Using a 3–pound beef chuck roast, make small cuts all over the roast and insert fresh garlic slices, about four cloves total. Place the roast into a slow cooker and pour the entire contents of one 16– oz. jar of pepperoncini peppers, including the liquid, over the roast. Cover and cook on low for seven or eight hours. Meat should easily come apart with two forks when done. Slice hoagie rolls, lengthwise, and place a healthy serving of meat onto each roll. Top with extra pepperoncini peppers and a slice of provolone cheese. Serves eight. Recipe vegetable lasagnaThe Need for Real FaceTimeThis layered veggie lasagna is packed with so much flavor, you won’t even miss the meat!

Ingredients:1 (26-oz.) jar tomato pasta sauce1 zucchini, diced1 bell pepper, diced1 lb. mushrooms, diced½ onion, diced1 (9-oz.) package frozen spinach, thawed and drained1 (15-oz.) container low-fat ricotta cheese1/2 cup grated Parmesan cheese1 tablespoon dried oregano12-14 lasagna noodles, precooked according to package instructions4 cups shredded mozzarella cheeseOlive OilHeat oven to 375°F. Add two tablespoons of olive oil to a large skillet and turn heat to medium-high. Sauté together onion, zucchini, bell pepper, and mushrooms until just soft (about five minutes). In a large bowl, combine softened vegetables with pasta sauce and mix well. In another bowl, mix together ricotta cheese, Parmesan cheese, two cups of mozzarella, oregano, and spinach.Spray a 9x13 inch baking dish with nonstick cooking spray and spread one cup vegetable sauce into the bottom. Cover sauce with a single layer of lasagna noodles. Spread one-half of the ricotta cheese mixture on top of the noodles, followed by another layer of vegetable sauce.
