CONVERGE3YO gelding (Frankel x Conversely)
Trainers: Gai Waterhouse & Adrian Bott
Came of age in the Brisbane winter with a dominant Group 1 win over 1600m and looks versatile enough to add to his tally. Stable has a way of keeping some speed in the legs early for a tilt at the Golden Rose before stepping up in distance for the three year olds deeper into the Spring. Tough and has learned a new way of racing with strong finishes aplenty.
ANAMOE3YO colt (Street Boss x Anamato)
Trainer: James Cummings
Was rated one of the best of his age in the Autumn, and put away straight after his first Group 1 win. This Godolphin colt attacks the line in his races. After placings in the Blue Diamond and Longines Golden Slipper, with a UNSW Todman Stakes win in between, he roared away with the Inglis Sires at Royal Randwick. The Golden Rose a big target and perhaps a TAB Everest.
REMARQUE3YO colt (Snitzel x Response)
Trainers: Michael & Wayne & John Hawkes
Full of untapped potential, connections have not ruled out contesting not only the 3YO big ones but perhaps a TAB Everest as well. His racing style has seen a couple of unlucky runs including first up into this Spring campaign. Full brother to Longines Golden Slipper winner Estijaab, such a well-bred colt will be given every chance to win a Group 1.

STAY INSIDE3YO colt (Extreme Choice x Nothin’ Leica Storm)
Trainers: Richard & Michael Freedman
It is always a storyline how the Longines Golden Slipper winner returns but given he only had four goes as a juvenile and ended in style. Jury was out after his first up run in the XXXX San Domenico but in another quality stable which knows how to win the biggest races. Connections remain focussed on a TAB Everest slot.
4YOs AMARELINHA4YO mare (Savabeel x Hopscotch)
Trainer: Jamie Richards
Whilst she didn’t win the The Star Australian Oaks in Sydney this now 4YO ran some excellent races in the Autumn against the best opposition of her age. Everything she has done in New Zealand said she was a horse of class and another horse the stable rates very highly. Even if staying isn’t her main aim, races such as the TAB Epsom and XXXX Golden Eagle are within her scope.
AYRTON4YO gelding (Iffraaj x Odessa)
Trainers: Mick Price & Michael Kent Jnr
After being much spruiked as an end of season one to watch, the Price/Kent team took the then 3YO to Brisbane chasing an entry in the Stradbroke. While he didn’t make it there, he showed a mile was of no issue and being set him for the XXXX Golden Eagle. Very good win first up this campaign and early favourite for the $7.5 million Rosehill Gardens feature.

FORBIDDEN LOVE4YO mare (All Too Hard x Juliet’s Princess)
Trainers: Richard & Michael Freedman
You don’t see many Group 1 winners as a three year old look more striking than the daughter of All Too Hard was in the Cellarbrations Surround Stakes, and the breed are known to get better with age. Her Star Doncaster Mile run was a big effort so another leading chance for a race such as the XXXX Golden Eagle – and a leading chance for an entry into The Invitation.
ROTHFIRE4YO gelding (Rothesay x Huss On Fire)
Trainer: Robert Heathcote
This Queensland star who has already showed his blistering speed with success in Sydney, he is back on the track for a shot at the TAB Everest. Ran as favourite in a strong Golden Rose last year before being injured. Will no doubt target one of the pathway sprint races at Royal Randwick to show his TAB Everest credentials.
WILD RULER4YO entire (Snitzel x Gypsy Robin)
Trainers: Peter & Paul Snowden
A developing high-class sprinter, the son of Snitzel loves two things – fast pace and fast going. He can ride a hot tempo and let down like all good horses do. A win in any of the Sydney Spring sprinting features might make him a contender for a slot holder and a stable who knows how to win a TAB Everest or two.

Another very promising kiwi mare in this powerful stable, she was only a head away in her first attempt overseas. Most of her career has been over sprint journeys but she is bred to want at the very least a mile. Will they test her now that she has had experience at the carnival?
5YOs+ CLASSIQUE LEGEND6YO gelding (Not A Single Doubt x Pinocchio)
Trainer: Les Bridge
The defending TAB Everest champ is back in town and in the hands of a master trainer after the disappointment of the Hong Kong sojourn. The popular grey flash would only need to show he’s back in full attack mode like last Spring when he was dominant in the TAB Everest – the race basically over just after coming down the Royal Randwick rise. At five, could be his best year yet.
LOST AND RUNNING5YO gelding (Per Incanto x Dreamlife)
Trainer: John O’Shea
A hugely talented horse who came through the end of the Sydney Autumn in the skilful and careful hands of one of Sydney’s very best trainers. He rose from humble beginnings and the benchmark system to be a stakes horse in May, before quickly being snapped up for The TAB Everest. Only been beaten once so far.

The Autumn was his coming of age as he made significant progress into Group 1 company. Following his William Reid victory, he should have finished closer in the Heineken TJ Smith and then couldn’t get into the finish of the Schweppes All Aged Stakes. Powerful win first up and is already a confirmed TAB Everest runner so renowned stable has timing for the ultimate target.
NATURE STRIP7YO gelding (Nicconi x Strikeline)
Trainer: Chris Waller
The leading sprinter in the world, Nature Strip is already locked in as the Waller Racing runner in the TAB Everest. Has a very strong record over the Royal Randwick 1200m and The Heineken TJ Smith win was perhaps his best yet on the track. Champion jockey James McDonald won’t be off his back for the entire Spring.
VERRY ELLEEGANT6YO mare (Zed x Opulence)
Trainer: Chris Waller
An already eight-time Group 1 winner, Chris Waller seems to be continually improving this mare season in and out. She continued her brilliant career in the Autumn winning a TAB Chipping Norton and Ranvet Stakes and then only just touched off in a superb Longines Queen Elizabeth Stakes by the world’s highest rated horse in Addeybb. A force in every race she contests.

COCKTAILS
INGREDIENTS
30ml Gordons Pink Gin
45ml Chandon NV Brut
90ml Lemonade
10ml squeeze of lemon juice
Ice
Handful of cut strawberries for garnish
METHOD
Fill into the wine glass, the Gordons Pink Gin, Chandon NV, lemonade and lemon juice.
Stir and top with ice (to the 3/4 mark on the glass).
Garnish with strawberries.
GORDONS PINK GIN
INGREDIENTS
30ml Ketel One Vodka
15ml Mr Black
30ml Little Dippa Cold Press Coffee
45ml sugar syrup
Ice cubes
Coffee beans to garnish
METHOD
Pour all ingredients into a shaker.
Shake untill mixed well.
Strain liquid out of shaker into a chilled martini glass.
Garnish with coffee beans.

INGREDIENTS
20ml Tanqueray Gin
10ml Blue Curacao
30ml Spring Valley Apple Juice
Schweppes Lemonade
Lime wedge
METHOD
Pour Gin, Blue Curacao and apple juice into a stemless flute or highball with ice.
Top with Schweppes Lemonade and stir.
Add more ice if needed.
Garnish with lime wedge.
LEMONADE SCONESMAKES APPROX. 18 LARGE SCONES
INGREDIENTS
1½kg self raising flour
270g caster sugar
750ml thick cream
750ml lemonade
100ml milk
1 egg yolk
METHOD
1. Pre-heat oven at 160 degrees.
2. Place the flour, sugar and ½ tsp salt in a large bowl. Add the cream and lemonade and mix to form soft dough.
3. Turn out onto a lightly floured workbench and knead lightly until combined.
4. Press the dough with your hands to a thickness of about 2cm.
5. Use a 6cm round cutter to cut out 8 scones, place on baking tray, mix the milk and egg yolk together until combined.
6. Then brush the tops with some milk mixture.
7. Bake for 10-15 minutes until lightly browned.
8. Serve warm with your favourite jam.

TUNA FRITTERSSERVES 4
INGREDIENTS
1 x 425g tin of tuna (drain well)
3 eggs, beaten
½ cup grated cheese
1-2 tbsp herbs (parsley, dill, thyme all work well but whatever you have available)
¼ cup panko breadcrumbs + ¼ cup for coating
Salt and pepper, to taste
½ cup onions, diced or grated
2 cloves of garlic, crushed
3 tbsp mayonnaise
1 lemon, zest and juice
METHOD
1. Add all of the ingredients into a bowl and mix to combine.
2. Use a ¼ cup to measure the mixture. Shape into patties.
3. Add the ¼ cup of panko to a shallow dish and lightly coat both sides with the panko. Add more panko if needed.
4. In a large skillet over medium high heat. Add 3 tbsp of oil. Add more if needed. Add about 4-5 patties to the skillet. With the spatula fatten cakes about ⅛ inch thick. Cook on both about 3-4 minutes or until golden brown flipping carefully. Drain on paper towel. Repeat with the second batch.

*This is a basic recipe that can be adjusted to whatever you have in your pantry, fridge or freezer. Spice it up by adding chilli or your favourite spices, or add vegetables to hide them from your kids, the possibilities are only limited by your imagination or what you have on hand.

PIN THE TAILA must for any Fun Off Track celebration, it’s a classic with a twist! Print off the picture of 2020 Tab Everest winner Classique Legend and tape it to a wall. Cut out the horses’ tails and add some tac or double-sided tape to the backs. Get yourself a blindfold (a scarf or mask will suffice), spin around three times and see how close you can get to Classique Legend’s tail. Remember – no peeking!

ACCESSORISEDisco ball clutches, extravagant jeweled earrings, diamanté shoes, printed socks, eccentric ties, pocket squares and headwear features. Find a statement piece you love and show it off proudly.
BALANCEIf the outfit is more feminine and floral then either choose headwear that is similar in design or go something more simple. If the outfit has a strong statement feature, then let the feature be the star of the show and opt for a smaller headpiece.

SKINSkin preparation and hydration is the key to looking fresh. Blurring primers will give a much smoother, pore free finish to the centre areas of the face, perfect for capturing those selfie moments.
EYESA little colour, can contrast the eyes and bring more of a spring element into your beauty look. A soft peach or pink are shades perfect for the inner, upper and mobile eyelid, contrast with an intense gold or pale blue.
LIPSWhen pressed in by your fingertip, lipstick will act as a stain. Finish with liner around lip edge for definition and a touch of gloss in centre of mouth for more pout. Lip oils are a great way to keep lips looking glossy.
CHEEKSApply your blush above the cheekbones, on the front apple of the cheeks for gorgeous spring glow. Gel or cream blush is high in pigment, but super easy to buff and blend out for a fresh effect.
HAIRUse a volume/texturizing spray or powder to give hair extra width and body when a simple headpiece is worn. Whereas a smoothing lotion is perfect to keep hair straight and sleek, worn tucked behind the ears for a larger or more statement millinery is worn.
