exclusively on vibrant alternative white
wines. Made of grapes grown primarilyin the Edna Valley, each wine presents lively
acidity, minerality and pure varietal character.
Created by third-generation Edna Valley
grape-growing pioneers John Niven and
Michael Blaney, along with veteran wine-
maker Christian Roguenant, their second
vintage is set to be released next month. The
lineup will include Albario, Viognier, Pinot
Blanc, Pinot Gris, Sauvignon Blanc, and a
blend called Ecclestone, all bottled under
screwcap.
John and Michaels grandparents, Jack and
Catharine Niven, were among the first to
plant wine grapes in the Edna Valley more
than 30 years ago. The family recognized the
Edna Valley as having one of the longest
growing seasons in California, culminating in
fully ripe grapes with good acid structure
each vintage. As they looked to the future, it
was clear that the next, and then the third,
generation would develop and grow the
family business into the new millennium. The
Niven family currently owns and operates
Baileyana Winery, Paragon Vineyard
Company, Orcutt Road Cellars, and they are
partners with Diageo in Edna Valley Vine-
yards. John and Michael were given carte
blanche to look at the portfolio with an eye
for what could be missing. Their brain-
storming brought about the cutting-edge
tangent concept.

making it the biggest Albario vineyard outside of Spain and
Portugal.
Made to be enjoyed with food, tangent occupies a rapidly growing
niche of crisp, refreshing white wines. It is the first winery to dedicate
its entire production to this category, and Roguenant is well-suited to
making esoteric wines. I learned to love wines made of grapes picked
a bit earlier, with higher acids and lower sugar levels, while making
Champagne in France and sparkling wines in California, he says.
The varietally correct flavors in the grapes we harvest here remind me
of those experiences, and lend themselves perfectly to this style. No
oak contact is necessary, as my aim is to preserve the freshness of each

and clean, just like the wines. It is not only easy to navigate, but is a
virtual encyclopedia of alternative white varietals. They have taken an
educational stance and afford consumers not only tangent-specific
information, but insights into the origin of each varietal and how each
evolved from old-world winemaking into the current realm.
The tangent tasting room is housed in the historic Independence
Schoolhouse, a one-room school built by local farm workers in 1909.
Fully restored by the Nivens in 1998, it stands in the heart of the Edna
Valley. Verandas expand on all sides, overlooking carefully manicured
vineyards. Plan for a bit of extra time to linger, as it is a fabulous place
to stop and relax. Inside, the tangent wines are poured along side its
sister brand Baileyana. The room is filled with self-indulgent gourmet
foods, unique and interesting giftware, and carefully chosen clothing
items. It all adds up to a wonderful tasting experience.
As the world of alternative whites is limitless, John and Michaels
brainstorming never seems to stop. In 2007 they are planting more
varietals including Riesling, Grenache Blanc and even Grner Veltliner.
This is a winery to watch as they are on the cutting edge of bringing
these lesser known whites to the forefront of the California wine
industry.

Its not an unusual story.
After a lifetime of hard work and raising a
family, John Salisbury decided to try his
hand at the wine business.
Now erase the romantic image of a
gentleman farmer who decided to retire to
the Wine Country and purchased a few acres
of vineyards as something of a hobby.
John Salisbury is a sixth-generation Cali-
fornia farmer who has no plans to retire and
has no idea how to be a gentleman farmer.
His dream is to be working the vineyards
well into his 90s, cane in one hand, pruning
shears in the other, while his grandchildren
the eighth generation of farmers run theoperation.
Not a bad legacy.
Thats my goal in life, Salisbury, who will
turn 65 this year, said recently, standing in
the century-old schoolhouse he had reno-
vated to serve as the tasting room for Salis-
bury Vineyards near Avila Beach. Its a local
landmark just off Highway 101 between San
Luis Obispo and Pismo Beach.
Salisbury Vineyards is, indeed, a family
operation. John Salisburys daughter, Jennifer
Salisbury Rucks, and her husband, Kevin run
most of the business operations. Johns wife,
Maridel, coordinates the fine art gallery that is
part of the tasting room. Even his son,
artist who lives in New Orleans, provides
for the stunning labels.
My job is farming and keeping an eye

makers, including Harold Osborne, w

Although only a few miles from the ocean, the Avila Valley is
colder and gets more sun than most people think, said Salisbury.
Beach residents, only a couple of miles south, know they can get a
reprieve from the fog by hopping in their cars and heading to Avila.
The Chumash called it the Hole in the Sky, said Salisbury.
Salisbury Vineyards currently produces between 4,500 and 5,000
cases annually, but John Salisbury said he expects to soon push that
number to 8,000.
While Salisbury defers to his daughter as the brains behind the
business, she quickly asserts that her father is the visionary. He
comes up with the clever ideas, she said. Hes really the entrepre-
neurial spirit.
That type of forward thinking is exemplified by Salisburys idea to
plant three acres of Albario, a white varietal immensely popular in
Spain which remains relatively unknown among American wine
drinkers. Salisbury and a number of others expect that to change,
with Albarios complex, but very accessible, structure appealing to
the legions of Chardonnay fans. The varietal is now being grown
primarily in southern Oregon, the Santa Ynez Valley and NapasCarneros region. In San Luis Obispo County, 50 acres of Albario are
planted in the Edna Valley. According to a review of one Albario, it
has some of the citrusy, grassy flavors of Sauvignon Blanc, flashes of
the richer peach and pineapple flavors of Viognier, and the delicate,
minerally character of Riesling.
Already a popular stop for wine tasting, with trolley tours of the
vineyards and the fine art gallery, Salisbury is gearing up for the
spring and summer season with a number of events.
It will be among several San Luis Obispo-area wineries partici-
pating May 3-6 in the annual Roll Out the Barrels event sponsored
by the SLO Vintners Association. On Saturday and Sunday there willbe live music, gourmet food and olive oil tastings and barrel samples.
The following week, on May 12, the Salisbury Schoolhouse
Tasting Room will be the site of a fund raiser for the Port San Luis
Lighthouse, located near Avila Beach. The Raise the Roof event is
scheduled for 6 p.m. and will include wine, appetizers, and silent
and live auctions. Tickets are $65 per person.
Then, on May 20, Salisbury will host the first of its 2007 School-
house Rock series of Sunday afternoon concerts on the patio,
featuring a variety of musical styles.
After a lifetime of farming, John Salisbury knows that working the
land is a precarious occupation subject to boom-and-bust cycles.
Youre living on the edge, depending on the crop, he said.
But as a sixth-generation farmer, Salisbury also knows a good
thing when he sees it.
Surveying his surroundings, he sums up, great location, great
wine. In any schoolhouse, that equals success.

Robles, you are embraced on all sides
by massive oak trees and rolling vine-
yards until you hit the bend in the road that
signals the presence of olive country. There,

Wine Country is one of the Americas most

Deciding whether to make the Hunt
Cellars tasting room your first or last
stop on a day of wine tasting is a tough
choice.On the one hand, the multiple award-
winning winery is a cant-miss spot in the
Paso Robles Wine Country and you wouldnt
want to run out of time to get there. On the
other, youll likely find it hard to leave once
youve arrived.
Step into the remodeled farmhouse and
youll see a gleaming, white baby grand
piano, a testament to the musical background
of the winerys owner and winemaker, David
Hunt.
The next thing youll notice is the massive,
curving bar made of red oak with a red
mahogany finish. Hunt and a friend hand-
crafted the bar, echoing the hands-on style he
brings to crafting the muscular red wines that
have earned raves.
Opened in 1999, the structure sits
perched amid a little more than three acres of
shady eucalyptus and oak trees and a
sprawling, lush lawn ideal for picnicking.
Wrapped around the building is a 1,200-
square-foot veranda with a number of tables
overlooking the grounds.
Its the kind of place where a family might
plunk down a couple of lawn chairs and play
ball with their dog.In fact, said Tammy Schaefer, thats just
what happened a few weeks ago.
Schaefer, the tasting room manager and
director of Hunt Cellars wine club, exudes a
personality as warm as the Tuscan-style inte-
rior walls. Visitors are welcomed as old
friends, not tourists just passing through.
Lingering is encouraged.
Tasting lists include six samples for $5.
Reserve vintages are $10. They always end
with one of Hunt Cellars Ports.
Hunt Cellars is gaining considerable notice
for its Ports the April issue of Wine Enthu-
siast magazine awarded 93 points to its Oldie

W
hen Josh Beckett got a degree in
English from the University of San
Diego, wine was the farthest thing
from his mind. True, that in his youth he
worked for the likes of Robert Nadeau
(Nadeau Cellars) and Toby Shumrich (Tobin
James Cellars), winemakers who have earned
fame and credit for bringing Paso Robles to
wine greatness. True, he was born to wine-
making parents and grew up in the city of
Paso Robles. But perhaps because of these
things, Josh walked away from this beautiful
Central Coast town for the beach climes of
San Diego.I had no desire to get involved, says
Beckett. I went to manage a surf shop and
was going to be a school teacher. I just never
saw the opportunity that I had. Owned by
Joshs parents, that opportunity was Peachy
Canyon winery and its now famous
Zinfandel wines among other varietals. Josh
had grown up in the wine business, working
harvests, crushing grapes and learning from
the very best winemakers how wine worked
and how it was made.
Things change. Josh Beckett, at 33 years
old, is now the winemaker at Peachy Canyon.
Overseeing production of some 84,000 cases
of wine a year, he did some extension classes
from UC Davis to get a little honing on what
is otherwise a working mans education in
wine. I learned this business hands-on from
the bottom up, he says.
Josh has overseen the recent changes at
Peachy Canyon and put the family winery
back on the map again after a few years of
slow down. We hit a growth spurt and the
wines got too clean and too boring so weve
taken it back and gotten back to our roots.
He oversees every step of the process nowand is involved at all levels working with his
assistant, Linda Baher, a recent graduate of
Fresno State Universitys oenology program.
Its real hands on winemaking now and we
want to let the fruit shine through.
The focus on quality has paid off with crit-
ical acclaim and a loyal following. Josh has
taken the reigns and made family a Peachy
Canyon priority.

Paso Robles Wine Festival Celebrates 25th Anniversar

The annual Paso Robles Wine Festival will celebrate its 25th
Anniversary on Saturday, May 19. In recognition of this 25-year-old
wine tasting celebration, the Paso Robles Wine Country Alliance is
opening the doors one hour early to those who purchase a Silver Pass.
The new limited Silver Pass admission is $75 and allows wine enthu-siasts the opportunity to experience one of the largest outdoor wine
tasting festivals in California, a full hour before general admission
($50). Silver Pass tickets are available for advance purchase only and

We see this as an added value for fans of Paso Robles Wine
Country to sample an array of their favorite brands before the whole

Paella Cook-off. The areas best chefs compete with unique paella recipes,
paired with wine from a dozen Paso Robles Pinot Noir producers. The Cook-
Off and Live Auction benefit the Paso Robles Youth Arts Foundation (PRYAF).
The 4th Annual Pinot and Paella Cook-off will feature delights of the
Spanish beat, paella, live music and dance. Sixteen chefs compete in a friendly
competition in several categories judged by local celebrities and attendees in
the coveted Peoples Choice Award. Thirteen Pinot Noir producers from Paso
Robles complement the paella competition. This years live auction will feature
large format collectors bottles filled with a one-of-a-kind Paso Pinot blend. In
addition, this years festival will include live Latin dance music and a salsadance exposition will delight attendees and get them moving on the dance
floor!
Last years event raised $28,000 for PRYAF, and this year should once again
sell out. The Paso Robles Youth Arts Foundation makes training in the arts
available to all children in the community through drama, music, dance and
other creative venues. The children of our communities are our most impor-
tant assets and need to be supported, says the founder of PRYAF, Donna Berg.

Chef Tom Fundaro from Villa Creek in Paso Robles
INGREDIENTS:
1/2 lb shrimp, peeled and deveined
1/2 lb monkfish or halibut cut, into 1 oz. pieces
1 lb small squid bodies, cleaned and cut into rings and
tentacles
15 baby artichokes, cleaned and cut in half
4 Tbs squid ink (available through Central Coast
Seafoods in Atascadero)
8 cloves garlic, sliced
2 Tbs parsley, minced
8 cups fish broth or clam juice
1/4 tsp saffron
Lemon juice
1/4 cup olive oil, preferably virgin
1 onion, diced
2 red bell peppers, diced
2 tomatoes, diced
1 Tbs. smoked paprika
3 cups Spanish rice (Bomba)
METHOD:
In a food processor add 4 cloves of garlic, parsley and
lemon juice (4 tablespoons). Puree ingredients, thenadd squid ink and puree again. You should end up witha black, loose pesto.Salt and pepper all seafood.
Heat paella pan over medium-high heat.Heat olive oil. Sear all seafood to medium rare andreserve on a plate.Add artichokes, onions and remaining garlic. Saut
until onions are soft. Add tomatoes, peppers, smokedpaprika and saffron. Saut until the tomatoes no longeseem wet.In a cross pattern add the rice to the pan, Stirringcontinually cook the rice and coat it with the vegetable
mixture. Add stock, reserving 2 cups for later. Stir therice and broth together and reduce heat to medium lowto low. Stir in squid ink pesto and let simmer for 10minutes. The stock will start to evaporate, when smallbubbles start to appear in the rice add 1 cup of stock
and salt and pepper to taste. Let cook for another 10minutes.Add the seafood and any residual liquid from seafood.Let simmer until there is no more liquid visible and
seafood is cooked through. (Do not overcook seafood.)Remove from heat and let stand for 5 minutes.

What is it about Rhne style wines that attracts? What are some
descriptors that bring to mind Rhne style wines? Here are a fewthat may work: exciting, fun, electric, friendly, summertime, picnic,
barbeque. And thats not to forget the rich, thick, luscious, dark
Syrahs that can be plenty serious.
A great place to taste the multitude of Rhne style wines is at the
worlds largest annual celebration of domestic and international
Rhne style wines, the Hospice du Rhne (HdR). The HdR will take
place at the California Mid-State Fairgrounds in Paso Robles, May
3-5. Red, white, and pink wines will gush as vintners from around
the globe pour. The theme for the 15th annual HdR is appropri-
ately, Annie get your glass.
There will be ample opportunity to get an introduction to, or
enhance your continuing education about Rhne style wines.
Several seminars will focus on various wines, vintners, or regions of
Rhne style wines. Winegrowers will be present at seminars to pour
and discourse on their wines.
There will be ample opportunity to pair Rhne wines with fine
cuisine. On Friday the Rhne Fte Feast luncheon takes place. At
the Friday evening Dine Around chefs from top restaurants in the
area will prepare special dinners featuring gourmet cuisine
guests. The following day the Saturday Luncheon is held, and w
be followed by the One-of-a Kind Barrel Auction. The Farewell G
dinner on Saturday evening usually features grilled fare, and is occasion to taste a wide variety of Rhne style wines by samplin
sharing and exchanging bottles with other guests.
The HdR begins Thursday with the annual bowling tournam
for fans and vintners. Friday and Saturday mornings continen
breakfast is waiting for guests at the fairgrounds. Of course one
the best things about the HdR is visiting with old friends, a
making new ones.

San Luis Obispo Vintners Association announced the expansion of
their popular Roll Out The Barrels weekend event.
The new addition this year will be, Barrels in the Plaza, Thursday
evening in downtown SLOs mission plaza from 5:30 to 7:30 p.m. This
portion of the weekend will focus primarily on locally grown, locally
made as SLO Vintners partner up with local food producers and
vendors to celebrate a complete culinary experience right from the
terroir of SLO. We are very excited about the locally grown, locally
made evening, which gives us a chance to celebrate not only the wine
but an entire culinary experience of SLO, said Becky Gray, San Luis
Obispo Vintners Executive Director.
The weekend itinerary includes four days of celebration beginning
Thursday, May 3 with Barrels In The Plaza (5:30-7:30 p.m.); on Friday,
May 4 its Winemaker Dinners; on Saturday and Sunday, May 5 and 6

Hospitality has long been a priority at Firestone Vineyard. The Fire-

The Firestone Vineyard tasting room in Santa Ynez Valley offers one
of the Central Coasts most comfortable and comprehensive visitor
experiences, with regular winery tours and breathtaking picnic facili-
ties. Here, visitors taste the award-winning Estate and Reserve
bottlings while learning about Santa Barbara County winemaking.
Archive photos and other artifacts chart the Firestone familys
pioneering heritage, from turn-of-the-century tire innovation to the
establishment of Santa Barbara Countys first estate winery in 1972. A
remodel expanded the tasting area, which now features an island bar
and picture windows that overlook the Santa Ynez Valley.
Firestone Vineyard offers tours that take the visitor through the
history of the winery and through the production of fine wine fro
vine to glass. Tours begin at the demonstration cork tree and contin
out into the estate vineyards. The winemaking process is then sho
cased from the crush pad to the fermentation cellar to the barrel cellTours typically last from 20 to 30 minutes, depending on the volum
of guests and depth of questions.
Firestone Vineyard is located at the southern end of the Fox
Canyon Wine Trail, 5000 Zaca Station Road, just a few miles east
Highway 101 in Santa Barbara County. The Firestone Vineyard tast
room is open daily from 10 a.m. to 5 p.m. Tours are offered at
quarter past the hour from 11:15 a.m. to 3:15 p.m. The tasting fee
$7 per person, which includes a keepsake crystal logo glass and
complimentary tasting at neighboring Curtis Winery.
The new Paso Robles winery is at the corner of Highway 46 E
and Airport Road in Paso Robles. Managed by third-generation vintn
Andrew Firestone, the winery features a tasting room, barrel cel
demonstration vineyard, enclosed patio and terraced gardens w
picnic accommodations. The tasting room is open daily from 10 a.
to 5 p.m., with the last tasting served at 4:45 p.m. The tasting fee
