RGE RD chef and owner Blair Lebsack knows a thing or two about making dishes
people want to eat over and over. But when it comes to his own favourite food to eat, Blair would choose duck, which he prefers from
Four Whistle Farms. “I would go with a duck confit, with a bit of parsnip purée and a red wine jus.” If you’re not a fan of duck, Blair
suggests going with Alberta pork for pulled pork sandwiches.”
