LEMON DROP MARTINI
CRISPY SALMON RECIPELEMON & PRAWN RISOTTO RECIPE
INGREDIENTS:• 1 1/2 ounces vodka• 1/2 ounce orange liqueur • 1 teaspoon superfine sugar or to taste• 3/4 ounce freshly-squeezed lemon juice• Ice cubes• Twisted/strip peel of lemon• Fine sugar for glass rim if desired
DRESSING INGREDIENTS• 1 long green chilli, sliced• 2 tbsp sliced shallots• ¼ tsp sesame oil• 1 tbsp fish sauce• 1 tbsp sweet chili sauce• 1 tbsp Apple vinegar• 1 tbsp lime juice• 1 tbsp coconut/peanut, or olive oil
INGREDIENTS• 2 tbsp butter• 1 medium onion, finely chopped• 1 ½ cups Risotto rice• ½ cup white wine• zest of 1 lemon, grated
SALMON INGREDIENTS• 2 bunches broccolini• ½ cup coriander• ¼ melon sliced thin• 2 tbsp olive oil• 4 skin-off salmon fillets• 4 x rice papers• Salt and pepper
• 24 prawns• 1.2 litre fish stock• 50g parmesan cheese• 3 tbsp chopped parsley• salt and pepper
HOW TO:Mix the vodka, orange liqueur, sugar, and lemon juice in a cocktail shaker half-filled with ice; shake well. Pour strained liquor into sugar-rimmed martini cocktail glass and garnish with a twisted peel of lemon.
To create a sugar-rimmed glass, take a lemon wedge and rub the edge of the glass so it is barely moist. Dip the edge of the glass into the superfine sugar.
1. Make the dressing by combining all the ingredients2. Blanch or steam the broccolini until just done3. Prepare the melon ribbons then toss with the coriander4. Season the salmon with salt & pepper, lightly drizzle with oil5. Grill the salmon, flesh side down for 2-3 minutes until golden/
slightly crispy, then do the same for the skin side6. Soak the rice paper in hot water until softened, wrap the cooked
salmon fillets, place back into the pan for another 3min on each side7. To serve, place broccolini layered with the melon and coriander and
then top with the salmon. Spoon over the dressing and serve
1. In a large saucepan melt butter, add onion and cook at medium heat for 5 min or until they are translucent.
2. Add the risotto rice and lightly toast in the saucepan, stirring constantly for 2 min.
3. Pour in the white wine and zest of one lemon; cook at medium heat until wine is completely absorbed.
4. Add the first ladle of fish stock and allow to simmer, stirring occasionally until the stock is almost completely absorbed.
5. Repeat until all the stock has been added, for approx 20-25 min.6. Once you have only 250ml of fish stock left add the prawns.7. If the risotto is too thick then add a little more stock.8. Season to taste with salt and pepper, stir in the parmesan cheese and
parsley, then serve and enjoy.
