Pear
and
Parmesan
Salad
This
is
great
when
pears
are at
their
seasonal best. Try Packhams or
Comice
when
plentiful,
drizzled
with
a
poppy-seed
dressing
and
topped
with shavings of Parmesan.

watercress,

(crackers)

the
dressing
30ml/2 tbsp extra virgin olive oil
15ml/1 tbsp sunflower oil
30ml/2 tbsp cider vinegar or white
wine
vinegar

brown sugar

of dried thyme

Cut the
pears
in
quarters
and
remove the cores. Cut each
pear
quarter
in half lengthways and arrange
them on
four
small
serving
plates.
Peel
the
pears
if
you
wish, though they
look
more
attractive
