rub in lightly using fingertips. Stir
in basil. Season with salt and pepper.
Make a well in the centre and pour in most
of the milk, reserving about 1 tablespoon.
Using a knife, mix quickly to a soft, sticky
dough. Be careful not to over-mix.
3Turn onto a lightly floured surface.
Knead lightly. Press or roll out to form
a rectangle 20 x 30cm. Scatter cheese
mixture over dough. Roll up from the long
side to form a log. Cut into 2cm thick slices
and arrange on prepared tray. Brush with
leftover milk. Bake for 15 minutes until
golden brown. Cool on a wire rack.
FRESH TIP: To mix it up a little, you can
substitute ham with canned tuna.

2 sheets frozen Pampas Shortcrust Pastry,
partially thawed
Filling 1
4 green shallots, trimmed and thinly sliced
8 slices Hans Ham Champagne Ham
91% Fat-Free, chopped
½ cup grated gruyére cheese
6 eggs, lightly whisked
Filling 2
2 x 210g can red salmon, drained
and flaked
2 x 125g can corn kernels
2 tbs chopped parsley
6 eggs, lightly whisked
Preheat oven to 160°C. Grease 8 medium
muffin holes with oil spray. Cut out 8 circles
from the pastry using an 8cm cutter. Press
gently into muffin holes.
Filling 1 Divide green shallots, ham and
cheese evenly into pastry bases. Fill with
beaten egg. Bake for 15 minutes or until
golden brown and just set. Cool. Store in
an airtight container in the fridge.
Filling 2 Divide salmon and corn evenly into
pastry bases. Add parsley to beaten egg and
pour over filling. Bake for 15 minutes or until
golden brown and just set. Cool. Store in an
airtight container in the fridge.
Honey soy chicken wingsPreparation: 10 minutes + marinating time
Cooking: 30 minutes

½ cup Woolworths Select Soy Sauce
2 tbs honey
½ tsp Chinese five-spice powder
1 garlic clove, crushed
1Cut the chicken wings into 3 pieces,
dividing at the joints. Discard the smallest
section known as the wing tip.
2Combine soy sauce, honey, five-spice
powder and garlic in a shallow dish.
Add wing pieces and turn to coat with
marinade. These can be left overnight if
you have time.
3Preheat oven to 200°C. Arrange chicken
pieces into a roasting pan lined wth
baking paper in a single layer. Bake for 25-30
minutes until cooked through and golden.

125g butter, softened
¾ cup firmly packed brown sugar
2 eggs
2 cups self-raising flour
1 tsp mixed spice
1 cup mashed ripe banana (see note)
¾ cup sour cream
Frosting
125g butter, extra
¾ cup icing sugar
1 tbs lemon juice
1Preheat oven to 180°C. Line 2 x 12-hole
medium muffin pans with paper cases.
In a large bowl, beat butter and brown sugar
together using electric beaters until light and
creamy. Add eggs, one at a time, beating well.
2Sift flour and spice together. Fold into
butter mixture with banana and sour
cream. Divide mixture between paper cases,
filling to three-quarters full. Bake for 20-25
minutes until cooked when tested with a skewer.
Cool for 5 minutes. Transfer to a wire rack to
cool completely.
3Beat extra butter, icing sugar and lemon
juice with electric beaters until smooth and
creamy. Spread over cooled cakes.
NOTE: Over ripe bananas will give the best
flavour for the cakes.

Roast beef, pumpkin & watercress saladPreparation: 5 minutes
Cooking: 25 minutes
Serves: 4
500g butternut pumpkin, peeled,
deseeded and cut into 2 cm pieces
2 tbs olive oil
¼ cup chopped walnuts
1 bunch watercress
8 slices rare roast beef (purchased
from the deli counter)
½ small red onion, sliced
½ cup light sour cream
1 tbs horseradish cream
1 Preheat oven to 210°C. Toss pumpkin
with olive oil, salt and pepper in an oven-
proof dish to coat. Roast for 20 minutes. Add
walnuts and roast for a further 5 minutes or
until pumpkin is tender. Remove and cool.
2Pick sprigs from watercress and wash
well in cold water. Shake off excess water
and place into a large bowl. Tear or cut beef
into strips and add to bowl along with red
onion, pumpkin and walnuts. Toss gently.
Stir sour cream and horseradish cream
together. Serve with salad.
FRESH TIP: If taking this dish to a
picnic, pack both the sour cream and
horseradish dressing and the salad in
separate containers. Dress when time
to serve.
Coconut & jam slicePreparation: 20 minutes Cooking: 45 minutes
Preheat oven to 180°C. Line a 23cm square
tin with baking paper. Process 1 cup plain flour,
½ cup self-raising flour, 150g diced butter
and ½ cup icing sugar in a processor until
crumbly. Add 1 egg, process until dough
is formed. Press over base of tin. Bake for
15 minutes until golden. Beat 2 eggs with
½ caster sugar until creamy. Stir in 2 cups
desiccated coconut. Spread ½ cup jam
then coconut mixture over base. Bake for
30 minutes. Cool in tin. Cut into pieces.
Spinach & feta dip with crusty bread Preparation: 5 minutes
Thaw a 250g packet Heinz Finely
Chopped Frozen Spinach as per packet
instructions. Squeeze out excess water
and place into a food processor with 200g
crumbled feta, 250g tub Kraft Philadelphia
Cream Cheese, 2 garlic cloves, crushed
and ¼ tsp nutmeg. Process until finely
chopped and season with pepper. Serve
with slices of crusty bread.

Add frozen berries instead of ice-cubes for a fresh summer twist.
Ingredients
125g Mainland Special Reserve Premium Blue
2 tablespoons honey
1/4 cup walnuts
1/4 cup sliced almonds
1 pack Tuckers savoury crackers to serve
Sliced crusty bread to serve
Blue Cheese with Honey & Walnut Dressing
Serves: 4 - 6
Cooking time: 10 minutes
Method
1. In a small fry pan, on a low heat, combine the nuts and mix well until browned or roasted.
2. Drizzle the honey over the nuts until combined. Remove from heat.
3. Place the blue cheese on a cheese board or serving plate.
4. Pour the honey and nut mixture over the cheese, drizzle extra honey over the cheese to coat.
5. Serve with Tuckers savoury crackers and sliced crusty bread.

The Smith Family was founded on a simple
act of kindness 87 years ago at Christmas
time, when five businessmen delivered
toys and books to children at a Sydney

Recycle RightWe are all aware of the importance of recycling,
but did you know that if the materials are not
provided in the correct way they can not be
recycled? One of the common mistakes with
kerbside recycling is putting the recyclables
into plastic bags and then putting them in the
recycling bin. Unfortunately, when this material
gets to the recycling plant the sorters must
assume that this is a plastic bag of rubbish and
it has to be removed from the recycling stream
and thrown into landfill. So remember to put
your recyclables directly into your recycling bin
and not into a plastic bag.
Other ways you can help Recycle Right are:
❋ Remove the lids from bottles and jars before
putting them in your recycling bin.
❋ Remember to give containers, jars and
bottles a quick rinse before putting them in
your recycling bin. This helps minimise
contamination of newspapers and other items

Described as Australia’s most
lethal cancer, pancreatic cancer
affects more than 2,000 of us
nation-wide each year.
Unfortunately, most of those
diagnosed with pancreatic cancer do not
fare well and roughly the same number of
Australians die from this disease, as did
25 years ago.
The Avner Nahmani Pancreatic Cancer
Research Fund is named after a man who
contracted and died of the disease. In the
months before his death in October 2008,
Avner, a former employee of Woolworths and
his wife, Caroline Kelly, established the fund to
raise awareness and much-needed money for
research into this lesser known cancer.
According to Dr Yu Jo Chua of The Canberra
Hospital, the principal investigator for the
THE MISSING LINKThere have been no specific links with gastro-intestinal health and particular foods or environmental factors, Dr Yu Jo Chua says. However, he adds, smoking and obesity may increase the risk of developing pancreatic cancer.
These include cancers of the digestive system
– the oesophagus, stomach, liver, gall bladder,
pancreas, small and large bowels, rectum
and other digestive organs.
Treatment may include surgery, radiotherapy
and chemotherapy, but due to the high death
rate, new types of treatments and drugs need
to be tested and developed urgently.
Australia-wide almost 89 people die every
week from GI cancers, amounting to almost
two deaths in each state every day.
Dr Chua says part of the reason pancreatic
cancer in particular is so difficult to diagnose
is because the early symptoms are vague
and easily mistaken for other less serious
conditions.
“Symptoms which should prompt people
to see a doctor include persistent upper
abdominal pain, jaundice, where the skin
pancreatic research project to be conducted
by the GI CANCER Institute, “The average
person is probably less aware of pancreatic
cancer, because few lay people understand
where the pancreas is in the body and its
functions, which in addition to regulating blood
sugar, includes making digestive enzymes”.
Since it was established, Avner’s Fund,
of which Woolworths is a major supporter,
has already raised just over half its current
target of $1 million. The money will be put
toward pancreatic cancer research, which
will ultimately lead to improved treatments
for this disease and the development of a
personalized approach towards management.
Gastro-intestinal cancers are the most
common forms of cancer in Australia,
accounting for 20 percent of all new

unexplained weight loss,” he says.
Fewer than five percent of pancreatic cancer
patients live longer than five years after
diagnosis, making it the most lethal of all adult
cancers. Some experts believe there has been
little or no progress made in the fight against
pancreatic cancer lasting the last decade.
“The scientific research techniques with which
we can really start to understand cancers have
only really been developed in recent years,”
says Dr Chua.
“For example, current research is focused
on studying the genes which are abnormal
in cancer cells and which determine the
aggressiveness of cancers and their likelihood
of responding to different treatments.
“With regard to the Avner Nahmani Fund,
I think it is important people appreciate that
although pancreatic cancer is one of the
most common causes of cancer-related
death, funding is often directed toward more
common forms of the disease, such as bowel,
breast,lung or prostate cancer”.
“The focus here is on an often neglected type
of cancer for which progress is sorely needed.
The GI CANCER Institute is conducting
important work to improve the treatment of
these patients,” explains Dr Chua.

An old friendAvner Nahmani was a citizen of the
world; born and raised in Israel, he
moved to the highlands of Scotland,
became a farmer, migrated to Australia,
and eventually exchanged his life on
the farm for life in the corporate world.
We were fortunate enough to have
Avner as part of our Woolworths family
for almost 27 years.
His 56 years of experience crossed
cultures, countries and careers. It
shaped a man that people admired,
respected and loved for his sense of
humour, his sense of equality and his
pragmatic and astute approach to
getting things done.
It was on the very day that Avner
moved into his dream home in beautiful
Avalon, NSW that he fell sick. After
two months of pain and many different
tests he was diagnosed with advanced
pancreatic cancer. The prognosis was
bleak with survival rates between 3-6
months and the only treatment available
was just to manage the pain.
Each year over 2000 Australians
are diagnosed with pancreatic cancer.

There is little evidence that any
specific foods assist in preventing pancreatic
cancer. Research studies so far have found:
❋ It’s important to avoid more than 2 standard
alcoholic drinks a day.
❋ A Mediterranean-style diet (fats supplied by
olive oil and nuts, high in vegetables, fruits and
other plant products (legumes, grains) and
low in meat, sugar, saturated fats and most
processed foods) may be helpful.
❋ A decrease in meat fat may be beneficial,
so avoid large quantities of meat, all meat fat
and choose only extra lean sausages.
❋ Studies on high or low intake of dairy foods
have shown no benefits or harms.
❋ The glycaemic index (GI) of carbohydrate
foods doesn’t appear to offer help or
hindrance.
❋ Specific fruits and vegetables do not
appear to have any particular benefits,
although a high intake of these foods helps
the body’s overall health.
