Bacon Feta Stuffed ChickenServes 4
Ingredients4 boneless skinless chicken beasts¼ cup crumbled cooked bacon¼ cup crumbled feta cheese½ teaspoon salt¼ teaspoon pepper1 tablespoon vegetable oil2 cans (14-1/2 ounces each) diced tomatoes1 tablespoon dried basil
Directions1. Carefully cut a pocket in each chicken breast. Fill with bacon and cheese; secure
with toothpicks. Sprinkle with salt and pepper. In a large skillet, brown the chicken in oil.
2. Drain one can of tomatoes, discarding the juice; add to the skillet with the undrained can of tomatoes. Sprinkle with basil. Cover and simmer 10 minutes. Uncover; simmer 5 more minutes longer or until the chicken is no longer pink and the tomato mixture has thickened.
