W
est of Paso Robles, about 16 miles
from the Pacific Ocean, at thesouthern end of the Santa Lucia
Mountains, and about 1,700 feet above sea
level, is a majestic piece of land that is home
to the oldest and most esteemed vineyard on
the Central Coast. Welcome to HMR Estate
Vineyard, the flagship planting of Adelaida
Cellars. And when winemakers around the
world say that great wine starts in the vine-
yard, this is why.
The history of HMR dates back to 1964
when viticultural pioneer Dr. Stanley
Hoffman first planted 32 acres of Pinot Noirgrapes on this vast 1,300-acre property.
Planted on steep rolling ridges in rocky
calcareous soil that covers a deep layer of
underlying limestone, the growing condi-
tions are almost identical to that of Pinot
Noirs home, Burgundy. The vines that
Hoffman planted back then have produced
exception fruit over the past 40 years, thanks
to the terroir, as well as a persistent marine
layer, and cool ocean breezes that drop
temperatures as much as 50 degrees
overnight.
In 1973, Hoffman hired famed wine-
maker Andre Tchelistcheff to be hisconsulting winemaker, and Pinot Noir made
from Hoffman Mountain Ranch grapes
began to receive acclaim around the world.
In fact, in a 1979 international wine compe-
tition in France, the Hoffman Mountain
Ranch Pinot won over highly rated red
Burgundies, and Paso Robles was put on the
world wine map.
In 1994, a 400-acre portion of the orig-
inal vineyard was purchased by the Van
Steenwyk family, owners of nearby Adelaida
Cellars. While the property had continuedto grow and sell fruit over the previous four
decades, it had suffered from lack of care,
and required substantial work, investment
and patience to return the vineyard to its
former glory. But the familys vision and the
talent of their viticulturists paid off, and
today, the HMR Vineyard designation on
Adelaida wines is as revered as ever.
Winemaker at Adelaida Cellars today is
Terry Culton, an industry veteran who was
first introduced to HMR fruit in 1991 w
he was working at Wild Horse Winery
Templeton. It was his first job at the tim

pesticides since 2001.

The fruit from the three vine-
yards is exceptional for several
reasons. The rocky calcareous
soils of these historic vineyards
controls their vigor, Culton
explains. This results in added
vine stress and lower yields, but
produces more intensely flavored
fruit. The age of the vines is
also crucial. Old vines give you
a complexity that you dont get
with younger vines, Culton
says, its almost a different
animal, more complex on the
palate.
Even the way Culton harvests
the fruit at Adelaida is unique.
Rather than using mechanized
equipment and day laborers,Adelaida has it own permanent
workforce in the vineyard. They
pick berries whole, with little
damage, and almost no stems
and leaves. Our guys are paid
year round they work that
vineyard from pruning all the
way through harvest, Culton
explains. They take pride in it
because its their vineyard.
The wines Culton crafts from
these treasured vineyards speak
for themselves. They are ripe,
intense and beautifully struc-
tured. From the history of the
vineyards, to the gentle harvest
practices, to the use of native
yeasts and French oak in the
winery, Culton has taken every
step to ensure that the special
fruit grown in his vineyards
translates perfectly into each

S
ashi Moorman has pursued culinary
passions nearly all his adult life. Grad-
uating from Vassar College in NewYork, Moorman worked in the bustling world
of New York City restaurants, cooking at both
Oceana and Etats-Unis. I got more interested
in wine, though, and met Adam Tolmach.
Tolmachs fame was already well established
at Ojai Vineyards and from 1996 to 2001,
Moorman worked with him honing his own
winemaking style.
But it was Stolpman Vineyards where
Moorman planted his own roots and became
head winemaker. Working with his assistantKyle Knapp and vineyard manager Ruben
Solarzano, Moorman has produced some of
the finest Rhne varietals on the Central
Coast and even some small lots of Sangiovese.
Tom and Marilyn Stolpmans eponymous
vineyards have served as the canvas for
Moormans works of art. I spend a lot of time
there in the vineyards, says Moorman,
echoing many of his peers these days. I know
that message gets kind of diluted recently, but
its true. Moorman is convinced that its the
quality of Stolpmans grapes and vineyards
that create the quality wines and so its harvest
time that really counts for him.
According to Moorman, smaller quantityis better, too. We still are a small producer,
he says. Between 6,000 and 7,000 cases a
year. About 2,000 of those cases are
Stolpmans award-winning estate Syrah. Still,
change is the name of the game in order to
keep the Stoplman name at the top of the
market. By next year, all of our vineyards will
be organic, Moorman says. Weve definitely
made a commitment to sustainable practices
and weve opened up new vineyards on [the
property] for just that reason.The vineyards arent the only place where
change rules, either. The venerable Stolpman
tasting room in the heart of the small tourist
city of Solvang will soon be moving to Los
Olivos, closer to the vineyards themselves
and providing an opportunity for Central
Coast wine tourists, who tend to flock to Los
Olivos fairly regularly, to experience the
Stolpman wines.
While Moorman maintains that he still
loves harvest best, he also enjoys the creat
spirit inherent in his work. There is a g

Halter Ranch is first and foremost a
carefully farmed vineyard on a ranch
with a rich history.
VINEYARD
The estate Halter Ranch Vineyard was
initiated in 1996 and has since been
expanded to its present 250 acres under the
direction of Winegrower Mitch Wyss. Hisdedication to sustainable farming practices is
evident; organic methods of fertilization,
weed removal, pest control and mildew
protection are used whenever possible.
Sustainable farming not only respects and
protects the land and the people who work
it, says Wyss, it also results in wines that
more eloquently express their provenance.
Wyss applied the same sort of dedication
and passion when planting the estate vine-
yard. There are 19 grape varieties planted in
48 separate vineyard blocks delineatedprimarily based on soil types, which range
from calcareous clay to clay loam with shale
deposits. Sixty percent are Bordeaux varieties
and 40% Rhne varieties, plus a bit of
Zinfandel. Selected for their individual char-
acteristics, such as small clusters and berry
sizes, Wyss carefully chose multiple clones
(genetic variations) and rootstocks for each
variety. Additionally, the vines occupy the
steepest, most south-facing slopes on the
property, which reach an elevation of 1800
feet and provide excellent water drainage and
sun exposure. These slopes are also rich in
limestone, a feature of many of the worlds
finest vineyards. When these conditions come
together (well-drained soils, low-yielding
clones and high-density plantings), small
crops of intensely flavored fruit are the result;
the prerequisite for making superb wines.WINES
The wide range of varieties grown in their
estate vineyard affords Winemaker Bill
Sheffer the opportunity to produce not only
wines of a single variety like Syrah and
Cabernet Sauvignon, but also creative blends
like his Ranch Red.
Sheffers wines are rich and genuine, each
expressing varietal character as well as the
unique attributes of the estate vineyard. My
aim with these wines is to make them drink-
able upon release, he says, but also to
balance them with powerful depth and
concentration, allowing them to age well in
the bottle.
Current releases include 2004 Syrah, 2004
Cabernet Sauvignon, 2007 Rhne style Ros,
and a 2005 GSM a Rhne style blend of
Grenache, Syrah and Mourvedre among
others. The 2004 Estate Reserve, Ancestor,
Sheffers choice of the optimum blend from
the best red wine lots of the vintage, will be

You have to wonder what Old Timers would say when they
saw the word The Way Station emblazoned on the outside of
this handsome restored building in the middle of Cayucos just
across from the ocean. And then went inside and were
confronted by one of best wine (and wines by the glass) lists
around. The food is also a long way above anything you might
have found in this charming seaside town at the turn-of-the-
century. These are all some of the reasons that if you mention to
people along the coast and inland (at least those who know
enough to appreciate and search out a fine bottle of wine and
first rate food) that you are headed to Cayucos, the first words
out of their mouth are likely to be Hoppes Garden Bistro.The menu chef and owner Wilhelm (Bill) Hoppe has put
together is inspired by the seasons and complimented by that
exceptional wine list (with wines also available for retail sale). He
features organic meat and produce from the farmers markets in
the area and uses local lobster and shellfish, including abalone
direct from the famous Abalone Farm.
Then add to that the wild game and venison and a selection
of both vegetarian and vegan items and put the whole delightful
and delicious mix in a historic building just a short walk from
the beach. Mix in gardens that are nothing less than a delight
and often a surprise and toss in a good helping of their friendly,
helpful and enthusiastic staff, and the result is Hoppes GardenBistro & Wine Shop.

Hospice du Rhne (HdR), creators and organizers of the worlds
largest annual international celebration of Rhne wines, will high-
light specialty food producers and importers of Rhne wines at its
2008 event, From Roussanne with Love. Taking place on May 2,from 3 to 6 p.m., the Rhne Rendezvous is a new addition to the
lineup of seminars and tastings.
This years Rendezvous will feature more than 20 specialty food
producers; including names like Ocean Rose Abalone, Hearst Ranch
Beef, Vivant Fine Cheese, and the girl and the fig. They will be
serving samples of their finest foods from tables interspersed with
more than 100 Rhne producers from all over the world. Many of
these wines are represented by importers, who make an inter
tional event like this possible.

HdR hosts an annual experience that embraces the versatility
Rhne wines and embodies the distinctive spirit in which they
created. This truly unique three-day event is regarded as the sin

The Cal Poly Vines to Wines club will host its sixth annual Cal Poly
Wine Festival on April 25 and 26. The weekend includes a golf tour-
nament and wine tasting that features California wineries as well as
Central Coast restaurants and caterers.
The event, formerly known as An Afternoon Amidst the Oaks, is
a benefit for the new Cal Poly Wine and Viticulture program and the
student Vines to Wines club.
The 2008 Wine Festival is set for Saturday, April 26, at Santa
Margarita Ranch, from 1 to 4 p.m. Some 100 wineries from across
California will be pouring and local restaurants will be on hand with
appetizers. The event also includes a silent auction and music by the
Central Coast band Shival Experience.General admission tickets are $50. Cal Poly students, staff and
faculty tickets are $30. The limited Gold Passes allow attendees to
enter the festival at noon, one hour earlier, for an extra $20. Tickets

This years Cal Poly Wine Festival again includes a pre-festival

Visiting the old farmhouse that is home
to Grey Wolf Cellars is like entering the
doorway of friends who reside in the
country, you cant help but like the warmpeople who so clearly enjoy pouring their
powerhouse Bordeaux wines.
Winemaker Joe Barton, Jr. said, Its the real
deal here. We like to let people know it is
family-run. Family participation has always
been the cornerstone of Grey Wolfs existence.
Every bottle of Grey Wolf wine is our signa-
ture of a fine, handcrafted product from our
family to yours.
Grey Wolf was founded by his parents, Joe,
Sr. and Shirlene, who opened the winery in
1994, while he was studying at Cal Poly, San
Luis Obispo. Joe, Sr. passed away in 1998, but
because of the love for the winery Joe, Jr. and
his mother were inspired to continue with the
venture of Grey Wolf Vineyards and Cellars.
When asked the key to his success and
drive to produce great wines, Barton credits
his network of winemaker friends in Paso
Robes, including Dan Panico of Dover
Canyon, Rich Hartenberger of Midnight
Cellars, Jim Jacobson of Doce Robles and
Norm Benson of Dark Star. What continues
of be important to me is that I continue to
have the opportunity to participate in this
community of winemakers and be a good
representative of Paso and my family.
But it takes more than networking to make
great wines. Winemaking requires a good
palate and dedication. He says his youthful
tendencies keep him hungry to try new things
and experience everything, while still having
fun with what hes doing.
The Grey Wolf Vineyard is ten acres
of head-pruned Zinfandel, Petite Syrah,
Cabernet Franc and Cabernet Sauvignon. He
also sources fruit from many Paso Robles vine-
yards, which allows him to experiment with
blends and keeps him open to new varietals
and tastes.
I want to produce wines with a lot of
depth and fruit that is typical of the Paso
Robles appellation, Barton explained, I work
hard at it. Its all I do. Im doing all the extras
in winemaking and that has to show in the
bottle. But the real success of small wineries
is exactly that; Grey Wolfs small and mana
able size helps Barton keep his hand in
levels of winemaking and so, every bottle
the indelible stamp of its make on it. Ttasting room is an extension of that very id

able to gain more exposure. The Chronicle wasnt the only one giving
Anglim its accolades. Anglims 2005 Roussanne won a 90-point rating
from Anthony Dias Blue in Pattersons Wine Journal and Mr. Parker
awarded 89 points to Anglims 2004 Syrah.
Still, the Anglim operation has remained small. Weve purposely
kept it to pretty much just Steve and me, says Anglim. We hired a
young lady to work with me in the tasting room part-time, and shes
been invaluable to us. Steves the winemaker and I help out at various
times, she says. Im not much for barrel tasting, though. I tell Steve to
tell me when its ready, then Ill come and taste, Anglim laughs. The
business of the winery is a shared responsibility with Steffanie primarily
responsible for the tasting room while Steve operates the winemaking
portion.
The Anglims have one daughter in college and a four-year-old
daughter who can be found shadowing her parents at the winery. She
spends a lot of time with me, says Anglim, so shes around the winery
a lot.
The legacy of winemaking in California goes back generations, of
course. But its enough to say that some generations are just begin-ning. Theres something truly satisfying and heart-warming, about a
family business thats just starting. In many ways, that is the American
Dream. The Anglims are just one example of a whole new dream and
their winery is a perfect blend of the past in Paso Robles and the

to sign up 30 Central Coast wineries to participate in its 10th ann
Winemakers Cookoff. The event features winemaker-chefs gril
their own culinary creations and pairing them with some of th
finest wines. Winemaker pairings will be served to 1,000 attendees
the participating wineries vie for both Peoples Choice and Judg
award recognition. This year, the cookoff will be held on Saturd

As they always completely sell out their 3000-
case production every year, joining one of
their three wine clubs is usually the only way to ensure that youll be
able to get more of their wines without the necessity of another road
trip. And you will want more.
Michael and Margene Mooney celebrated their first vintage in
1997. Their goal was to do one thing and do it well produce world-class Cabernet. They succeeded by employing a philosophy that few
business schools would promote. Low yield, labor intensive wine
making. With a mere five and a half acres of vineyard, the Mooneys
intentionally keep their tonnage at about two per acre, compared to
some larger winery operations that coax up to eight tons per acre out
of their vineyards. This gives each vine the opportunity to take full
advantage of the superior soil and growing conditions that the Paso
Robles Appellation offers. The emphasis is quality over quantity.
At Chateau Margene each grape cluster is hand picked and hand
sorted. The fruit is de-stemmed, whole berry, and gently dropped into
open-topped fermentation bins, then aged in French oak barrels for
over 24 months. The vineyard practices sustainable farming and onlya bare minimum of chemicals are used in the grape growing and wine-
making processes. These are thoroughly pampered grapes and the
result is phenomenally dark, fruit-forward wines. Says Michael
Mooney, We didnt enter into this with a mindset of growing a big,
commercial winemaking operation, but rather to create a small
boutique winery that focused on quality
was our dream to produce the best Caber
and Cabernet blends from the Paso Rob
Appellation. Making these wines is truly
passion.

Ken Volks wines are a passion. They are certainly that for him, andthey tend to be for his regular customers, too. He puts a great deal of
passion into making them and the result is unique, fruit-forward wines
with extraordinary flavors that really show off their varietal and the
vineyard in which they were grown.
The Kenneth Volk Vineyards tasting room is, as its wines,
tasteful, simple and situated in a unique place, Tepusquet Canyon
in Santa Maria. The floors, the bar, the walls all wood, are sparsely
decorated with images of the Santa Maria bench growing area and a
north facing set of windows that reveal the undulating topography
of the land. A creek rolls right below the tasting room and wine-
making facility and a recent expansion allows customers to sit on
the patio relaxing with a taste of these beautiful wines.
Ken Volk himself can occasionally be seen in the tasting ro
pouring and talking about his wines. As proprietor and founder
reputation is as unique as his wines. Volks far-reaching influehas earned the accolades constantly paid to him by several gen
tions of winemakers now working on the Central Coast. As a wi
maker, Volks passion has always been the vineyard itself and
background in fruit science and the desire to grow better, m
tasteful, less synthesized fruit is what has driven him. Its proba
the thing that led him here for this area has some of the great vi
yards from which he has always purchased grapes.
Volks dedication has spilled over to this facility, too. Once
headquarters for the old Byron winery (the new Byron is next do
he rebuilt and refitted nearly the entire winery. He even brough
new presses and new crusher-destemmers that would help h
produce the wines he has become known for. Volk bought
winery and vineyard in 2004 from the Robert Mondavi Corpora
and immediately began to customize it to his specifications.

The annual Santa Barbara County Vintners Festival celebrates the
arrival of spring and a new vintage. Excitement is high over the long-
weekend of activities that include the Vintners Visa passport to
tasting rooms, special events at wineries throughout the region and the
festival itself. The festival features fine wines, superb food, live music,
strolling entertainment, demonstrations and a silent auction, all in a
festive outdoor environment.
The annual Santa Barbara County Vintners Festival attracts wine
lovers from near and far for an opportunity to meet member vintners,
taste their wines, and enjoy great food and music in a festive outdoor
environment. The 2008 Vintners Festival will be held from 1 to 4 p.m.
on April 19 and will once again be celebrated at River Park in Lompoc.
The festival will feature the wines of the 100+ members of the asso-
ciation, live and lively music, a silent auction and Wine Country
cuisine by the areas finest chefs. And why not make a weekend out of
it, celebrating the arrival of spring and the beginning of the 2008vintage? The Vintners Visa is your four-day pass to twelve participating
wineries, each of whom are waiving tasting fees and might even
planning something special just for Visa holders. To fully take adv
tage of the weekend, get a combo ticket to visit tasting rooms
Friday, Sunday or Monday and enjoy the festival on Saturday.
To enjoy your visit to Wine Country and help keep the roads s
bus transportation will be offered to and from the festival from Sa
Barbara, Santa Maria and Solvang as well as a Designated Driver tick
which allows your DD to enjoy the festival ambiance, music
cuisine along with soft drinks and coffee.
The festival has grown in popularity and attendance over the ye

festival included 17 Vintners Association members pouring th
wines. With the 2007 Silver Jubilee, more than ninety wineries wil
joined by grower members of the association and more than two do
local restaurants and caterers. Live bands, wine-related exhibitions a
a silent auction to benefit local charities will round out the day.This closely coincides with the growth of the wine industry

Santa Barbara County over the years, states Jim Fiolek, Executive
Director. Back when we held that first festival, there were fewer than
seven thousand acres of vineyards bearing fruit, and we were a rela-
tively unknown wine region. Now, we have recognition for the quality
of our wines worldwide, with over twenty-thousand acres of vineyards
planted within the County. But even as we grow in size and reputation,
there is still a small town, country atmosphere here. Great wines,
superb food and friendly people doesnt get any better than that!

generally sells out!
Vintners Festival tickets are $75 per person. Vintners Visas - your
