When I started writing theintro for this month’sForever Young, I knew I

would need a box of tissues by theend.

On Sunday, May 12, I hope every-one takes a moment to have a longchat on the phone with their Mother,share a dinner or cup of tea or tell astory about their Mother that inspiredthem.

My mother, Teresa, has been aconstant in my life and I am luckyenough to still have her very active inin it.

I have many happy memories withmy mother and some sad ones, but Ialways admired the strength that shehas and the independence that sheshowed and passed on to me.

When times would get tough in myfamily, I would see my mom perse-vere. She would make a plan and

make sure that everything would turnout the very best that it could.

In my times of heartache or trouble,she would be there, holding myhand, making me feelstronger, better andthrough her pastexperiences, guide meto a solution.

When I was young, Iused to horseback rideand show competitively.I rode western pleasureand my mom trained mewith a few other trainers on myhorse Lakota.

My first ever show was the Valen-

tine’s show, the biggest show heldyear round by the show grounds. Iwas nervous as could be. I wasdressed in jeans, a button up whiteshirt and a cowgirl hat.

My mom helped me with my hairthat morning and talked me out ofmy nervousness as much as shecould, coaching me on what I needed

to do all through the morning.In the arena, she was thevoice in my head telling me

to push forward, to keepmy head up and myheels down.

I won first place thatday. When I left the

arena after nervouslywaiting for what place I

had won, my mom was there.She grabbed my hand with as

much pride as I had ever seen in hereyes and said, “You did it!”

It took some years later for me torealize how important it was for mymom to be there, holding my hand,saying encouraging words and wordsof wisdom.

My mom has been my rock and thevoice in my head telling me to keepgoing through everything in my life.

So, on Mother’s Day, I will set asidethe time to give my mom my thanksfor being there for me through thickand thin, even when she couldn’tphysically be there.

Love is a wonderful thing for adaughter to have. I’ve had it all my lifeand couldn’t be happier.

We here at Forever Young hope thatyour Mother’s Day is filled with love,memories, laughter and maybe a fewtears… but always with happiness.

VERO BEACH — In 2009 when asmall cupcake shop was up for sale,Joanne Moyer and her daughter Jes-sica Letts decided to take their at-home cupcake business up a notch.

Their business blossomed, grow-ing with each cracked egg, pound offlour and batch of frosting that theymade to top their cupcakes.

Each morning, the mother-daugh-ter duo goes to the shop in the weehours of the morning to make cup-cakes.

“We really work well together,” saidMs. Moyer. “There are certain thingsthat I do really well, like making thefrosting, and things that I can’t dothat she does. The combination of

the two of us produces a great prod-uct.”

The two joked about how theywork together.

“It’s challenging,” Ms. Letts said,laughing. “No, it’s actually a lot morefun than working for a boss that’s notyour mom. Sometimes she lets mepretend that I’m the boss. We bothreally like sweets, so we’re bothalways coming up with new flavorsand combinations.”

With their love of baking andsweets, the two have expanded thebusiness to making cakes for wed-dings and birthdays.

“Last year we weren’t into the wed-ding mix, and then people found out

we did cakes,” said Ms. Moyer. “Nowpeople are hearing that we do morethan cupcakes and we’re getting lotsof calls.”

The family business truly bakesfrom the heart and uses only the top-of-the-line ingredients.

“We try not to use extracts if wedon’t need to,” said Ms. Letts. “If I canmake the flavor, like banana ororange, I’ll do it myself. We even haveour vanilla extract by the gallonshipped from California. Plus, we usebutter, not shortening. We use freshingredients all from scratch.”

Every day the shop has at leastseven flavors of cupcakes and up to18 different flavors.

The long hours of owning a busi-ness are made better by working witheach other and including their hus-bands. Ms. Moyer’s husband and Jes-sica’s father, Donald, and Ms. Lettshusband Michael, help with repairsand with the extension of the newkitchen.

“We really love doing this,” saidMs. Letts. “Our family is really sup-portive of what we do, no matter howmany late Friday’s we have to do.”

Calcium and vitamin D are fre-quently touted for their ability toimprove bone health. While con-suming foods rich in vitamin D andcalcium is especially important foraging women, both vitamin D andcalcium also help to keep the bodystrong and vital at any age.

Calcium and vitamin D help fightbone loss, and not just in olderwomen. Younger, active womenneed it to prevent stress fracturesand other bone injuries. A 2008study reviewed the health of 5,000female U.S. Navy recruits, and thosewho did not take additional calciumand vitamin D were 25 percent morelikely to suffer a stress fracture. Astress fracture is a small fracture of abone caused by repeated physicalstrain. Gymnasts, runners and even

marching soldiers can suffer suchfractures even if they are otherwisehealthy.

Calcium is also needed for otherparts of the body. The NationalInstitutes of Health Osteoporosisand Related Bone Diseases NationalResource Center says calcium isnecessary for the heart, muscles andnerves to function properly. It alsohelps blood to clot. Furthermore,pregnant women need ample calci-um in their diets in order to supplycalcium to a growing fetus. If a preg-nant woman does not get enoughcalcium through diet, the baby willdraw it from Mom’s own bones,threatening the mother’s healthwhile leading to bone fragility andincreasing her risk of fractures.

Everyone knows that Florida isfamous for its fruit. IndianRiver County (Zone 9) in

particular is one of the best areasin the state for citrus production.Orange groves can be seen far andwide. The soil, rain and warmweather make this an ideal placeto plant all kinds of fruit trees.

One of my favorite fruit trees togrow here is the Honeybell, a crossbetween a tangerine and grape-fruit. The Honeybell is one of thebest eating, juiciest fruit any-where. It thrives in this area andripens in January. There is nothingbetter than a Mimosa made withfresh juice from the Honeybell!

Another favorite is the JapanesePlum or Loquat tree. They producefantastic fruit and are typically in

bloom in the spring months ofMarch and early April.

Fig trees, Guava trees, Mulberrytrees and the Grumichama Cherrytree will do exceptionally well inthis area. I love the GrumichamaCherry. Although it’s smaller, ittastes just like regular cherries andwill even grow as far north asMelbourne.

If you’re like most people, whenyou think of peaches, you think ofGeorgia. However, the Universityof Florida developed severalhybrids of the peach a few years

back that grow well in our state.The “Flordago,” “Florida Prince,”“Tropic Beauty” and “UF Sun”aren’t quite as meaty as the peach-es from our northern neighbor, butthey do tend to ripen a month ortwo earlier. And what could bebetter than picking a peach from atree in your own back yard?

I love bananas and have a smallgrove of Breakfast Bananas in myyard. Banana trees do not like ortolerate cold weather and willusually die back during an extremecold snap. Luckily, they tend tocome back to life after a while, sodon’t remove them if they appearto have died. A little patience maybe rewarded. It is always best toplant them in a very wet area, asthey love water more than mostother trees and thrive near rivers,

streams, lake and ponds.Not all fruit trees prosper in this

climate. While I enjoy mangos andavocados, the adolescent treesstruggle to survive cold winters.They’re usually a gamble to plant. Idon’t bother planting them.However, with a little luck andsome mild winters, they maysurvive and tend to cope with thechilly winters as they grow older.

With patience, luck and helpfrom a licensed horticulturalist,you’ll be able to grow some amaz-ing fruit trees and have your pickof delicious fruit year round!

Let’s talk about RiojaWINES OF THE WORLDLet’s talk about one of the most

underrated of the wines: Rioja.

Rioja (Ree-o-ha) is a wine of manydifferent personalities. It can bewhite, red or blush, soft or bold,fruity or dry, acidic and tannic. Itsvariations can allow for great rangeof variety, expectation and opinion.

Rioja is named for the region fromwhich it is produced, not for theprimary grapes of which it is made(typically the Tempranillo grape forreds and Viura for whites). La Rioja issituated in the north-central part ofSpain, south of the CantabrianMountains.

It’s divided into three wine pro-ducing zones: Rioja Alta (highestaltitude), Rioja Alavesa (moderatealtitude) and Rioja Baja (lowerlying). The differences in climatebetween these regions affect the

grapes’ growth, and ultimately thefinal characteristics of the wine.

While the Rioja Alta region tendsto produce lighter wines, RiojaAlavesa tends to produce fuller-bodied wines with higher acidity.The Rioja Baja region, with its warmMediterranean-like climate, tends toproduce wine of higher alcohollevels with deeper, darker color.These wines are often less flavorfuland tend to be used as blendingcomponents for wines disseminat-ing from the other two regions.

There are four classifications ofRioja, based mostly on the region inwhich it is produced and the aging

process. Joven are the wines thathave no oak aging. Crianza are winesthat must spend a minimum of oneyear aging in oak barrels and anoth-er year aging in bottle. Reserva arethe wines that spend at least oneyear in oak barrels and two in bottle.These wines are usually some of thebest. Finally, the Grand Reservawines must spend a minimum oftwo years in oak and three in bottle.The Grand Reserva are typicallymade from the very best vintages.

Typically, red Rioja is fruit forwardwith strong cherry, blackberry andspice flavors with hints of vanilla.Some are mild, but most Reservasand Grand Reservas are more acidicand tannic. These are great withbeef, rich dishes, tomato sauces andother red meats.

While I am predominantly a redwine lover, the white Riojas areinteresting and unique. Some are

very fruity, but some are dry andcrisp like Sauvignon Blanc and arelabeled as such. White Riojas agedin stainless steel tend to have hintsof pear, peach and apricot. Theyusually pair well with very lightdishes including chicken, saladsand white fish. Whites that are agedin oak have hints of vanilla,coconut, butter and tropical fruits.They also tend to be acidic with avelvety texture and dry finish. Thesepair well with richer fish (salmon,tuna), shellfish and dishes that havefruits or chutneys.

The variations and high quality ofthe Riojas make it one of my favoritewines. They are affordable, enjoy-able and fun to explore.

VERO BEACH — The Joy of Eatingin Vero Beach isn’t just a place to goand chow down, it’s a respite fromconsuming the same old menuitems day in and day out.

The petite new shop in ThreeAvenues Plaza carries coffee, icecream, cookies, smoothies and pie,but specializes in a unique menuitem, French crepes.

From the ordering counter, cus-tomers can watch as shop ownerand Chef Ned Nichols carefullypours a thin layer batter onto a cir-cular griddle to start creating theirchosen dish from scratch.

At the Joy of Eating, there arecountless crepe combinations andcrepes can be either sweet orsavory, and a choice of cheese, veg-gies, protein, fruit or other sweetsfor fillings.

Once cooked, the delicate crepe isstuffed with the chosen fillings andfolded over into a neat rectangle,served onto a plate and ready forconsumption. A side salad or chipscan also be added to the order for awell-rounded plate, although thecrepe alone is plenty of food.

On the savory side, the combina-tion of spinach and roast turkeywith a sprinkling of Monterey Jackcheese is absolutely scrumptious.

The thin layers of the crepe allowgreat tasting fillings to be highlight-ed, not hidden inside bread andsometimes forgotten like a tradi-tional sandwich.

For those with a sweet tooth, themouthwatering fruity and sweetfillings nestled inside the almondand vanilla flavored sweet crepesare the perfect choice.

Customers can choose theirfavorite filling combinations frommenu, which includes bananas,strawberries, blueberries, toastedcoconut, peanut butter, candiedwalnuts and more.

One simply irresistible combina-

tion is Nutella with strawberry andblueberries. Each filling compli-ments the other; the best way todescribe the decadent union is“mmmmmmmmm.”

Liquid meals, otherwise known assmoothies, are popular among peo-ple who want a healthy boost ofenergy during the midafternoon.

Hale’s Groves juices, fresh pro-duce, including seasonal berries,peaches, kale and spinach are just afew of the items available to com-bine into the perfect smoothie.

Mr. Nichols has been in the foodindustry in Vero Beach and in otherparts of the U.S. for some time. Hewas involved in starting the RedOnion Eatery in Vero Beach, andmost recently helped develop thecafé in McKee Botanical Garden inVero Beach.

He and his wife, Shaivite, haveenjoyed being creative with thedécor of the small eatery, which is amodern interpretation of an old

fashioned-ice cream parlor. Thewalls are chalkboards and in certainplaces, customers can add theirown pictures and comments abouttheir dining experience.

By bringing something a little dif-ferent to the table and sprinkling alittle creativity on top, the Nicholshave created a winner in The Joy ofEating, and it won’t be long beforethe place is constantly packed.

The company’s slogan is “food isour passion, eating is our joy.” Onething is certain, the new creperie isdefinitely one of Vero Beach’s topnew joys. Business hours are Mon-day through Wednesday, 11 a.m. to9 p.m., Thursday through Saturday,11 a.m. to 10 p.m. and Sunday noonto 9 p.m.

have decided to take you South.....Welcome to Miami! While many

people may associate Miami withbars and nightlife, there are manythings to do in this beautiful area.Whether you are here for one day ordecide to do an overnight, there aretons of malls, restaurants, shopping,activities and attractions. From TheMetro Zoo, to the Seaquarium,museums to Bayside Marketplace,prepare for a long day to enjoy theculture, flavor and fun that this areahas in store for you.

Let’s start with Performing Arts. TheAdrienne Arsht Center for PerformingArts is located in Downtown Miami’sMedia and Entertainment District.Ballet, symphonies and operas are allperformed in this wonderful center.

New theater combines onstageperformances, New Voices series andthe Artists Gallery. The GableStage atthe historic Biltmore Hotel presentssome of the edgiest work in localtheater ranging from classical,contemporary and new productions.

It is anoutdoor/indoor waterfront shopping,dining, and entertainment venue.Walk around and enjoy the atmos-phere and music or take a sightseeingcruise. While you’re in the area, if youlove basketball, the American AirlinesArena is home to the Miami Heatbasketball team. There are alsomultiple concerts that take place atthis arena.

Animal lovers have many things tochoose from in Miami. MiamiSeaquarium is a 38-acre marine parklocated on the island of Virginia Keyin Biscayne Bay, located near down-town Miami. It is the longest operat-ing oceanarium in the United States.In addition to the marine mammals,

the Miami Seaquarium also housesvarious fish, sharks, sea turtles, birds,reptiles and manatees. The MiamiMetroZoo is the largest and oldestzoological garden in Florida. It housesmore than 1,200 wild animals and isthe only subtropical zoo in thecontinental United States. MonkeyJungle is a 30-acre reserve wherenearly 400 primates run and rove attheir leisure. Monkey Jungle is part ofa world-wide effort to save monkeysclose to extinction and protect themwithin comfortable and familiarenvironments.

Most people think of South Beachas a place for nightlife, but this ArtDeco-styled waterfront district has itall: beautifully restored historicbuildings, funky shops and bou-tiques, elegant restaurants and casual
