Ingredients:
10 cups (2.4 L) Hellmann's Classics Italian Dressing 2 cups (473 ml) Sundried Tomatoes, Chopped 25 cups (6 L) Israeli Couscous, Cooked 25 cups (6 L) Barley, Cooked 4 1/4 cups (1 L) Flat Leaf Parsley, Whole Leaves 2 cups (473 ml) Harissa Paste, Prepared 6 1/2 lbs (3 kg) Chicken, Cooked & Shredded 8 1/2 cups (2 L) Eggplant, Roasted, Diced 8 1/2 cups (2 L) Tomatoes, Diced 12 1/2 cups (3 L) Purple Cauliflower Florets, Roasted
Preparation
1. Prepare the Sundried Tomato Vinaigrette: combine Hellmann's Classics Italian Dressing and Sundried Tomatoes. 2. Prepare salad: Combine Couscous, Barley, Parsley and Harissa. Top with Eggplant, Tomato, Cauliflower and Shredded Chicken. 3. Drizzle with prepared vinaigrette and serve
