SELECTION:• Sweet potatoes are plentiful year round. They can be found as a popular snack ship, canned, frozen, or fresh in your
commissary's produce section.• Fresh sweet potatoes found in the produce section range in color from creamy beige, purple, brown, and reds. As a
tuberous root crop, the prime harvest season lasts from October to January.• Look for small to medium sized elongated tubers with smooth, unwrinkled skins, without brown soft spots.• Cuts and nicks on the tuber occur during harvest but do not affect the quality of the sweet potato. It heals itself naturally
and will store well for months.
FUN FACTS:
• Although sweet potatoes are commonly referred to as yams, they are not the same vegetable. Sweet potatoes actually belong to the morning glory family. Yams originate from the family of grasses and palms.
• Unlike yams, sweet potatoes have a naturally sweet flavor with a deep orange to light yellow flesh with tapering at both ends. Because they are naturally sweet, they do not require extra oils, butter, or creams.
• George Washington Carver became one of the USA’s most prominent scientists, inventor, and agriculturalist. While studying sweet potatoes, he developed more than 118 inventions from them, including postage stamp glue, rubber, molasses, vinegar, flour, and a hybrid form of gasoline!

• One cup of baked sweet potato contains about 180 calories, but no cholesterol or saturated fat!
• The sweet potato tuber is high in fiber, minerals, vitamins, and powerful antioxidants. • Sweet potatoes contain more vitamin A and beta-carotene than any other tuberous root
crop. Vitamin A is an essential nutrient that promotes healthy skin, and vision and vitamin B assists in the regulation of the body’s metabolism.
• In addition to Vitamin A and beta-carotene, sweet potatoes are an excellent source of potassium, manganese, calcium, and iron.
• As an autumn and winter fruit, sweet potatoes can be stored from 4 to 6 months in a cool, humid, dark area such as a cellar, garage, or basement with optimal temperature between 55 to 65 degrees.
• Store sweet potatoes separately from other vegetables because they can speed up the ripening process of nearby vegetables.
• Sweet potatoes do not need to be washed before storage. This may encourage bacterial spoilage.• Sweet potatoes can be easily frozen and stored in freezer bags, but must be cooked first.

Ingredients: 4 servings
• 3 sweet potatoes• 2 tbsp. olive oil• 1 tsp. cumin• 1 tsp. cinnamon• 2 tsp. hot sauce• 1 tbsp. minced garlic• ½ tsp. black pepper• 4 eggs• 1 cup low-sodium chicken broth• 1 avocado• ½ cup cheddar cheese• ½ cup fresh cilantro
Directions:
1. Cut up the sweet potatoes into ¾ inch cubes. In a large skillet over medium heat, warm the olive oil and then add the cubes. Add 2 tsp. of the chicken broth and the hot sauce and then cook for about 15 minutes. Stir occasionally. Add the remaining spices and toss.
2. Pour the remaining chicken broth into the pan so there’s at least ½ inch at the bottom.
3. Make 4 wells and crack open the eggs into these holes.
4. Sprinkle the cheese over the top and cover for around 15 minutes so the steam poaches the eggs.
5. Poke the white of the egg to ensure it’s cooked.6. Consider serving it alongside ¼ of an avocado
and a little sprinkle of fresh cilantro.

Ingredients: 4 servings
• 4 medium-sized sweet potatoes• 2 tbsp. + 2 tsp. olive oil• ¾ medium red onion (sliced)• 2 dashes of salt• 2 minced garlic cloves• 2 tsp. cumin powder• ½ cup low-sodium, canned black beans (drained and
rinsed)• 6 oz. cooked, boneless chicken (cut into chunks)• 3 jalapeño peppers (seeded and sliced)• ⅓ cup shredded mozzarella cheese
Directions: Preheat oven to 400 degrees F.
1. Wash and pat dry the sweet potatoes. Then lightly coat each by evenly distributing 2 tsp. of the olive oil between them. Wrap each in aluminum foil like a baked potato. Bake for 45 minutes.
2. Remove the potatoes from the oven and let them cool, enough to handle. In the meantime, heat the remaining olive oil in a medium-sized skillet over medium-high heat. Add ¾ of the sliced onions (set the remaining aside) and begin cooking. After one minute, add 2-3 dashes of salt and the garlic cloves. Turn heat to medium and cook until the onions are tender. Stir constantly.
3. Add the cooked onions and garlic to a medium-sized bowl. Remove the foil from the potatoes. Gently cut each in half. Carefully scoop the pulp of each half out and place it in the bowl.
4. Once all of the pulp has been added to the bowl, gently toss and incorporate the cooked onions. Add the cumin powder and drained black beans. Mix gently.
5. Spoon the pulp back into the skins. Then top each with chicken, cheese, and slices of jalapeño.
6. Place in the oven for an additional 5 minutes to reheat the pulp and melt the cheese.
7. Serve immediately.

• 1 cup wild rice mix, cooked• 1.5-2 lbs. chicken breast• 2 tbsp. olive oil• Salt and pepper• 1 onion, diced
• 1 garlic clove, minced• 2 medium-sized sweet potatoes, diced• 1 lb. Brussels sprouts or broccoli• 1 cup mushrooms, diced• 2 tbsp. paprika
• 1 cup low-sodium chicken broth• ½ cup dried cranberries• ½ cup sliced almonds
1. In a large pan add one tbsp. olive oil and turn it to medium-high heat. Add the chicken and season with salt and pepper. Monitor the chicken, flipping it occasionally and cook until the internal temperature reaches 165 degrees F. Put the cooked chicken on a plate and set aside.
2. In the same pan used to cook the chicken,W add 1 tbsp. olive oil and add the diced onions, garlic, and sweet potatoes.
3. Once the onions turn translucent, add the Brussels sprouts and mushrooms. Season liberally with the paprika and salt and pepper. Continue to stir so it’s cooked evenly for about 5 minutes.
4. Add half a cup of the chicken broth, cover, and cook for 5 minutes.
5. While the vegetables are cooking, cut the chicken into one inch cubes and preheat the oven for 350 degrees F.
6. Pour the rice into a 9 x 13 baking dish and mix in the chicken, vegetables, dried cranberries and the remaining chicken broth. Sprinkle the top with the sliced almonds and bake for 10 minutes.
Tips:• 1 cup of wild rice takes about 45 minutes to cook so to save
time, make it the night before.• You can caramelize the onions by adding a little sugar while
they’re cooking.• Instead of dried cranberries you can use diced apples for that
bit of sweetness.
Often times, the reason cited for not being able to keep nutrition goals on track and consuming enough high-quality nutritious foods is that it is just too time consuming. Fact of the matter, the time it takes to order take-out, wait on food delivery, or drive though a fast food, also takes time. Drilling down, the true reasons why many don’t adopt the best strategy to meeting their nutrition goals (cooking more meals at home) are that effort is needed preparing a meal and having to clean the dishes. For most, with some planning, the time it takes can be less time than it takes to drive to and sit down for a meal at a restaurant.
One doesn’t need advanced skills to do this. Using the microwave to cook frozen vegetables or heat nutritious frozen dinners and serving them alongside a prepared salad are acceptable tactics to building a healthy eating pattern. A prepared rotisserie chicken, from a grocery store can be used in making 2-3 family dinners, such stir fry, and/or chicken tacos. The key is assessing one’s skill set, time, and planning around it.
The burden of cleaning pots and pans and utensils is a warranted reason. This can get tiresome, especially if it’s done daily. It is totally understandable that when time is tight, after a long day of work, that the thought of a large volume of dishes awaits should a meal be cooked at home, could prime some to just default to a drive through. The key to not being overcome with this burden is plan to prepare food for multiple meals at one time. For example, double the batch and freeze one. When grilling or baking chicken breast called for in a recipe, make double and then plan on using the other half for a meal the next day. When making rice, make a big pot and use what is needed for the meal, portion out the rest and freeze it for later meals. Cut and wash all the fresh produce that is planned during the week on Sunday, that way you only have to wash the cutting board and knives once. The produce will then be ready for salads, or to be thrown in soups, or cooked as a side.
If you are one of the many that desire to cook more meals at home, consider truly assessing the time you spend a week waiting on meal delivery, in lines at take outs, or sitting down for a meal at a restaurant. Add in the time that it also takes to drive to and from home. From this tally, dedicate half that time to preparing more meals at home. Use some of the suggestions above to get started. Also, cooking more meals at home can lead to saving roughly 1,000 calories a week, perhaps less time is needed at the gym to maintain calorie balance.
