ALILA EXPERIENCE
Real! Original! Traditional! These three words are becoming very synonymous with East Bali.
The simplicity of the folk around, the relatively un-spoilt and age old traditions, the smiling
faces, the swaying palms and narrow streets with paddy and volcanoes as backdrops, East Bali
& Alila Manggis are Surprisingly Different.
Travelling to a new place is a journey undertaken to learn about that place, the people, the
culture, the food and some of the more down to earth ways in which they may live. It is said,
“Experiences provide happy memories that outlive those material things and possessions, it is
indeed the key to emotional wellbeing” – a philosophy by which Alila creates. Keeping this in
mind, we have compiled some experiences and journeys, packed with the option to just laze
around or indulge in different activities that would take you from ancient palaces to cycling
down a volcano to driving through streets surrounded by paddy fields and local people, to
learning how to fish and cook like the Balinese. Some interesting dining experiences at Seasalt
Restaurant or at our Organic garden nearby are also available.
Alila Manggis is located in the village of’ Manggis, the Balinese name for the exotic
‘Mangosteen’ fruit that is purple and hard skinned on the outside with white fleshy segments
inside.A secret you may not known about the Mangosteen. Is that it contains Xanthones, a
powerful anti-oxidant that makes it rich in medicinal properties. These are found in some rain
forest plants but nowhere are they in greater abundance than in the rind or the pericarp of
the Mangosteen. The natural wood like carvings of the petals on the bottom of the fruits hard
outer skin indicates how many segments are contained within. The blue petals on the tiles on
the floors in the lobby that welcome you upon arrival at the resort replicate this floral design,
East Bali and the area around us have many more secrets that you may want to unravel during
your stay with us. Hatmawan and Budi are two interesting localpersonalitieswho make up our
Leisure Concierge team and are on hand to introduce you to these secrets and experiences that
areindeed ‘Surprisingly Different’.

SEASALT RESTAURANT
The restaurant derives its name from the Seasalt Pans in Goa Lawah nearby. The Seasalt we serve originates at these pans and it is our
intention to make every effort to keep these dying pans alive by supporting the scattering of families that continue to use this age-old method
of panning.
Locally inspired, we definitely are. Our Executive Chef Santika originates from East Bali. He started his career here, then called The Serai 17
years ago when he worked as a gardener before moving to the kitchen operation as a trainee. He continued in the kitchen in varied capacities
for nine years before venturing out to gain international exposure. His overseas experience combined with his local background allows him to
offer you a renewed difference in the cuisine he offers.
Through breakfast, lunch and dinner, we bring you flavours that are both local and international, some inspired and others traditional, some
simple and a few slightly more complicated, some meals for one and others to share, some spicy and a couple that are not too spicy. We
continue to offer dishes made of locally sourced ingredients and produce.
THE TRADITIONAL BALINESE MEGIBUNG – OUR SIGNATURE
The Traditional Balinese Megibung is unique in its presentation and in the traditional way in which it is shared with friends and family during
village festivals and ceremonies of East Bali. This is an excellent way to sample the different flavors and colors of our very local cuisine,
decoratively served to you on a carved timber stand called the Dulang.
FOOD PREFERENCES & DIETARY REQUIREMENTS
We appreciate that the taste and dietary requirements of one individual differs from another. Do let us know so that we could create that
special meal or drink based on your preference and personal taste.
OUR ‘CHEFS INSPIRATION’ BREAKFAST
A daily compilation that gives you a ‘Surprisingly Different’ breakfast experience or enjoy the A la carte selection.
THE GARDEN MENU
A few minutes away is our hotel garden tucked away in quiet splendor. While we have mentioned some of the activities that one could indulge
in while there, we also have a menu that gives you options for breakfast, lunch or dinner at the garden. Prior reservations are necessary as we
can only accommodate one booking at a time per meal at the garden. You will be surrounded by paddy fields with the sights and sounds of
farmers tending their cows, ducks and their beloved rice. Over all this in the distance, is a view of the ocean.

the centre of Amlapura, Puri Agung is part of our East Bali Tour.
TAMAN UJUNG
This so-called ‘Water Palace’ lies at Tumbu village in the Karangasem district. Combining Balinese and European architecture, this summer retreat of the former king features three large ponds
within its complex. At the centre of the main pond is a building connected to the edge of the pond by two bridges. Climb the stairs for picture-worthy views from the top.
TIRTA GANGGA
This water garden built in 1948 by the King of Karangasem, Anak Agung Anglurah Ketut Karangasem, invites you to jump in the holy water of the pool (swimming is possible) or take a stroll
around the beautifully carved stone statues. It features a very unique mix of Balinese and Chinese architecture.
BESAKIH TEMPLE
The holy temple Besakih, also called the ‘Mother Temple’, is one of the most important temples in Balinese Hinduism. It is located at the south side of the still active volcano Mount Agung and
worshipped by all Balinese. Rsi Markandya built it in the 11th century. At that time, Rsi Markandya intended to go to Mount Agung to build a residence, but the construction was troubled by
the spread of a disease. To keep his family and reign safe, he constructed a veneration to worship God for salvation. The veneration was called “Sanggar Besakih” and became the Mother
Temple, where each village (or banjar) has its own temple.
SIBETAN
Salak trees, growing a total of 14 different kinds of tasty snake fruit, surround most of Sibetan village . Lying about 500m above sea level, the village’s beautiful views and cooler climate also

PURA GOA LAWAH
Known as the Bat Cave Temple, Pura Goa Lawah is located on the coast on the way to Klungkung. The Balinese worship the bats and pythons that live in the widely spread out system of
caves, which are said to end in a cave that is part of Pura Besakih near Mount Agung.
KLUNGKUNG
Bali's smallest district, Klungkung is located between Gianyar and Karangasem, and includes the islands of Nusa Penida, Nusa Lembongan and Ceningan. Klungkung itself is a bustling town, now
called Semarapura.
KERTA GOSA
The Kerta Gosa, meaning hall of justice, stands opposite the big and bustling Klungkung market. Built in the 18th century, it is a superb example of Klungkung architecture. Here between
pictures of hell (lowest level) and paradise (highest level), three Brahmin priests meted out punishments. Adjoining Kerta Gosa is the palace, with its beautiful Bale Kambang (or Floating
Pavilion). It is notable for its exquisitely painted ceilings depicting stories of the Buddhist King Sutasoma, among others. The Taman Gili (or Garden Pavilion) is a former guard’s house that lies
on the premises with ceilings beautifully painted in wayang style.
KAMASAN VILLAGE
Located a few kilometers outside Klungkung, Kamasan Village has long been the bastion of traditional paintings. The themes are derived from Balinese variations on the ancient Hindu epics, the
Ramayana and the Mahabharata. This style has also been adapted for large versions of the zodiac and lunar calendars. Kamasan paintings take their essential characteristics from the wayang
tradition. To see a good collection of Kamasan classical paintings, visit the Gunarsa Museum at the crossroads to Tihingan, just before Klungkung.
GOA GAJAH
Goa Gajah, the ‘Elephant Cave’, was built at least 700 years ago, although the cave was discovered only in the 1920s . The entrance to this ancient temple features the mouth of a mythical
creature with many detailed carvings in the surrounding stone. The complex also comprises two deep stone bathing pools, filled with water from spouts held by six female figures.
MAS VILLAGE
Located in Ubud sub district and Gianyar Regency in the east of Bali, Mas Village is synonymous with the art of woodcarving. The style typical here distinguishes the synergy between
humanism and naturalism. The village's popularity as an arts centre extends to national and world level thanks to masters such as Ida BagusTilem who was born here.

WHY?
Plastic waste being disposed at random on to the streets, into the streams, into the sea and bare un-occupied lands from households and the communities in general is a serious threat in Bali,
one that can be corrected only through inter-active sessions of training and guidance along with the promise to manage their collected waste systematically and long term. It aims to motivate
the community through learning and rewards for the little things that they may do to make a difference.
HOW IT STARTED IN 2010
In 2010, we spent many hours a week with the help of an Environmental Consultant who worked twice a month with our team, engaging in many activities within our property to become
more responsible in our behavior towards our environment and its sustainability: from water saving through better supervision, to garbage segregation in-house rather than through a third
party, to composting our own green waste and isolating wood for firewood for the benefit of the traditional villager who may still prefer to use it. Once we were able to manage our own
garbage and waste in an organized manner (though still evolving to be perfect), we felt that we were ready to slowly and steadily spread our new found knowledge to the adjoining village of
Buitan.
A program was developed and is ongoing to encourage the habitants of Buitan, a village within the village of Manggis to invest their time and effort in the green bank to create a litter free
future.
OUR PROMISE
To manage their dry waste and ensure that it is disposed of effectively and correctly for proper re-cycling or re-use in the short, medium and long term.
